<p>Sweat Treats at Christmas time is always part of the celebration around this house, so I try to prepare ahead of time, like this Red Velvet Cup Cake Recipe. Most of the treats freeze very well so when Christmas comes along all we have to do is take them out of the freezer as needed. The Red Velvet cup cakes are very colorful and good tasting, making it just right for the Holiday’s. Their looks like there are a lot to the recipe, but it is really very simple and move along quicker than you would think. Be careful of the red food coloring though, because if you spill it; that can get out of control pretty easily. Bake some of these Red Velvet cup cakes up for Christmas, and you’ll have a delightful, colorful treat.</p>

<li class="ingredient">1 cup buttermilk</li>
<li class="ingredient">1 teaspoon vanilla extract</li>
<li class="ingredient">1 teaspoon white vinegar</li>
<li class="ingredient">1 teaspoon baking soda</li>
<li class="ingredient">Your Favorite Frosting recipe</li>

<li class="instruction">Preheat the oven to 350 degrees.</li>
<li class="instruction">Grease 24 cupcake cups or line with paper liners.</li>
<li class="instruction">Cream butter and sugar until fluffy.</li>
<li class="instruction">Add eggs and blend well.</li>
<li class="instruction">Make a paste of cocoa and food coloring (coco completely dissolved in the coloring) and add to the butter mixture.</li>
<li class="instruction">Sift flour and salt together into this mixture then one at a time, add the following ingredients: buttermilk, vanilla, and water.</li>
<li class="instruction">In a small bowl, combine the vinegar and the baking soda. Fold it into the cake batter with a spoon and mix it thoroughly.</li>
<li class="instruction">Spoon or pour batter into cup cake cups, dividing among the 24 equally.</li>
<li class="instruction">Bake for 15 to 20 minutes until the cake springs back when touched. (I didn’t trust this so I used a tooth pick test on this)</li>
<li class="instruction">Top with your favorite frosting and decorate. (I used cream cheese frosting)</li>

<p>I finally gave in. my wife kept looking at sweet treats in the store and threatened to buy some if I didn&#8217;t get busy and bake pretty soon. With the Holidays coming up I really tried to avoid it; but I gave in. I thought if you’re going to do it, you may as well do it right-after all what’s a couple thousand calories. Well it is nothing if you are 110 pounds and 5”7 like she is. Now the truth is, I’m afraid, it is not the same for me. I won’t tell you what I weigh; just that it is too much. So enough crying and here it is; another sinfully delicious sweet treat recipe. I guarantee you will love this Fudge-Filled Peanut Butter Cookie Recipe-rich chocolate sandwiched in-between 2 peanut butter cookies. Bake and Enjoy</p>

<li class="instruction">Heat oven to 375°F</li>
<li class="instruction">In large bowl, beat 1/2 cup peanut butter, the shortening, granulated sugar and brown sugar with electric mixer on medium speed until fluffy.</li>
<li class="instruction">Beat in egg until smooth. Beat in flour, baking powder and baking soda.</li>
<li class="instruction">Shape dough into 48 one-inch balls. On ungreased( I did use cooking spray-I would recommend it) cookie sheet, place balls 1 inch apart.</li>
<li class="instruction">Flatten balls to 1/4-inch thickness by pressing with a fork in a crisscross pattern.</li>
<li class="instruction">Bake 4 to 8 minutes or until bottoms are golden brown. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.</li>
<li class="instruction">For Filling</li>
<li class="instruction">In small microwavable bowl, microwave chocolate chips uncovered on High about 1 minute or until softened; stir until smooth.</li>
<li class="instruction">Stir 1/4 cup peanut butter into chocolate until smooth. Cool to room temperature or until thickened.</li>
<li class="instruction">Sandwich pairs of cookies, bottoms together, with 1 teaspoon chocolate mixture. Let stand about 1 hour or until chocolate is firm.</li>

They came out light and fluffy, pretty much tasting like pumpkin bread, only with a lighter texture. I topped mine with the standard topping of butter and maple syrup and they were very good. I think some type of fruit topping with whip cream, would turn this into an excellent desert dish.</p>

<p>This week I was contacted by one of our churches to cook something again. Due to the time of year I decided to bake Pumpkin Cake Bars with Cream Cheese Frosting. This is an easy recipe with not a lot of prep time, and chances are you will have most of the ingredients on hand. Do to trying to get rid of some extra weight I’ve been trying to keep the sweet treats to a minimum. I’m glad I didn’t make any extras; they smelled so delicious, I swear I would of eaten half of them myself. And that’s not to mention the delicious, smooth and creamy cream cheese frosting. <li class="instruction">Preheat oven to 350°F., Grease and flour one 9 x 13 inch pan.</li>
<li class="instruction">In a mixing bowl, beat together the eggs, sugar, oil and pumpkin.</li>
<li class="instruction">Sift together the flour, baking powder, salt, baking soda, salt and cinnamon; add to wet ingredients and mix thoroughly.</li>
<li class="instruction">Spread into prepared pan. I line the baking pan with aluminum foil so I can just lift the bars out, then cut them right on the foil. This is also great if you are leaving them somewhere-you can just deliver them on the foil and don’t have to leave your pan.</li>
<li class="instruction">Bake at 350° for 25 to 30 minutes.</li>
<li class="instruction">Remove from oven and allow to cool thoroughly.</li>
<li class="instruction">For the frosting: beat together the cream cheese, butter and confectioner&#8217;s sugar until smooth.</li>
<li class="instruction">Evenly spread over bars after they have cooled.</li>

