This Teriyaki Chicken for Two recipe was adapted from Cooks Country Cooking for two cookbook. I found their procedure for crisping the chicken pretty unique. They weighted the chicken down by placing a large pot on top of the chicken weighted with 2 (14-15- ounce cans of whatever you may have on hand). The chicken browns evenly, and is nice and crisp.

This recipe is quick and simple to prepare and doesn’t require that many ingredients; my wife absolutely loved the sauce.

Ingredients
  • 4 bone-in chicken thighs
  • 1 teaspoon vegetable oil
  • ¼ cup sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • ¼ teaspoon ginger
  • 1 garlic clove (crushed and minced)
  • ¼ teaspoon cornstarch
  • Pinch of red pepper flakes
Instructions
  1. Cover the bottom of a large sauce pan with aluminum foil using enough foil to bring the edges to the top to secure it. Place 2 cans 14 – 15 ounces each inside the pan for weight. (I lightly sprayed the bottom of the aluminum foil with cooking spray).
  2. Trim any excess skin and fat off the chicken and salt and pepper to taste. In a nonstick skillet using the oil over medium high heat place chicken in the skillet skin side down, and then place the weighted pan on top of the chicken. Cook for 10 minutes or until skin is nicely browned and crispy. Flip chicken and continue cooking until chicken reaches an internal temperature of 175F; remove from skillet and set aside on a plate and then remove any fat left in the skillet.
  3. While the chicken is cooking in a bowl whisk together the sugar, soy sauce, mirin, garlic, red pepper flakes, and cornstarch until thoroughly combined. Pour the mixture into the skillet and bring to a simmer and then place the chicken in the skillet skin side up. Cook until sauce thickens and turns glossy, and then turn the chicken in the sauce to evenly coat.
  4. Serve hot.

Ingredients
  • 1 can tomatoes (28 ounces) drain and reserve ¼ cup of the juice
  • 16 ounces boneless country style ribs
  • Salt and pepper
  • 2 teaspoons olive oil
  • 1 large shallot (finely chopped)
  • 2 garlic cloves (crushed and minced)
  • 1 ½ teaspoons fresh rosemary (minced)
  • ½ cup dry red wine (I used cherry in this recipe)
  • 2 cups Ziti pasta (uncooked)
  • Grated Romano cheese
Instructions
  1. Pulse tomatoes in a food processor until coarsely chopped; set aside.
  2. In a large skillet over medium high heat using the oil brown the ribs on all sides; set aside on a plate. In the same skillet cook the shallots seasoned with ¼ teaspoon salt until softened. Add the garlic and rosemary and cook for about 30 seconds until fragrant. Stir in the wine, scrapping any dripping from off the bottom of the skillet. Continue cooking until wine is reduced to about half.
  3. Stir in the tomatoes with the reserved juice and work the pork ribs into the mixture, cover, and cook on simmer for about 1 ½ hours until pork can easily be separated with a fork. Remove pork to a plate and let cool slightly and then using a 2 forks separate into bite size pieces; stir the pork back into the sauce in the skillet; salt and pepper to taste and keep warm.
  4. About 15 minutes before the pork is done cook pasta according to package directions; drain and reserve ½ cup of the pasta water.
  5. Mix the pasta and sauce together adjusting the consistency if needed with the reserved pasta water. Serve garnished with the cheese.

Slow Cooker Southern Style Chicken and Dirty Rice for Two

If you’re cooking for two this is a great recipe to free up some time by using the slow cooker. There is only about 15 minutes of prep time and 4 – 5 hours of cooking time. It’s a great way to free up an afternoon, and because it’s a one dish recipe supper will be ready to serve.

Ingredients
  • 4 ounces of kielbasa sausage (cut into 1 inch pieces)
  • 1 small onion (finely chopped)
  • 1 red bell pepper (cleaned and cut into 1 inch pieces)
  • 2 garlic cloves (crushed and minced)
  • 2 teaspoons chili powder
  • ½ teaspoon dried thyme
  • 2 cooks cooked rice
  • Salt and pepper
  • 1 pound boneless skinless chicken thighs
  • 2 green onions (sliced thin)
Instructions
  1. Spray slow cooker on bottom and sides with cooking spray.
  2. In a medium size microwavable bowl mix together the kielbasa, onion, bell pepper, garlic, chili powder, and thyme. Microwave for 5 minutes stirring a couple of times while cooking; place in slow cooker.
  3. Add the rice and mix in ¼ teaspoon salt, and ¼ teaspoon pepper. Season chicken with salt and pepper and add the thighs into the slow cooker mixture.
  4. Slow cook for 4 – 5 hours until chicken reaches an internal temperature of 185F. Remove chicken from the slow cooker and using 2 forks separate chicken into bite size pieces. Stir the chicken and green onions into the rice mixture, salt and pepper to taste and serve hot. Enjoy

  • 6 Slices of White Sandwich Bread
  • 4 Slices of Deli Turkey
  • 4 Slices of Gouda
  • 1 Tbsp of Mayo
  • 1 tsp of Prepared Yellow Mustard

  • Milk - a little less than ¼ cup
  • Seasoned Salt to taste
  • 1 Tablespoon of Vegetable Oil
  • 2 Tablespoons of Butter

  1. in a small bowl mix together the mayo and mustard; aside.

