Ingredients
  • 6 slices bacon (cut crosswise into ¼ - ½ inch pieces)
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 1 large head cabbage (cored and sliced)
  • 1 tablespoon salt or to taste
  • 1 teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ⅛ teaspoon paprika
Instructions
  1. in a large skillet or sauté pan cook bacon over medium high heat until crispy. Add the onion and garlic to the skillet and continue cooking until onion starts to brown. Mix in the cabbage and cook for 10 minutes stirring occasionally. Stir in the seasonings, cover, reduce heat to low, and continue cooking for 20 minutes or until cabbage reaches desired doneness. Add additional salt to taste if desired.

Spicy Whiskey BBQ Sliders

I was in the mood to fire up the grill until I ran across this Spicy Whiskey BBQ Sliders recipe. I had some whiskey I hand that I had purchased for some earlier recipes and I wanted to use it up. (I realize there are many ways to do this but I hardly ever drink any alcohol) anyway these Spicy Whiskey BBQ Sliders looked really good so I gave them a try. No disappointment here – they were well seasoned and delicious.

I didn’t prepare the recipe as written because I didn’t really need 12 of them, it was just my wife and I for supper so I cut the recipe in half.

Spicy Whiskey BBQ Sliders

Ingredients
  • 2 pounds lean ground beef ( I used ground Chuck)
  • Salt and pepper
  • 4 Tablespoons butter
  • 1 large onion (finely diced)
  • ½ cup whiskey
  • 1 cup barbecue sauce (your favorite variety – I used open pit)
  • ¼ cup jarred jalapeno slices or more to taste
  • 12 slider buns or dinner rolls (split and lightly toasted on cut sides)
Instructions
  1. Divide the meat into 12 equal portions and flatten into patties. (I rolled the pieces like I was making meatballs and then flattened them out) season the patties generously with salt and pepper. In a large skillet over medium high heat cook the patties in the oil until almost done – 3 to 4 minutes on each side. Cook in 2 batches if necessary and set patties aside on a platter.
  2. Drain all the oil from the skillet except for 2 tablespoons, add the onion to the skillet, and cook until onion is soft and translucent. Carefully add the whiskey to the skillet (if using an open flame shut the gas off before adding the whiskey to keep it from flaming up) cook 3 to 4 minutes until whiskey is reduced to about in half. Stir in the BBQ sauce and jalapeno slices scrapping any dripping from the bottom of the pan while mixing; pour in any juice that collected on the bottom of the platter.
  3. Reduce heat to low and work the burgers into the BBQ mixture turning to coat. Allow patties to simmer until burgers are heated through and the sauce is hot and bubbly.
  4. Serve sliders by placing each burger on a bun and spooning the BBQ mixture over the top of the burger.

This dish can be used as a side, or as a standalone recipe. This is an easy recipe to prepare and has a delicious, rich and creamy texture. I served this as a side dish with roasted chicken breasts.

Ingredients
  • 2 ounces mild cheddar cheese (Don't use Pre shredded cheese)
  • 1½ teaspoons cornstarch (divided)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon vegetable oil
  • ½ cup finely chopped onion
  • 1 garlic clove, minced
  • ¼ teaspoon dried thyme
  • ⅓ cup low-sodium chicken broth
  • ⅓ cup heavy cream
  • 12 ounces potatoes, peeled and sliced ¼ inch thick
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Instructions
  1. Preheat oven to 425F.
  2. In a small bowl mix together the shredded cheddar and 1 teaspoon of cornstarch. In another bowl mix together the other ½ teaspoon cornstarch and parmesan cheese.
  3. In a 10 inch oven proof skillet using the oil over medium heat, cook onion until lightly browned. Add the garlic and thyme; continue cooking until fragrant. Stir in the broth, cream, salt, pepper, and then add in the potatoes. Bring mixture to a boil, cover, reduce heat to a high simmer and cook until potatoes are tender.
  4. Mix in the cheddar cheese and press the potatoes into an even layer. Sprinkle the Parmesan cheese over the top and bake uncovered in the oven until the cheese is golden brown.
  5. Let cool 10 minutes before serving.

This Funeral Potatoes Recipe makes a great side dish, or can be used as a standalone supper recipe. As the name implies this recipe was used as a side dish at funeral proceedings. The original recipe recipe serves 8 – 10 which makes it great for a get together of any kind.

Because of the number it serves I cut the recipe in half. If you want the original recipe that serves 8 – 10 just double the ingredients.

