This is a simple recipe that can be served with a side dish or as a stand-alone meal. The stuffing mix gives the dish a nice crunch and the sour cream and chicken soup creates a nice creamy sauce.

Ingredients
  • 1 can condensed cream of chicken soup
  • 6 boneless skinless chicken breasts
  • 1 cup sour cream
  • 1 package stove top chicken stuffing mix
  • ½ cup shredded Parmesan cheese
  • ½ cup butter
Instructions
  1. Preheat oven to 350F.
  2. In a medium size bowl mix together the soup and sour cream until well combined.
  3. Place the stuffing in a food processor and pulse until fine crumbs form. Add the cheese and pulse one time to blend the cheese into the stuffing crumbs. (if you don’t have a food processor place crumbs in a food grade plastic bag and crush with a rolling pin)
  4. Arrange chicken on the bottom of a 13 x 9 baking dish and layer the soup mixture over the top, and then top with the stuffing mix.
  5. Bake for 50 – 60 minutes or until chicken is done. (165F)

Ingredients
  • 3 slices bacon (cut crosswise into ½ inch pieces)
  • 1 medium red bell pepper (diced)
  • 4 boneless skinless chicken breasts
  • ¼ teaspoon ground pepper
  • ¼ cup Sun Dried Tomato pesto
  • 1 jar (15 oz) Alfredo pasta sauce ((15 oz)
  • Serve over rice or pasta
Instructions
  1. Preheat oven to 350F.
  2. Cook bacon in a large skillet until crispy; remove bacon and set aside on a plate covered with paper toweling to drain.
  3. In the same skillet cook red pepper pieces in the bacon dripping to crisp-tender; using a slotted spoon place remove the pepper, and place in medium size bowl. Add the Alfredo pasta sauce, Sun Dried Tomato pesto, and mix until combined.
  4. In the same skillet, season the chicken with pepper and cooked until nicely browned on both sides. Place chicken in the bottom of an 11 x 7 casserole dish and pour the sauce over the top. Cover with aluminum foil and bake for 35 minutes or until the internal temperature of the chicken is 165F.
  5. Serve chicken and sauce over rice or pasta.

Crusted Lemon Chicken Breasts Recipe

Lemon chicken has always been a favorite dish in this house so I decided to put this Crusted Lemon Chicken Breasts Recipe on the menu. This is a simple recipe that is quick to put together, and doesn’t require a lot of cooking time. I decided to list the lemon zest as optional in the recipe because the lemon is a very dominant ingredient. However I did use the lemon zest when I prepared this recipe and my wife said for her the lemon flavor was perfect.

Ingredients

3-4 boneless skinless chicken breasts half’s (about 2-3 pounds)

2 egg whites

2 tablespoons cornstarch

1 lemon (to use for lemon zest (chopped)- and lemon juice)(lemon zest optional)

1 cup dry bread crumbs

1 tablespoon fresh parsley (chopped)

1 teaspoon kosher salt

1/ 4 teaspoon black pepper

3 tablespoons vegetable oil

Directions

Preheat oven to 450F

1. Prepare the lemon by making the lemon zest; juice 1/ 2 the lemon and set aside.

2. Using a wide shallow dish, such as a pie dish, whisk together the egg whites, cornstarch, and lemon juice.

3. Using another wide dish mix together the bread crumbs, parsley, salt, pepper, and lemon zest.

4. Pound the chicken breast to obtain about equal thickness for each breast. (I fold them in plastic wrap, or a disposable plastic bag to do this; it works real well.)

5. Roll chicken in the egg white mixture, and then in the bread crumbs; place on a plate or serving platter and let rest refrigerated for about 20 minutes.

6. Spray a 13 x 9 baking casserole dish with cooking spray. Using the oil in a large skillet brown the chicken on both sides; transfer to the casserole dish. Bake for 10-20 minutes until juices run clear. (internal temperature should be 165F.)

This recipe has a delicious combination of ingredients; I was able to have dinner on the table in less than an hour. This recipe makes 6, but you could increase the amount it serves very easily just double or triple as needed. I prepared the recipe as written. Ingredients

 

6 skinless boneless chicken breast halves

Salt and pepper to taste

1/2 cup honey

1/2 cup prepared mustard

1 teaspoon dried basil

1 teaspoon paprika

1/2 teaspoon dried parsley

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Sprinkle chicken breasts with salt and pepper to taste.

3. Place in a lightly greased 9×13 inch baking dish.

4. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and use a brush to coat.

3. Bake for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. (Internal temperature of 165F.)

Balsamic Vinegar Chicken Breast Recipe

Again in search of something a little different I decided on this Balsamic Vinegar Chicken Breast Recipe. It seemed like something a little on the light side, along with a healthy combination of ingredients. If you like the flavor of Balsamic Vinegar, give this one a try. My wife thought it was excellent, the chicken breasts were nice and moist, and the gravy went very well with the mashed potatoes I had prepared. This is a very simple recipe with not a lot of ingredients. I followed the recipe as written. Serves 4

 

Ingredients

4 skinless, boneless chicken breasts

Salt and pepper to taste

3/4 pound fresh mushrooms (sliced)

2 tablespoons flour

2 tablespoons olive oil

6 cloves garlic (sliced or diced)

1/4 cup balsamic vinegar

3/4 cup chicken broth

1 bay leaf

1/4 teaspoon dried thyme

1 tablespoon butter

Directions

1. Season the chicken with salt and pepper.

2. Rinse the mushrooms and pat dry.

3. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture.

4. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side.

5.  Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, and then add the vinegar, broth, bay leaf and thyme.

6. Cover and simmer over medium low heat, turning occasionally until juices of chicken runs clear, or an internal temperature is reached of 165F.

7.  Transfer the chicken to a warm serving platter; cover to keep warm. Set aside. Continue simmering the sauce, uncovered over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf.

(This produces kind of thin gravy-you can thicken it- if you wish to)

8. Pour the mushroom sauce mixture over the chicken and serve.

Serve with mashed potatoes or egg noodles.

Instructions
  1. Pound and flatten chicken.
  2. Sprinkle with salt and pepper.
  3. Dip chicken breast in the egg then coat with bread crumbs.
  4. In a large skillet sauté garlic until golden brown then discard.
  5. Brow the chicken on both sides until brown.
  6. Bake in a 9 x 13 baking dish or pan at 350 degrees for 20 minutes or until done.

Ingredients
  • 4 boneless skinless chicken breasts
  • ½ cup Italian Bread Crumbs
  • 1 egg beaten
  • 4 teaspoons butter or oil
  • 8 0z package shredded mozzarella cheese
  • ½ cup parmesan cheese
  • 2 Cups spaghetti sauce
Instructions
  1. Pound the chicken breasts to flatten.
  2. Dip the chicken in egg then roll in the breadcrumbs.
  3. Brown the coated chicken in the oil or butter for 10 to 15 minutes or until done.
  4. Pour half the spaghetti sauce into a 9 x 5 casserole dish or baking pan.
  5. Place the chicken breasts into the baking dish and sprinkle on the cheese.
  6. Add the rest of the spaghetti sauce and bake at 400 degrees for 30 minutes.
