Sometimes I like to take a break and pick a pizza up from the store or local restaurant. This time I decided to just pick up the ingredients and put a homemade pizza together. I have to admit I did cheat a little bit by purchasing a ready-made crust. The toppings for this pizza are pretty basic so you can add whatever you like to the topping ingredients. Ingredients
  • ½ pound bulk Italian sausage
  • 1½ cups sliced fresh mushrooms
  • 2 medium Roma tomatoes (diced)
  • ½ cup pizza sauce
  • 1- can refrigerated pizza crust (or your favorite crust recipe)
  • 2 cups shredded mozzarella cheese (divided)

Instructions
  1. Preheat oven to 400F.
  2. In a medium size skillet brown the Italian sausage with the mushrooms until sausage is no longer pink inside. Then mix in the pizza sauce and add the diced tomatoes. Cover to keep warm.
  3. Shape the pizza dough into a 12 inch cast iron, or oven proof skillet, working it half way up the sides. Bake for 5 minutes.
  4. Remove the pizza crust from the oven and fill the crust by spreading 1¾ cups shredded mozzarella cheese over the bottom. Then spoon in the sausage mixture, and top with the remaining cheese.
  5. Bake for 15 minutes or until crust is golden brown.
  6. Let stand 10 minutes before serving.

Beef Pot Pie Recipe

In search of something different I came across this Beef Pot Pie Recipe and decided to give it a try. One dish dinners appeal to me because there is usually not a lot of cleanup afterward and most of them can be put together quickly. This is a great afterschool dish because it can be thrown together quickly and doesn’t require a lot of cooking time. You can have supper on the table in less than an hour. This recipe is pretty basic not calling for a lot of seasoning so you might want to season it to taste. I thought it was pretty good, prepared as written. When you pull the Beef Pot Pie out of the oven to put the finishing touches on it don’t be concerned of the biscuits are a little on the light colored side; they will darken up as the casserole finishes baking.

Ingredients

1 pound lean ground beef

1 can condensed beef with vegetables and barley soup (11 ounces)

1/2 cup water

1/2 teaspoon seasoned salt or to taste

1/8 teaspoon garlic powder

1/8 teaspoon pepper

1 cup shredded cheddar cheese (divided)

1 1/3 cups French fried onions (divided)

1 package refrigerated buttermilk biscuits (7.5 ounces)

Directions

Preheat oven to 350F.

1. In a large skillet brown the ground beef in good size pieces, and drain if needed.

2. Mix in the soup, water, vegetables and seasonings. Bring to a boil; reduce heat and simmer uncovered for 5 minutes. Then add in 1/2 cup shredded cheddar and 2/ 3 cups French Fried Onions.

3. Pour the meat mixture into a 12×8 casserole dish. Cut each biscuit in half and place them cut side down around the edge of the casserole.

4. Bake uncovered for 15 minutes or until biscuits are done and lightly browned.

5. Top with the remaining cheese and 2/ 3 cup French Fried Onions. Bake until cheese is melted and onions are golden brown.

Simple Taco Pie Recipe

I have seen these Taco Pie recipes around the internet quite often lately. I don’t use baking mix very often but this Simple Taco Pie Recipe looked like it would be quick to put together so I decided to give it a try. This is a very simple recipe that doesn’t require much prep time. I was very surprised with the finished product because this turned out to be another simple and good recipe. When I mixed the baking mix together it was real thin and I had some concern about that; but that is the way it should be. I guess I was thinking that the batter would go on top to form a crust, but the way it turns out it is distributed throughout the dish. There is not a lot of hot seasoning in the pie itself but it is easy to control that by using hot salsa if you like a lot of heat in your Tacos.

Ingredients

1 pound lean ground beef

1 medium onion (chopped)

1 package taco seasoning mix

1 can chopped green chilies, drained (4.5 ounces)

1 cup milk

2 eggs

2 tomatoes (seeded and diced)

1 can black sliced olives (2.25 ounces)

1/2 cup Bisquick Original mix

3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces) (I mixed the 2)

Salsa (hot or mild to taste)

Sour cream

Directions

Preheat oven to 400F.

1. In a large skillet brown the burger and onion until burger is no longer pink inside. Drain if needed and mix in the taco seasoning.

2. Spray a 9 inch pie plate with cooking spray and spread the burger mixture over the bottom. Distribute the green chilies on top.

3. Mix together the baking mix, eggs, and milk to form the batter. (Electric mixer worked best for this), pour the batter into the pie plate.

