It was blowing and cold outside with snow coming down, but I didn’t care, I was getting ready to cook these Venison Bacon Burgers on the grill.
I am always looking for good venison recipes and this one caught my attention because of the bacon mixed with the burger, and it didn’t let me down. The combination was absolutely delicious. If you have some venison burger on hand, give this Venison Bacon Burger Recipe a try. I’m sure if you are not able to grill it, pan-frying it; it should turn out just fine. Enjoy

- 6 slices bacon
- 1 teaspoon minced garlic
- 2 shallots, minced
- 2 lbs ground venison
- 1 tablespoon Worcestershire sauce
- 1 tablespoon chopped fresh parsley
- 1 egg, beaten
- 6 hamburger buns
- Salt and pepper to taste
- Cook bacon in a skillet over medium heat until brown and crispy. Pour bacon drippings (reserve some to cook garlic and shallots in) and crumble the bacon and place in a large mixing bowl to let cool.
- Use reserves bacon drippings and saute the garlic and shallots until softened, then add to the bacon and bacon drippings bowl.
- Once cooled, add the ground venison, Worcestershire, parsley, salt, pepper, and the beaten egg until evenly combined. Refrigerate about 20 minutes.
- Preheat outdoor grill for medium high heat.
- Shape into 6 patties, and grill until desired doneness.
- Serve on slightly grilled hamburger buns with desired condiments and toppings .

- Meatballs
- 1 lb ground beef
- 1/2 cup Italian seasoned breadcrumbs
- 2 eggs, lightly beaten
- 1/3 cup onions, finely chopped
- 1/2 cup parmesan cheese, grated
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- Sauce
- 12 ounces light-colored beer, such as lager
- 1 1/2 cups tomato sauce
- 1 cup ketchup
- 2 tablespoons tomato paste
- 1/2 cup brown sugar, packed
- Preheat oven to 400*.
- Line broiler pan with foil and spray rack with nonstick cooking spray.
- Combine all meatball ingredients together in a large bowl and shape into 1 inch meatballs.
- Place meatballs on broiling rack and bake for 10 minutes or until browned.
- Combine all sauce ingredients together in a large Dutch oven and bring to a boil.
- Add meatballs and reduce heat.
- Cover and simmer 20-30 minutes, stirring occasionally.
- Serve over hot Spaghetti

Around Christmas time I am always looking for quick recipes because things have a way of getting kind of hectic. This Garlic Cheese Chicken Rollups Recipe is another simple and delicious recipe. There are not a lot of ingredients required or a lot of prep time. The combination of simple flavors go well together, you and your family will love it.

- Ingredients
- 4 skinless, boneless chicken breasts
- 1 cup dried bread crumbs, seasoned
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter, melted
- 1 (7 ounce) package garlic cheese spread
- Preheat oven to 350 degrees F
- Pound chicken breasts until thinned out.
- In a shallow dish or bowl mix together bread crumbs and cheese. Dip one side of each breast into melted butter or margarine, then into crumb/cheese mixture. Place a dollop of cheese spread at one end of each chicken breast, on the side of the breast not dipped in the mixture. Roll up each breast and secure with toothpicks.
- Place rollups in a lightly greased or sprayed with cooking spray, 9×13 inch baking dish, and drizzle any remaining butter or margarine over all. Bake in the preheated oven for 35 to 40 minutes, or until cooked through and juices run clear.

Fit to feed an army. This Pot Luck Style Taco Casserole is one of my favorites to bring to any get together. It’s a recipe that’s simple and doesn’t have a lot of prep or cooking time, but still is very delicious. The only thing I would suggest is to add to the recipe, a bowl of additional corn chips, to serve along with it. The next time you have to create a dish for a get together give this Pot Luck Style Taco Casserole recipe a try; they’ll love it!

- 2 lb ground beef 1 (1 1/4 ounce) package taco seasoning
- 2 (15 ounce) cans refried beans
- 4 cups mixed cheddar, divided (or mixed cheddar, jack etc.)
- 2 cups salsa
- 4 green onions chopped
- 2 (2 1/3 ounce) can sliced black olives
- 2 tomato chopped
- 4 cups corn chips, coarsely crushed or chopped
- Brown ground beef and drain.
- Add Taco seasoning and cook according to directions on the package.
- Cover the bottom of a 9 x13 casserole dish with the corn chips.
- Heat refried beans on the stove until hot.
- Add 2 cups cheese and 2 cup salsa-mix into the beans.
- Pour bean mixture over the corn chips.
- Add the burger on top of the beans.
- Sprinkle the remaining cheese over the top.
- Sprinkle the olives and green onions over the cheese.
- Bake at 375 degrees until cheese is melted.
- Remove from the oven and sprinkle the chopped tomatoes on top. Wait one to two minutes. Enjoy
- Serve with Corn Chips on the side
