A cold winter blast just hit us here here in upper Michigan so hot soup sounded really good. I had some shopping I needed to get done so I thought the slow cooker would be a good fit to free up my afternoon. This Slow Cooker Chicken Noodle Soup Recipe does require a little bit of prep time, but the end result is really good – serve as a side dish or stand alone meal.

Ingredients
  • 1 ½ pound chicken thighs ( 4 thighs)
  • 1 split chicken breast (about 12 ounces)
  • 1 tablespoon vegetable oil
  • 3 medium carrots (peeled and chopped)
  • 2 celery ribs (chopped)
  • 1 medium onion (chopped)
  • 5 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • ½ teaspoon thyme
  • 1 teaspoon red pepper flakes
  • 8 cups low sodium chicken broth (divided)
  • 2 bay leaves
  • 1 cup egg noodles
  • ½ cup frozen peas
  • 2 tablespoons minced fresh parsley
  • shredded cheese for garnish (optional)
Instructions
  1. Generously salt and pepper chicken thighs. In a large skillet over medium high heat, using the oil ,brown chicken breasts on both sides; remove to platter and set aside. Reserve 1 tablespoon of the cooking oil in the skillet and cook the carrots, celery, and onion until mixture starts to brown. Add the tomato paste, thyme, garlic, and red pepper flakes cooking until fragrant, about 30 seconds.
  2. Stir in 1 cup of the chicken broth scrapping any dripping from the bottom of the pan and pour the mixture into the slow cooker. Add bay leaves and remaining chicken broth to the slow cooker and add the chicken thighs to the mixture.
  3. Salt and pepper the chicken breast, wrap breast in aluminum foil and place foil packet on top of the soup mixture.
  4. Cook for 4 – 6 hours or until chicken is fall off the bone tender. Remove the chicken breast and thighs from the slow cooker and place a a platter too cool.
  5. Cook noodles according to package directions; drain.
  6. While noodles are cooking using a fork shred chicken into bite size pieces discarding the bones; add the chicken back to the slow cooker. Remove bay leaves, mix in the noodles, peas and parsley and continue cooking until heated through.
  7. Serve garnished with shredded cheese.

  • 1 package (20 oz) boneless skinless chicken thighs (trimmed of excess fat and cut into 1-inch pieces)
  • 1 can whole kernel corn (15.5 ounces drained)
  • 1 can black beans 15 ounces drained and rinsed
  • 1 can mild enchilada sauce (10 ounces)
  • 1 package taco seasoning mix
  • 2 cups shredded Colby-Monterrey Jack cheese blend
  • Chopped green onions and sour cream
  • 4 cups tortilla chips
Instructions
  1. Lightly spray slow cooker with cooking spray. Place the corn, black beans, and enchilada sauce in the slow cooker and then mix in the taco seasoning; and then add the chicken.
  2. Cook on low for 7 – 8 hours.
  3. Stir in one cup of the shredded cheese stirring until melted.
  4. Top with the green onions and the remaining cheese and serve with dobs of sour cream. (instead of topping with the remaining cheese I served the dishes individually with the remaining cheese
  5. and green onion with the tortilla chips on the side.

Ingredients
  • ½ pound navy beans
  • 1 tablespoon vegetable oil
  • 1 large onion (chopped)
  • 3 garlic cloves (crushed and minced)
  • 1 generous tablespoon of tomato paste
  • ½ teaspoon dried thyme
  • ½ cup dry white wine
  • 1 can diced tomatoes (14.5 ounces)
  • 8 ounces kielbasa sausage (sliced into ½ inch pieces)
  • 1 ½ cups low sodium chicken broth
  • 1 bay leaf
  • 1 ½ pounds country style bone-in ribs
  • salt and pepper
  • 2 tablespoons fresh parsley (chopped)
Instructions
  1. Soak beans over night in cold water.
  2. Rinse beans and place in the bottom of the slow cooker.
  3. In a large skillet over medium high heat using the oil cook the onion, garlic, thyme, and tomato paste until onion is soft and starts to brown. Mix in the wine and scrap any droppings from the bottom of the pan; add the onion mixture to the slow cooker.
  4. Mix in the diced tomatoes, chicken broth, Kielbasa, and add the bay leaf. Salt and pepper the pork ribs and work them into the sauce in the slow cooker.
  5. Cook on low for 9 to 11 hours or on high for 6 to 7 hours.
  6. Off heat and let liquid settle for about 5 minutes. Gently turn the slow cooker to its side to bring liquid to the surface and spoon off any excess fat.
  7. At this time I removed the ribs and took out the bones. While the ribs are getting cool enough to handle mix in the parsley. Return the now boneless ribs to the slow cooker and serve hot.

