It’s good to have Thanksgiving out of the way and move on to Christmas. I know this time of the year it is easy to get caught up in things and before you know it, its supper time. Ingredients

1 cup Penne pasta or elbow macaroni

1 pound lean ground beef

1 medium onion (chopped)

1 can diced tomatoes with seasoning (Basil, Garlic, and Oregano 14.5 ounces undrained)

1 cup shredded Cheddar cheese

1/4 cup ketchup

Directions

1. Cook pasta according to package directions.

2. While pasta is cooking brown the burger and unions until burger is no longer pink inside, and drain if needed.

3. Add the undrained tomatoes and ketchup to the burger and salt and pepper to taste. Then mix in the pasta. Cook until heated through.

Italian Penne Pasta Recipe

I was looking for something simple and quick and I came across this Italian Penne Pasta Recipe. It’s a very simple recipe with very little ingredients. You could easily spice it up a little bit or add some ingredients like fresh garlic, onion, green pepper, mushrooms and maybe some red pepper flakes if you wanted to heat it up a little bit. I prepared the recipe as written just because I wanted to see how it would taste without any add-on’s. As I have found in the past; simple many times is good, and this recipe was no exception. Within 30 minutes I had an excellent dinner on the table we all enjoyed.

If you’re in a hurry, or just want to try something different, give this Italian Penne Pasta Recipe a try-its well worth the time and effort.

Ingredients

1 pound ground beef

4 cups penne pasta (12 ounces)

1 jar 28 to 30 ounces (your favorite spaghetti sauce)

3/4 cup grated Parmesan Cheese

3 cups shredded Colby Jack Cheese

Directions

Preheat oven to 375F.

1. Cook Penne Pasta according to package directions.

2. While pasta is cooking, using a skillet brown the burger and drain if needed.

3. Drain the pasta and mix together with the ground beef, spaghetti sauce, and 1/2 cup of the Parmesan Cheese.

4. Place the mixture into a 13 x 9 casserole dish and top with the remaining Parmesan Cheese and Colby Jack.

5. Bake at 375F for 20 minutes.

I put this off for a long time; but I felt I really should have a Basic Tuna Casserole Recipe on my blog. This is a very simple recipe with very little added seasoning. The chips on the top help give it a little crunch. If you’re looking for something quick, and simple, and that is also very inexpensive, give this a try. Usually when I make this type of recipe I’ll skip the oven- just mix all of the ingredients together except for the chips and it has gone over pretty well; but if you like the cheese melted and the crunch of the chips on top give this Basic Tuna Casserole Recipe a try.

Ingredients

1 (12 ounce) package egg noodles

1/4 cup chopped onion

2 cups shredded Cheddar cheese

1 cup frozen green peas

2 (6 ounce) cans tuna, drained

2 (10.75 ounce) cans condensed cream of mushroom soup

1/2 (4.5 ounce) can sliced mushrooms

1 cup crushed plain potato chips

Directions

Preheat oven to 425F. (220C)

1. Cook noodles to al dente according to package instructions. Drain

3. In a large bowl mix the noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9×13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.

4. Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

Mac and Cheese with Hot Dogs Recipe

This Mac and Cheese with Hot Dogs Recipe is a very simple recipe that can be put together rather quickly. I was just looking for something a little different than the conventional Mac and Cheese recipes. I followed the recipe as written and it was very good. The original recipe called for beer, but I substituted chicken broth in place of it. The flavor of the hot dogs means a lot in this recipe; I would use all beef if possible.

Ingredients

1 pound elbow macaroni

Salt and pepper to taste

2 tablespoons extra-virgin olive oil (divided)

1 package beef hot dogs (cut into 1-inch pieces)

1 tablespoon butter

1 medium onion (finely chopped)

2 tablespoons all- purpose flour

1/2 cup chicken broth

2 cups milk

1 generous tablespoon spicy mustard

2 generous tablespoons ketchup

3 cups Sharp Cheddar

Directions

1. Cook Macaroni according to package instructions for al dente.

2. Preheat broiler for low heat- and set rack 12 inches from heat.

3. While pasta cooks, heat a large deep skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, and then add hot dogs and brown on both sides. Remove the hot dogs with a slotted spoon to a paper towel lined plate.

4.  Add another tablespoon of olive oil, and the butter. When butter melts, cook onions until translucent, then add flour and cook another minute; add the chicken broth and cook until thickened.

5.  Mix in milk and bring to a boil, then season the sauce with salt and pepper, and stir in the mustard, and ketchup.

5. Lower the heat and add 2 cups of the cheese. Stir to melt

6. Drain pasta well. Combine pasta and hot dogs with sauce- then pour into 13 x 9 casserole dish and top with remaining cheese.

7. Melt and brown cheese under broiler.

This recipe caught my eye because of the use of the microwave. Except for heating and defrosting I don’t use the microwave very often; but when I saw this recipe I thought it was worth giving it a try. 3. Mix the sauce and cooked pasta together and serve hot.

With Labor Day coming up there’s a good chance you will need a side dish, especially if you are firing up the grill. This Ranch Pasta Cold Salad Recipe will go great with almost any main dish you decide to create. The Ranch dressing mix gives this recipe a unique, creamy texture. I followed the recipe as written but I think you could successfully add or subtract any of the vegetables according to your liking. This is a good size recipe and will serve 4-6 easily as a side dish-if you’re planning a party, or attending pot luck, just increase the amount as needed.

Ingredients
1 (12 ounce) packages uncooked Rainbow rotini pasta
10 slices bacon (cooked and crumbled into bits)
1 cup mayonnaise
1 ( 1 ounce) packet dry ranch dressing mix
¼ teaspoon garlic powder
½ cup milk
1 large tomato (diced)
1 (3 ounce) can sliced black olives (drained)
1 cup sharp shredded cheddar cheese

Directions

1. Cook pasta to package directions for al dente, drain and rinse with cold water. Set aside.

With many of the schools getting started it is nice to have a recipe on hand that’s quick, simple, and something the whole family would enjoy. There was so little in this recipe I wondered how well it would turn out. 1 (8 ounce) package wide egg noodles

1/2 cup butter or margarine

1/2 cup heavy whipping cream

1 cup grated Parmesan cheese

1 tablespoon dried parsley

Directions

1. Cook noodles according to package directions.

There are so many different versions of Mac and cheese I don’t think I could ever try them all. This Macaroni and Cheese Chicken Casserole recipe looked pretty good so I thought I would give it a try. This recipe is creamy and smooth, and the red sweet pepper gives it nice color. This recipe is mildly seasoned so there is plenty of room to add additional seasoning to your taste. Ingredients

3 tablespoons butter

1/4 cup flour

2 cups milk

2 cups chicken broth

2 cups cubed American cheese

16 ounces macaroni, cooked and drained

3 cups cooked chicken breasts (cubed)

1 medium sweet red pepper (diced)

Salt and pepper to taste

Pasta Tuna Salad

Through the years tuna pasta salads have turned into a staple for this family. When we can’t figure out what to have for dinner this is our favorite go to recipe. I’m not sure where the idea came from, but we have also gotten into the habit of topping our plates of tuna pasta salad with our favorite flavored potato chips; a kind of crumble them on top sort of thing.

(if you are tight for time- when you rinse the pasta with cold water, continue rinsing till the pasta gets really cold; through it together and serve.)

Good cold salads are great; you can use them with you favorite grilling recipe, potlucks, graduation parties and sometimes work out great as a main dish. I have made these for years and one of the great thinks about them is you can add anything you think you would like to the recipe.
