Strawberry season is here in Upper Michigan so I thought it would be a great time to post this Strawberry Rhubarb Custard Ice Cream Recipe. The sweet strawberries with the sour flavor of the rhubarb makes for a delicious combination of flavors – and the opportunity to use fresh fruit makes it even better.

This is a simple recipe, but it is a little time consuming, but worth the effort.

Ingredients
  • 3 cups whole milk
  • 12 ounces of heavy cream
  • 1 cup sugar (divided)
  • ¼ teaspoon salt or to taste
  • 2 tablespoons corn syrup
  • 4 large egg yolks
  • 1 teaspoon cornstarch
  • 1 tablespoon vanilla
  • Ingredients of Rhubarb Swirl
  • 1 cup strawberries (diced)
  • 3 rhubarb stalks (sliced)
  • ½ cup sugar
  • ⅛ teaspoon salt
Instructions
  1. To make the swirl combine all the ingredients into a medium size saucepan and cook over medium heat until rhubarb is tender and syrup forms; set aside to cool in the refrigerator.
  2. In a small bowl whisk together the egg yolks, ¼ cup sugar, and the cornstarch; set aside.

  4. In a large pot or saucepan (be sure to use a large enough pan for this the mixture will boil up pretty high)mix together the milk, cream, ¾ cup sugar, salt, and corn syrup. Bring the mixture to a boil over medium heat, reduce to simmer. Mix 1 cup of the milk mixture slowly into the egg mixture to temper the eggs, and then mix the egg mixture back into the milk and cream mixture to form the custard. Continue cooking on simmer stirring constantly with a wooden spoon until custard thickens; remove from heat and stir in the vanilla. (custard is ready when you slide your finger across the spoon and the streak it makes stays in place).

  6. Pour the custard into a food grade zip lock bag and place it in a large bowl seam side up. Surround the bag with ice cubes and water – mostly ice cubes and let the mixture cool for 30 minutes.

  8. Process custard in ice cream maker according to ice cream maker directions.
  9. Layer the ice cream in a dish starting with the strawberry rhubarb sauce. (A 9x5 glass bread pan is just the right size for this)

  11. Cover with plastic wrap and freeze for 3 – 4 more hours.

Note: I prepared this recipe as written and thought it was really good – but if I make this again I will use 1 teaspoon vanilla and 1 tablespoon of cornstarch in place of the amounts it calls for; I do believe that is a typo in the recipe.

Ingredients
  • 6 ounces of semi-sweet chocolate (shaved into pieces)
  • ½ cup water
  • ¼ cup sugar
  • 3 egg yolks
  • 1½ cups heavy cream
  • Whipped cream for topping
Instructions
  1. Place the chocolate pieces into a blender.
  2. In a small sauce pan mix the sugar and water together. Bring to a full boil, and boil for 3 minutes.
  3. Pour the hot water over the chocolate in the blender, and blend for 6 seconds on high speed. Add egg yolks and blend for another 5 seconds or until smooth. Add heavy cream and blend for another 10 seconds.
  4. Pour the chocolate mixture into 4 Ramekin dishes. Set the dishes on a tray and cover with aluminum foil. Freeze for 2-3 hours or until firm.
  5. Remove from the freezer 20 to 30 minutes before serving to soften up a little bit. Top with whipped cream.

Seedless Blackberry Preserves Recipe

My backyard berry plants have done exceptionally well this summer, especially the black berries. We were able to keep up fairly well with the blueberries and raspberries but the black berries are getting out of hand; so I am preserving what I can. We use a lot of wine for cooking; some of them are going into making blackberry wine, some are being frozen, and some made into preserves to use in recipes, on ice cream, toast, or anything else we can use blackberry preserves on. This Seedless Blackberry Preserves Recipe is a simple basic recipe but does require some time to prepare the berries. I used a juicer to remove the seeds and create a blackberry puree to make the Blackberry Preserves. If you don’t have a machine to do this task, run the berries through a sieve if you want to remove the seeds.

Ingredients

7 cups berry puree

7 cups sugar

3 tablespoons lemon juice

1 box of sure jell (1.75 ounces)

Directions

1. Place empty jars in a canner with lids. Bring to a boil. Shut off the heat and let stand in the hot water to sterilize until needed.

