Pumpkin Cake With Cream Cheese Frosting Recipe
While I was digging in the freezer I ran across some Pumpkin from last years garden. We kind of knocked off the sweets after the holidays. When I saw the pumpkin I thought it was time for a treat. This Pumpkin Cake With Cream Cheese Frosting Recipe is very simple. This cake is moist and delicious. The Cream Cheese frosting makes it perfect. This would also be a Great Treat for Mothers Day. Enjoy!
 
Ingredients

4 large eggs

1 2/3 cups white sugar

1 cup vegetable oil

1 (15 ounce) can pumpkin puree ( 1 ¾ cups fresh or frozen )

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

1 teaspoon baking soda

2 teaspoons ground cinnamon

Ingredients for Frosting

6 ounces cream cheese

6 tablespoons butter, softened

3 cups confectioners’ sugar

Directions

1. Preheat oven to 350°F.

2. Grease and flour one glass 9 x 13 inch pan.

3. In a mixing bowl, beat together the eggs, sugar, oil and pumpkin.

4. Sift together the flour, baking powder, salt, baking soda, salt and cinnamon; add to wet ingredients and mix thoroughly.

5. Spread into prepared pan.

6. Bake at 350° for 25 to 30 minutes.

7. Remove from oven and allow to cool.

8. For the frosting: beat together the cream cheese, butter and confectioner’s sugar.

9. Evenly spread over bars after they have cooled.

Crock Pot Arm Steak Recipe

Spring is here! There is a lot going on and I really needed to buy some time. I had some berry plants arrive that need to be planted very badly. Slow cooker to the rescue again. This Crock Pot Arm Steak Recipe is just great. Very simple and very little prep time. Prepare it and forget it till its done. I am sure Chuck Steak or Round steak would work equally as well. Serve with mashed potatoes and a vegetable. The gravy is just delicious. Enjoy!

Ingredients

3-4 lbs Steak

1 envelope Dry Onion Soup mix

2 10 ½ oz cans Cream of Mushroom Soup

1 8 oz package Sliced Fresh Mushrooms

¼ cup water

steak onion soup mix sliced mushrooms slow cooker steak

Directions

1. Place the water in the Slow Cooker followed by the steak. On top of the steak add the Cream of Mushroom soup, dry Onion Soup mix then the Mushrooms on top.

2. Cook on low for 8-10 hours or on high for 5-6 hours or until tender.

Serve with Mashed Potatoes.

Whole Chicken Crock Pot Recipe

Whole Chicken
Move over rotisserie chicken. This Whole Chicken Crock Pot Recipe is so simple you would think it could not be so good. But it is the best. So tender and so good! Out of the crock pot juicy and ready for the table. My Family just loved it. Be sure and use a meat thermometer on this recipe so it is done just right. 165 degrees will do the trick.

 Ingredients

4 teaspoons salt

2 teaspoons paprika

1 teaspoon cayenne pepper

1 teaspoon onion powder

1 teaspoon thyme

1 teaspoon white pepper

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1 large roasting chicken (with pop-up timer if possible)

1 cup onion, chopped

 

 

 Chicken  Whole Chicken

Directions

1. In a small bowl, combine the spices.

2. Remove any giblets from chicken and clean chicken.

3. Rub spice mixture onto the chicken.

4. Place in reseal able plastic bag and refrigerate overnight.

5. When ready to cook, put chopped onion in bottom of crock pot.

6. Add chicken. No liquid is needed, the chicken will make it’s own juices.

7. Cook on low 4-8 hours. Till internal temperature reaches 165.

Scalloped Potatoes and Ham
Scalloped Potatoes and Ham Recipe
Potatoes at their best. This simple Scalloped Potatoes and Ham Recipe has just a delicious combination of flavors. This is a great stand alone meal or if your Family are big eaters a great side dish. For pot luck recipe it could not get any better. It would make a great dish for your next get together. There is not prep time involved but you do have to allow for some cooking time. Enjoy
Ingredients

1/2 cup butter

1/2 cup flour

2 teaspoons salt

1/2 teaspoon pepper

3 cups milk

3 cups ham, cooked

1 large green pepper, chopped

1 large onion, chopped

1/2 cup cheddar cheese, shredded

5 cups potatoes, peeled and sliced

Directions

1. Melt butter in large sauce pan over low heat; blend in flour, salt, and pepper.

2. Cook, stirring constantly, for about 1 minute. Remove from heat gradually stir in milk.

3. Return to heat; cook until thickened and bubbly.

4. Fold in ham, onion, green pepper and cheese. Pour over potatoes in a large bowl.

5. Stir gently then move into a buttered 13X4-inch baking dish; cover with foil.

6. Bake at 350 degrees for 30 minutes.

7. and continue to bake for 1 hour or till potatoes are tender.