4. Bake for 25 minutes or until a knife inserted comes out clean. Remove from the oven and top with the olives and cheese. Bake for an additional 5 to 10 minutes, or until cheese is melted.

Let the pie cool slightly then garnish with the diced tomatoes. Serve with sour cream and salsa.

New York Style Cheesecake Recipe

I usually try and shy away from making cheesecake because of the amount of worked involved; but there is one member of this family that loves them. So for his birthday, or for the Holiday season, at least once a year I will put a cheesecake on the menu.   My son has made this New York Style Cheesecake a number of times and it was really good. So this year for Thanksgiving this is one of the desert dishes we had on the table.

This New York Style Cheesecake Recipe is a simple recipe with not a lot of prep time, but there is a lot of cooking and cooing time involved. So be sure you allow enough time for the recipe-it works very well if you prepare the cheesecake the day before so it can cool it good overnight before serving. For topping, you can top the cheesecake, with almost any type of fruit topping you like.

This New York Style Cheesecake Recipe is on my family’s favorites list and I’m sure if you give it a try your family and guests will love it. Give this one a try for the holidays and enjoy!

Ingredients

1 3/4 cup graham cracker crumbs (crushed)

1/4 cup macadamia nuts (crushed)

1 teaspoon ground cinnamon

1/2 cup butter

5 (8 oz) Packages of softened cream cheese

1 ¾ cup sugar

3 tablespoons of flour

5 eggs

2 egg yolks

1/4 heavy whipping cream

1 1/2 teaspoons almond extract

Directions

Preheat oven to 400F.

1. Combine the crushed graham crackers, macadamia nuts and cinnamon in a medium size bowl, then add and mix in the melted butter. Press the mixture into a 9 inch spring form pan coating the sides and bottom. (I went about half way up the sides)

2. Bake in the oven for 7 minutes-remove and let cool.

Increase oven temperature to 475F.

3. While oven is heating combine cream cheese, 1 3/4 cup sugar, 3 tablespoons of flour, 5 eggs, and 2 egg yolks, and mix thoroughly. Then add the almond extract and heavy whipping cream and mix just enough to blend.

4. Pour the cream cheese mixture over the graham cracker crust in the spring form pan. Bake at 475F for 10 minutes, decrease the temperature to 200F and bake for one more hour.

5. Shut the oven off and leave the cheese cake in the oven for an additional hour.

6. Remove the cheesecake from the oven. Allow to cool slightly then refrigerate overnight.

With the holidays coming up I was real excited to be selected to do this post for Diamond Nuts. I don’t bake a lot of pies but the first think that came to my mind was a Pecan Pie. I added the pecans together with some semi sweet chocolate chips and the end result was delicious. This Chocolate Pecan Pie Recipe has very little prep time, but does take a good 40 minutes to bake. I prepared the recipe as written just be sure to allow plenty of time for the pie to set and cool before serving. Also it is a good idea to cover the edges of the crust with aluminum foil to keep the crust from becoming too dark or burning.

Ingredients

2 unbaked 8 inch pie crusts

3 eggs  (beaten)

1/4 cup sugar

6 Tablespoons butter (melted)

1 Cup light corn syrup

1 cup dark corn syrup

1 teaspoon vanilla

1 1/2 Diamond pecans (whole or halved-your choice)

1 cup semi sweet chocolate chips

Directions

Preheat oven to 350F.

1. In a large bowl mix together the eggs, 1/4 cup sugar, butter, light and dark corn syrup and vanilla. Mix thoroughly.

2. Using a spoon fold in the Diamond Pecans and semi sweet chocolate chips.

3. Divide the mixture evenly between 2 eight inch pie crusts.

4. bake at 350 degrees till pies are firm, and crust is brown-about 40 minutes.

I have wanted to do a Stuffed Crust Pizza Recipe for some time. The original plan was for a Chicago style pizza, but I ran into some issues obtaining the ingredients that I needed to complete the recipe. So mainly what happened is; I wound up with a combination of the two. I don’t like changing plans in the middle of a recipe because the outcome can be disastrous. However, this turned out to be a pleasant surprise. If you like a lot of topping on your pizza you will love this recipe; it is loaded with Italian sausage, cheese and a few other ingredients. The only thing I felt was missing was a green pepper. This is a simple recipe that is mildly seasoned; if you like your pizza spicy, I would season to taste. For a single pizza the top is really loaded, if you wanted to stretch it out a little bit I am sure it would make two but the full recipe does fit nicely inside the crust edges created by the mozzarella cheese stick stuffing. Ingredients
  • 1 Premade refrigerated Pizza Crust
  • 1 pound bulk Italian sausage
  • 2 cups shredded mozzarella cheese
  • 7 Mozzarella cheese sticks
  • 8 ounces sliced fresh mushrooms
  • 1 small sweet onion (chopped)
  • 2 teaspoons olive oil
  • 1 (28 ounce) can diced tomatoes (drained)
  • ¾ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon fennel seed (optional)
  • ¼ teaspoon garlic powder
  • ½ cup freshly grated Parmesan cheese

