Ingredients
  • 8 ounces bow tie pasta
  • 1 pound lean ground beef
  • 1 small onion (finely chopped)
  • 24 ounces of traditional pasta sauce (your favorite brand)
  • 1 package of fresh mushrooms (8 ounces sliced or you can use canned)
  • 1 can sliced black olives
  • ¼ teaspoon red pepper flakes or to taste
  • 8 ounces mozzarella cheese (cut into ½ inch cubes)
  • 4 ounces shredded Colby & Monterey Jack cheese
  • ¼ cup grated Parmesan cheese
Instructions
  1. preheat oven to 400F.
  2. Cook pasta according to package directions for firm; drain.
  3. While pasta is cooking in a large skillet over medium high heat cook the burger, onion, and mushrooms until burger is no longer pink inside, onion is softened, and mushrooms are tender; drain any excess fat if needed.
  4. Mix the pasta sauce into the burger mixture, bring to a boil, and season with the red pepper flakes. Add ½ of the mozzarella cubes and stir until cheese is melted. Mix the sauce into the pasta until thoroughly combined.
  5. Spoon the mixture into a 2.75 quart casserole dish lightly sprayed with cooking spray and distribute the remaining mozzarella cheese cubes over the top. Top with the black olives, Colby & Monterey Jack , and Parmesan cheese.
  6. Bake for 20 minutes or until cheese is melted and mixture is hot and bubbly – Serve hot.

Ingredients
  • 1½ cups all-purpose flour
  • ½ cup cornmeal
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup buttermilk (chilled-i placed this in the freeze for a few minutes to get it good and cold)
  • 8 tablespoons unsalted butter (melted and cooled)
Instructions
  1. Preheat oven to 450F.
  2. In a large bowl whisk together the flour, cornmeal, sugar (I used Splenda in place of the sugar), baking powder, baking soda, and salt.
  3. In another bowl mix together the buttermilk and butter until clumps form. Mix the buttermilk mixture into the dry ingredients until just moist.
  4. Line a baking sheet with parchment paper and scoop dough ¼ cup at a time onto the paper about 1 ½ inches apart. Place on center rack of oven and bake for 12 to 15 minutes or until biscuits are golden brown.
  5. Place biscuits on a cooling rack for several minutes and serve warm.

Ingredients
  • 8 chicken thighs (trimmed of any excess fat)
  • black pepper
  • ¾ cups cider vinegar
  • ½ cup honey
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • 1 teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 2 teaspoons toasted sesame seeds
Instructions
  1. Preheat oven to 425F with rack in middle to upper position.
  2. Spray a large oven proof skillet lightly with cooking spray. Pepper the chicken on both sides and position chicken skin side down in the skillet. (you can make up to 8 with this recipe – I was feeding 2 so I cut the chicken down to 4, but used the same amount of ingredients for the sauce.
  3. In a medium size bowl mix together the vinegar, honey, soy sauce, ketchup, garlic powder, and red pepper flakes. Pour the mixture over the chicken in the skillet.
  4. Bake chicken for 20 minutes, flip chicken skin side up, and continue baking until chicken browns on top (about 20 more minutes - internal temperature should be about 195 to 200F with instant read thermometer); transfer chicken to a serving platter.
  5. Let the sauce in the skillet settle a little bit and spoon any excess fat off the top, or pour into a fat separator to separate the fat. In a small glass mix the cornstarch into the water until dissolved, place the skillet over a burner on medium high heat, bring mixture to a boil, and stir in the cornstarch mixture, cooking and stirring until thickened. Return chicken to the skillet, and roll the chicken in the sauce; garnish with the toasted sesame seeds.
  6. Serve over rice or hash browns.

