This Slow Cooker Turkey Thighs Pot Roast Recipe caught my eye because of another busy afternoon coming up. I needed a good, set-and-forget-it type of recipe. I don’t do turkey in the slow cooker very often, and thought I would try this. A delicious, warm, and comforting pot roast with turkey thighs, carrots, onions, and potatoes. Wow, talk about sticker shock. It’s been a long time since I purchased turkey parts, and if my memory serves me right, they were pretty cheap in the past. Not so this time; it looks like the price really took a jump.

There is very little prep time with this recipe, which makes it even better. The seasoning blends well with the turkey and vegetables, and when the turkey is finished cooking all the vegetables are done at about the same time. Ingredients:

  • 3-4 Turkey Thighs
  • 2 cups baby carrots
  • 3 medium potatoes (peeled and quartered)
  • 2 celery ribs (cut into 2 inch pieces)
  • 1 medium onion (peeled and quartered)
  • 3 garlic cloves (peeled and sliced)
  • 1/2 cup chicken broth
  • 2 teaspoons seasoned salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley flakes
  • 1/4 teaspoon black pepper

Slow Cooker Turkey Thighs Pot Roast

Directions:

  1. Heat the olive oil in a skillet over medium-high heat. Add the turkey thighs and brown on both sides, about 5 minutes.
  2. Place the turkey in a slow cooker.
  3. Add the carrots, onions, garlic, thyme, smoked paprika, garlic powder, salt, pepper, oregano, potatoes, chicken broth, and red wine.
  4. Cover and cook on low for 8 hours.
  5. Uncover and cook on high for 30 minutes.
  6. Serve with crusty bread, and enjoy!
