This is a simple recipe that can be served with a side dish or as a stand-alone meal. The stuffing mix gives the dish a nice crunch and the sour cream and chicken soup creates a nice creamy sauce.

Ingredients
  • 1 can condensed cream of chicken soup
  • 6 boneless skinless chicken breasts
  • 1 cup sour cream
  • 1 package stove top chicken stuffing mix
  • ½ cup shredded Parmesan cheese
  • ½ cup butter
Instructions
  1. Preheat oven to 350F.
  2. In a medium size bowl mix together the soup and sour cream until well combined.
  3. Place the stuffing in a food processor and pulse until fine crumbs form. Add the cheese and pulse one time to blend the cheese into the stuffing crumbs. (if you don’t have a food processor place crumbs in a food grade plastic bag and crush with a rolling pin)
  4. Arrange chicken on the bottom of a 13 x 9 baking dish and layer the soup mixture over the top, and then top with the stuffing mix.
  5. Bake for 50 – 60 minutes or until chicken is done. (165F)

This Maple Mustard Chicken Thighs for Two recipe requires just a few ingredients and very little prep time. The maple syrup and mustard are a perfect combination of flavors. This recipe makes 4 thighs but if you are feeding more people just double the recipe.

Ingredients
  • 4 bone in chicken thighs (skin and fat removed)
  • 2 tablespoons Spicy Brown Mustard
  • 2 tablespoons whole grain Dijon mustard
  • 1 clove garlic (minced)
  • ½ teaspoon dried marjoram
  • 2 tablespoons maple syrup
Instructions
  1. Preheat oven to 375F.
  2. In a small bowl mix all the ingredients together except for the chicken.
  3. Pat chicken dry and place in a baking dish lightly sprayed with cooking spray. Spoon 1 ½ tablespoons of the mustard mixture evenly over each thigh.
  4. Bake for 40 – 50 minutes or until a crust has formed and is slightly hardened on the chicken and temperature is 185F.
  5. Serve hot.

It’s the end of the gardening season here in Upper Michigan. I was able to pick corn one more time before it froze. Wow-Fresh corn on the cob and chicken. How good can it get!
This Italian chicken breast recipe served with corn on the cob along with mashed potatoes and gravy was just delicious. This is a simple recipe. There is not a lot of prep or cooking time. You Family or guests will love it.

  • 3 pounds of boneless skinless chicken breast
  • 2 cups flour
  • 3 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 Tablespoon Italian Seasoning
Instructions
  1. Mix the spices and flour together.

  4. Place on a towel to dry.

I love good one dish meals. There is less clean up and they can be a real time saver. Bacon-wrapped chicken thighs with baby red potatoes, roasted with onions and herbs, a very delicious and simple dinner. I used chicken thighs in this recipe. I am sure any style of chicken pieces would work as well. I was a little nervous when I seasoned this recipe, because in appearance it looked like the seasoning may have been to much. It was not. This roast chicken was excellent. Enjoy!

  • 12 chicken thighs
  • 12 slices center-cut bacon
  • 1 onion, coarsely chopped
  • 1½ pounds baby red potatoes
  • 2 tablespoons dried chives
  • 2 tablespoons dried basil
  • 1 tablespoon garlic powder
  • 1 tablespoon Adobo seasoning
  • 1 tablespoon ground black pepper
  • 1 teaspoon salt, or to taste

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Wrap each chicken piece in a slice of bacon, trying to cover as much of

  • 5-6 pound roasting chicken
  • 1 teaspoon olive oil
  • 2 teaspoons seasoning salt
  • 1 teaspoon garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon black pepper
  • ½ cup butter melted
Instructions
  1. Rinse chicken and cavity with cold water and pat dry with a paper towel.
  2. Rub the olive oil on the outside of the chicken.
  3. Sprinkle with seasoning salt inside and out.
  4. Place in a shallow roasting pan with ½ inch of water in the bottom of the pan.
  5. Sprinkle with the rest of the spices and herbs evenly on the outside of the chicken.
