It has been a crazy day – which made it go by really quick. I needed a recipe that is simple and quick to put together. This Oven Roasted Teriyaki Chicken Recipe looked pretty good and didn’t require a lot of ingredients. The recipe called for using Splenda, or sugar, as one of the ingredients so I opted to use the Splenda to cut down on our sugar intake a little bit. I have never found it to be quite as good as sugar, but it does make a close second in my opinion. Anyway, the result was really good, and I had a chicken dinner on the supper table in about an hour.

Ingredients
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • ½ cup sugar or granulated sweetener like SPLENDA®
  • ½ cup low sodium soy sauce
  • ¼ cup cider vinegar
  • 1 clove garlic (minced)
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground black pepper
  • 8 - 12 skinless chicken thighs (depending on how many you are feeding)
Instructions
  1. Preheat oven to 425F.
  2. In a small glass mix together the cornstarch and water until cornstarch is dissolved. In a small sauce pan over medium heat mix together the sweetener, soy sauce, vinegar, garlic, black pepper and ginger. Stir in the cornstarch mixture and cook until thickened.
  3. Arrange chicken in a lightly greased 13 x 9 casserole dish. Brush the chicken on both sides with the sauce. Bake for 30 minutes; brushing every 10 minutes. Flip the chicken and continue brushing and cooking until chicken is done. (185F.)

  • 2½ pounds boneless-skinless chicken breasts (cut into bite size pieces)
  • 2 tablespoons soy sauce
  • ½ teaspoon salt
  • 2 large eggs
  • ¼ cup cornstarch
  • ½ teaspoon baking powder
  • ⅛ teaspoon white pepper
  • oil (for deep frying)
  • ⅓ cup sugar
  • 1 cup chicken broth
  • 1½ tablespoons cornstarch
  • 2 tablespoons lemon juice
  • ¾ teaspoon salt
  • 3 slices of lemon
  • 2 tablespoons olive oil
  • Yellow food coloring (optional)
  • Cooked rice (optional)
Instructions
  1. In a medium size bowl mix together the soy sauce and ½ teaspoon salt. Add the chicken pieces and toss to coat. Marinate in the refrigerator for 30 minutes. Re-toss the chicken about have way through the marinating cycle.

  5. Dip pieces of chicken one at a time in the batter mix; deep fry chicken in batches being careful not to over crowd the pieces, fry until golden brown and chicken is no longer pink inside. Drain on paper towels.

  7. Prepare the sauce in a large skillet or Wok by mixing together the olive oil, chicken broth, 1 1/ 2 tablespoons cornstarch, salt, sugar, lemon juice, and food coloring. Place the lemon slices on top and cook over medium heat, stirring occasionally, until sauce thickens and becomes clear.

Slow Cooker Round Steak Recipe

 I had a busy day coming up so a needed a, set it and forget it type of recipe, so I decided on this Slow Cooker Round Steak Recipe. This recipe is very simple to put together and outside of having to cook the noodles to finish it off, it is pretty much carefree. This recipe caught my attention because of the use of the molasses which I don’t usually see as one of the ingredients in this type of recipe. The molasses did seem to blend really well with the rest of the ingredients. This recipe is mildly season leaving plenty of room to add some additional herbs and spices if you wish to do so. I prepared the recipe as written and we thought it was very good the way it is.

  • 1- 8 ounce package for fresh mushrooms (sliced)
  • 1 can diced tomatoes (14½ ounces undrained)
  • 3 tablespoons soy sauce
  • 2 tablespoons of molasses
  • Egg noodles or rice
Instructions
  1. Prepare the onion and green pepper, and cut the steak into pieces.
  2. In a large food grade plastic bag combine the salt, pepper and garlic powder. Shake the round steak in the bag to coat.

 Sweet and Sour recipes are not my favorites but I had some shrimp on hand so I decided to put this Sweet and Sour Shrimp Recipe on the menu for supper. This recipe does not call for broccoli as one of the ingredients but I decided to add it, because I had it on hand, and it usually seems to go well in stir fry recipes; so I listed it as optional. This is a simple recipe and doesn’t take a long time to prepare. I thought this dish was pretty good, and my wife really liked it, but I’m not a fan of sweet and sour. If you like sweet and sour or just want to try a dish that is a little different for a stir fry recipe, give this Sweet and Sour Shrimp Recipe a try. Enjoy

Ingredients
  • ¼ corn syrup
  • 1 pound medium shrimp (shelled, deveined and tail removed)
  • 2 cups broccoli florets cut into 1 inch pieces (optional)
  • 1 medium onion (cut into wedges)
  • 1 bell pepper (cut into 1 inch pieces)
  • 1 clove garlic (minced)
  • 1 teaspoon ground ginger
  • 2 tablespoons corn starch
  • 1 teaspoon salt
  • ½ cup water
  • ⅓ cup light corn syrup
  • ⅓ cup ketchup
  • ¼ cup cider vinegar
  • 1 can water chestnuts 8 ounces (grained)
  • Hot rice
Instructions
  1. Chop all the vegetables and set aside.

