Creamy and Cheese Chicken Tetrazzini Recipe

I have prepared Chicken Tetrazzini a number of times but when I ran into this Creamy and Cheese Chicken Tetrazzini Recipe it looked really good, so I thought I would put it on the menu for dinner. This recipe is a little time consuming but well worth the time and effort. The combination of the 3 cheeses is almost a perfect blend. Preparing the cheese sauce reminds me somewhat of preparing macaroni and cheese, which gives this Chicken Tetrazzini Recipe its creamy, cheesy flavor. This one will go on my favorite recipe list.

Ingredients
  • ½ pound spaghetti
  • 1 pound boneless skinless chicken breasts (cut into bite-size pieces)
  • 1 sweet red pepper (chopped)
  • 1- 8 package fresh mushrooms (sliced)
  • 4 ounces cream cheese (cubed)
  • ¼ cup flour
  • 1 can chicken broth (14.5 ounces)
  • 3 Tablespoons Grated Parmesan Cheese (divided)
  • ½ cup Shredded Mozzarella Cheese
  • Oil for browning
  • Salt and pepper to taste

Instructions
  1. Preheat oven to 350F.
  2. In a large kettle cook the pasta according to package directions.
  3. While the pasta is cooking, cube the chicken, and chop the vegetables.
  4. In a lightly oiled large skillet cook the chicken and vegetables until chicken is no longer pink inside. Remove the mixture, cover to keep warm, and set aside.
  5. In the same skillet combine the chicken broth, cream cheese, and flour; brink to a boil whisking constantly. Reduce the heat and simmer while stirring, until mixture thickens.
  6. Drain the pasta and mix in the vegetable cheese sauce and 2 tablespoons of the Parmesan Cheese. Salt and pepper to taste.
  7. Spoon the mixture into a 3 quart casserole dish and bake covered for 25 minutes. Remove from the oven and top with the Shredded Mozzarella Cheese and 1 tablespoon of Grated Parmesan Cheese. Return the casserole to the oven and bake uncovered until cheese is melted.
  8. Serve hot.

Fish Cheeseburgers Recipe

This Fish Cheeseburgers Recipe is a simple and good tasting recipe. This recipe uses frozen breaded fish so it is very quick to put together. You can use fish sticks or breaded fish fillets. I used fish sticks for this recipe because I like to deep-fry them so they come out nice and crunchy. If you’re not hot on using the deep fryer just follow the package instruction and it will turn out fine. I decided to use Swiss cheese because it is one of my wife’s favorites, but you can use whatever cheese you have on hand, or whatever you think you would like the best. This is a great way to put together a quick Friday Night fish fry. Enjoy

Ingredients
  • 6 frozen fried fish fillets or 24 fish sticks
  • 6 Hamburger buns
  • 2 tablespoons butter or margarine (spreadable)
  • 6 tablespoons chili sauce
  • 6 cheese slices (your choice about 1 ounce each)

Instructions
  1. Bake or deep fry fish according to package instructions.
  2. Change oven heat to 350F or Preheat oven to 350F depending on how you cooked the fish.
  3. Butter both sides of the hamburger rolls and place the bottom half’s on a baking sheet.
  4. Place 1 fish fillet or 4 fish sticks on the bottom half followed by a tablespoon of chili sauce; then top with a slice of cheese.
  5. Add the top half of the bun and bake until cheese is melted. (About 10 minutes)
  6. Serve hot with fries or chips

Simple Skillet Fried Chicken Recipe

There are many different ways to prepare chicken but sometimes it’s nice just going back to a basic recipe. This Simple Skillet Fried Chicken does take a little time to cook, but helping make up for the cooking time, is very little prep time. Basically all that is involved, is mixing the flour and seasoning together, rolling the chicken in the mixture, then placing it into a large skillet to cook. The cooking time can be well utilized by taking that time to prepare a side dish to go along with the chicken.

This recipe has a good blend of flavors.  I prepared the recipe as written but feel free to spice it up a little bit to your liking.

I serve this Simple Skillet Fried Chicken Recipe with the homemade gnocchi recipe in the previous post. It made a nice dinner that the whole family enjoyed. The next time you’re in the mood for fried chicken, give this one a try. Enjoy

  • ½ cup all-purpose flour
  • 1 tablespoon paprika

  1. In a shallow dish blend all the dry ingredient together. Roll the chicken in the mixture to coat.
  2. In a large skillet or chicken cooker using about a ¼ inch of cooking oil, brown the chicken, skin side down on medium high heat, for about 10 minutes. Turn the chicken, reduce the heat to simmer, and continue cooking the chicken until juices run clear.