  • 1½ tablespoons unsalted butter
  • 1 medium onion (finely chopped)
  • 2 tablespoons all-purpose flour
  • ¾ cup chicken broth
  • ½ cup half and half
  • 1 teaspoon salt
  • ¼ teaspoon dried thyme
  • ⅛ teaspoon pepper
  • 1 cup shredded mozzarella cheese
  • 4 cups frozen shredded hash browns
  • 2 cups sour cream and onion potato chips (roughly crushed)
Instructions
  1. Preheat oven to 350F, and lightly spray a 1½ quart casserole dish with cooking spray.
  2. In a large skillet over medium heat cook the onions in the butter until soft and lightly browned.
  3. Whisk in the flour and continue cooking until flour is lightly browned. Mix in the chicken broth, half and half, salt, pepper, and thyme. Bring the mixture to a boil, reduce heat to low, and continue cooking until mixture is thickened. Remove from heat, add cheese, and stir constantly until melted.
  4. Mix the hash browns into the cheese mixture and cook over low heat, stirring occasionally until hash browns are thawed, and then mix in the sour cream.
  5. Spoon the mixture into the casserole dish, top with the chips, and bake for 35 to 50 minutes or until hash brown are done, and the top is nicely browned.
  6. Enjoy

Simple Deep Fried Apples Recipe

Deep Fried Apples are one of my favorite treats in the fall. There are many ways to prepare them, some use cinnamon and sugar, others just cinnamon. I don’t like to hide the taste of the apple slices so I just dip them in batter and deep fry them; lightly salting them when they are done. They make a great side dish or standalone treat.
Give these Deep Fried Apples a try; enjoy
Ingredients
1 egg
½ cup milk
11/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
4-5 apples (peeled, cored, and sliced into ½ inch slices)
Oil for deep frying
Directions
Preheat deep fryer to 375F.
1. In a medium bowl whisk together the egg and milk.
2. Add the flour, baking powder, and salt. Mix until smooth. (Batter will be on the thin side)
3. Dip apple slices in batter and deep fry until golden brown. Place on paper toweling to drain, and salt to taste.

Chinese Fried Rice Recipe

This is a great side dish recipe, especially if you have left over rice from another meal. I used fresh cooked rice for this recipe, but from experience it does cook a little better with rice that is precooked and allowed to cool; if you use left over rice break up any large clumps with a spoon before cooking.

  • 1⅓ cups water
  • ¾ cup rice
  • 3 tablespoons canola oil
  • 4 green onions (chopped/ white and green parts)
  • ¼ teaspoon salt
  • 2 carrots (finely chopped)
  • 1 green pepper (finely chopped – about ½ cup)
  • ½ cup frozen peas
  • 1 large egg
  • 2 tablespoons reduced sodium soy sauce
  • 1 tablespoon sesame oil
  • ¼ cup chopped parsley
Instructions
  1. Mix together the water and rice in a medium sauce pan over high heat. Bring mixture to a boil stirring constantly, cover, reduce heat to simmer, and cook rice until tender and liquid is absorbed. (About 20 minutes)
  2. In a large skillet or wok over medium high heat using the oil, add the rice and cook until lightly browned. Add the green onions, carrots, peppers, peas, and salt; cook until tender – crisp.
  3. Spread the mixture out to form a pocket in the bottom of the skillet, crack the egg into the center and scramble the egg while it cooks. Mix the scrambled egg into the vegetable mixture.
  4. Mix in the soy sauce, sesame oil, and parsley – serve immediately. Enjoy

  • 2 tablespoons unsalted butter
  • 1 pound Brussels sprouts (trimmed and cut in half through the core)
  • ¼ cup chicken broth
  • 1 tablespoon maple syrup

Instructions
  1. In a large skillet over medium high heat cook Brussels sprouts in 1 tablespoon of melted butter until browned. Stir in the thyme, cayenne pepper, chicken broth, and ½ tablespoon of maple syrup. Cover and cook over medium low heat until almost tender.
  2. Uncover, increase heat to medium high, and continue cooking until liquid is almost evaporated.
  3. Add the rest of the butter, maple syrup, and vinegar; salt and pepper to taste and serve hot.

With Labor Day approaching I thought this would be a good time to post another side dish recipe. This is a simple recipe to prepare and will feed a good size crowd. The recipe is mildly seasoned so if you want to heat it up a little bit, it should work out well; Jalapenos would be a good addition to this recipe.

  • 1 pound elbow macaroni
  • 2 ears corn
  • 1 can black beans (drained and rinsed)
  • ½ cup black olives (chopped)
  • 6 Roma tomatoes (seeded and diced)
  • 3 green onions sliced
  • 1 cup shredded cheddar cheese
  • ½ red onion (finely chopped)
  • 1 cup jarred salsa
  • 1 cup sour cream
  • ¼ cup mayonnaise
  • ½ teaspoon cumin

Instructions
  1. Cook macaroni according to package directions; drain, rinse, and set aside to cool.
  2. While macaroni is cooking grill corn over medium high heat until done and slightly charred. Cool and cut kernels off the cob.
  3. In a large bowl mix together the elbow macaroni, corn, black beans, tomatoes, and green onions.
  4. in a medium size bowl mix together the mayo, sour cream, cumin, and salsa until thoroughly combined. Mix the sauce into the macaroni mixture, fold in the cheese; salt and pepper to taste.
  5. Serve cold

Slowly pour in the half and half stirring constantly until mixture is smooth. Continue cooking and stirring until mixture is thickened. Season sauce with the salt, pepper, mustard, and Cajun seasoning, off heat, stir in cheese until melted.
  3. In a large bowl, or the same kettle you cooked the macaroni in, mix the cheese and macaroni together. Garnish with green onion slices if using. Enjoy
