Ground Steak Cheddar Potato Pie Recipe

If you like A1 steak sauce you have to give this recipe a try. This is a simple and quick recipe so you can have it on the supper table in less than an hour.
This recipe was adapted from A1, so I used their steak sauce, but I am sure any good quality steak sauce would work out fine. The original recipe did not have salt and pepper in the ingredients so I added them; but you might want to add the salt and pepper to taste especially if you are using a different brand of steak sauce.

Ingredients
  • 1 pound ground round or ground sirloin
  • 1 small onion (finely chopped)
  • 1 tablespoon of olive oil
  • ¼ cup steak sauce
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 cups mashed potatoes (hot – about 4 medium potatoes)
  • 1 cup shredded cheddar cheese
Instructions
  1. Cook and prepare the potatoes; and mash.

While the potatoes are cooking in a large skillet over medium high heat brown the burger and onions in the olive oil until burger is no longer pink inside, salt and pepper to taste; and drain if needed. Add the steak sauce and continue cooking until mixture is bubbly and heated through. Place the meat mixture in the bottom of a 1 ½ quart casserole dish lightly sprayed with cooking spray.

Breakfast Pizza Recipe with PAM cooking spray for Easy Clean up

If you have ever forgotten to use cooking spray in a pan or baking dish you know how much of a nightmare it can create. It can not only wreck the dish you are trying to create, but it can also make the after dinner clean up a real chore.

It took me a while to learn how handy a good quality cooking spray like PAM can be. Not only do I use PAM for cooking but I also us it to make some other chores a lot easier. When you’re measuring ingredients like, honey, syrup, or ketchup use PAM cooking spray on the utensils, and it will pour more easily, leaving very little residue behind making for easy clean up.  Cooking spray also works well for shredding cheese. Lightly spray your grater with PAM and it will help keep the cheese from sticking to the grater and plugging it up – and it will make for easy clean up after. There are so many uses I don’t think I can remember them all. Another little trick I found handy, is that when using aluminum foil to cover a dish for baking, lightly spray the side that is going to be touching the food to keep it from sticking when you remove the foil. I have had the looks of one or two dishes wrecked before I caught on to this. Let your imagination do the work – I have found you can use a good quality cooking spray like PAM on almost anything you’re worried about sticking.

Scrambled eggs without butter, oil or cooking spray sticks to the pan like nothing I’ve ever seen before. It not only destroys the eggs but also makes the pan very hard to clean. Sometimes using oil doesn’t work out very well either, because it can leave an oily texture on the eggs. You can use butter but then you have to deal with the calories – the good news is it’s easy to eliminate the problems by using a quality cooking spray like PAM. I like to use the buttered flavored to give the eggs a buttery taste.

This is a cooking blog and I don’t feel comfortable writing this without including a recipe. So let’s get out the PAM, scramble some eggs, and make a breakfast pizza.

Ingredients
  • PAM butter flavored cooking spray (to cook eggs)
  • PAM regular cooking spray (to spray pizza pan)
  • 1 pizza crust (store bought or your favorite recipe)
  • 1 cup shredded pizza cheese (unseasoned)
  • ½ pound bulk breakfast sausage
  • 1 can sausage gravy (14.5 ounces)
  • 1 small onion (finely chopped)
  • 1 medium bell pepper (finely chopped)
  • 8 eggs
  • ½ cup milk
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400F.
  2. In a large skilled brown the sausage along with the onion and bell pepper until sausage is no longer pink inside. Drain if necessary; and set aside.

  4. In a large bowl whisk together the eggs and milk until well combined. In a large skillet heavily coated with PAM butter flavored cooking spray, stir, and cook the eggs into small chunks that are firmed up but still moist. Salt and pepper to taste and set aside.

  6. Lightly spray a pizza pan with PAM . Form the shape of the dough over the pan working from the center out and prebake the crust for 8 minutes.
  7. remove the crust from the oven and spread the sausage gravy over the crust using the backside of the spoon and then spread the sausage mixture evenly over the top.

Berry season is in full swing here in upper Michigan. We just ended the strawberry season and now the red raspberries, purple raspberries, and blueberries are all ripening at the same time; how good can it get. It would be a shame to freeze all of them, so I like to use as many of them fresh as I can, so this Simple Raspberry Cobbler Recipe went on the dessert menu for supper.

This is a very simple recipe to put together, doesn’t require a lot of prep time, and chances are you will have all the ingredients on hand. I used fresh berries in this recipe but I think frozen would also work out very well, it just might lengthen the baking time a little bit.

  • 2 cups raspberries (I used a combination of purple and red)
  • ¾ cup sugar plus 1 tablespoon (divided)
  • ¾ cup milk
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 4 tablespoons butter or margarine
Instructions
  1. Preheat oven to 350F.
  2. In a medium size bowl mix together ¾ sugar, flour, baking powder, and salt. Add the milk and stir until smooth.
  3. Place the butter in an 8 x 8 baking dish and place it in the oven until the butter is melted.
  4. Pour the batter into the baking dish and distribute the berries over the top, and then sprinkle with the remaining sugar.
  5. Bake for 50 to 60 minutes until golden brown and bubbly. Serve warm with ice cream or let cool to room temperature and serve with whipped cream garnished with fresh berries.