Wow!; these Chinese Barbecued Pork Steaks are really good. Those were the first words out of my wife’s move when she tasted them. These pork steaks are a little bit of work, but well worth the effort.
The pork steaks start out in the slow cooker, coated with a spice rub, consisting mainly of Chinese five spice powder. They are slow cooked to just fork tender, transferred to the boiler, and coated with the Chinese BBQ sauce to form a sticky and delicious glaze.

Ingredients
  • 1 boneless pork butt roast (5 to 6 pounds (excess fat trimmed and cut into 1 inch slices crosswise to form steaks)
  • 1 ½ teaspoons Chinese five spice powder (divided)
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • ⅓ cup hoisin sauce
  • ⅓ cup honey
  • ¼ cup sugar
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • 2 tablespoons dry sherry
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger (grated)
  • 2 garlic cloves (crushed and minced)
Instructions
  1. In a small bowl mix together the salt, pepper, and ¾ teaspoon of the 5 spice powder. Rub the mixture into both sides of the pork steaks. Place the steaks in the slow cooker, and slow cook on low until fork tender about 5 – 6 hours (you don’t want them done to the fall apart stage because you need to be able to handle them)
  2. While the pork is cooking in a medium size bowl mix together the hoisin sauce, honey, sugar, soy sauce, sherry, sesame oil, ginger, garlic, and the remaining ¾ teaspoon of five spice powder; set aside.
  3. Line a broiler pan with aluminum foil, and pour about a cup of water into the bottom of the pan, and spray the grated top with cooking spray; set broiler on low with rack adjusted about 4 inches from the broiler element. Place the pork steaks in a single layer on broiler grate and brush each steak generously with the reserved sauce. Broil until steaks are lightly caramelized, flip, and repeat the process. (About 5 minutes on each side.) Coat the stakes again and continue cooking until the steaks reach a deep mahogany color, and are slightly charred on the edges. (I flipped them one more time during this process and used up all of the sauce.)
  4. Serve hot.

This is a quick recipe to put together, and because it’s cooked in the slow cooker it frees up a lot of to time to go to the beach, or work on some other things you want to get done.

  • 1 pound new red potatoes (quartered)
  • 1 small onion (cut in half and sliced)
  • 1 red pepper (cut into strips)
  • 6 cloves garlic (sliced)

  • ½ cup zesty Italian dressing

  1. Arrange the red potatoes, onion, and red pepper in the bottom of the slow cooker. Add the garlic and arrange the chicken thighs on top.
  2. In a medium size bowl whisk together the zesty Italian dressing, lemon juice, and flour; pour the mixture over the chicken.
  3. Cook on low for 6 -7 hours, or until chicken is done, and vegetables are tender. Add the frozen peas and continue cooking until peas are heated through.
  4. Serve e hot garnished with parsley.

Being stressed for time again I decided on another slow cooker recipe. This is a very simple recipe to put together, and takes about 7 hours in the slow cooker, so it frees up a lot of time. As far as stew recipes go, I think this recipe lacks a few of the traditional ingredients that are typically found in stew. I thought for a simple recipe, this Slow Cooker Pork Stew Recipe was pretty good, but my wife though it was excellent; so here it is. Give it a try the next time you need to free up some time. Enjoy

Ingredients
  • 1 ½ - 2 pounds of boneless pork (cut into 1 inch cubes)
  • 1 can stewed tomatoes
  • 1 medium onion (chopped)
  • 1 green bell pepper (seeded and cut into 1 inch pieces)
  • ⅓ cup soy sauce
  • 1 tablespoon chili powder
  • 1 tablespoon dried celery
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper or to taste
  • ⅓ cup cornstarch
  • ⅓ cup cold water
  • Hot egg noodles
Instructions
  1. in the bottom of the slow cooker mix together the tomatoes, onion, green pepper, soy sauce, dried celery, chili powder, garlic powder, and black pepper.
  2. Mix in the cubed pork and cook on low until pork is tender. (7 – 8 hours)
  3. In a small bowl mix the cornstarch with the water until mixture is smooth. Stir the mixture into the stew and cook on high until mixture is thickened.
  4. While stew is thickening cook the noodles. Serve the stew mixture over the noodles.