8. Let stand for 10 minutes before serving.

Green Bean Casserole Recipe

Green Bean Casserole
What a great side dish. This Green Bean Casserole Recipe is just rich in flavor. It goes great with almost any main dish. I used fresh store bought beans for this recipe. I am sure frozen would also work. The gardening season will be here shortly. I cant wait for the fresh vegetables. Give this recipe a try – you will

Ingredients

¼ cup butter

3 Garlic cloves ( minced )

2 cups fresh sliced Mushrooms

6 cups fresh cut or frozen green beans

2 ( 10 ¾ ) cans condensed cream of mushroom soup

¼ cup grated Parmesan cheese

½ teaspoon black pepper

2 ( 2 7/8 ounce ) cans French Fried Onion rings

1 cup grated cheddar cheese

Instructions

1. Preheat oven to 350

2. In a large skillet add mushrooms, butter and garlic. Sauté until mushrooms are semi soft. Set aside.

3. In a large sauce pan cover the green beans with the chicken stock and cook until tender. Drain the beans but don’t rinse.

4. In a large bowl combine Cream of Mushroom Soup, cooked mushrooms, Parmesan Cheese, pepper and onion rings. Mix thoroughly. Gently mix in the Green Beans.

5. Pour into a 3 quart casserole dish .

6. Bake at 350 degrees for 20 minutes.

7. Remove from the oven and spread the Cheddar Cheese over the top. Return to the oven till the cheese has melted and serve.

Strawberry Banana Cream Pie Recipe

Strawberry Banana Cream Pie
 

I was kind of surprised. All the freeze warning coming out of Florida and our local grocery store ran strawberries on sale from Florida. They were pretty good besides. Even though here in Upper Michigan it is way to early to be thinking about fresh berries the thought still gets me excited. Bananas and strawberries what a great combination. When I saw this recipe I just had to give it a try. This Strawberry Banana Cream Pie Recipe is just delicious. It is very easy to create, and does not require much prep time. The recipe says to let it set for a few hours. If you are in a rush it sets quickly allowing you to serve it much sooner. Enjoy

 

Ingredients

1/2 cup sugar

2 tablespoons cornstarch

1/4 teaspoon salt

4 egg yolks

2 cups milk

1 1/2 teaspoons vanilla

1 pint strawberry, sliced

1 9 in. graham cracker crust

1 large banana or 2 small bananas, peeled and sliced

whipped cream, optional

 

Directions

1. In medium saucepan, combine sugar, cornstarch and salt.

2. Blend together egg yolks and milk.

3. Stir small amount of milk mixture into dry ingredients, making a smooth paste.

4. Gradually blend in remaining milk mixture.

5. Cook over medium heat, stirring constantly, until mixture thickens and boils.

 

Banana Cream  Banana Cream

6. Allow to boil for one minute.

7. Remove from heat and stir in Vanilla.

8. Cool quickly by setting pan in bowl of ice or cold water and stirring for a few minutes.

9. Arrange Strawberries in the bottom of the pie shell, reserving about 1/4 of them for garnish.

10. Pour half of the custard over berries.

11. Layer bananas over custard layer and top with remaining custard.

12. Cover and refrigerate for at least 3 hours.

13. Garnish with reserved berries and whipped cream.

Baked Potato Salad Recipe

Baked Potato Salad
This potato salad is just loaded with all the good stuff. Almost everyone’s favorite with grilled steak or chicken. This is the first potato salad recipe I have see that calls for some oven time. The family just loved it. Give it a try. Its just delicious.
Ingredients

6 hard boiled eggs chopped

8 potatoes, cubed (half peeled or half with skin)

2 teaspoons salt

6 slices bacon, diced & crisp cooked

6 green onions

2 cups cheddar cheese, shredded

16 ounces sour cream

1/4 teaspoon pepper

1 cup Miracle Whip

diced potato bacon

Directions

1. Cube and boil potatoes with salt.

2. Drain.

3. Crumble bacon and slice onions (including tops).

4. Combine sour cream, pepper and Miracle Whip.

5. Add to potatoes.

6. Add bacon, onions, eggs and cheese (reserve some of each for top).

7. Mix with potatoes.

8. Pour into baking dish.

10. Bake 350 for 10-15 minutes (until cheese melts).

Simple Barbeque Sauce Recipe

Spring is here. When the temperatures hit the 30’s it didn’t take me long to decide to fire up the grill. I was told by a friend of mine the stickier and gooier the BBQ sauce is, the better it tastes. Well with the new grilling season I had to try a new barbeque sauce recipe. Make sure you have a lot of tow lets on hand because you will need them. Sticky, gooey, and just delicious. I used this recipe with chicken but I am sure it would also be great with pork or beef. Enjoy
 

