  • ¼ cup butter (softened)
  • ⅓ cup sugar
  • 1½ teaspoons vanilla extract

  • 1 carton frozen whipped topping ( 8 ounces thawed)
  • 1 graham cracker crust (9 inches)
  • 1 can cherry pie filling
Instructions
  1. In a large bowl using an electric mixer, mix together the cream cheese, butter, vanilla, and sugar until smooth. Add the chocolate and continue mixing until well combined and then mix in the whipped topping until just combined.
  2. Using a spoon, spoon the mixture into a 9 inch graham cracker crust.
  3. Top with the cherry pie filling and refrigerate until ready to serve.

Ingredients
  • 1 pie crust (9 inch)
  • 1 ¼ cups dark brown sugar (packed)
  • 1 ¾ pounds sweet potatoes (try to get potatoes about the same size so they get done at the same time)
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 8 ounces sour cream
  • 3 large eggs plus 2 egg yolks
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 425F.
  2. Place crust in pie plate and sprinkle ¼ cup brown sugar over the bottom; set aside.

  4. Pick sweet potatoes with a fork and microwave until tender flipping half way through the cooking process. (About 15 to 20 minutes – these can be done ahead of time. Just place the flesh in a bowl and refrigerate). Immediacy slice potatoes in half lengthwise, allowing some of the moisture to escape, and the potatoes to cool. Once the potatoes have cooled enough to handle using a spoon scoop out the flesh into the bowl of a food processor and then add the remaining sugar and salt, process until smooth.

  7. In a small bowl melt the butter along with the cinnamon and nutmeg in a microwave (about 30 seconds).
  8. Add the melted butter, egg and egg yolks, sour cream, and vanilla; mix until smooth. Pour mixture into pie crust.

  10. Bake at 425 for 15 minutes, reduce heat to 350 and continue baking for 35 to 40 minutes or until edges firm up and center jiggles slightly when shaken. (center should be 165F)

  • 1 package refrigerator biscuits (I used Pillsbury Grand’s for this recipe)
  • Salt
  • 4 tablespoons butter
  • 1 medium onion (finely chopped)
  • 1 rib celery (sliced thin)
  • ¼ cup all-purpose flour
  • ⅛ teaspoon cayenne pepper
  • 2 ¾ cups chicken broth
  • ½ cup heavy cream
  • ¼ teaspoon thyme
  • 1 package frozen peas and carrots (10-ounces thawed and precooked to desired doneness)
  • 1 rotisserie chicken (skin removed and meat shredded into large bite-sized pieces)
  • 4 teaspoons lemon juice
  • Black pepper
Instructions
  1. Lightly salt biscuits and bake according to package directions.
  2. While biscuits are baking in a large skillet using the butter over medium heat cook the onion and celery until tender. Whisk in the flour and cayenne pepper stirring constantly until flour starts to brown. Gradually mix in the chicken broth, cream, and thyme; continue cooking until mixture thickens.
  3. Mix in the lemon juice, vegetables, and chicken and cook until heated through - salt and pepper to taste.

Fresh blackberries, cream cheese, and a hint of lemon make this no bake blackberry pie a delicious treat.

Blackberries are very abundant her in Upper Michigan this year and I like to use as many of them fresh as possible. It has been years since I have eaten a no bake blackberry pie. I was getting ready to bake a regular blackberry pie, but it was so hot outside I was reluctant to fire up the oven for a long period of time – so I decided to do a little surfing and came across this  Blackberry Cream Cheese Pie recipe. This is not exactly a no bake, but close, the pie crust is prebaked. You can substitute a graham cracker crust if you want to turn this into a 100 percent no bake recipe.

