The temperature here in Upper Michigan reached a rare 41F degrees here yesterday, which brought a grilling opportunity I couldn’t resist; so I decided to put this Grilled Dijon Bacon Cheeseburgers Recipe on the menu. Ingredients
  • 1 pound lean ground beef
  • 1 cup shredded cheddar
  • 5 tablespoons Dijon mustard
  • 2 teaspoons dried minced onion
  • 1 teaspoon prepared horseradish
  • 4 onion sandwich rolls (split and toasted)
  • 1 cup shuddered lettuce
  • 4 slices of tomato
  • 4 slices bacon (Cooked and cut in half)

Instructions
  1. Preheat the grill to medium high heat
  2. In a small bowl combine the cheese, onion, horseradish, onion and 3 tablespoons of mustard. Set aside.
  3. In a large bowl mix together the burger, and the remaining 2 tablespoons of Dijon mustard. (it’s a little messy but hands work best for this) Shape into 4 patties.
  4. Grill the burgers for about 5 minutes on each side, or to your desired doneness.
  5. Top each burger with the cheese mixture. Close the grill and cook until the cheese starts to melt. (this is also a good time to lightly toast the buns)
  6. To serve the burgers, start with the lettuce, followed by the tomato, then the burger topped off with the bacon.

Simple Spice Cookies Recipe

The cookie jar was empty and I wanted some cookies to go with my coffee; but I wanted to hold the amount of sugar down a little bit so I decided on this Simple Spice Cookies Recipe. This recipe uses a granulated no calorie sweetener which I have used in the past and it is a very good sugar substitute. If you don’t like using sugar substitutes; I am sure sugar would also work very well. This is a simple recipe with very little prep or baking time-you can have cookies on the table in less than a half an hour. The number of cookies this recipe produces will depend on the size of the cookie dough balls you make to create the cookies. I wound up with 16, but the recipe says it should make 30.

If you find your cookie jar getting empty, give yourself a treat, and bake up a batch of these Spice Cookies; they’re really good.

Ingredients
  • 6 tablespoons shortening
  • 6 tablespoons margarine
  • 1 cup granulated no calorie sweetener (or sugar)
  • 1 egg
  • 1/ 4 cup molasses
  • 2 cups all-purpose flour (sifted)
  • 3/ 4 teaspoon ginger
  • 1 teaspoon ground cinnamon
  • 1/ 2 teaspoon ground cloves

Instructions
  1. Preheat oven to 350F.
  2. In a large bowl using an electric mixer, mix together the shortening, egg, molasses and sweetener. Mix until thoroughly combined.
  3. In a separate bowl sift the flour and spices together. then mix the flour mixture into the shortening mix to form cookie dough.
  4. Using about a heaping tablespoon at a time form the dough into balls and place on an ungreased cookie sheet. Flatten with a fork and bake for 10 to 12 minutes or until cookies are done.
  5. Cool on a cooling rack
  6. Makes 15 to 30 depending on the size cookies you make.

Slow Cooker Chicken and Shrimp Recipe

When I first saw this recipe I wasn’t sure how well chicken thighs and shrimp would blend together but it worked pretty well. Because of using dark meat the chicken remained nice and moist. I unusually don’t like cooking pasta in the slow cooker; I’d rather do it separately; because it was Orzo I thought that it might work out ok, and it did. If you have a busy day coming up you can get this on in the morning and finish it off in the evening when you get home. Combing the chicken and shrimp is a little different but I thought it was really good.

Ingredients
  • 1 pound boneless skinless chicken thighs (cut into bite size pieces)
  • 2 tablespoons canola oil (for browning chicken)
  • 1 can crushed tomatoes (28 ounces)
  • 2 celery ribs (chopped)
  • 1 medium green pepper (cut into 1-inch pieces)
  • 1 medium onion (coarsely chopped)
  • 2 garlic cloves (sliced)

  • 1 bay leaf

  1. In a large skillet brown the chicken pieces using the oil.
  2. Place the chicken in the slow cooker and mix in the rest of the ingredients except for the shrimp and pasta.
  3. Cover and cook on low for 7 hours or until chicken is tender. Add the pasta and turn the slow cooker on high; cook for about 15 minutes or until pasta is tender. Mix in the shrimp and cook for an additional 5-10 minutes or until shrimp is heated through.

I had to dig way back into my recipe file to find this Simple Pizza Casserole Recipe. This recipe was popular with my kids when they were young. Actually we all really enjoyed it, but for some reason it kind of fell to the wayside. This is a simple recipe and very basic I’m sure if you wanted to add some additional ingredients like, mushrooms, and green peppers or pretty much any type of topping you would like on a pizza. Because there is Italian sausage used in this recipe the flavor will change with the brand of Italian sausage you are using.

Ingredients
  • ½ pound lean ground beef
  • ½ pound Italian Sausage
  • 1 medium onion (chopped)

  • 2 large cans pizza sauce (15 ounce cans)

  • 7 ounces of elbow macaroni
  • 1 egg (beaten)
  • 1 cup shredded mozzarella and cheddar cheese blend

Instructions
  1. Preheat oven to 350F.
  2. Cook macaroni according to package directions.
  3. While macaroni is cooking in a large skillet brown the burger, sausage and onion until meat is no longer pink inside. Drain if needed.
  4. Then mix in the pizza sauce and seasonings. Drain the macaroni and add it to the meat mixture along with the milk and egg.
  5. Spoon the mixture into a 2 quart casserole dish, top with the shredded cheese, and bake covered for 40 minutes or until hot and bubbly.

