This is great! May marks National Burger Month. In a search to try something a little different, and seeing as May marks National Burger Month, I decided on this Grilled Fajita Burgers Recipe. This is a simple recipe to put together with an excellent blend of flavors. There is a lot of room to move on the condiments but what I put together is really good. Feel free to make it your own by adding whatever you like. The weather was so nice here I decided to use the grill. If you don’t have that option, use your broiler oven.

Ingredients
  • 1 tablespoon olive oil
  • 1 medium sweet onion (thinly sliced)
  • ½ medium yellow or green bell pepper (cut into thin strips)
  • ½ red bell pepper (cut into thin strips)
  • 1½ pounds lean ground beef
  • 1 Fajitas Seasoning Mix
  • 6 slices of bacon (crispy)
  • ¼ cup cold water
  • 6 slices American cheese
  • 6 hamburger buns

Instructions
  1. Slice the pepper and onion. In a small skillet using the olive oil cook the peppers and onion until tender.
  2. Cut the bacon in half and cook until crispy-drain on paper towels.

  4. Preheat the grill to medium high heat and lightly oil the grill grates.

  6. In a large bowl mix together the water, ground beef, and Fajitas Seasoning Mix. Divide and form into 6 patties.
  7. Grill the burgers long enough to get grill marks on one side, than flip the burgers. Cook to desired doneness.
  8. While burgers are cooking toast the buns on the grill cut side down. Just before the burgers are done top with the American cheese slices; close the grill until slices are melted.
  9. To serve start with a burger on the bun followed by a slice of tomato, bacon, then top with the pepper and onion.

Grilled Honey BBQ Chicken Wings Recipe

Fall is here, and with it comes football. A good game, great food, and a few drinks and it is a perfect night in for the guys.

These Grilled Honey BBQ Chicken Wings are so good your guests won’t be able to keep their hands of them till they are gone. This is a simple recipe but does take a little bit of time due to having to cook down the BBQ sauce; but it is well worth the effort. I cooked the recipe as written and love the way it is seasoned, but you can turn up the heat a little bit if you wish to do so, by increasing the amount of Tabasco sauce and black pepper. The end result is sticky and delicious chicken wings.

Whether it’s a guys night in to watch your favorite team play football, or a tail gating party, the food doesn’t get any better than this.

Ingredients

3-4lbs chicken wings (separated at the joint, wing tips discarded)

Honey BBQ sauce-

1 cup ketchup

1 cup white vinegar

1/2 cup molasses

1/2 cup honey

1 teaspoon liquid smoke

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon Tabasco sauce

 

Directions

1. In a medium sauce pan combine ketchup, vinegar, molasses, honey, liquid smoke, salt, pepper, garlic powder, onion powder, and Tabasco sauce. Mix together until smooth.

2. Bring the mixture to a boil, reduce heat, and simmer uncovered for 30 minutes, or until the mixture thickens. (Take your time with this and let it cook down good.) Remove from heat.

3. Grease or spray the grill grates and heat the grill to medium high heat. Place chicken wings onto the grill and cook, turning as needed until the chicken wings are fully cooked (the internal temperature has reached 165 degrees).

4.  During the last few minutes of cooking brush with the honey BBQ sauce; reserve any leftover sauce to serve with the chicken wings.

I wanted to fire up the grill but I did not have the time for a marinade so I decided on this Grilled Balsamic Glazed Chicken Breasts Recipe. The recipe for the glaze looked really good and there was almost no prep time involved. This recipe was also a little different because most of the chicken breast recipes I have prepared called for boneless skinless chicken breasts. I know the skin is not the healthiest thing, but I love the taste. I prepared the recipe as written and the results were excellent. Ingredients
  • Glaze
  • ⅓ cup packed brown sugar
  • ⅓ cup balsamic vinegar
  • 1 teaspoon chopped fresh rosemary leaves
  • 1 teaspoon finely chopped garlic
  • Chicken
  • 4 bone-in skin-on chicken breasts (8 oz each)
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
  1. Heat gas or charcoal grill.
  2. In small bowl, mix glaze ingredients and set aside.
  3. Sprinkle chicken with salt and pepper. Place chicken on grill, skin side down, over medium heat. Cook 10 minutes.
  4. Turn chicken and brush half the glaze evenly over chicken. Continue cooking and brushing with remaining glaze 10 to 12 minutes longer or until juice of chicken is clear, or when the thickest part is 165F using a quick read thermometer.