Ingredients
  • 1 regular pie crust or graham cracker crust (store bought or your favorite recipe)
  • 5 cups fresh blackberries (divided)
  • ½ cups Water
  • 3 tablespoons Cornstarch
  • ⅔ cup granulated sugar
  • 1 tablespoon lemon juice
  • 6 ounces cream cheese (softened)
  • 1 tablespoon milk
  • 1 teaspoon grated lemon zest
  • Whipped cream and additional Berries for garnish
Instructions
  1. Bake pie crust according to package directions for single crust; set aside to cool.
  2. Place 3 cup of berries and water into a medium saucepan and cook over medium high heat until mixture comes to a boil – continue cooking until berries start to soften, stirring occasionally; set aside to cool.
  3. While berry mixture is cooling using an electric mix in a medium size bowl mix together the cream cheese, milk and lemon zest until smooth; set aside.
  4. Press the cooled berries through a sieve over a bowl to remove the seeds and return the berry juice to the sauce pan and mix in the cornstarch, sugar and lemon juice until cornstarch is dissolved. Bring mixture to a boil over medium heat and boil for 2 minutes stirring constantly to thicken; off heat and set aside to cool.
  5. Spread cream cheese mixture evenly over the bottom of the pie crust followed by 2 cups of berries. Spoon the cooled berry sauce evenly over the top of the berries; refrigerate for at least 1 hour.
  6. Serve garnished with fresh berries and whipped cream.

  • 1 (8 ounce) package refrigerated crescent rolls
  • 1 pound ground beef
  • 1 medium onion (chopped)
  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) container sour cream
  • 8 ounces shredded Mexican-style cheese blend
  • 1 (12-13 ounce) bag tortilla chips (crushed)
Instructions
  1. Preheat oven according to directions on package for the crescent rolls. 375F
  2. Spray a 8 x 8 baking dish with cooking spray and roll the crescent roll dough out on the bottom to form a bottom crust and bake according to package. Crust should be golden brown.
  3. While the crust is baking in a large skillet over medium high heat chop up and cook the burger and onion, until onion is soft, and burger is no longer pink inside; drain if needed. Mix in the taco seasoning until well combined.
  4. Spread the meat mixture over the bottom of the crescent crust, and then layer the sour cream over the top followed by the Mexican-style cheese blend. Top with the crushed tortilla chips.
  5. Bake at 375F. Until heated through and cheese is melted – Serve hot.

Rhubarb Bars Recipe

It’s rhubarb season here in Upper Michigan and I figured I should post at least one recipe with rhubarb as the main ingredient.

This recipe almost didn’t get posted because I had some issues putting the crust together – I double checked it to make sure it was right, but had trouble getting the crumbly texture I wanted. The crust mixture was more on a dough side than crumbly. I thought, what is, is, and continued to finish the recipe.

The deciding factor for posting this recipe was that these bars are delicious – it turned out to be one of those that you just can’t eat one recipe. I had to have my wife take them away!!

If you decide to try this Rhubarb Bars Recipe don’t be shook if the crust is a little on the doughy side; just crumble it the best you can when you apply the topping, other than that the doughy texture works out well for forming the bottom crust for the bars.   • 3 cups fresh (cut into 1 inch pieces)
  • 1 cup granulated sugar
  • ¼ cup water
  • ½ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1½ cups all-purpose flour
  • 1½ cups quick-cooking rolled oats
  • 1 cup packed brown sugar
  • ¼ teaspoon baking soda
  • 1 cup shortening
Instructions
  1. Preheat oven to 375F.
  2. Slice rhubarb into 1 inch pieces
  3. In a small bowl mix together 2 tablespoons of all-purpose flour, and ½ cup granulated sugar; set aside.
  4. In a medium sauce pan mix together the rhubarb, one cup granulated sugar, and water. Cook over medium high heat until mixture comes to a boil, reduce heat to simmer, cover, and cook for 5 minutes. Stir the sugar flour mixture into the rhubarb and continue cooking until thickened; stir in vanilla and set aside.

Biscuit Topped Slow Cooker Pot Pie

Because this recipe isn’t placed in a pie crust, I guess the name of the recipe is a little misleading, but this recipe is so good I had to post it. Unlike most slow cooker recipes, that are almost always real simple, this one does require a little more work because it goes from the slow cooker into the oven, and the biscuits are par cooked before they go on top of the filling.
The end result is a delicious buttermilk biscuit topped pot pie.