I wanted to put chicken on the menu for tonight’s supper, but I wanted to keep it simple and basic. This Family Style Broiled Chicken Recipe is simple and quick to put together. There is very little prep time so the chicken is broiled and on the table in less than an hour. This recipe has a simple blend of flavors that complement the chicken very well. I thought the smoked paprika was a nice touch; adding a touch of smoked flavoring. After brushing the chicken with the butter mixture several times I had quite a bit of the chopped onion left in the sauce, so I finished off by making sure I brushed the rest of the onion on the chicken during its final cooking time. If you don’t like a lot of onion, just leave it behind, using it just to flavor the sauce. I had been planning on posting pumpkin pancakes but was trying to hold up until fall. I was having a hard time figuring out what to cook and had some pumpkin on hand I wanted to use up so I prepared a breakfast supper of Pumpkin Pancakes. Looking around the web there were quite a few different recipes for pumpkin pancakes but they all were pretty close to the same. Like most pancake recipes this Pumpkin Pancakes Recipe is simple to put together but when you add the milk into the recipe, add it a little at a time. I like to have my pancake batter to have the consistency, so that I can pour it into the griddle, but still on the thick side. The best tip I can give for making pancakes is be patient.   4. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle for the size pancakes you desire. Brown one side until the bubbles start to form in the batter on top, then flip the pancake and cook until done.

  5. Let stand 15 minutes before serving.

It has been quite a while since I have put Mexican food on the dinner menu. When I saw this Slow Cooker Fajitas Recipe it looked like it would be pretty good. Everything is cooked in the slow cooker so I knew whatever steak cut I used would turn out very tender. I don’t care for dishes that are two heavily spiced. This recipe was about right for me; a little nippy, but not too hot. Fat Tuesday today, Ash Wednesday this Wednesday the 13th, and with an early Easter this year Lent is here already. This should be a sign the winter is going by fast, but for me, it is not. I can’t wait to get this winter over with. My heart goes out to the people in the North East. How bad can it get? They started the year recovering from Hurricane Sandy and are now in the process of recovering from a record snow storm. I wish them the best and hope things come around for them for the rest of 2013.

This Greek Style Baked Fish Recipe caught my eye because it was a little different then the baked fish recipes I usually make. Instead of the fish fillets being rolled, or dipped in bread crumbs they are laid on them, and then more breadcrumbs are sprinkled over the top after the sauce and spices have been spooned over the fillets. When you look at the cooking time for this recipe you might think 40 minutes is a long time for fish; but it is not. Let the fish cook until the breadcrumbs brown nicely, and it should be perfect. Ingredients
  • ¾ cup olive oil (divided)
  • 1 cup dry breadcrumbs (divided)
  • 2 pounds fish fillets (I used tilapia; any kind of white fish would be good such as cod or haddock)
  • 2 teaspoon salt (divided)
  • ¼ cup lemon juice
  • ¼ cup tomato sauce
  • 1 cup fresh parsley (chopped)
  • ½ cup dry white wine
  • 2 cloves garlic (finely chopped)
  • ¼ teaspoon black pepper

Instructions
  1. Preheat oven to 350F.
  2. Pour ¼ cup olive oil into the bottom of a 13 x 9 baking dish (tilt the dish around to evenly distribute the oil). Sprinkle ½ cup of the bread crumbs over the bottom.
  3. Distribute the fillets in a single layer on top of the bread crumbs and sprinkle with 1 teaspoon of salt. Spoon the lemon juice over the top of the fish.
  4. In a medium size bowl mix together ½ cup olive oil, tomato sauce, parsley, wine, garlic, 1 teaspoon salt, and the pepper. Spoon the mixture evenly over the fillets and top with the remaining bread crumbs.
  5. Bake uncovered for 40 minutes or until golden brown.
  6. Note: Instead of a 13 x 9 baking dish I divided the recipe up into 9 inch glass pie dishes.

Usually when I prepare a vegetable for a side dish I cook or steam them without any type of a sauce; salt, pepper, and butter works out fine for me. I had fish on the menu for tonight and thought this Ginger Glazed Carrots Recipe would go really well with baked fish. This is a simple recipe with most of the prep time dedicated to cutting the carrots in half. I used the pre peeled baby carrots from the market for this recipe. Ingredients
  • 1 pound baby carrots (peeled and sliced lengthwise)
  • ½ cup water
  • ¼ cup butter or margarine
  • 3 tablespoons honey

Instructions
  1. Place the carrots and water in a 10 inch skillet. Bring to a boil, and then reduce the heat to simmer, cover and cook until carrots are tender. Drain the carrots and remove them from the skillet.
  2. Melt the butter in the skilled and stir in the honey, lemon juice, ginger and salt.
  3. Bring the mixture to a boil and add the carrots back in. Reduce heat to a simmer and cook uncovered stirring occasionally to glaze the carrots (about 10 minutes).
