Chicken and Rice Casserole Recipe

This is another recipe that kind of fell to the way side after the kids left home. This Chicken and Rice Casserole Recipe was one of our favorite recipes. Not only is this a great tasting dish, but there’s almost no prep time. This recipe can be put together, and in the oven, within minutes. If there is a downside to this dish at all, it’s that it has to bake for almost 2 hours, so you do have to plan ahead a little bit. The chicken comes out nice and juicy, and the rice combined with the soup mixture makes this recipe a really good one dish meal. Ingredients
  • 1 can condensed cream of mushroom soup (10.5 ounces)
  • 1 can condensed cream of chicken soup
  • 4-6 pieces of chicken (skin on or off-your choice)
  • 3 soup cans of water
  • 1 package dry onion soup mix
  • 1 cup long grain white rice (uncooked)
Instructions
  1. Preheat oven to 350F.
  2. Mix all the ingredients together in a 9 x 13 casserole dish placing the chicken on top to sink into the liquid.
  3. Bake covered with aluminum foil until chicken is done and the rice is tender. About 1½ to 2 hours. (Optional) Just before the casserole is finished cooking remove the aluminum foil; move the chicken pieces to the top, and brown them a little bit.
  4. Let the casserole rest for about 15 minutes before serving.

Rice Pilaf Recipe

I had never made Rice Pilaf before and I thought I would give it a try. This Rice Pilaf Recipe is a very basic recipe that is very easy to prepare. I am sure if you wanted to you could spice it up a little bit but I thought the taste was excellent without the addition, of additional spices. I also have never used orzo pasta before. The only recommendation I would make on that is watch the orzo closely because it browns very quickly. Outside of that I served this as a side dish with fish, and we all enjoyed it. The next time you are looking for a flavored rice side dish give this Rice Pilaf Recipe a try, you’ll be surprised as to how easy it is to prepare, and I am sure you will be happy with the results. Ingredients

2 tablespoons butter

1/2 cup orzo pasta

1/2 cup diced onion

2 cloves garlic, minced

1/2 cup uncooked white rice

2 cups chicken broth

Directions:

1. Melt the butter in a skillet that you can cover over medium-low heat. Cook and stir orzo pasta until golden brown.

2. Stir in onion and cook until onion becomes translucent, then add garlic and cook for 1 minute then mix in the rice and chicken broth. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender. (20 to 25 minutes)

3. Remove from heat and let stand for 5 minutes, then fluff with a fork.

Serve Hot-Serves 4

Chicken Flavored Rice Recipe

There are so many times I need a side dish to go along with a grilling recipe and as a result I get tempted when I am at the market to save some time and grab a flavored rice mix. The fact is that homemade does not take a lot longer and in my opinion tastes better than the store version. In this recipe I decided on chicken flavoring, however beef could be used instead; and I am sure the results would be excellent. Just substitute the chicken bouillon and broth, with beef and this Chicken Flavored Rice Recipe turns into a beef flavored rice recipe. This is a simple recipe with very little prep time and you can have the rice cooking while you are attending to the main dish. I followed the recipe as is and the family thought it was better than any of the flavored rice mixes we have purchased previously in the stores. Ingredients
  • 2 cups chicken broth
  • 1 tablespoon butter
  • 1 teaspoon chicken bouillon granules
  • 1 cup uncooked long grain rice
  • 2 tablespoons soy sauce
  • 1 teaspoon dried minced onion
  • ½ teaspoon onion powder
  • ¼ teaspoon dried basil
  • ¼ teaspoon dried marjoram
  • ¼ teaspoon dried thyme
Instructions
  1. In a large saucepan, combine the chicken broth, butter and bouillon. Bring to a boil.
  2. Add remaining ingredients. Reduce heat; cover and simmer for about 15 minutes or until liquid is absorbed and rice is tender.

Spanish Rice Recipe
It’s so easy. This Spanish Rice recipe tastes great and requires very little prep time. I don’t think a packaged mix could be any faster. The bacon just adds great flavor. This is a great side dish. Serve it with your next Spanish or Mexican style meal. Enjoy

Ingredients
  • 4 strips bacon
  • 1 cup long grain white rice
  • 2 (10 ounce) cans Rotel Tomatoes with Green Chilies
  • 1 onion, chopped fine
  • 1 small green pepper, chopped fine
  • 2 cloves garlic, crushed
  • 1 cup chicken broth
  • 1 tablespoon butter
Instructions
  1. Fry bacon in skillet until browned.

  4. Do not remove bacon grease from skillet!
  5. Melt butter in skillet and add onion, pepper and garlic.

  8. Add the Rotel Tomatoes with Green Chiles and chicken broth and simmer approximately 5-10 minutes.