  3. In a small bowl mix together the cornstarch, salt and water-set aside.
  4. In a large skillet or wok heat the oil over medium high heat. Add the shrimp and cook until pink-stirring constantly. Remove the shrimp onto a plate and set aside. (This should take 3-4 minutes)

  6. In the same skillet add the onion, pepper, garlic and ginger, and the broccoli if you decide to use it; cook for about 5 minutes or until onion has lightly browned.
  7. Stir in the cornstarch mixture, ketchup, vinegar, cooked shrimp and water chestnuts. Stir constantly, cooking until mixture thickens.
  8. Serve over hot rice.

I had some fruit trees come in on Friday, and I had to work over the weekend so I didn’t have the time to plant them until today. Seeing as this was stacking up to be a real busy day I decided to get out the slow cooker. This allowed me to get dinner on, and go about getting done, what I had to get done.

This Slow Cooker Asian Pork Roast Recipe is a simple recipe that doesn’t require a lot of prep time. I was a little concerned about the ground cloves the recipe called for; because of not being sure how this spice would blend in with the rest of the ingredients. As usual the pork, because of being cooked in the slow cooker, was nice and tender, and it turned out that the ground cloves was a nice added touch. I decided to serve this recipe with Garlic Mashed Potatoes because of the delicious gravy that was created with the recipe, but if you want to keep to the Asian theme you may want to serve it over rice.

  • 1 boneless pork roast (pork loin or butt)
  • 1 large onion (slice)
  • 3 cloves garlic (crushed and minced)

  • 3 bay leaves
  • ¼ cup hot water
  • ¼ cup soy sauce
  • 1/ 4 cup honey
  • 2 tablespoons rice vinegar

  • 3 tablespoons cornstarch
  • ¼ cup cold water
Instructions
  1. Cut the pork roast into 2 pieces and brown in a large frying pan using the oil.

  3. In a small bowl combine the hot water and honey. Then mix in the soy sauce, ginger, salt, pepper, vinegar and cloves.

  5. Slice the onions and place them on the bottom of the slow cooker placing the browned roast on top. Add the bay leaves and pour the honey mixture over the top of the roast.

I didn’t know how much difference it would make in the flavor to fresh squeeze the orange juice, but I think it defiantly was a nice added touch to the recipe. Broccoli and Beef Stir Fry Recipe

Everyone here was in the mood for some type of Asian Stir Fry. Seeing as we have no Chinese restaurants even close, I decided on this Broccoli and Beef Stir Fry Recipe. This is a simple recipe that doesn’t call for many ingredients so there is a good chance you may have most of them on hand already. There is a short marinade time involved but it works out pretty well because it gives you the time to get the garlic, ginger, and broccoli ready for the pan. You can use this dish as a standalone, or serve it over rice, which worked out well for me for dinner.

Ingredients
  • 1 pound sirloin or flank steak
  • 4 tablespoons soy sauce
  • 2 tablespoons dry Sherry
  • 1 teaspoon cornstarch
  • 1 bunch fresh broccoli (Slice florets)
  • 2 garlic cloves (minced)
  • 2 slices fresh ginger (finely minced)
  • 2 tablespoons vegetable oil
Instructions
  1. Slice the steak into thin strips. (About 1/ 8 inch)
  2. Place the steak strips into a disposable plastic bag or reusable container; then add the soy sauce, sherry, and cornstarch and mix thoroughly to combine. (if you us a plastic bag-seal the bag and work the mixture from the outside with your hands to combine)Marinade for 15-30 minutes.
  3. in a large skillet or wok add the oil, minced garlic, and ginger. Cook on medium high heat for about 20 seconds.(This cooks fast so be careful not to overcook) Add the beef mixture, stirring constantly until beef is no longer pink inside. Add the broccoli florets and stir fry for an additional 5 minutes. Broccoli will be dark green and crisp.
  4. Serve as a standalone dish or over hot rice.

