Swedish Dilled Meatballs Recipe

I have wanting to prepare this recipe for some time-it is snowing, blowing, and cold making it a good day to stay in the kitchen. I wasn’t sure how the flavor of the dill would blend with the rest of the ingredients, but it turned out to be really good. My wife stated she likes them better than the Italian meatballs we usually prepare. The dill is definitely the dominating spice in this recipe, so if you like the flavor of dill, give this recipe a try. This is a simple recipe but it does take some time to prepare because you have to allow a couple of hours for the flavors to blend. This recipe creates a delicious sauce that can be served over mashed potatoes, or egg noodles.

Ingredients
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 3/4 cup whole wheat fresh breadcrumbs
  • 1 egg
  • 1 medium onion (finely chopped)
  • 1/2 cup milk
  • 2 teaspoons dried dill weed
  • 2 1/2 teaspoons salt (divided)
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon pepper (divided)
  • 1/4 cup all-purpose flour
  • 1 teaspoon paprika
  • 2 cups water
  • 3/4 cups sour cream
Instructions
  1. In a large bowl combine the ground beef, pork, breadcrumbs, egg, onion, milk, dill, 2 teaspoons of salt, 1/8 teaspoon of pepper, and the Worcestershire sauce. (Hands work best for this) Cover and refrigerate for 2 hours.
  2. Pre-heat the oven to 350F.
  3. Using about a heaping tablespoon of meat at a time for the meatballs, roll and place them on a baking dish sprayed with cooking spray. (Meatballs can be formed to any size you prefer.)
  4. Bake for 20-30 minutes or until no longer pink inside.
  5. In a large skillet using 1 tablespoon of fat from the meatballs, whisk in the flour, then add the paprika, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Stir in the water and bring the mixture to a boil. Boil and stir constantly for 1 minute.
  6. Add the meatballs to the sauce and cook until meatballs are heated through, then add the sour cream stirring until smooth.
  7. Serve hot over mashed potatoes or noodles.
