I wasn’t sure when I looked at this recipe if it really was Spanish or not. It kind of looked like it favored Italian cuisine a little better. However I thought this Slow Cooker Spanish Chicken Recipe looked pretty good, so I decided to give it a try. I have a pretty busy schedule so I have a tendency to favor the slow cooker meals.
This is a real simple recipe with almost no prep time. Everything except for a couple of items goes right into the slow cooker so you can set it, and forget it, and continue on with your day. The red pepper flakes in the recipe heat it up a little bit which for me is fine. If you like it more on the hot side just increase the hot red pepper to taste.

1 3/ 4 pounds boneless skinless chicken breasts ( cut into 1-inch cubes.
1 pound Italian turkey sausage links (cut into 1-inch pieces)
1 large red bell pepper (chopped)
1 medium onion (chopped)
4 cloves garlic (finely chopped)
1 teaspoon dried oregano
1/ 2 teaspoon crushed red pepper flakes or to taste
1 can diced tomatoes (28 ounces undrained)
1 can tomato paste (6 oz)
1 can quartered artichoke hearts (14 ounces drained)
1 can sliced ripe olives (4 ounces drained)
White rice for serving cooked to package directions
1. Spray 3 1/2- to 4-quart slow cooker with cooking spray.
2. in a slow cooker combine the chicken, sausage, bell pepper, onions, garlic, oregano, pepper flakes, tomatoes and tomato paste.
3. Cover and cook on Low for 6 to 8 hours.
4. Just before serving stir in the artichoke hearts, and olives into chicken mixture. Cook until heat through.
Serve hot- over hot rice.