Homemade Make Gnocchi Recipe

Making Gnocchi has been on my how to do list for a long time. For some reason I thought I could never find the time; but it was not as time consuming as I imagined. The Gnocchi recipe is not a lot different from any other pasta recipe. The main difference is the time involved to cook and mash the potatoes.

I served fried chicken with the Gnocchi’s and it worked out real well. During the time the chicken was cooking, it gave me plenty of time to prepare the Gnocchi recipe. I used a store bought pasta sauce with this Gnocchi recipe to save time. If you have a favorite store bought sauce go ahead and use it, or make your own. Either way making Gnocchi’s at home is a pretty simple process and well worth the effort. Give it a try! Enjoy

Ingredients
  • 3 medium size potatoes (1 cup mashed)
  • 2 cups all-purpose flour
  • 1 egg

Instructions
  1. Cook potatoes in salted water until tender. (Don’t overcook-you want them done, but still firm) mash the potatoes and let cool.
  2. In a large bowl mix together the mashed potatoes, egg, and flour; kneading to form a ball of dough.
  3. Wrap the dough in plastic and refrigerate for 20 minutes to a half an hour.
  4. On a floured surface cut and divide the dough into 4-6 equal pieces. Roll the dough with your hands forming rope like pieces about a ½ inch thick; then cut into ½ to 1 inch pieces to form the Gnocchi’s.
  5. To cook the Gnocchi’s use a large pot of lightly salted boiling water, drop the Gnocchi’s in the water and let cook until they float back to the top. (This will only take a few minutes)
  6. Serve hot with your choice of sauce

Chili's Monterey Chicken

Things were kind of hectic around the house yesterday so I was looking for a simple recipe that I could put together quickly, and would taste really good. We don’t have any Chili’s restaurants in the area so when I saw this knock off recipe for Chili’s Monterey Chicken I thought I would give it a try. I have never eaten at Chilies before so I don’t know how close this recipe really is; but this was an excellent blend of flavors and created a good dish. You could serve this chicken in a sandwich bun, or use it as a standalone with a side dish, which is the way I served it.

If you’ve eaten at Chilies before you know better than I do how good of a knock off recipe this is-either way I thought this Chili’s Monterey Chicken was a simple and good tasting recipe. Give this one a try, it’s not much work and it’s a good tasting dish. Enjoy

Ingredients
  • 4 boneless skinless chicken breasts
  • 8 teaspoons barbecue sauce (use your favorite barbeque sauce-I used Hunts)
  • 8 slices crisp bacon (cooked until crisp)
  • Salt and pepper to taste
  • 1 cup Monterey jack and cheddar cheese blend
  • 2 tomatoes (chopped and seeded)
  • ¼ cup chives (chopped)

Instructions
  1. Pound chicken breasts flat to about 1 inch; season with salt and pepper on both sides.
  2. In a large skillet lightly oiled or sprayed with cooking spray cook the chicken until done-turn as needed. Remove the chicken to a broiler pan (Internal temperature should be 165)
  3. Top the chicken with 2 teaspoons Barbeque sauce, 2 slices of bacon, and ¼ cup of cheese.
  4. Cook the chicken about 6 inches from the broiler heat, just long enough to melt the cheese. (I didn’t try it, but I would think you could also just cover the frying pan to melt the cheese-saving a step.)
  5. Garnish with the tomatoes and chives.

The local market was running dates on sale and my wife purchased some of them thinking they would make a nice snack; but she changed her mind deciding they weren’t such a nice snack after all. So what can you prepare with dates? I am sure there are a lot of recipes that you can use dates as one of the ingredients such as date bars or cookies; when I saw this Ginger Date Muffins Recipe I thought it looked pretty good so I decided to give it a try. I was a little skeptical because I wasn’t sure how the flavor of ginger would taste with the dates, but they were really good. When you are preparing the batter it will be thick so you will have to spoon it into the muffin cups-it should be that way.

Like most muffin recipes, this is a simple recipe, and you will have hot muffins on the table in less than an hour. This recipe will make 12 regular size muffins, or 6 jumbos.

Ingredients
  • 2 cups all-purpose flour
  • ½ cup packed dark brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda

  • ½ teaspoon salt
  • 1 cup buttermilk
  • 1 egg, lightly beaten
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • 1 cup dates (finely chopped)

Instructions
  1. Pre-Heat Oven to 400.
  2. In a large bowl, sift together flour, sugar, baking powder, baking soda, ginger, cinnamon, and salt. Mix thoroughly and set aside.
  3. In a separate large bowl mix together buttermilk, egg, oil, and vanilla.
  4. Gradually add the flour mixture into the milk mixture; stir until just combined. Fold in the dates.
  5. Using a muffin tin with liners, or lightly sprayed with cooking spray, spoon the batter into the muffin cups.