  3. In a shallow wide bowl whisk together the eggs and milk – big enough to dip one side of the sandwich in.

  5. Lay out three pieces of bread, spread a thin layer of the mayo on one piece and top with a slice of cheese and then a slice of turkey (I used several slices because I used thinly sliced). For the second piece of bread spread on a little more of the mayo mixture and top with another slice of turkey and place another slice of cheese on top and place the 3rd piece of bread on top of that to form the sandwich.(do not skip the last slice of cheese it is needed to hold the sandwich together when the cheese melts).

  8. In a nonstick skillet over medium high heat melt the butter along with the oil. Dip each side of the sandwich in the egg mixture like you are making french toast. Place in the skillet and cook until golden brown, flip, and continue cooking until nicely browned and cheese is melted.

This Classic Chili for Two Recipe is the perfect amount for two people and doesn’t require a lot of prep or cooking time. It is seasoned perfectly for my taste, that being just slightly on the hot side; but if you like it hot; you can turn up the heat by increasing the spices.

Instructions
  1. in a large sauce pan using the oil over medium heat cook the onion, green pepper, and garlic seasoned with the cumin, coriander, red pepper flakes, cayenne pepper, and ¼ teaspoon salt; cook until vegetables start to soften. (3 – 5 minutes) break the ground beef up inco the mixture and continue cooing until ground beef is no longer pink inside.
  2. Stir in the diced tomatoes, tomato sauce and kidney beans, bring mixture to a simmer. Cover and cook for 45 minutes stirring occasionally. Remove lid and continue cooking until chili starts to thicken. (if chili is already thickened skip the last step – if chili starts to stick add ¼ cup water.
  3. Serve hot and enjoy.

Chicken Cacciatore for Two

Sometimes it’s hard to scale down a recipe for 2 people without sacrificing the quality of the recipe, but this Chicken Cacciatore for Two recipe is delicious. This recipe is fairly quick to put together and doesn’t require a lot of cooking time. You can use 2 chicken leg quarters in this recipe or 3-4 chicken thighs depending on whats available. I used 3 because that’s what was in the package.

  • 8 ounces fresh portabella mushrooms (trimmed and quartered)
  • 1 small onion (chopped)
  • 1 medium red pepper (chopped)
  • 1 tablespoon tomato paste
  • 2 garlic cloves (crushed and minced)
  • ½ teaspoons dried rosemary
  • ⅛ teaspoon red pepper flakes
  • ¼ cup white wine
  • 1 can diced tomatoes (14.5-ounces)
  • ½ cup chicken broth
Instructions
  1. Salt and pepper the chicken on both sides. In a large nonstick skillet over medium high heat brown chicken on both sides; remove chicken to a plate. Reserve about 1 tablespoon of fat in the skillet.

Mix in the wine stirring any dripping off the bottom of the pan and continue cooking until liquid is evaporated.

  • ½ cup long grain white rice
  • salt and pepper

  • 1 teaspoon vegetable oil

  • ¼ teaspoon dried thyme
  • ¼ cup white wine
  • 2 tablespoons fresh parsley (chopped)
Instructions
  1. Preheat oven to 350F.
  2. In a medium size microwavable bowl mix together ¾ cup chicken broth, rice, and ¼ teaspoon salt. Cove and microwave for 7-8 minutes or until liquid is absorbed.

  9. Serve chicken and rice together.

Every year I look forward to the winter squash varieties with my favorite being the butternut because of its smooth texture. However this recipe will work just as well for almost any winter squash.

Ingredients
  • 1 medium butternut squash or buttercup squash (about 2½ pounds)
  • 2 ½ tablespoons butter (melted)
  • 3 tablespoons dark brown sugar
Instructions
  1. Lightly spray a cooking sheet with cooking spray. Place oven rack at upper middle position, place empty baking sheet in the oven, and preheat oven to 400F.
  2. Cut squash in half length wise and remove the seeds. Place squash on baking sheet and bake for 40 to 50 minutes or until flesh is tender. ( a fork inserted in the skin should go easily in)
  3. In a small sauce pan melt the butter and mix in the brown sugar.
  4. Flip squash to cut side up and using a pastry brush generously coat with the brown sugar butter mixture.
  5. Switch the oven to broil, and broil until squash starts to brown and a glaze is formed.