 

Ingredients

1/2 white onion

3 cloves garlic

3 tablespoons olive oil

1 2/3 cups ketchup

1/2 cup white vinegar

1/3 cup brown sugar

1/3 cup Worcestershire sauce

2 teaspoons chili powder

1/4 teaspoon cayenne pepper

 

barbeque sauce onion and garlic

Directions

1. Place olive oil in a sauce pan. On medium heat , cook onion and garlic until they are soft.

2. Add the white vinegar, ketchup, brown sugar, Worcestershire sauce, chili powder, and cayenne pepper.

3. Simmer for 30 minutes.

Simple Raised Donut Recipe

Raised Donut
Simple is good. This Raised Donut Recipe is fast and delicious. Their is not a lot of prep time if you are in a hurry. The kids will love it. Use the topping of your choice. I kind of mixed it up a little bit, using sugar and cinnamon, chocolate glaze and left some just plain. The recipe made 2 dozen. Don’t forget to cook them donut holes.
Ingredients

2 (8 g) packages fast rising yeast

1 cup lukewarm water

3 tablespoons sugar

1 egg, well beaten

1/2 teaspoon cinnamon

1/3 cup melted butter

1 teaspoon vanilla

1 teaspoon salt

2 1/2 cups flour (use More if too sticky)

cooking oil (for frying)

 

yeast donut dough

Directions

1. Mix yeast, water and sugar.

2. Wait until bubbles form in mixture.

3. Add egg, butter, cinnamon, vanilla, salt and flour.

4. Mix to form dough.

5. Knead dough for 1 minute.

6. Roll out and cut out donuts.

7. Allow to rise for 30 minutes on floured surface.

8. Fry in oil until golden brown. Oil should be approximately 350°F.

9. Coat in cinnamon & sugar mixture or your favorite topping.

10. These freeze very well after they have fully cooled, if there are any left.

Chocolate Peanut Butter Cake

Yum! This has to be one of the Greatest Cakes ever! So rich and chocolaty it just melts in your mouth. This is my sons favorite and he wanted it for his birthday. So here it is. This

Chocolate Peanut Butter Cake Recipe does take some time, and a little bit of work. But the result is fabulous.

Cake Ingredients

2 cups all-purpose flour-sifted
2 1/2 cups sugar
3/4 cup unsweetened cocoa powder, preferably Dutch process
2 teaspoons baking soda
1 teaspoon salt
1 cup neutral vegetable oil, such as canola, soybean or vegetable blend
1 cup sour cream
1 1/2 cups water
2 tablespoons distilled white vinegar
1 teaspoon vanilla extract
2 eggs

Directions

1. In a large bowl combine all the dry ingredients. Wisk or mix them until thoroughly combined.

2, Add the rest of the ingredients and mix with a mixer. Till smooth (about 3 minutes).

3. Spray 3- 9 inch cake rounds with nonstick. Divide the cake mix between the 3 pans

4. Bake at 350 degrees for 30-35 minutes or until a tooth pick or table knife inserted comes out clean.

5. Remove from oven and let cool.

6. This is a very moist cake to work with. I removed them by placing them upside down, then into the freezer for about 30 minutes to make them easier to work with.

 

Peanut Butter Frosting
Makes about 5 cups

10 ounces cream cheese, at room temperature
1 stick (4 ounces) unsalted butter, at room temperature
5 cups confectioners’ sugar, sifted
2/3 cup smooth peanut butter, preferably a commercial brand (because oil doesn’t separate out)

1. In a large bowl with an electric mixer, beat the cream cheese and butter until light and fluffy. Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes.

2. Add the peanut butter and beat until thoroughly blended.

3. Place the 1st cake round side down. Frost the layer. Then repeat the process for the next, finish frosting by coating the tops and sides.

( This is a light colored frosting-the crumbs will show though from the dark chocolate. If you wish you can lightly frost it first, then place it in the freezer or fridge to let it set. Then re frost it)

Chocolate-Peanut Butter Glaze
Makes about 1 1/2 cups

8 ounces semisweet chocolate, coarsely chopped
3 tablespoons smooth peanut butter
2 tablespoons light corn syrup
1/2 cup half-and-half

1. In the top of d double boiler or in a bowl set over simmering water, combine the chocolate, peanut butter, and corn syrup. Cook, whisking often, until the chocolate is melted and the mixture is smooth.

2. Remove from the heat and whisk in the half-and-half, beating until smooth. Use while still warm.

3. Pour over the cake and let set.