<p>Here in Upper Michigan the blueberry season is under way. I just love this time of year for berries, because almost every kind of berry we have up here is ripening. Most of the time when I make a berry pancake I usually mix in the berries into the batter. This Butter Milk Blueberry Pancake Recipe called for placing the berries on the pancake as it is cooking. I guess the biggest advantage is being able to place any number of berries you want into each pancake. The basic pancake recipe for these  Butter Milk Blueberry Pancakes is excellent and I am sure the pancakes would taste great even without the berries.</p>

<li class="instruction">In a separate bowl beat the eggs; then mix in the buttermilk and melted butter.</li>
<li class="instruction">Using a wooden spoon or a spatula mix the buttermilk mixture with the flour ingredients to form a batter.</li>
<li class="instruction">Over medium-high heat, spray a large skillet with cooking spray.</li>
<li class="instruction">Use a dipper to pour the batter into the pan to form the size pancakes you prefer, distributing the blueberries immediately on top of the pancake batter.</li>
<li class="instruction">Cook until golden brown on each side-a good way to tell if it is time to turn the pancake; is by small bubbles forming on the top. Usually takes 2 to 3 minutes on each side depending on how much heat you are cooking with.</li>
<li class="instruction">Serve with butter and syrup and enjoy.</li>

<li class="instruction">Heat oven to 350°F. Spray bottom only of 13&#215;9-inch pan with cooking spray. In large bowl, stir cookie base ingredients until soft dough forms. Press dough in bottom of pan. Bake 12 to 15 minutes or until light golden brown. Cool completely, about 30 minutes.</li>
<li class="instruction">In large bowl, beat all filling ingredients except powdered sugar with electric mixer on medium speed until creamy and smooth. It is so delicious it is impossible to eat just one. If you like peanut butter and chocolate don’t pass this simple recipe up. It will only take about a half an hour and you will have 3 dozen cookies on the table ready to eat. Add a glass of milk, and the smiles you’ll get from your family, will be well worth the effort. <p>This is the simplest cheese cake recipe I have ever prepared. There is very little prep time and very little work involved. When I saw this recipe; it was so simple; it made me nervous about what the outcome would be. The result was a colorful and delicious desert. In many parts of the country it is very near the strawberry season, make yourself a treat with the fresh berries. Enjoy</p>
<p>&nbsp;</p>
<p>Ingredients</p>
<p>1 (6 ounce) 9-inch graham cracker crusts, from the store or your favorite recipe</p>
<p>2/3 cup evaporated milk</p>
<p>1 (8 ounce) package fat free or regular cream cheese, softened</p>
<p>1 large egg</p>
<p>1/2 cup granulated sugar</p>
<p>2 tablespoons all-purpose flour</p>
<p>1/2 teaspoon lemon juice</p>
<p>1 1/2-2 cups halved fresh strawberries</p>
<p>3 tablespoons strawberry jelly, warmed</p>
<p>Directions:</p>
<p>1.  Preheat oven to 350F.</p>
<p>2. Place evaporated milk, cream cheese, egg, sugar, flour and mix until well blended. Then add and mix in the lemon juice.</p>
<p>3. Pour into the prepared pie crust and bake 30 to 40 minutes until the center has set.</p>

<p>5. Arrange strawberries on top of pie; drizzle with jelly.</p>
<p>6. Refrigerate for 2 hours before serving.</p>

<p>My wife and I had a craving for some type of bakery treat so we decided to try and stay at least on the health side a little bit. This Spicy Cherry Rolled Oat&#8217;s Muffin Recipe makes a dozen muffins. I used dried cherries in these but I am sure you could also use raisin or any other type of dried berry you would like use. However the cherry flavor blended in real well with the other ingredients, combined with the cinnamon and wheat germ topping these muffins are an excellent treat. Enjoy</p>

<p>Ingredients:</p>
<p>&nbsp;</p>
<p>1 cup whole wheat flour</p>
<p>1/2 cup cornmeal</p>
<p>1/2 cup rolled oat, quick cooking</p>
<p>1/4 cup brown sugar, packed</p>
<p>3 teaspoons cinnamon sugar</p>
<p>1 teaspoon baking powder</p>
<p>1/2 teaspoon baking soda</p>
<p>1/2 teaspoon salt</p>
<p>1 1/4 cups fat-free buttermilk</p>
<p>1/2 cup dried cherries (or cranberries, whatever you prefer)</p>
<p>1 egg</p>
<p>2 tablespoons canola oil (or vegetable oil)</p>
<p>2 tablespoons wheat germ</p>
<p>&nbsp;</p>
<p>Directions</p>
<p>1 Preheat the oven to 400 degrees.</p>
<p>2 Line a 12-cup muffin pan with paper liners.</p>
<p>&nbsp;</p>
<p>3.  Combine the flour, cornmeal, oats, and brown sugar, 1 teaspoon of the cinnamon sugar, baking powder, baking soda and salt in a large bowl. Make a well in the center.</p>

<p>4. Combine the buttermilk, cherries , egg  and oil in a small bowl, beating with a whisk until blended. Add the buttermilk mixture to the flour mixture, folding with a rubber spatula just until the flour mixture is moistened.</p>

<p>5. Fill the muffin cups evenly with the batter; sprinkle with the remaining 2 teaspoons of cinnamon sugar and the wheat germ. Bake until a toothpick inserted into the center comes out clean, about 15 minutes.</p>
<p>6. Cool or serve warm- Delicious hot,  with melted butter, so much for healthy.</p>