2. In a large pan combine the blackberry puree, sugar, lemon juice, and bring to a boil. Stir in the sure jell and bring to a rolling boil for 2 minutes. (Be sure to use a large enough pan so mixture doesn’t boil over)

3. Skim the foam off the surface.

4. Remove the canning jars from the hot water and pour the berry mixture into the jars to about 1/2 inch from the top.

5. Seal and process in boiling water bath for 10 minutes.

Makes 8 cups

I love it when the fresh fruit season gets here. The only problem is it doesn’t last long enough. So much of it ends up in the freezer. However; it is real easy to use fresh frozen fruit to make a topping for ice cream or for anything else you might need a fresh fruit topping for. Freeze the fruit in a zip lock freezer bang so you can pour out just what you need. The recipe here is just for the fruit topping. You can use any type of fruit you want to use and it should come out just fine For this Banana Split I used blueberries, strawberries and hot fudge in the center topping it with whip cream, mixed nuts and a black berry on top of each scoop. Ingredients
  • 2 cups frozen berries (berries do not have to be thawed)
  • ¼ cup water
  • 1/ 4 cup sugar or artificial sweetener
  • 1 Tablespoon corn starch
  • 1 tablespoon lemon juice or to taste
Instructions
  1. In a small bowl combine water, lemon juice, and corn starch- mixing until the cornstarch is dissolved.
  2. In a small or medium size sauce pan combine the berries, sugar and cornstarch mixture.
  3. Cook over medium heat till berries start to break down and mixture is thickened.

We have had a great year for berries here in Upper Michigan. Hot weather for most days and rain about one day a week. Our blueberry, raspberry and blackberry plants producing just an unreal amount of berries. I love homemade ice cream. This Blackberry Ice Cream Recipe was a great way to use some of the fresh berries. A beautiful color with a fresh delicious blackberry flavor. It is a simple recipe. Most of the time is used letting the ice cream mixture cool before putting it in the ice cream machine.
I have a small ice cream machine. My only regret was it was not big enough to double the recipe. Enjoy

Ingredients
  • 2 cups fresh blackberries, rinsed
  • 1 cup sugar, divided
  • 1 egg yolk
  • 1 cup half-and-half
  • 1 cup whipping cream
  • ⅛ teaspoon cinnamon
Instructions
  1. 1. Mix blackberries and ½ cup sugar in small saucepan. Bring to low boil, simmer 5 minutes to dissolve sugar and break up berries. Cool slightly.
  2. Puree berry mixture in blender.

  4. Press puree through fine sieve to remove seeds. Discard seeds. Set puree aside.
  5. Mix egg yolk, remaining ½ cup sugar, and ½ cup half and half in a small saucepan. Cook over low heat, stirring constantly, until mixture comes to a boil and thickens slightly (about 5 min).
  6. Whisk remaining half and half, all of cream and cinnamon and vanilla into cooked mixture.
  7. Whisk in blackberry puree.

  9. Cool and chill the ice cream base mixture for 1-2 hours or overnight.
  10. Pour cold mixture into electric ice cream machine and process according to manufacturer's directions
  11. Serve garnished with fresh Blackberries if desired.

Because of the early warm weather throughout the country fresh Strawberries are in abundance right now. I don’t know if the hot weather affects how good they are-but whatever the reason they are just delicious. Berries and cream always go good together so when I saw this Strawberry Cream Cheese Ice Cream Recipe I had to give it a try.   • ½ cup sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla
  • ¾ cup fresh pureed strawberry

  1. Blend all ingredients until smooth. Chill ingredients for about 1 hour, or until cold. Then follow the directions for your ice cream machine.

Wow! This cake has it all. Chocolate Chip cookies embedded with rich chocolate fudge-Whip Cream and cherries. This is a chocolate and ice cream lovers delight. And it was really fun to prepare.

Ingredients
  • 18 oz package of chocolate chip cookies
  • ¼ cup butter or margarine melted
  • 1 cup hot fudge topping
  • 2 quarts vanilla ice cream
  • 1 cup whipped cream
  • 12 cherries
Instructions
  1. Crush half the cookies to make the crumbs.
  2. Combine crumbs with melted butter or margarine and press them into the bottom of a 9 inch spring form or pie plate.
  3. Stand the remaining cookies around the edge of the plate or spring form.

  5. Spread ¾ cup fudge topping over the crust. Freeze for 15 minutes.
  6. While the crust is freezing soften 1 quart of ice cream on the counter or use a microwave.

  8. After the crust has chilled spread the ice cream over the layer of fudge. Freeze for 30 minutes.
  9. Scoop the last quart of ice cream into balls and arrange over the layer of ice cream.
  10. Freeze for at least 4 hours or overnight.
  11. Finish off with the rest of the fudge topping, Topped with whip cream and cherries.
  12. Enjoy!
