Fresh from the lake into the frying pan -This is a moist and delicious trout recipe.

The fishing was good here on Keweenaw Bay this week, producing a nice Lake Trout catch, so I decided to post this Pan Fried Lake Trout recipe. This fish coating browns nicely, has a nice crunch, and complements the fish flavor very well.

This recipe works well for either Lake Trout or Salmon.

  • 4 -6 Lake trout fillets (depending on size)
  • ½ cup grated Parmesan cheese
  • ½ cup saltine crackers (crushed – about ½ package)
  • ½ cup cornmeal
  • ½ teaspoon garlic salt
  • ⅛ teaspoon pepper
  • 2 eggs (lightly beaten)
  • ½ cup milk
  • Vegetable oil for frying
  • Lemon wedges (optional)
Instructions
  1. In a shallow bowl (I like to use a pie dish)whisk together the Parmesan cheese, crackers, garlic salt, cornmeal, and black pepper. In a medium size bowl mix together the eggs and milk until well combined.
  2. Pat fish dry with paper toweling, dip fish in the milk mixture, and then roll them in the dry mixture pressing lightly to coat.
  3. Cook fish in a large skillet using the oil over medium high heat until fish is nicely browned on both sides and separates easily with a fork (about 5-7 minutes per side).
  4. Serve hot with lemon wedges.

For whatever the reason, it has been another really good fishing year for me here in upper Michigan. The pan fish have been biting really well and each trip has produced a good number of fish. This has given me the chance to try a number of fish coating recipes. I think this Cajun Fried Pan fish Fillets Recipe is one of the better ones. The combination of seasoning is just right, and doesn’t over power the taste of the fish.
For this recipe I used crappie fillets, but perch, or bluegills, will work just as well. This is a simple and quick recipe to put together, and doesn’t require a lot of prep time. I deep fried the fish with oil in a cast iron pan but you could also use a deep fryer.

Ingredients
  • 1 pound pan fish fillets
  • ⅓ cup yellow corn meal
  • 1½ cups all-purpose flour
  • 1 egg (lightly beaten)
  • ½ cup of milk
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • vegetable oil for frying
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
Instructions
  1. Rinse fish fillets and pat dry with paper toweling (remove skin – optional)
  2. Place ½ cup flour in a shallow dish such as a pie plate. In another shallow dish whisk together the corn meal, 1 cup flour, onion powder, garlic powder, paprika, parsley flakes, oregano, cayenne pepper, salt, and pepper.
  3. In a small bowl mix together the milk and egg.
  4. Roll each fillet in the flour, dip in the egg mixture, and then in the cornmeal mixture to finish coating; set aside on a plate.
  5. Cook fish in batches - deep fryer at 375F, or in a large skillet over medium high heat until golden brown on both sides. (My favorite is a cast iron skillet for this)
  6. Place fillets on a plate lined with paper toweling to catch any excess oil.

Lake Superior still has ice chunks floating in it, but the inland lakes are starting to warm up. Bass season opened this past weekend so when temps hit the high 80’s on Memorial Day I decided to give it a try; the fishing was spectacular.

I always look forward to the 1st fresh fish fry of the season, because it’s hard to beat the taste of fresh caught fish, especially when the water is still on the cold side.

This Smallmouth Bass Recipe is a simple pan-fried fish recipe that is simple and good. Serve the fish with fries and your favorite vegetable – it doesn’t get much better. Enjoy

Crispy Fish Sticks with Tartar Sauce Recipe

There used to be a time when every Friday was fish fry day at my house. Through the years things have changed, and the Catholic Religion doesn’t practice this anymore, with the exception of the Lent season. I guess because of habit, which can be hard to break, it seems like most of the time that we have fish on the super menu, is on Friday.

I love to fish and usually do a lot of fishing in the summer and fall, but this year has been an exception; I just haven’t been able to make the time. So for this recipe I decided to use Tilapia, but you could use any species of good white fish, like fresh crappie, white fish, or cod. For the Tilapia I just cut the fish fillets lengthwise along the lateral line, if you’re using bigger fish fillets, cut them into one inch strips lengthwise.