  • 1 ¼ pound ground chuck
  • ¾ cup Italian bread crumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 hoagie buns (or 6 inch Italian sub rolls)
  • 1⅓ cups marinara sauce (your favorite brand)
  • 4 slices provolone cheese (sliced thin)
Instructions
  1. Preheat oven to 400F.
  2. Lightly spray a rimmed baking sheet with cooking spray.
  3. Lightly beat the eggs in the bottom of a large bowl. Place the burger on top of the eggs and then add the bread crumbs, salt, pepper, and garlic powder; using your hands mix until thoroughly combined.
  4. Divide meat mixture into 12 - 2 inch meatballs and place on baking sheet. Bake for 15 minutes or until an instant read thermometer reads an internal temperature of 160F, and meatballs are browned. Remove meatballs to a plate and discard any accumulated fat. Line now empty baking sheet with parchment paper, slice buns, and place 3 meatballs on each bun. Pour ⅓ cup marinara sauce over the meatballs on each bun and top with a slice of cheese. Return to the oven and cook until heated through and cheese is melted – serve hot.

Ingredients

Instructions
  1. Cook bacon and onion in a large skillet over medium high heat until bacon starts to brown. Add the burger to the skillet, breaking it up, and cook until burger is no longer pink inside; drain any excess fat. Mix in the cheese and continue cooking, stirring constantly until cheese is melted. Set aside to cool for 10 minutes.
  2. Preheat oven to 400 F.
  3. Lightly spray a baking dish with cooking spray (I used a 16x12x1 jelly roll pan for this, but any large flat baking pan will work). Roll the pizza dough into a 15x8 inch rectangle and spread the burger mixture over the top to about 1 inch from the sides. Roll the pizza dough up starting from a long side, arranging and finishing so the seem side is down.
  4. Bake for 20 to 25 minutes or until nicely browned.
  5. Slice crosswise into pieces and serve hot.

  • 1 (8 ounce) package refrigerated crescent rolls
  • 1 pound ground beef
  • 1 medium onion (chopped)
  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) container sour cream

  • 1 (12-13 ounce) bag tortilla chips (crushed)
Instructions
  1. Preheat oven according to directions on package for the crescent rolls. 375F
  2. Spray a 8 x 8 baking dish with cooking spray and roll the crescent roll dough out on the bottom to form a bottom crust and bake according to package. Crust should be golden brown.
  3. While the crust is baking in a large skillet over medium high heat chop up and cook the burger and onion, until onion is soft, and burger is no longer pink inside; drain if needed. Mix in the taco seasoning until well combined.
  4. Spread the meat mixture over the bottom of the crescent crust, and then layer the sour cream over the top followed by the Mexican-style cheese blend. Top with the crushed tortilla chips.
  5. Bake at 375F. Until heated through and cheese is melted – Serve hot.

Ingredients
  • 1 tablespoon oil
  • 4 boneless skinless chicken thighs
  • ½ teaspoon garlic salt
  • ¼ teaspoon pepper
  • 6 ounces uncooked thin spaghetti
  • 1 can condensed cream of chicken soup (10¾ ounces)
  • 1¼ cups half-and-half
  • ½ teaspoon smoked paprika
  • 2 cups frozen or fresh broccoli florets (cut into smaller pieces)
  • 3 slices cooked bacon (crispy) if you want to save some time purchase the precooked.
Instructions
  1. Preheat oven to 350F.
  2. Season chicken with pepper and garlic salt. In a large skillet over medium high using the oil cook chicken on both sides until nicely browned and juices run clear; set aside on a plate.
  3. While chicken is cooking, cook pasta according to package directions; drain.
  4. In a large bowl mix together the soup, half-and-half, smoked paprika until thoroughly combined; reserve ¾ cup of the sauce and then fold in the spaghetti and broccoli.
  5. Lightly spray a 2 ½ quart casserole dish with cooking spray and layer the spaghetti mixture over the bottom. Arrange the chicken thighs on top and spoon the reserved sauce over the chicken; sprinkle the bacon over the top.
  6. Bake covered for 20 minutes, uncover and continue cooking until mixture is bubbly about 10 – 15 minutes longer.
  7. Serve Hot