I guess I’m on a roll with the slow cooker this week. The weather has been real nice here in Upper Michigan, giving me a chance to get a lot of winter preparation done outside. I love using the slow cooker because it frees up a lot of my time.
This Slow Cooker Pork and Beans Recipe doesn’t take much time to put together so you can put it on quickly, and get about doing the things you have to do. This is a one dish recipe, so outside of shredding the pork, dinner will be ready at the end of the day. I used cayenne pepper in this recipe which can turn up the heat in the dish rather quickly; so be sure to add it to taste.

  • 1 boneless pork loin (about 3 pounds cut into 2 pieces)
  • 1 medium onion (chopped)
  • 3 cans pork and beans (15 ounces each)

  1. Place all the ingredients in the slow cooker, except for the pork roast, and mix until thoroughly combined.
  2. Press the pork roast pieces into the mixture and cook on low until pork is fork tender. (6-7 hours)
  3. Remove the pork from the slow cooker. Let the pork cool enough to handle, and separate the pork using 2 forks. Add the pork back into the slow cooker and continue cooking until pork is heated through.

If you have been suffering from sticker shock over the grocery prices lately here is a simple and very inexpensive recipe to put on the supper menu that you and your family will enjoy. This is a slow cooker recipe so it does take some time to cook, but if you have some other things you have to get done this can be a blessing.
I used chicken leg quarters in this recipe but you can use any combination of chicken pieces you would like. If you use leg quarters I would recommend removing the skin and any excess fat’

  • 4 chicken leg quarters (skin and fat removed)
  • 1 small green bell pepper (thinly sliced into strips)

I had to go out of town and needed a good one dish recipe, so I decided to use the slow cooker. The weather has been cold here lately so I though this Southwest Chicken Chili Recipe looked really good. Because it is cooked in the slow cooker, I could get it on, and have a hot bowl of chili waiting for me when I got home.   • 1 can northern beans (15 ½ ounces- rinse and drain)
  • 1 can chicken broth (14 ½ ounces)
  • 1 can chopped green chilies (4 ounces)
  • 1 small onion (chopped)
  • 2 tablespoons cilantro
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ⅛ teaspoon crushed red pepper flakes (or to taste)
  • 5 ounces of sour cream for garnish
Instructions
  1. In a slow cooker mix together the northern beans, chicken broth, chopped green chilies, onion, cilantro, garlic powder, ground cumin, dried oregano, and add the crushed red pepper flakes to taste.

  5. Add the chicken and ham hock into the slow cooker mixture and cook on low for 6-8- hours until the ham hock is tender and separates easily with a fork; remove the ham hock to a plate and let cool. Remove the skin and bone from the ham hock, shred or cut into bite size pieces, and add the ham back into the chili.
  6. Serve hot with scoops of sour cream on top.

I was looking to put a meal together that I could set it and forget for a while to get some other things done so I decided on this Slow Cooker Baked Ziti Recipe. This recipe contains a lot of the ingredients you would find in lasagna. I don’t usually like to cook pasta in the slow cooker because they have a tendency to come out kind of doughy. This recipe is an exception but does require you to kind of check back on it once and awhile so as not to overcook the ziti. Instead of 3 hours in the slow cooker I wound up turning it off at 2 1/ 2 hours. All slow cookers are not created equal, so the cooking time will also depend on the slow cooker you are using. This would be a great recipe to put together, to have ready  for when the kids get out of school, or if you need to free up a little time like I needed to do. Enjoy

  • 2 tablespoons olive oil
  • 1 pound sweet Italian sausage
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 ½ cups Ziti pasta
  • 1 can crushed tomatoes (28 ounces)
  • 1 can tomato sauce (15 ounces)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh basil chopped (optional)
Instructions
  1. In a large skillet or Dutch oven using the olive oil on medium high heat, brown and break up the sausage and onion, until sausage is no longer pink inside. Mix in the garlic, oregano, salt, and pepper; continue cooking until fragrant.

  3. Reduce the heat to medium low, mix the Ziti into the sausage mixture, continue cooking, stirring constantly until the edges of the Ziti become translucent. Remove the mixture from the heat and stir in the tomatoes and tomato sauce.

  5. Line the inside edges of the slow cooker with aluminum foil to keep the pasta from burning and pour the Ziti mixture into the slow cooker. Cover and cook on low for 2 ½ to 3 hours until pasta is tender.

  7. Remove the aluminum foil from the slow cooker; using a spoon dollop the ricotta cheese over the top of the Ziti mixture and then sprinkle on the shredded mozzarella. Cover on cook until cheese is melted.