It seems strange I’ve been around a long time but I don’t remember preparing, or eating, a rhubarb cream pie. This pie is absolutely delicious.

It’s been a great year for rhubarb here in upper Michigan as a result of a lot of rain and some cooler weather so I took the opportunity to prepare this Rhubarb Cream Pie Recipe. This is a simple recipe that doesn’t require a lot of prep time and sets up nicely. If you like rhubarb give this one a try; it’s delicious.

Ingredients
  • 1 crust for a 9 inch pie shell (store bought or your favorite recipe)
  • 1½ cups sugar
  • ¼ cup flour
  • ¾ teaspoon nutmeg
  • 3 eggs
  • 4 cups rhubarb (sliced about ½ inch thick)

  • ½ cup flour
  • ¼ cup sugar
  • ⅓ cup butter
Instructions
  1. Preheat oven to 400F.
  2. In a large mixing bowl lightly beat the eggs and then mix in the sugar, flour, and nutmeg until well combined.
  3. Gently fold in the rhubarb. Place the pie crust into a 9 inch pie dish and pour in the mixture.
  4. For the topping combine the ingredients in a separate bowl to form a crumbly crumb mixture. Sprinkle the mixture over the top of the pie.
  5. Bake for 40 minute or until crust is golden brown.

Grilled Smoked Sausage and Pepper Pizza

I don’t prepare a lot of pizza recipes but there seems to be quite a buzz about grilled pizzas so I decided to give it a try. I cheated a little bit and used refrigerate pizza dough, but I am sure if you used your favorite pizza dough recipe, it would work out fine. I used a gas grill to do this pizza and the heat seemed to distribute itself very well to brown the pizza crust. The process of cooking the crust was a lot easier than I had pictured it to be. I used smoked sausage for this recipe, but you could also use fresh, it would just take a little longer to grill it. Outside of grilling the crust preparing grilled pizza is not a lot different than preparing a traditional pizza.

  • 1 pizza crust (for a 12 inch pizza)
  • 1 pound smoked Polish sausage
  • 1 large orange or red pepper (thinly sliced)
  • 1 cup fresh Basil (roughly chopped)
  • 1 can tomato sauce (8 ounces)
  • 2 cups shredded Mozzarella cheese
Instructions
  1. Preheat and oil grill grates on medium high heat.
  2. Grill polish sausage until the casing starts to break. (Should have a little bit of a char) Let cool and slice sausage diagonally into ½ inch pieces.
  3. While the sausage is cooking roll out a piece of aluminum foil to a size of 12 x 14 inches. Spray the aluminum foil on one side with cooking spray. Place the crust in the center of the foil and push it out to the edges of the foil to form a rectangular crust; spray the top of the dough with cooking spray.
  4. Lower the grill heat to medium low and place the crust on the grill dough side down and gently peel off the aluminum foil. (save the foil) Grill uncovered until crust is golden brown. (Watch the crust closely this only takes a few minutes.) Using a large spatula flip the crust and cook just until the crust firms up – slide the crust back onto the piece of aluminum foil browned side up.
  5. Spread the tomato sauce over the crust, sprinkle on the basil, and 1¾ cups of cheese. Then distribute the sausage and pepper evenly over the top.
  6. Top with the remaining cheese; slide the pizza off the aluminum foil back onto the grill, and grill covered until crust is brown and cheese is melted.

  4. Distribute the chicken pieces on top of the pizza and spoon salsa over the chicken. Distribute the onion and green pepper over the top, and then top with the shredded cheese.
  5. Bake for 15 minutes until cheese is melted and crust is golden brown.

 Bacon seems to go good in almost anything and this Shrimp and Bacon Pizza is no exception. I took a short cut with this one and used store bought refrigerated pizza dough. This is not your traditional style of pizza with the pizza sauce, which did make me a little uneasy while preparing it. For some reason omitting the sauce just didn’t seem right – but don’t let this fool you, this Shrimp and Bacon Pizza has a delicious combination of flavors and is real simple to put together. Shrimp and Bacon Pizza Recipe

Ingredients
  • 12 ounces of medium shrimp fresh or frozen (thawed if frozen) peeled and deveined with tail removed and cut in half crosswise
  • 4 slices bacon (cut into ½ inch pieces)
  • 1 medium red onion (thinly sliced)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 package refrigerated pizza dough
  • 6 ounces shredded mozzarella cheese

Instructions
  1. Preheat oven to 500F.
  2. Cook bacon over medium high heat until about half cooked. Bacon will finish cooking on the pizza in the oven. Remove and drain on paper toweling.
  3. Pat shrimp dry with paper toweling and then in a medium size bowl mix together the shrimp with 2 tablespoons of olive oil, garlic powder, onion, salt and pepper.
  4. Grease a 12-inch pizza pan and spread the crust over the pan, sprinkle the mozzarella cheese evenly over the top, and then spread the shrimp mixture over the top of the cheese followed by the bacon.
  5. Bake for 12 – 13 minutes, until the crust is browned, and the shrimp is done.
  6. Cool for 10 minutes and serve hot.