Instructions
  1. Preheat the oven to 450 degrees F.
  2. Stretch dough over the pizza pan extending it out about an inch over the pan borders to allow room for folding over the string cheese.
  3. Circle the string cheese around the border and fold the dough over the cheese.
  4. Crumble the sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Remove the sausage with a slotted spoon, and sprinkle over the dough crust. Sprinkle mozzarella cheese evenly over the sausage.
  5. Add the mushrooms and onion to the skillet; cook and stir until the onion is tender. Stir in the tomatoes, oregano, salt, fennel seed and garlic powder.
  6. Spoon the tomato mixture over the mozzarella cheese and Sprinkle on the Parmesan cheese over the top.
  7. Bake for 15 to 20 minutes in or until crust is golden brown.

Boston Cream Pie Cupcakes Recipe

I don’t do a lot of baking, but once in awhile I get in the mood to do something different. When I was younger I loved the custard filled pastries topped with chocolate frosting. When I saw this Boston Cream Pie Cupcakes Recipe it looked sinfully delicious, and I just had to give it a try. It does take some care to put this one together, but I had the time, and decided to go for it.

This Boston Cream Pie Cupcakes Recipe is not that complicated but does take a lot of time to prepare, due to the time required for the custard to set and the chocolate frosting to cool. I prepared the custard a day ahead of time to spread out the prep time a little bit.

If you give this recipe a try you can do yourself a favor by being careful not to over fill the cup cake cups. A little bit of an edge will help support the frosting from running off the cup cakes till it sets. I followed the recipe as is, and they were delicious.

  • 1½ cups heavy cream
  • 3 large egg yolks
  • ⅓ cup granulated sugar
  • Pinch of table salt
  • 4 teaspoons cornstarch
  • 2 tablespoons butter (cold and cut into 2 pieces)
  • 1½ teaspoons vanilla extract
  • Cupcake Ingredients
  • 1¾ cups unbleached all-purpose flour
  • 1½ teaspoons baking powder
  • ¾ teaspoons table salt
  • 1 cup granulated sugar
  • 1½ sticks (12 tablespoons) unsalted butter, softened but slightly cool, cut into 12 pieces
  • 3 large eggs
  • ¾ cups milk
  • 1½ teaspoons vanilla extract
  • Chocolate Glaze or Frosting Ingredients
  • ¾ cup heavy cream
  • ¼ cup light corn syrup
  • 8 ounces bittersweet chocolate chips
  • ½ teaspoon vanilla extract

Instructions
  1. Custard Directions
  2. Bring the cream to a simmer in a medium saucepan over medium heat, stirring occasionally.
  3. Meanwhile, whisk the yolks, sugar, and salt together in a medium bowl. Add the cornstarch and whisk the mixture till pale yellow and thick.
  4. When the cream reaches a full simmer, slowly whisk it into the yolk mixture. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until thick and glossy.
  5. Remove from heat, whisk in the butter and vanilla.
  6. Transfer the custard to a small bowl and refrigerate- press plastic wrap against its surface, until cold and let set at least 2 hours or up to 2 days. (I prepared this a day ahead of time)
  7. Cup Cake Directions
  8. Preheat the oven to 350Fusing the middle rack.
  9. Line a standard muffin pan with paper baking cups and set aside.
  10. In the bowl of a stand mixer, combine the flour, baking powder, salt, and sugar on low speed. Add the butter, 1 piece at a time, and combine until the mixture resembles coarse sand.
  11. Add the eggs, 1 at time, and mix until fully combined. Add the milk and vanilla increase the speed to medium, and mix until the batter is light, fluffy and free of lumps.
  12. Fill the lined muffin cups three-quarters full, being careful not to overfill. Bake until a toothpick inserted in the center of the cupcake comes out clean, about 18 to 20 minutes.
  13. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  14. Chocolate Glaze or Frosting Directions
  15. Cook the cream, corn syrup, chocolate, and vanilla in a small saucepan over medium heat, stirring constantly until smooth. Set aside and allow to thicken for 30 minutes. (Keep an eye on this-I let mine cool a little longer so it was easier to work with.)
  16. Putting it all together
  17. Insert a small knife at a 45 degree angle about ⅛ inch from the edge of each cupcake and cut all the way around, removing a cone of cake.
  18. Cut away all but the top ¼ inch of the cone; leaving only a small disk of cake which will be used to top the cupcake.
  19. Fill each cupcake with 2 tablespoons of pastry cream and top with the disk of cake.
  20. Carefully top each filled cupcake with a 1 to 2 tablespoons of the chocolate glaze.
  21. Refrigerate too set ( about 10 minutes)