What caught my eye with this recipe is that it cooks in the oven for about a half an hour before it goes in the slow cooker. I hate to use the cliche”finger licking good”; but that’s exactly what my wife had to say about it. Ingredients
  • 4 pounds pork baby back ribs
  • salt and pepper to taste
  • 2 Barbeque Sauce (I used open pit-use your favorite)
  • 1 cup chili sauce
  • ½ cup packed brown sugar
  • 4 tablespoons apple cider vinegar
  • 2 teaspoons dried oregano
  • 2 teaspoons Worcestershire sauce

Instructions
  1. Preheat oven to 400 degrees F.
  2. Season ribs with salt and pepper. Place in a shallow baking pan.
  3. Brown in oven 15 minutes. Turn over, and brown another 15 minutes; drain fat.
  4. In a medium bowl, mix together the barbeque sauce, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce, and salt and pepper.
  5. Place ribs in slow cooker. Pour sauce over ribs, and turn to coat.
  6. Cover and cook on Low 6 to 8 hours, or until ribs are tender.

Smoked Grilled Pork Chops

I felt like grilling pork for supper but I didn’t have enough time to marinate it. I have never used rub recipes before so I decided to give this Smoked Grilled Pork Chops Recipe a try. I was pretty impressed because the flavors blended into the meat very well after sitting for only about 10 minutes. I incorporated the new 140F temperature standard printed by the FDA and these chops turned out moist and tender with excellent flavor. This would be a great recipe for a 4th of July cook out. Ingredients
  • 1 tablespoon seasoned salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder

  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon liquid smoke flavoring
  • 4 bone boneless pork chops (1/2 to ¾ inch thick)

Instructions
  1. Preheat grill to med high heat with grates lightly oiled or sprayed with non stick spray.
  2. In a medium bowl combine all the ingredients for the rub.
  3. Using your hands rub the pork chops with the rub into the meat-then allow the chops to stand for ten minutes.
  4. Grill the chops over indirect heat until no longer pink inside, about 12 minutes per side. An instant-read thermometer should read at least 140 degrees F.
  5. Allow chops to stand for 10 more minutes before serving.

Grilled Barbeque Chicken Recipe

This Grilled Barbeque Chicken Recipe is really good; but does take some time. When I saw the ingredients in this recipe I couldn’t wait to give it a try. The combination of ingredients along with the Sherry just looked really good. This is a simple recipe but you need to give yourself a lot of time, the chicken needs to marinate for 2-4 hours, and the sauce has to cook down to a barbeque sauce consistency,  which could be done ahead of time, or while the chicken is marinating. You have to also add in the grilling time for the chicken which takes about an hour, but if you like firing up the grill this recipe is a lot of fun to prepare. Your family and friends will love it; just keep a lot of moist towel lets on hand because this chicken is sticky and finger licking good. Ingredients
  • 3 to 4 pounds cut up whole chicken
  • 1-1/2 cups dry sherry
  • 1 cup onion (finely chopped)
  • ¼ cup lemon juice
  • 2 bay leaves
  • 6 cloves garlic (minced)
  • 1 can tomato sauce (15-ounce can)
  • ¼ cup honey
  • 3 tablespoons molasses
  • 1 teaspoon salt
  • ½ teaspoon dried thyme
  • ¼ to ½ teaspoon ground red pepper
  • ¼ teaspoon black pepper
  • 2 tablespoons white vinegar

Instructions
  1. Place chicken in a 1 gallon plastic bag- set in a shallow dish.
  2. In a medium bowl stir together sherry, onion, lemon juice, bay leaves, and garlic and pour it over chicken then seal the bag.
  3. Marinate in the refrigerator for 2 to 4 hours, turning bag occasionally.
  4. Drain chicken, reserving marinade. Cover and refrigerate chicken until ready to grill.
  5. For sauce, in a large saucepan combine the reserved marinade, the tomato puree, honey, molasses, salt, thyme, red pepper, and pepper. Bring to boiling. Reduce heat and simmer, uncovered, about 30 minutes or until reduced to 2 cups, or to barbeque sauce consistency. Take out the bay leaves and add the vinegar.
  6. Place chicken pieces, bone sides down, on grill rack. Cover and grill for 50 to 60 minutes brushing with the sauce, and turning as needed until tender and no longer pink inside (internal temp. 165). Serve the chicken with any leftover sauce.

