Pasta Tuna Salad

Through the years tuna pasta salads have turned into a staple for this family. When we can’t figure out what to have for dinner this is our favorite go to recipe. You can use this Simple Tuna Pasta Salad Recipe as a side dish, or main dish, and is even great for pot lucks or outdoor parties. I’m not sure where the idea came from, but we have also gotten into the habit of topping our plates of tuna pasta salad with our favorite flavored potato chips; a kind of crumble them on top sort of thing.

You can follow the recipe as is, or add anything to the salad you think sounds good- such as shredded cheddar, or mozzarella cheese, canned or frozen peas also makes a nice addition to the recipe. Ingredients
  • 1- 16 ounce package pasta (you choice-I like to keep it on the small side)
  • 3 tomatoes (diced)
  • 3 stalks celery (chopped)
  • 2 (12 ounce) can tuna
  • 1½ cups mayonnaise or to taste
  • 1 tablespoon Creamy Italian salad dressing
  • 1 tablespoon white sugar
  • 1 pinch ground black pepper

Instructions
  1. Cook pasta according to package directions-rinse under cold water and drain.
  2. In a large bowl, combine the pasta, tomatoes, celery and tuna.
  3. Prepare the dressing by whisking together the mayonnaise, salad dressing, sugar and pepper. Add to pasta salad, mix together, and refrigerate for 1 hour. (if you are tight for time- when you rinse the pasta with cold water, continue rinsing till the pasta gets really cold; through it together and serve.)

Shrimp Macaroni Salad Recipe

With the 4th of July coming up I thought this Shrimp Macaroni Salad Recipe would be a good choice for a recipe post. This is a very simple recipe that goes great with grilled burgers, chicken or pork on the grill. This recipe does not take long to prepare, but be sure to allow enough time for the salad to cool, and the flavors to blend. I followed the recipe as is; but you can add almost anything to your liking that would go good in a cold salad. If you are hosting a party or need a dish for a pot luck just double or adjust the recipe as needed. Ingredients
  • 1 pound dry elbow macaroni, cooked, rinsed, and drained
  • 2- 4 ounce packages of salad shrimp
  • ½ cup diced celery
  • 1/ 2 cup minced red onion, soaked in cold water for 5 minutes, drained
  • 2 tablespoon minced flat-leaf parsley
  • 1 cup diced vine-ripened tomato
  • 2 cups shredded cheddar cheese
  • 1 cup prepared mayonnaise
  • 1½ teaspoon dry mustard
  • 1 Tablespoon sugar
  • 3 tablespoons cider vinegar
  • ¼ cup sour cream
  • Salt and pepper to Taste

Instructions
  1. In a large bowl combine the macaroni, celery, onion, shredded cheddar, parsley, shrimp and tomato.
  2. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine.

Smoked Grilled Pork Chops

I felt like grilling pork for supper but I didn’t have enough time to marinate it. I have never used rub recipes before so I decided to give this Smoked Grilled Pork Chops Recipe a try. I was pretty impressed because the flavors blended into the meat very well after sitting for only about 10 minutes. I incorporated the new 140F temperature standard printed by the FDA and these chops turned out moist and tender with excellent flavor. This would be a great recipe for a 4th of July cook out. Ingredients
  • 1 tablespoon seasoned salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon ground paprika
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon liquid smoke flavoring
  • 4 bone boneless pork chops (1/2 to ¾ inch thick)

Instructions
  1. Preheat grill to med high heat with grates lightly oiled or sprayed with non stick spray.
  2. In a medium bowl combine all the ingredients for the rub.
  3. Using your hands rub the pork chops with the rub into the meat-then allow the chops to stand for ten minutes.
  4. Grill the chops over indirect heat until no longer pink inside, about 12 minutes per side. An instant-read thermometer should read at least 140 degrees F.
  5. Allow chops to stand for 10 more minutes before serving.