I love it when the fresh fruit season gets here. The only problem is it doesn’t last long enough. So much of it ends up in the freezer. However; it is real easy to use fresh frozen fruit to make a topping for ice cream or for anything else you might need a fresh fruit topping for. Freeze the fruit in a zip lock freezer bang so you can pour out just what you need. The recipe here is just for the fruit topping. You can use any type of fruit you want to use and it should come out just fine For this Banana Split I used blueberries, strawberries and hot fudge in the center topping it with whip cream, mixed nuts and a black berry on top of each scoop.   • 2 cups frozen berries (berries do not have to be thawed)
  • ¼ cup water
  • 1/ 4 cup sugar or artificial sweetener
  • 1 Tablespoon corn starch
  • 1 tablespoon lemon juice or to taste

Instructions
  1. In a small bowl combine water, lemon juice, and corn starch- mixing until the cornstarch is dissolved.
  2. In a small or medium size sauce pan combine the berries, sugar and cornstarch mixture.
  3. Cook over medium heat till berries start to break down and mixture is thickened.

It has been awhile since I have posted a Mexican recipe, so when my wife saw this Burrito Pie Recipe and thought it looked really good; I decided to give it a try. It is pretty much like a burrito casserole just with kind of a different name. This is another simple recipe with not a lot of prep time. It is mildly seasoned, so if you like it hot, you might want to add some red pepper flakes or cayenne pepper. I prepared the recipe as is; it was very good. Ingredients
  • 2 pounds ground beef
  • 1 onion, chopped
  • 4 garlic cloves (minced)
  • 1 (2 ounce) can black olives (sliced)
  • 1 (4 ounce) can diced green chili peppers
  • 1 (10 ounce) can diced tomatoes with green chili’s
  • 1 (16 ounce) jar taco sauce
  • 2 (16 ounce) cans re-fried beans
  • 12 (8 inch) flour tortillas
  • 9 ounces shredded Colby cheese

Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes.
  3. Drain any excess fat.
  4. Mix in the olives, green chili peppers, tomatoes with green chili peppers, taco sauce and re-fried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  5. Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
  6. Bake for 20 to 30 minutes in the preheated oven or until cheese is slightly brown and bubbly.

Homemade Cornish Pasty Recipe

Being located in upper Michigan there are hundreds of Pasty shops and probably as many versions of them. The story goes that the miners use to take them for lunch as a one dish, hand held meal. Basically the Cornish Pasty is a meat pie with its own stand alone, hand held crust. You can really add almost any vegetable you would like to the Cornish Pasty Recipe. I am just going to use a basic recipe; you’ll get the idea and can add or subtract the balance of ingredients to taste. For the crust, just use your favorite pie crust recipe. I cheated on this one to save time and used a boxed pie crust mix. In the past, to save time I have tried the premade refrigerated crusts and they were a disaster; I’m not sure why, it seems like they should of worked fine, but they fell apart during baking. Ingredients
  • 4 10 inch pie crusts
  • 10 ounces chuck steak (you can also use burger), trimmed and cut into ¼-inch diced
  • 1 small onion, very finely chopped
  • 1 medium carrot, cut into ¼-inch dice (optional)
  • 1 cup rutabaga diced (optional)
  • 1 small potato, cut into ¼-inch dice
  • 1½ teaspoons salt
  • ¾ teaspoon freshly ground black pepper

Instructions
  1. Preheat oven to 350F
  2. Combine the meat, onion, carrot, potato, salt and pepper and mix until thoroughly combined. Place the 10 inch pie crust circles on a clean work surface and place about ½ cup of the filling in the center of 1 side of the pastry.
  3. Bake for 1 hour or until golden brown before serving.
  4. Serve Hot-You can make these any size you want; just adjust filling and size of crust. Many people like to make a large batch, and then freeze them.