The weather was great here for Memorial Day giving me the chance to fire up the grill again. I prepared this Grilled Bacon Wrapped Hamburgers Recipe before; but used the broiler instead of the grill, because I was out of gas. It was really good- so I decided to grill it for the Memorial Day weekend and like I expected, it came out even better using the grill. There is very little prep time, it’s a very simple recipe, and the combination of bacon and cheese flavors makes an excellent tasting bacon burger. The recipe originally called for dividing the burger to make 6. I divided it into 4 instead, for 4 quarter pounders, and it worked out perfect. Ingredients
  • ½ cup shredded Cheddar cheese
  • 4 slices mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 small onion, chopped
  • 1 egg
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 pound ground beef
  • 4 slices bacon
  • 4 hamburger buns (split)

Instructions
  1. Preheat a grill for medium high heat.
  2. In a large bowl, mix together the burger, Cheddar cheese, Parmesan cheese, onion, egg, ketchup, Worcestershire sauce, salt and pepper. (Mixing by hand seems to work the best for me.)
  3. Divide the burger into 4 equal amounts and form into patties.
  4. Wrap the bacon around the burger and secure in place with a tooth pick.
  5. Place patties on the grill, cook for 10 minutes per side, or until well done. Top with mozzarella cheese slices, close the grill until cheeses is melted. Remove toothpicks before serving.
  6. Serve on grill toasted buns with your choice of condiments.

Grilled Hawaiian Bacon Burgers Recipe

 

I was so glad to get a chance to do a blog post for Dole because of the great quality that is put into the Dole products. I decided on this Grilled Hawaiian Bacon Burgers Recipe because it calls for sliced pineapple. If you have never tasted grilled pineapple before you are missing out on a treat. I had all I could do to keep my hands off of them- so there was enough left to put on the burgers. These burgers combine bacon, Swiss cheese and pineapple slices with some other ingredients for a delicious grilled burger. This recipe will yield 6 to 8 burgers depending on the size.

What a great side dish. Grilled Cheesy Bacon and Potato Packet Recipe is just delicious. Easy to prepare with not a lot of prep time. When it is to hot to cook inside, do it all outside. This simple recipe goes great with BBQ chicken or steak. This recipe makes 2 large packets. You can very easily divide it into the number you are serving. Giving each person their own packet of potatoes. Enjoy
 
Ingredients
 
6 large potatoes (sliced 1/4-inch thick)

2 medium onions, chopped

1/3 cup grated parmesan cheese

1 cup grated cheddar cheese, shredded

1 cup mozzarella cheese, shredded

12 slices bacon, cooked and crumbled (I just use a 1-pound package of bacon)

6 tablespoons butter, cut into small pieces (use 3 tablespoons for each packet)

2 teaspoons seasoning salt

black pepper

Directions

1. Place the sliced potatoes and onions in a large bowl.

2. Add the seasoning salt, pepper and garlic powder; tossing lightly with hands to coat with seasonings.

3. In a separate bowl combine grated cheddar mozzarella and Parmesan cheese.

4. Use 2 pieces of heavy duty Aluminum Foil about 18 inches long. Coat with cooking spray and divide the potatoes equally between the 2 pieces.

5. Divide the cheese mixture and sprinkle equally over the potatoes. Top with bacon and butter cubes

6. Place on grill over medium heat for about 35-40 minutes or until potatoes are tender.

Remove from grill, carefully open the packets (be careful these packets have lots of steam inside, so open with care!) and sprinkle with more grated cheese.