Hamburger Chop Suey Recipe

Hamburger Chop Suey RecipeMany Years went by before I had the chance to taste or try a Chinese Chop Suey dish. I think it was mainly because of the area we lived in. There were no Chinese restaurants;-heck, there wasn’t even a Burger King around until I started growing up a little bit. Anyway, this Hamburger Chop Suey Recipe was the only form of Chop Suey I knew of at the time. It has been a staple for our family for many years. This is a simple recipe incorporating many of the ingredients from the store such as the Chop Suey vegetables. It is fairly quick to put together and requires very little prep time. I used roasted almond slivers for a garnish on this dish, but if you don’t care for that idea Chinese noodles also work out very well.

Ingredients
  • 1 pound lean ground beef
  • 1 medium onion (sliced)
  • 1 can Chop Suey vegetables (28 ounces, drained)
  • 1 tablespoon instant beef bouillon
  • 2 cups hot water
  • ¼ cup cold water
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • ½ cup slivered almonds (roasted)
  • 1 jar pimientos (sliced and drained)
  • 4 cups white rice (cooked)
Instructions
  1. Cook the rice while preparing the recipe, and roast the slivered almonds. (to roast the almonds spread them out on a baking sheet and roast them at 350F for 10 to 15 minutes shaking the pan occasionally to rotate them.)
  2. Using a large skillet brown the burger and onion until burger is no longer pink inside. Drain if needed.
  3. Dissolve the beef bouillon in the hot water and pour into the meat mixture. Bring to a boil, then lower the heat to a simmer and cook until the onion is tender. Then add the Chop Suey vegetables.
  4. In a small bowl mix together the cold water, soy sauce, and cornstarch-add the mixture to the beef and vegetables. Cook until heated through and thickened.
  5. Serve over hot rice garnished with the roasted almonds and pimientos.

I like preparing stir fry recipes, so when I came across this Sweet and Sour Sausage Stir Fry Recipe, I thought I would give it a try. It is obvious this is not your standard stir fry but the blend of the pineapple with the smoked sausage was a good combination of flavors. This is a lightly seasoned recipe that calls for low sodium soy sauce so if you are used to kind of a salty taste in you stir fry you may want to add some salt to taste. This is a simple recipe with not much cooking or prep time; so if you’re in a hurry you can have dinner on the table pretty fast. I prepared the recipe as written I was happy with the results.   • 1 16 ounce package smoked sausage (I used smoked Polish Sausage) cut into 1/ 2 inch pieces.
  • 1 medium onion (sliced lengthwise)
  • 1 cup shredded carrots
  • 1 can unsweetened pineapple chunks (undrained)
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger

Instructions
  1. Brown sausage in a nonstick wok, or large frying pan.
  2. Add the onion, carrots, and stir fry until crisp tender. Then drain the pineapple reserving the juice; add the pineapple to the sausage mixture.
  3. In a bowl combine the water, ginger, pineapple juice, soy sauce and mix until smooth. Add the mixture to the skillet or wok, bring to a boil, and cook until thickened.

Honey Ginger Chicken Recipe

Make sure you have some wet naps on hand when you serve this Honey Ginger Chicken Recipe, its gooey and delicious. This chicken recipe takes some time to prepare but it is well worth the effort. The chicken is so tender it melts in your mouth, and the Honey Ginger blends into the flour coating very well. When I first looked at this recipe I thought it looked ok; but to my surprise this one will go on my favorites list, because it is an exceptional oven roasted chicken recipe.

This recipe doesn’t require much prep time but you do have allow an hour for roasting the chicken. This Honey Ginger Chicken Recipe is a great dinner or party recipe; your guest will love it. Enjoy

Ingredients

3 tablespoons cooking oil

3 tablespoons butter or margarine

1/3 cup flour

3/4 teaspoon salt

1 teaspoon ground ginger (divided)

1/4 teaspoon pepper

3 pounds chicken drumsticks or thighs

1/3 cup honey

1/3 cup chili sauce

1/3 cup soy sauce

Directions

Preheat oven to 425F.

1. Heat the oil and butter in a 9x13x2 baking dish until butter is melted.

2. Using a food grade one gallon disposable plastic bag combine the flour, salt, pepper and 1/2 teaspoon ginger. Shake the chicken in the bag a few pieces at a time to coat thoroughly.

3. Place the chicken with skin sides down into the baking dish, and bake for 30 minutes. Turn the chicken and bake for an additional 15 minutes.

4. While the chicken is roasting using a small bowl mix together the honey, chili sauce, soy sauce, and the other 1/2 teaspoon of ginger.

5. Remove the chicken from the baking dish and drain the fat. Return the chicken to the baking dish and pour the sauce over the top of the chicken pieces. Bake for 15 minutes; basting by spooning the sauce over the chicken every 5 minutes.
