Sweet Potato Pancakes Recipe

This is pretty much a basic recipe leaving a lot of room to add additional spices, but I wanted to keep this recipe as quick and simple as possible. The recipe was prepared as written – I thought the end result was pretty good.

Ingredients
  • 2 tablespoons unsalted butter (melted)
  • 1 cup mashed sweet potatoes
  • 2 eggs
  • ⅔ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup milk
Instructions
  1. In a large bowl whisk together the sweet potatoes and eggs.
  2. Using a large spoon mix the flour and baking powder into the sweet potato mixture and then mix in the butter and milk. The mixture will be thick and lumpy. (If you want a thinner batter add extra milk a little at a time. (Be careful the batter thins quickly)
  3. Cook pancakes in a skillet, or over a griddle on medium high heat. Cooking until golden brown and bubbles form on top and edges start to firm up, flip and finish cooking.
  4. Serve hot with butter and syrup.

Butter Milk Blueberry Pancake Recipe

Here in Upper Michigan the blueberry season is under way. I just love this time of year for berries, because almost every kind of berry we have up here is ripening. Most of the time when I make a berry pancake I usually mix in the berries into the batter. This Butter Milk Blueberry Pancake Recipe called for placing the berries on the pancake as it is cooking. I guess the biggest advantage is being able to place any number of berries you want into each pancake. The basic pancake recipe for these  Butter Milk Blueberry Pancakes is excellent and I am sure the pancakes would taste great even without the berries.

Butter Milk Blueberry Pancake Recipe

Ingredients
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 2¼ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • ¼ cup melted unsalted butter
  • 1 cup blueberries ( fresh or frozen)
Instructions
  1. In a large mixing bowl, sift together the flour, sugar, baking powder, soda, and salt.
  2. In a separate bowl beat the eggs; then mix in the buttermilk and melted butter.
  3. Using a wooden spoon or a spatula mix the buttermilk mixture with the flour ingredients to form a batter.
  4. Over medium-high heat, spray a large skillet with cooking spray.
  5. Use a dipper to pour the batter into the pan to form the size pancakes you prefer, distributing the blueberries immediately on top of the pancake batter.
  6. Cook until golden brown on each side-a good way to tell if it is time to turn the pancake; is by small bubbles forming on the top. Usually takes 2 to 3 minutes on each side depending on how much heat you are cooking with.
  7. Serve with butter and syrup and enjoy.

Maybe or maybe not. But I have to say this is one of the best pancakes I have ever tasted. The addition of the cream of wheat makes it- just excellent. If you like pancakes give this one a try. It is a very simple, and  quick recipe. If this is not one of Ihops recipes it should be.

Ingredients
  • 1¼ cups flour
  • 1½ cups buttermilk
  • ⅓ cup cream of wheat (1 minute kind)
  • 1 egg
  • ½ teaspoon salt
  • ⅓ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ cup vegetable oil
Instructions
  1. Preheat griddle-I use a cast iron pan.
  2. Spray pan with non stick cooking spray
  3. Combine all ingredients in bowl and mix until smooth.

  5. Pour batter by ⅓ cupfuls onto the griddle and cook for 1 - 2 minutes per side or till brown.

Buttermilk Pancake Recipe

Smooth and Delicious. This is just a great tasting Buttermilk Pancake.
This is a simple recipe and it’s not much more work than creating pancakes from a box mix. Some times here at home we will have what we call a Breakfast supper. It is exactly what it sounds like. A breakfast type meal for supper. I hope you enjoy!

Ingredients
  • 2 eggs
  • 2 cups all purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 2 tablespoons butter-melted
  • ½ teaspoon vanilla
Instructions
  1. Beat the eggs in a bowl with a mixer till well beaten.
  2. Stir in the buttermilk, vanilla and butter.
  3. Add the sugar, flour, baking powder, baking soda, and salt. Mix with your mixer until well blended.
  4. And you are ready to cook.
  5. Use a lightly greased griddle at 350 degrees. I use cooking spray-it works very well for this.
  6. Pour batter onto the griddle or pan so the pancakes are about the size you want them. Cook until the top is covered with tiny bubbles. Flip the pancake and cook until golden brown.
