I love watching football on Sunday afternoon with good food. If you have a group over to watch the game this Louisiana Sloppy Joes Recipe is the best. It is very easy to prepare and makes 12 Sloppy Joes. When you add the Cajon Seasoning; add it to taste. I like the spices on the mild side so it was perfect for me. If you want it a little spicier just add extra. Serve it with fries or chips and your all set for a Sunday afternoon of football. Enjoy

I was asked to cook for a get together at he Church. Cold salads always seem to go good for pot lucks or a large get together. This Bow Tie Seafood Pasta Salad Recipe has good color due to the imitation crab meat; so it presents itself very well. The blend of flavors is delicious with the crab and shrimp meat added in. This is a large recipe, so if you are making to feed your family at home, you may want to cut it back a bit. I cooked the full recipe, and it was wiped out. Enjoy

If you are tired of buying egg rolls in the store or the deli then give this Simple Egg Roll Recipe a try. I have to admit I didn’t do the roll ups myself, I had some help; when I prepared these, and She did a very good job. The last time I attempted these they came out looking kind of ouccourd. I am getting old and I guess my fingers don’t work so well anymore. Anyway enough crying, they are just delicious and the whole family loved them. I served them with chicken flavored rice. Enjoy

We were going to make Coney dogs, but decided we wanted something a little different. For our family Coney Dogs basically has consisted of canned Chile on a hot dog with chopped onions. I decided to give this Recipe a try. During the spring and summer months I like to use the grill as much as possible; so I decided to grill the hotdogs. This recipe was a pleasant change and the whole family enjoyed this version of Coney Dogs. There is not a lot of prep time and you can grill the hot dogs while the sauce is simmering.

Great for Breakfast or a great supper. When my son suggested this for supper I wasn’t sure what to think; but I went with the idea, and I was glad I did. What a nice treat. The eggs are a nice added touch. Several times a year we will do what we call a supper breakfast, this one will defiantly be added to the list. This Breakfast Taco Recipe is easy to make and the combinations of flavors make for a delicious breakfast or supper. Enjoy!

Ingredients
1lb ground burger
1 small onion (chopped)
1 package taco seasoning
6 eggs
¼ cup milk
½ teaspoon salt
½ teaspoon black pepper
1 (14 ounce) can refried beans
2 cups shredded cheddar cheese
8 flour tortillas

Instructions:
while chopping up the meat with a metal spatula. Cook until browned. Mix in
taco seasoning and cook according to the directions on the taco seasoning
package. Remove from heat. While burger is cooking in a small saucepan heat
refried beans over low heat.
2. In a medium bowl whisk together eggs, milk, salt and pepper. Spray
another skillet with cooking spray and heat to medium heat. Pour in the
scrambled egg mixture and cook and scramble the eggs until fully cooked.

When I think of spaghetti I always think of the Italian recipes with the tomato sauce. It is like my son pointed out; spaghetti is just the name of the pasta. For something different I decided on this Cheesy Chicken Spaghetti Recipe. It’s a simple recipe, but it is time consuming because you have to precook the chicken. I guess in a way it kind of reminds me of a glorified macaroni and cheese dish. Cooking the spaghetti in the chicken broth left over from the chicken I think gives this recipe a little added extra, creating a rich and delicious flavor that melts in your mouth. If you like pasta dishes- you will love this. Enjoy

Ingredients

3 lbs boneless skinless chicken breast halves

Salt and pepper to taste

1 -16 package thin spaghetti

1 onion, chopped

1 green bell pepper, chopped

2 tablespoons butter or 2 tablespoons margarine

3 (10 1/2 ounce) cans cream of chicken soup

1- 8 oz package of fresh mushrooms sliced

1/2 lb shredded sharp cheddar cheese

1/2 lb cubed Velveeta cheese

Directions

1. In a large Dutch oven, fill 1/2 full with water; add salt and pepper if desired; add chicken breast halves.

2. Bring to a boil; cover and reduce heat; simmer 1 hour or until chicken breasts are done.

3. Remove chicken breasts, reserving broth, and allow chicken to cool; chop chicken meat into bite-size pieces and set aside.

4. Return chicken broth to a boil; add spaghetti noodles and cook to Al dente; drain and set aside.

5. Sauté onion, mushrooms and green pepper in butter until tender.

6. Combine onion mixture, cream of chicken soup, mushrooms, Velveeta cheese and ½ of the Cheddar cheeses; mix well.

7. Add spaghetti and chopped chicken; mix well.

8. Pour into a lightly greased 13×9 inch baking dish.

I decided to post this recipe because many Families have turkey or chicken for Easter Dinner. I used chicken for this recipe, but I am sure turkey would be just as good. This Chicken or Turkey Pot Pie Recipe

Is a simple recipe, because it calls for frozen vegetables. I am sure you could use fresh if you wanted to, but it would involve more prep time. Instead of using mixed vegetables I used frozen soup vegetables because the potatoes and onions are already in the mixture. If you have never made your own pot pie before, give this simple recipe a try; you and your family will love it! Enjoy

Ingredients

1/3 cup margarine or 1/3 cup butter

1/3 cup flour

1/2 teaspoon salt

1/4 teaspoon pepper

1 3/4 cups chicken broth

2/3 cup milk

2 cups cut up cooked chicken

1 (16 ounce) package frozen soup vegetables

2 prepared pie crusts (1 top crust and 1 bottom crust)

Directions

1. Heat butter over low heat until melted.

2. Blend in flour, broth, salt and pepper.

3. Cook over low heat, stirring constantly until smooth and bubbly.

4. Remove from heat.

5. Stir in milk.

6. Heat to boiling; stirring constantly. Boil and stir one minute.

7. Stir in chicken and veggies.

8. Line pie plate with prepared bottom crust.

9. Pour in filling.

10. Top with top crust. Cut slits in center to vent and Flute edges. ( I like to wrap aluminum foil around the edges to keep the edges from browning too quick)

11. Bake at 425°F until crust is golden brown; approximately 30-45 minutes.
