Beef and Bean Burrito Supreme Recipe

It has been awhile since I prepared any Mexican meals. When my son suggested burritos I thought it was a great idea. Plain are pretty good, but I decided to fancy it up a little bit. The addition of fresh tomatoes, sour cream, fresh green onions, then filled and topped with shredded cheese, turned this recipe into a delicious work of art. This Supreme Recipe is a good recipe, but don’t be afraid to play with it by adding the extra ingredients you and your family like. Enjoy

Beef and Bean Burrito Supreme Recipe

Ingredients
  • 2 teaspoons oil
  • 2 medium onions, chopped
  • 4 garlic cloves, minced
  • 2 lbs ground beef
  • 1 Tablespoon chili powder
  • 2 teaspoon cumin
  • salt and pepper to taste
  • 1 (8 ounce) can tomato sauce
  • 2 (16 ounce cans) refried beans
  • 3 tomatoes (diced)
  • 8 ounces sour cream
  • 6 green onions chopped
  • 12 large flour tortillas
Instructions
  1. Sauté onion in oil until translucent
  2. Add beef and garlic and cook until beef is fully cooked.
  3. Drain any excess fat if needed.
  4. Add chili powder, cumin and salt and pepper to taste.
  5. Stir in tomato sauce and simmer 5 minutes.
  6. Add refried beans and cook and stir until heated though.
  7. Set aside to cool completely.
  8. Soften tortillas, according to package instructions,
  9. Divide meat mixture evenly between the 12 tortillas.
  10. and place a portion of meat on each.
  11. Then add the diced tomatoes, green onions and sour cream.
  12. Roll up, burrito style
