Seedless Blackberry Preserves Recipe

My backyard berry plants have done exceptionally well this summer, especially the black berries. We were able to keep up fairly well with the blueberries and raspberries but the black berries are getting out of hand; so I am preserving what I can. We use a lot of wine for cooking; some of them are going into making blackberry wine, some are being frozen, and some made into preserves to use in recipes, on ice cream, toast, or anything else we can use blackberry preserves on. This Seedless Blackberry Preserves Recipe is a simple basic recipe but does require some time to prepare the berries. I used a juicer to remove the seeds and create a blackberry puree to make the Blackberry Preserves. If you don’t have a machine to do this task, run the berries through a sieve if you want to remove the seeds.

Ingredients

7 cups berry puree

7 cups sugar

3 tablespoons lemon juice

1 box of sure jell (1.75 ounces)

Directions

1. Place empty jars in a canner with lids. Bring to a boil. Shut off the heat and let stand in the hot water to sterilize until needed.

2. In a large pan combine the blackberry puree, sugar, lemon juice, and bring to a boil. Stir in the sure jell and bring to a rolling boil for 2 minutes. (Be sure to use a large enough pan so mixture doesn’t boil over)

3. Skim the foam off the surface.

4. Remove the canning jars from the hot water and pour the berry mixture into the jars to about 1/2 inch from the top.

5. Seal and process in boiling water bath for 10 minutes.

Makes 8 cups

Frozen Fruit Banana Split Recipe

 

I love it when the fresh fruit season gets here. The only problem is it doesn’t last long enough. So much of it ends up in the freezer. However; it is real easy to use fresh frozen fruit to make a topping for ice cream or for anything else you might need a fresh fruit topping for. Freeze the fruit in a zip lock freezer bang so you can pour out just what you need. The recipe here is just for the fruit topping. You can use any type of fruit you want to use and it should come out just fine For this Banana Split I used blueberries, strawberries and hot fudge in the center topping it with whip cream, mixed nuts and a black berry on top of each scoop. Ingredients
  • 2 cups frozen berries (berries do not have to be thawed)
  • ¼ cup water
  • 1/ 4 cup sugar or artificial sweetener
  • 1 Tablespoon corn starch
  • 1 tablespoon lemon juice or to taste

Instructions
  1. In a small bowl combine water, lemon juice, and corn starch- mixing until the cornstarch is dissolved.
  2. In a small or medium size sauce pan combine the berries, sugar and cornstarch mixture.
  3. Cook over medium heat till berries start to break down and mixture is thickened.
  4. Cool and serve.

Blackberry Ice Cream
We have had a great year for berries here in Upper Michigan. Hot weather for most days and rain about one day a week. Our blueberry, raspberry and blackberry plants producing just an unreal amount of berries. I love home made ice cream. This Blackberry Ice Cream Recipe was a great way to use some of the fresh berries. A beautiful color with a fresh delicious blackberry flavor. It is a simple recipe. Most of the time is used letting the ice cream mixture cool before putting it in the ice cream machine.
I have a small ice cream machine. My only regret was it was not big enough to double the recipe. Enjoy
 Ingredients

2 cups fresh blackberries, rinsed

1 cup sugar, divided

1 egg yolk

1 cup half-and-half

1 cup whipping cream

1/8 teaspoon cinnamon

Directions

 1. Mix blackberries and 1/2 cup sugar in small saucepan. Bring to low boil, simmer 5 minutes to dissolve sugar and break up berries. Cool slightly.

2. Puree berry mixture in blender.

3. Press puree through fine sieve to remove seeds. Discard seeds. Set puree aside.

4. Mix egg yolk, remaining 1/2 cup sugar, and 1/2 cup half and half in a small saucepan. Cook over low heat, stirring constantly, until mixture comes to a boil and thickens slightly (about 5 min).

5. Whisk remaining half and half, all of cream and cinnamon and vanilla into cooked mixture.

6. Whisk in blackberry puree.

7. Cool and chill the ice cream base mixture for 1-2 hours or overnight.

8. Pour cold mixture into electric ice cream machine and process according to manufacturer’s directions

9. Serve garnished with fresh Blackberries if desired.

Strawberry Cream Cheese Ice Cream Recipe

Strawberry Cream Cheese Ice Cream
Because of the early warm weather though out the country fresh Strawberries are in abundance right now. I don’t know if the hot weather effects how good they are-but what ever the reason they are just delicious. Berries and cream always go good together so when I saw this Strawberry Cream Cheese Ice Cream Recipe I had to give it a try. Garnish it with fresh sliced strawberries and it is a treat fit for a king. This is a very simple recipe and doesn’t take all that much time to prepare. Makes about a quart. Enjoy
Ingredients
8 ounces cream cheese
1/2 cup sugar
1 tablespoon lemon juice
1/2 teaspoon vanilla
3/4 cup fresh pureed strawberry
1 cup half-and-half

   

 

 

Directions

Blend all ingredients until smooth. Chill ingredients for about 1 hour, or until cold. Then follow the directions for your ice cream machine.