For me pies kind of follow the seasons. I love the taste of the fresh berries starting in the spring with the strawberries. The rhubarb plants are usually at their peak at this time pairing real well with the strawberries. For me this is followed by, cherries, red raspberries, blue berries, and then black berries at the end of the summer. If I’m lucky I will have raspberry, blue berry, and blackberry plants producing at the same time to create a delicious triple berry pie combination.  

The fall here in upper Michigan is a beautiful time of year but I just don’t care a lot for the winter that follows (especially this one). Fresh pumpkins make delicious pies, and the apples are usually plentiful creating delicious pie combinations right up until Thanksgiving Day.

Fresh Cranberry Apple Crisp Recipe

I was a great year here for apples and I have a lot of them in storage so when I saw this Fresh Cranberry Apple Crisp Recipe I decided to give it a try. This is just pretty much a standard apple crisp recipe with fresh and dried cranberries. The combination of the apples and cranberries is delicious and the red coloring from the cranberries makes it a colorful dish to serve. Serve this Fresh Cranberry Apple Crisp Recipe warm, with whip cream, or ice cream and it doesn’t get much better than that. Adapted from Cooks Country Cook Book with a few minor changes.

Ingredients for Topping

1/3 cup all-purpose flour

1/4 cup light brown sugar (packed)

1/4 cup sugar

1/2 teaspoon ground cinnamon

6 tablespoons unsalted butter (Chilled and sliced)

1/3 cup old fashioned rolled oats

Apple and cranberry ingredients

1/2 pound fresh cranberries

3/4 cup sugar

1/8 cup water

1 1/4 pounds tart apples (I used Paula Reds for this recipe)

1/2 cup dried sweetened cranberries

1 1/2 tablespoons Tapioca

Directions

Preheat oven to 400F.

1. in a medium size bowl mix together the brown sugar, sugar, cinnamon, and butter with a fork pressing until gravel like mixture forms. Add the rolled oats, and then using your hands press and fold the oatmeal into the mixture until forming pea size pieces. Set aside in the refrigerator.

2. Cook the Cranberries in the water and 1/2 cup sugar until a jam like consistency is reached. This will kind of look like store bought cranberry sauce. Set aside

3. Peel and core the apples and slice into 1/2 inch slices. Combine the apples and cranberries in a large kettle or Dutch oven and then add the dried cranberries and the rest of the sugar. Cook on medium high heat, stirring frequently until apples start to soften. Remove from the heat and stir in the tapioca.

4. Spread the mixture into an 8 x 8 casserole dish and sprinkle the topping over the top. Bake for 15 to 20 minutes or until golden brown.

How to Make Apple Pie

 Warning-Warm apple pie with ice cream is so good it has to be evil.

My apple trees set fruit so heavy this year there branches were almost breaking so I couldn’t let the season go by without making at least one apple pie. My original thought was to make an additional apple pie for Thanksgiving; along with a pumpkin-but because I was not able to keep my hands off of the first one I decided I would table the idea and just make 1 pumpkin pie instead. I guess my thinking is if it’s not there I won’t be tempted to eat it.

Making homemade apple pie is really simple. Most of the work is in the preparation for the pie crust. Other than that it is mostly peeling and slicing the apples, applying the seasoning, and baking the pie. You can use your favorite pie crust recipe, or use the store bought refrigerated crusts for a 9 inch pie. For the filling in this pie I used Instant Tapioca, but that is optional, you can also use flour instead.

Tip: One of the things I like to do when making a pie that has a top crust, is cover the edges with aluminum foil to keep them from browning to quickly; you would be surprised at the difference this makes.

  • 1 set of 9 inch pie crusts (your favorite recipe or store bought)
  • 2 tablespoons Instant Tapioca (or 2 tablespoons of flour)
  • ¾ cup sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 6 cups apples (peeled and thinly sliced)
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
Instructions
  1. Preheat oven to 400F.
  2. Prepare the apples and place them into a large bowl. Gently mix in all the ingredients except for the butter and pie crust. Let the mixture rest for about 15 minutes while you are preparing the crust.

  4. Lightly spray a 9 inch pie plate with cooking spray and spread the bottom crust over the bottom and up the sides of the dish. Distribute the apple mixture evenly over the crust. Shave butter in thin slices on top of the apples and then lay the second crust on top, and seal the edges. Cut several slit in the crust for venting.