If you like the flavor of garlic you will love this Grilled Garlic Butter Steak Recipe. The garlic sauce is so good, and it is easy to put together while the stakes are grilling. The first time we had this recipe for dinner was when my son was home from college and he prepared it for his cooking blog; blogchef.net.

Ingredients
  • 4 beef steaks (T-Bone or New York Strip)
  • ½ cup butter
  • 2 teaspoons garlic powder
  • 4 garlic cloves (minced)

Instructions
  1. Preheat the grill on high heat with the grates coated with cooking spray or oil.
  2. While the grill is heating using a small sauce pan over low heat- melt the butter, and mix in the garlic powder and garlic; set mixture aside.
  3. Salt and pepper the steaks on both sides. Grill stakes 5 to 10 minutes per side or until steaks reach your desired doneness.

Simple Mulligan Stew Recipe

I’m not real sure where this Mulligan Stew Recipe came from but it has been many years since I have put this recipe on the menu. I think originally Mulligan Stew was whatever you had on hand is all you needed to prepare this recipe.

Mulligan stew is an improvised dish said to have been prepared by American hobos in camps in the early 1900s. (Wikipedia)

This Mulligan Stew recipe is as simple as it gets-tomato, potatoes, onion and some salt and pepper to enhance the taste. This is a basic recipe so there is plenty of room to add some additional seasoning, like garlic powder, oregano and parsley. I decided to keep it simple and prepared the recipe as written; making it a simple and good, one dish dinner.

This recipe was originally prepared using home canned tomatoes. If you don’t have that option use a 28 ounce can. Enjoy

I had some ham left over from the Holiday so I decided to prepare this Ham and Potato Soup Recipe. I made a few minor changes to the recipe; mainly to increase the hardiness of the ingredients. This is a simple recipe and there’s a good chance if you have left over ham from the holiday, you may have all the ingredients on hand.  This is a basic recipe so I’m sure if you wanted to spice it up a little, it would work out very well. I thought this dish was excellent just the way it is written.

Ingredients
  • 5 cups potatoes (peeled and diced)
  • ⅓ cup diced celery
  • ⅓ cup onion (finely chopped)
  • 2 cups cooked ham (cut into cubes)

  • Salt and pepper to taste

Instructions
  1. In a large sauce pan or stockpot mix together the potatoes, celery, ham and onion. Stir in the chicken bouillon and bring the mixture to a boil. Reduce the heat to simmer and cook until the potatoes are tender.
  2. Melt the butter in a medium size sauce pan and whisk in the flour. Slowly add the milk stirring constantly while bringing the mixture to a boil. Cook until sauce is smooth and thickened.
  3. Stir the white sauce into the soup mixture, salt and pepper to taste, bring the soup back to a boil. Remove from the heat and serve hot.

If you’re looking for a great side dish, or a stand-alone one-dish meal this Bacon Mac and Cheese recipe will provide it, and it’s really good. This is a very simple recipe, but does take a little more time than the customary Mac and Cheese, because of the time needed to cook the bacon.  All the flavors blend very well with the bacon giving this dish a unique bacon flavor.

Ingredients
  • ½ pound sliced bacon (sliced into 1 inch pieces)
  • 1 package elbow macaroni (8 ounces)
  • 2 cups milk
  • ½ cup unsalted butter (divided)
  • 2 tablespoons flour
  • 1 teaspoon onion salt
  • ground black pepper (to taste)
  • 1 package sharp shredded cheddar (8 ounces)
  • 1 cup breadcrumbs

Instructions
  1. Preheat oven to 450F.
  2. Cook macaroni according to package directions, and drain. While the macaroni is cooking fry the bacon pieces until crisp. Place the bacon on paper towing to drain any excess fat.
  3. In a medium size sauce pan melt ¼ cup of the butter over medium heat; then whisk in the flour, onion salt, and pepper until smooth. Gradually stir in the milk and cook until mixture is smooth and starts to thicken. Add the cheese; cook and stir until melted.
  4. Mix the cheese sauce into the macaroni and fold in the bacon. Place in a 1½ quart casserole dish sprayed with cooking spray. Melt the rest of the butter, mix it with the bread crumbs and sprinkle it evenly over the top of the macaroni and cheese.
  5. Bake for 20-25 minutes or until golden brown, and mac and cheese heated through.
  6. Serve Hot