  • 2 tablespoons vegetable oil
  • 2 medium onions (finely chopped)
  • 4 garlic cloves (crushed and minced)
  • ½ teaspoon dried thyme
  • Salt and pepper
  • ½ cup dry white wine
  • 2 cups chicken broth
  • 1 pound carrots (peeled and cut into ½ inch pieces)
  • 3 tablespoons soy sauce
  • 3 tablespoons Minute Tapioca
  • 2 bay leaves
  • 4 pound bone in chicken thighs (skin and any excess fat removed)
  • 1 cup frozen peas
  • ¼ cup fresh parsley (chopped)
  • Biscuit topping ingredients
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon sugar
  • ¾ cup buttermilk (chilled)
  • 6 tablespoons unsalted butter (melted and cooled)
Instructions
  1. In a large skillet over medium high heat using the oil mix together the onions, garlic, ¼ teaspoon salt, and thyme. Cook until onion is softened and starts to brown. Stir in the wine, scrapping any bits from the bottom of the skillet. Place the mixture in the bottom of the slow cooker and add the carrots, broth, soy sauce, bay leaves, and Tapioca; mix until well combined.
  2. Salt and pepper the chicken, and then press the chicken thighs into the mixture.
  3. Cook chicken for 4 – 5 hours until chicken is tender and starts to separate from the bone. Remove the chicken from the slow cooker onto a plate. Let the juices settle and spoon any excess fat off of the top. Using 2 forks; shred the chicken away from the bones. Add the chicken back into the slow cooker and mix in the frozen peas, cream, and parsley, and then salt and pepper to taste.
  4. about an hour before the chicken is done prepare the biscuits.

  6. Preheat oven to 375 F.
  7. In a large bowl mix together the flour, baking soda, baking powder, sugar, and salt. In another bowl mix together the buttermilk and melted butter, stirring until mixture starts to clump. Stir the buttermilk mixture, into the dry mixture, until just combined and no streaks of flour remain. Lightly grease a baking sheet and using a ¼ cup measuring cup scoop out 8 mounds of dough place them about 1 ½ inches apart to form the biscuits. Bake for 8 minutes to firm up and form the biscuits. (Bottom should be just set) cover a set aside until ready to place on the casserole.
  8. Preheat oven to 400F.
  9. Pour the chicken mixture into a 13 x 9 casserole dish and arrange the biscuits on top. Bake for 25 minutes, or until biscuits are browned, and casserole is bubbly.
  10. Let rest 10 minutes before serving.

  • Dough for 1 pizza (store bought or homemade)
  • ½ cup Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded provolone cheese
  • ½ cup green pepper (thinly sliced)
  • ½ cup onion (thinly sliced)
  • 1 can chunky style portabella mushrooms (4 ounces – Drained)
  • 8 ounces skirt steak
  • Salt and ground black pepper (to taste)
  • 1 tablespoon olive oil
Instructions
  1. Preheat oven to 425F.
  2. Cut steak into a thin strip like you would for making a stir fry. Salt and pepper the meat to taste; using the olive oil, cook stake over medium high heat to desired doneness; set aside.
  3. Stretch the pizza crust over a lightly oiled baking sheet. Cut several small slits in the bottom of the crust, and bake the crust for 7 – 8 minutes.
  4. Remove the crust from the oven and spread the Alfredo sauce over the crust leaving about 1 inch on the edges. Sprinkle ½ cup each of the provolone, and mozzarella cheeses over the top followed by the steak strips, onion, mushrooms, and green pepper. Top with the remaining cheese.
  5. Bake for an additional 10-15 minutes, or until edges are browned, and cheese is melted.
  6. Serve hot.

Instructions
  1. Preheat oven to 425F.
  2. In a large bowl staring with the apple slices mix all the ingredients together using a wood spoon until well combined.
