Slow Cooker Beef Barley Soup Recipe 

It has been a long time since I cooked anything with barley in it. This Beef Barley Soup Recipe caught my eye, it sounded really good, and with the cold temperatures we’ve been having here in upper Michigan this week. I have had a very busy schedule and decided it was time to get the slow cooker out again. This recipe has very little prep time and takes care of itself once it’s in the slow cooker. Ingredients
  • 1-1/2 pounds beef stew meat
  • 1 tablespoon canola oil-for browning the stew meat
  • 1 (14.5 ounce can) diced tomatoes
  • 1 cup chopped onions
  • 1 cup diced celery
  • 1 cup sliced fresh carrots
  • cup chopped green pepper
  • 4 cups beef broth
  • 2 cups water
  • 1 cup tomato sauce
  • ⅔ cup medium pearl barley
  • 1 tablespoon dried parsley
  • 2 teaspoons salt
  • 1-1/2 teaspoons dried basil
  • teaspoon black pepper
Instructions
  1. In a large skillet brown the stew meat.
  2. Combine all ingredients in a 5 quart slow cooker, cover and cook on low for 9-10 hours.

    This was delicious! My husband loved it and said it was one of my best! (thanks to you)
    I cut the recipe in 1/2
    I did add 1/4 cup more barley and one 4 oz can of mushrooms for and cut my meat into smaller bite size pieces. A keeper!!! I love how there is no garlic in it since hubby can’t eat garlic.
    Definitely going into rotation.
