This Grilled Asian Salmon Recipe is a great dish for the Easter season during Lent. This is a simple recipe that is quick to prepare with very little prep time. All the flavorings, and seasoning, seem to blend very well with the fish in this recipe. I posted this recipe as grilled, because that is the way I cooked the fish, but you could also cook the salmon using the oven broiler by placing the salmon about 7 inches from the heating element or source. Ingredients
  • 2 pounds salmon fillets (skinned)
  • 1/ 4 cup soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon fresh ginger (minced)
  • 2 cloves fresh garlic (minced)
  • Zest and juice from 1 lime
  • 1 tablespoon brown sugar
  • 3 green onions (chopped)

Instructions
  1. Preheat Grill on high heat.
  2. In a small bowl combine the soy sauce, chili sauce, ginger, garlic, lime juice, lime zest and brown sugar.
  3. place the salmon fillets divided on to 2 large sheets of aluminum foil with the edges folded up to keep the juice from running off. Spoon the sauce mixture over the salmon.
  4. place the salmon on the grill and cook for 4 to 7 minutes on each side or until done. Remove the salmon to a serving platter and pour any of the left over cooking juices, which may be left on the foil, over them. Garnish with the green onions.

Venison Stroganoff Recipe

This Venison Stroganoff Recipe caught my attention because there are a couple of ingredients in it I have never used before; this recipe calls for beef Consommé and Kitchen Bouquet. Naturally with any wild game recipe the outcome will largely be determined by how gamy tasting the meat is you are using. This recipe in its original form called serving the Venison Stroganoff over wild rice-which I do not have available so I served it over egg noodles which is a little more conventional anyway. This is a very good recipe with a little bit of tang to the flavor. it is mildly seasoned and you can have Venison Stroganoff on the table within an hour. For the meat I used venison chops but you could also use round steak depending on what you have available. If you have some venison on hand give this one a try. Enjoy

Ingredients

1 1/2 venison boneless chops or round steak

1 1/2 teaspoons salt

2 teaspoons pepper

3 tablespoons butter

1 tablespoon flour

1 cup Beef Consommé

1 teaspoon prepared hot mustard

3 tablespoons sour cream

1 dash Kitchen Bouquet

1 onion (sliced)

Egg noodles or wild rice.

Directions

1. Slice venison into 1/ 8 inch strips about 2 inches long and remove any fat if necessary.

2. Season with salt and pepper and, set aside and let the venison reach room temperature.

3. Melt 1 1/2 teaspoons butter in a large skillet. Blend in flour, then add the Beef Consommé and bring to a boil; then stir in mustard and sour cream. Bring back to a boil then reduce the heat to warm and stir in a dash of Kitchen Bouquet.

4. Using the rest of the butter and another skillet brown the venison and onion till venison is no longer pink inside, then add the meat and onion to the sauce. Cook on very low simmer for 20 minutes.

5. Serve over wild rice or egg noodles

Chicago Hot Dog

 

I was so excited when I was chosen by Glam and Hebrew National hot dogs to host a hot dog party. All Hot Dogs are not created equal, and it doesn’t matter how good the hot dog recipe is; if you don’t have a good all beef hot dog when you create it, you may not like the results.  Hebrew National Prides itself on being made with premium cuts of 100 percent kosher beef.

In my opinion they lived up to their name. The quality was excellent, and combined with the Three of the Best Hot Dog Recipes below where delicious. Usually when we have hot dogs at a party or cook out I will concentrate on one Hot Dog Recipe, but I took this opportunity to present all three. The Chicago Style Hot Dog Recipe is my son’s favorite because it is covered with delicious condiments, my Wife loves the Nacho Dogs Recipe, because of the homemade Guacamole topping, combined with the sliced pickled jalapeno slices. For me I like all three, but the Frito Dogs recipe is my favorite. The combination of a good hot dog, grilled, than covered with chili, cheese, and corn chips, is an excellent combination.

I have created all three recipes in recipe format so you can print them all, or just one at a time as you choose.

Nacho Dogs Recipe

Ingredients

4 all beef hot dogs

4 hot dogs buns

1 (9 ounce) container nacho cheese dip

1/4 cup onion (chopped)

Pickled jalapeno slices

Chunky Salsa

Ingredients for Guacamole-

2 ripe avocados (flesh scooped out and pitted)

1/4 cup cilantro

Juice of 1 lime

1 garlic clove (minced)

Salt (to taste)

Directions

1. For the guacamole- using a large bowl add avocados. Add lime juice, and mash together with a fork. Stir in garlic, cilantro, and salt to taste. Cover and refrigerate until needed.

Step 2: Heat an outdoor grill or over a camp fire (or in indoor grill pan) cook hot dogs until they are slightly charred on the outside.

