I have kind of taken a break on baking lately; I guess I felt we had too many sweets over the holidays. I knew it was time to bake something when my wife started looking at the muffins when we were grocery shopping the other day. I said to her, “don’t even think it, I’ll bake it, what kind do you want”? Well this Oatmeal Raisin Muffin Recipe is what she decided on. I followed the recipe as written, but you could make some changes, like substituting the sugar with Splenda and using fat free milk. The addition of the applesauce in this Oatmeal Raisin Muffin Recipe gives these muffins a nice, moist texture. Be sure to allow yourself enough time for the oatmeal to soak in the milk. Enjoy

Ingredients
- 1 cup old fashion rolled oats (not instant)
- 1 cup milk
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. sugar
- 1/2 cup Raisins
Instructions
- Soak the oats in milk for about one hour.
- Preheat the oven to 400 degrees.
- Spray muffin pan with cooking spray or use liners.
- Combine the oat mixture with the applesauce and egg whites, and mix until combined.
- In a separate bowl measure and whisk the dry ingredients together including the sugar and cinnamon.
- Mix all ingredients together until combined.
- Spoon muffin mixture into muffin pan.
- Bake for 20-25 minutes or until done.
- You can add the cinnamon and sugar to the muffin batter mixture or use it to top each muffin. (I added it to the batter mixture and topped the muffins with some additional raisins)
- These Oatmeal Raisin Muffins are really good, served hot with butter!