Grilled Bacon Wrapped Hamburgers Recipe

The weather was great here for Memorial Day giving me the chance to fire up the grill again. I prepared this Grilled Bacon Wrapped Hamburgers Recipe before; but used the broiler instead of the grill, because I was out of gas. It was really good- so I decided to grill it for the Memorial Day weekend and like I expected, it came out even better using the grill. There is very little prep time, it’s a very simple recipe, and the combination of bacon and cheese flavors makes an excellent tasting bacon burger. The recipe originally called for dividing the burger to make 6. I divided it into 4 instead, for 4 quarter pounders, and it worked out perfect. Ingredients
  • ½ cup shredded Cheddar cheese
  • 4 slices mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 small onion, chopped
  • 1 egg
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 pound ground beef
  • 4 slices bacon
  • 4 hamburger buns (split)

Instructions
  1. Preheat a grill for medium high heat.
  2. In a large bowl, mix together the burger, Cheddar cheese, Parmesan cheese, onion, egg, ketchup, Worcestershire sauce, salt and pepper. (Mixing by hand seems to work the best for me.)
  3. Divide the burger into 4 equal amounts and form into patties.
  4. Wrap the bacon around the burger and secure in place with a tooth pick.
  5. Place patties on the grill, cook for 10 minutes per side, or until well done. Top with mozzarella cheese slices, close the grill until cheeses is melted. Remove toothpicks before serving.
  6. Serve on grill toasted buns with your choice of condiments.

Ingredients
  • Ingredients for Grilling Sauce
  • 4 tablespoons extra virgin olive oil
  • 4 tablespoons fresh lime juice
  • 2 teaspoon chili powder
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • Ingredients for the Salsa
  • 3 cups coarsely chopped ripe tomatoes
  • 2 large ripe avocados (Peeled and Diced)
  • 5 green onions, (white part only chopped)
  • ½ cup fresh cilantro (Finely Chopped)
  • 2 tablespoon jalapenos (minced)
  • 2 tablespoon lime juice
  • Salt and pepper to taste
  • Condiments for tacos
  • 2 cup Monterey jack cheese (shredded)
  • 1 head iceberg lettuce (shredded)
  • 1 cup sour cream
  • 4 tablespoons milk
  • 1 can black beans- drained, rinsed and heated (14 ounce can)
  • 20 soft taco-size flour tortillas
  • 12 boneless skinless chicken thighs

Instructions
  1. In a large bowl combine all the ingredients for the Salsa; add salt and pepper to taste.
  2. In another bowl combine the milk and sour cream.
  3. In a small bowl mix together the grilling sauce.
  4. Grill chicken over Direct Medium heat coating with the grilling sauce using a brush, turning several times to coat. Cook until juices run clear. (Internal temperature of 165F)
  5. Cut chicken into bite sized pieces.
  6. Heat the tortillas and place chicken, cheese, drained black beans, sour cream, salsa, and lettuce on tacos.

I am always looking for a good side dish to go with grilled food and this Red Potato Salad Recipe was perfect. You can fancy this recipe up anyway you would like most of the ingredients are optional so you can add or subtract ingredients to taste. Fresh red potatoes are so good in the summer; they just melt in your mouth. If you scrub them good before cooking there is hardly any skin left on the potato and they are great for preparing a potato salad. This is a great recipe for graduation parties or a Memorial Day cook out. The bacon in this recipe is a nice added touch. Red Potato Salad Recipe

Ingredients
  • 2 pounds clean, scrubbed new red potatoes
  • 6 Radishes (sliced)
  • 3 green onions (sliced or chopped.)
  • 6 eggs (Divided)
  • 1 pound bacon
  • 1 sweet onion (finely chopped)
  • 1 stalk celery (finely chopped)
  • 2 cups mayonnaise
  • Salt and pepper to taste
  • Paprika for garnish

Instructions
  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.
  2. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and let cool.
  3. Cook bacon until crisp on the stove or in an oven or microwave. (I like using the oven it does a good job for this.)
  4. Chop the cooled potatoes, leaving skin on.
  5. Place the potatoes in a large bowl, add 3 eggs chopped, bacon, sweet onion, green onion, sliced radishes and celery. Add mayonnaise, salt and pepper to taste.
  6. Slice the remaining 3 eggs and arrange them on top of the potato salad, and garnish with paprika if desired.
  7. Chill for an hour before serving.