3.  Heat nacho cheese dip according to package directions.

Step 3: Place hot dog buns onto the grill and grill until lightly toasted. Place grilled hot dogs onto the buns. Top with nacho cheese, guacamole, onion, salsa, and jalapeno slices.

 

 

Frito Hot Dogs

Ingredients

8 all beef hot dogs

8 hot dog buns

1 (15 ounce) can chili (with beans)

1  1/2 cups shredded Monterey Jack cheese

1  1/2 cups Frito chips (crushed)

Pickled jalapeno slices

Directions

1. In a medium sauce pan over medium-low heat cook the chili so heated through. Keep warm.

2.  Lightly grease the grill grates of an outdoor grill (you can also use an indoor grill pan or op[en fire). Heat the grill to medium-high heat. Place hot dogs onto the grill and grill until they are slightly charred on the outside.

3. Place hot dog buns onto the grill cut side down and grill until lightly toasted.

4. Place hot dogs onto the buns. Top with chili, shredded cheese,  pickled jalapeno slices, and crushed Frito chips.

Chicago Style Hot Dogs Recipe

Ingredients

1 all-beef hot dog

1 tablespoon yellow mustard

1 poppy seed hot dog bun

1 tablespoon sweet green pickle relish

1 tablespoon onion (chopped)

4 tomato wedges

1 dill pickle spear

2 sport peppers

Celery salt

Directions

1. Cook hot dog on grill or over open fire. Move them to a warming rack or warming oven. (The original Chicago styled is boiled for about 5 minutes)

2. Place hot dog on a steamed bun. Add condiments in this specific order- yellow mustard, relish, onion, tomato wedges, dill pickle spear, and celery salt. The tomatoes should be placed between the hot dog and the top of the bun. The dill pickle spear should be placed between the hot dog and the bottom of the bun.

Note: Sport peppers and poppy seed buns can be very hard to find-I substitute Sweet Banana Wax Peppers and it works out very well.

Ingredients
  • 1 pound ground turkey breast
  • ¼ cup chopped onion
  • ½ cup ketchup
  • 3 tablespoons barbecue sauce
  • 1 tablespoon prepared mustard
  • 1 tablespoon cider vinegar
  • 1½ teaspoons Worcestershire sauce
  • ½ teaspoon celery seed
  • ¼ teaspoon pepper
  • 6 hamburger buns (split)

Instructions
  1. In a nonstick skillet (I used a regular skillet with non-stick spray), cook the turkey and onion for 5 minutes or until turkey is no longer pink.
  2. In a separate bowl combine, ketchup, barbecue sauce, prepared mustard, cider vinegar, Worcestershire sauce, celery seed and pepper.
  3. Add mixture to the turkey and onion and simmer for 10 minutes.
  4. Serve over buns.

I had to take care of some business out of town and needed something easy and quick again. I was going to out for the afternoon and wanted supper pretty much ready when I got home.   • 9 bone-in chicken thighs
  • ½ Teaspoon Salt
  • ¼ Teaspoon black pepper
  • 1-1/2 cups barbeque sauce
  • ½ cup honey
  • 2 Teaspoons prepared mustard

  • ⅛ Teaspoon Hot Pepper sauce or to taste

Instructions
  1. Sprinkle chicken with salt and pepper and place on a boiler pan.
  2. Broil on high 4-5 inches from the heat 3-4 minutes on each side until lightly browned. Place in the slow cooker.

It has been awhile since I have posted a Mexican recipe, so when my wife saw this Burrito Pie Recipe and thought it looked really good; I decided to give it a try. It is pretty much like a burrito casserole just with kind of a different name. This is another simple recipe with not a lot of prep time. It is mildly seasoned, so if you like it hot, you might want to add some red pepper flakes or cayenne pepper. I prepared the recipe as is; it was very good. Ingredients
  • 2 pounds ground beef
  • 1 onion, chopped
  • 4 garlic cloves (minced)
  • 1 (2 ounce) can black olives (sliced)
  • 1 (4 ounce) can diced green chili peppers
  • 1 (10 ounce) can diced tomatoes with green chili’s
  • 1 (16 ounce) jar taco sauce
  • 2 (16 ounce) cans re-fried beans
  • 12 (8 inch) flour tortillas
  • 9 ounces shredded Colby cheese

Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes.
  3. Drain any excess fat.
  4. Mix in the olives, green chili peppers, tomatoes with green chili peppers, taco sauce and re-fried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  5. Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
  6. Bake for 20 to 30 minutes in the preheated oven or until cheese is slightly brown and bubbly.