Chicken Parmesan is one of my favorite supper dishes, but with only 2 of us at home it is nice to be able to cut the recipe down a little bit. This Chicken Parmesan recipe is designed for 2 people, but if the chicken breasts are small you can stretch 3 out of it. (the local markets smallest package was three, but they were small – so I had some left overs, which was fine). Be sure to pound the chicken breasts down to the same thickness so they cook equally.

  • Sauce
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves, minced
  • Salt
  • ¼ teaspoon dried oregano
  • Pinch red pepper flakes (or to taste)
  • 1 can crushed tomatoes (28-ounces)
  • ¼ teaspoon sugar
  • Chicken and Pasta
  • 2 boneless skinless chicken breasts (6-ounces each)
  • Salt and pepper
  • 4 ounces Vermicelli
  • 1 large egg
  • 1 tablespoon all-purpose flour
  • ½ ounce grated Parmesan cheese
  • ½ cup panko bread crumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ⅓ cup vegetable oil
  • ½ cup shredded mozzarella cheese
Instructions
  1. In a large skillet or medium size sauce pan over medium heat - heat 1 tablespoon of olive oil until shimmering. Add the garlic, ¾ teaspoons of salt, oregano, and red pepper flakes; cook for 30 seconds until fragrant. Stir in the crushed tomatoes and sugar, bring mixture to a boil, reduce heat to simmer, loosely cover, and simmer for 20 minutes or until mixture is thickened. Remove from heat and stir in the remaining olive oil; set aside and keep warm.

  3. Pound chicken down to about ½ inch and let set for 20 minutes to come to room temperature.

  5. While sauce is cooking, cook pasta according to package directions for al dente, drain, and reserve ½ cup of the pasta water. (to cook pasta 2 quarts water and ½ teaspoon salt) When the sauce is done mix ¾ cup of the sauce into the pasta; set aside and keep warm.

  8. In a shallow dish whisk together the flour and egg until smooth. Place the bread crumbs in another shallow dish like a pie plate.

  10. Preheat broiler with rack 4 inches below element
  11. Dip chicken in the egg mixture letting any excess drip off, and then roll chicken in the bread crumbs. In a large skillet over medium high heat cook chicken using the cooking oil until nicely browned (I cooked them to 160F on this step).

  14. Place chicken on a broiler pan and top chicken with mozzarella cheese. Broil until cheese is melted and starts to brown.

  17. Spoon 2 tablespoons of sauce over the chicken, and mix any leftover sauce into the pasta. If needed mix in some of the reserved pasta sauce to adjust the consistency of the pasta. Enjoy

Ingredients
  • 2 boneless, skinless chicken breasts, (6- to 8-ounces each)
  • Salt and pepper
  • ½ cup panko bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1½ tablespoons unsalted butter (softened, plus 1 tablespoon melted)
  • 1 tablespoon minced fresh parsley
  • ¼ teaspoon dried thyme
  • 1 garlic clove (minced)
  • ½ cup heavy cream
  • ⅓ cup chicken low sodium broth
  • ¼ cup dry white wine
  • 1 small shallot (minced)
  • 1 teaspoon Dijon mustard
Instructions
  1. Pat chicken dry, season with ½ teaspoon salt on both sides. Wrap chicken in plastic wrap and refrigerate for 30 minutes.
  2. Preheat oven to 425F.
  3. in a medium size bowl mix together the panko, Parmesan, softened butter, 1½ teaspoons parsley, thyme, garlic, and ¼ teaspoon pepper with fork until butter is fully incorporated into crumbs.
  4. Lightly spray a 13 x 9 casserole dish with cooking spray, pat chicken pieces dry and season generously with salt and pepper. Place chicken in casserole dish leaving about 1 – 2 inches between them; using a pastry bush coat tops of chicken with the melted butter. Spoon the crumb mixture onto the top of the chicken.
  5. In a 2 cup measuring cup mix together the cream, broth, wine, shallot, and mustard. Carefully pour the sauce around the chicken being careful not to pour on top. (You want to keep the crumb mixture dry) bake until chicken is at 160F and crumbs are well browned.
  6. Remove chicken from the oven, place chicken on a serving platter, return the casserole dish to the oven and continue baking until sauce is thickened. This will just take several minutes so watch it closely. Pour sauce around chicken, garnish with remaining parsley, and serve hot.
