Club Pasta Salad Recipe

I needed a side dish again to go with some pulled barbecued chicken sandwiches we were having for supper. One of my family members made this Club Pasta Salad Recipe before and it was really good; so I decided to give it a try. This is a small recipe so you may want to adjust it to the number of guests you are feeding. I think this would also be a good recipe for a pot luck, or church social type of thing.

The recipe is very simple, and I followed the recipe as is. This recipe calls for bacon bits, but when I have had it in the past, fresh bacon was used in place of the bacon bits. In both versions the salad was very good, but I think I prefer using the fresh bacon. The next time you need a side dish, give this one a try. Enjoy

 

Ingredients

2 cups uncooked shell pasta

1 (1 ounce) packet hidden valley ranch dressing mix

1/4 cup bacon bits

1/2 teaspoon onion powder

1/2 cup mayonnaise or salad dressing

1 1/2 cups smoked turkey breast (cubed)

1/2 cup cherry tomatoes (cut into fourths )

1/2 cup shredded cheddar cheese

4 cups bite-size pieces lettuce

Directions

1. Cook pasta until tender according to package directions. Let cool and chill.

2. In a large bowl combine Hidden valley ranch mix, onion powder, and bacon bits with mayonnaise and mix till well blended.

3.  Stir in chilled pasta and remaining ingredients except lettuce.

4. Serve over the lettuce pieces.