This is not your average taco. This Pulled Beef for Tacos Recipe was so good I almost ate the beef roast before it got into the taco shells. Included here is the basic recipe for the slow cooker pulled beef; I have pretty much left it up to you; to top it, with your desired condiments. I used the standard toppings consisting of, shredded lettuce, diced tomatoes, salsa, and topped it with shredded provolone cheese. This is a mildly seasoned recipe, so season it to taste if you want to turn up the heat. Another nice feature about this recipe is, you can set it and forget it, because it’s a slow cooker recipe. Ingredients
  • 1 (2 lb.) boneless beef roast
  • 1 Tablespoon canola oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 Tablespoon tomato paste
  • ¾ cup beef broth
  • ½ teaspoon parsley
  • 2 teaspoon chili powder (I use a hot version)
  • 1½ teaspoon cumin
  • ½ teaspoon cayenne (or to taste)
  • ½ teaspoon paprika
  • ½ teaspoon oregano

Instructions
  1. Heat a large, over medium high heat, and add the oil. Sprinkle the
  2. Beef roast liberally with salt and pepper. Once the oil is hot, add the roast to the pan and
  3. brown on all sides.
  4. Place in the Crock pot or slow cooker.
  5. Using the same pan, add the onion and cook for about 2 minutes before stirring in the garlic and tomato paste. After another minute, stir in the beef broth and spices along with any browned beef scraps left in the pan.
  6. Then pour the seasoned broth and onions over the top of the roast.
  7. Cook on low for 8-10 hours. Remove the roast, and shred with a fork. Then return the shredded beef to the slow cooker
  8. (To soak up any extra liquid, you can turn the slow cooker or Crock pot to high for a little bit after shredding the beef.-I did not find this step necessary, but it might depend on the beef cut.)

I am always open for a one dish meal; they usually have less prep time and dirty a lot less dishes. This Indian Style Curry Chicken Recipe caught my eye mainly because I don’t use Curry very often. This is a simple recipe with not much prep time; however  be sure to allow enough time for the frozen vegetables to thaw. The green chilies do add some heat, but I don’t think it’s overly hot. Ingredients
  • 4 cups frozen potatoes O’Brien with onions and peppers (thawed)
  • 1 bag (12 oz) frozen sweet peas (thawed)
  • 1 can (14.5 oz) diced tomatoes with green chilies (undrained)
  • 4 teaspoons curry powder
  • ½ teaspoon salt
  • 3 tablespoons all purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 12 chicken drumsticks
  • Vegetable oil for browning

Instructions
  1. Heat oven to 350°F.
  2. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. In large bowl, stir together potatoes, peas, tomatoes, 2 teaspoons of the curry powder and the salt. Spread evenly in baking dish.
  3. In large reseal able food-storage plastic bag, mix remaining 2 teaspoons curry powder, the flour, paprika and garlic salt; shake to mix. Add drumsticks; seal bag, and shake to coat.
  4. In 12-inch skillet, heat oil over medium-high heat. Cook drumsticks in oil 8 to 10 minutes, turning frequently, until skin is brown.
  5. Place drumsticks in 2 rows lengthwise over potato mixture, alternating direction of drumsticks to cover potato mixture. Cover tightly with foil.

This Southwestern Chicken Scaloppini Recipe is so simple it just amazed me. This recipe creates some tender juicy chicken along with some really good gravy. I debated whether I should serve this chicken with long grain white rice or mashed potatoes, and I opted in on the mashed potatoes. The recipe calls for hot sauce, but I didn’t use it, because I really did not want the heat. You can spice this up as much as you want, but I thought the recipe was real good the way it is. Ingredients
  • 4 boneless skinless chicken breasts (about 1¼ lb)
  • ½ cup all-purpose flour plus 2 teaspoons
  • 2 teaspoon ground cumin
  • ½ teaspoon salt
  • 1 1/ 2 tablespoons canola oil
  • 1 cup chicken broth
  • ¼ teaspoon red pepper sauce or to taste (optional)
  • 4 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro

Instructions
  1. Between pieces of plastic wrap or waxed paper, place chicken breast half with smooth side down; gently pound with flat side of meat mallet until about ¼ inch thick. Repeat with remaining chicken. Cut chicken into smaller pieces if desired.
  2. In shallow dish, mix ½ cup flour, cumin and salt. Coat chicken with flour mixture.
  3. In 12-inch nonstick skillet, heat oil over medium heat. Add chicken; cook 3 to 5 minutes on each side or until golden brown and no longer pink in center. Remove chicken from skillet; cover to keep warm.
  4. In small bowl, stir 2 teaspoon flour mixture into broth. Gradually stir broth mixture and red pepper sauce into skillet. Heat to boiling; stir in lime juice and cilantro.
  5. Serve sauce over chicken with mashed potatoes or rice

  • 6 medium russet potatoes (peeled and cubed-1 to 2 inches, the smaller, the less cooking time you will need)
  • ½ cup milk
  • ¼ cup butter or margarine