This is a simple and mildly seasoned recipe that creates a nice and crispy coating that could easily be spiced up a little more to taste if you wanted to turn it into a Cajun type fish recipe.

The tarter sauce included in this post is a delicious condiment for the fish; give it a try, it’s really good.

Ingredients

1-2 pounds of Tilapia fillets (or other “white fleshed fish” of your choice)

2 cups fresh bread crumbs (4 slices of fresh bread processed in food processor or blender)

16 saltine crackers (crushed into crumbs with a rolling pin)

1/ 2 cup all-purpose flour

2 large eggs

1 cup whipped salad dressing or mayo

1/ 4 cup dill pickles (chopped)

1 tablespoon pickle juice

1 teaspoon capers in Balsamic (minced and rinsed- if you can’t find Balsamic use regular)

Oil for deep frying

Directions

Preheat deep fryer to 350F

1. Prepare the bread and crackers, and then mix them together in a shallow dish large enough to coat the fish fillets.

2. Place the 1/4 cup flour in another shallow dish. In a 3rd dish using an electric mixer combine the eggs and 1/4 cup mayo or salad dressing.

3. Roll the fish fillets lightly in the flour, then the egg mixture, and then press and roll them in the bread and cracker crumbs. Set aside on a plate.

4. To prepare the Tartar Sauce, in a small bowl mix together the pickles, pickle juice, 3/ 4 cup mayo or salad dressing; set aside in the refrigerator.

5. Deep-fry the fish 3-4 minutes on each side or until golden brown. Serve with the tartar sauce.

Fresh Fishcakes Recipe

This Fresh Fish Cakes Recipe is another recipe that the family really liked but I kind of lost track of it through the years. Even though the family really liked it I didn’t prepare it very often because it is somewhat time consuming. What this recipe is mainly doing is combining the fish with mashed potatoes and chopped onions. If you have ever prepared mashed potato cakes before the consistency of the recipe is the same. I used tilapia in this recipe and it was really good. You could use salmon, or trout, but you would be risking a fishy flavor which I personally don’t care for. Most of the time involved in preparing this recipe is precooking the fish and the potatoes. The fish mixture is on the soft side so when you form the patties, handle them carefully to keep them from coming apart. I prepared the recipe as written-this is a large recipe so you may want to cut it in half.

  1. Place the fish and potatoes in a large kettle. Bring to a boil and then reduce the heat to simmer, and cook until the potatoes are tender. Set aside and let cool.
  2. After the potato mixture has cooled, run the mixture through a hand, or electric grinder; then mix in the rest of the ingredients. (Mixture will be very moist)
  3. Form the mixture into patties or cakes then coat them with bread crumbs. Fry in oil on medium high heat until brown.

Deep Fried Pan Fish Recipe

I love to fish and the whole family loves to eat them. This time of the year pan fishing is good in our area; and the last fishing trip was no exception, producing a mess off bluegill and crappies. This Deep Fried Pan Fish Recipe has been one of our favorites, the coating is nice and crispy with a golden brown texture. I prepared some homemade baked beans with a side dish of long grain reice with Broccoli and the whole family loved it. The next time you have fresh fish for dinner give this recipe a try; it is very easy to prepare, and the result is a delicious fish fry.

Ingredients
  • 4 cups dry potato flakes
  • 2 cup flour
  • 2 tablespoon garlic powder
  • 2 tablespoon seasoning salt
  • 2 tablespoon ground black pepper
  • 4 teaspoons cayenne pepper

  • 16 bluegill fillets (can also use bass, crappie, or tilapia)
  • Oil (for frying)
Instructions
  1. Heat a deep fryer to 350 degrees. In a small bowl beat together 4 eggs. In a large bowl combine potato flakes, flour, garlic powder, seasoning salt, black pepper, and cayenne pepper. Mix well. (I use a pie plate for the dry mixture and add to it as needed-any left over can be saved for the next fish fry)
  2. Dip fillets into egg mixture and then roll in the potato mixture until evenly coated.
  3. Fry fish fillets in the deep fryer (in batches if necessary) for 5 minutes or until the fish flakes apart easily and is golden brown. Drain on paper towels.

Ingredients
  • 3 tablespoons dark brown sugar
  • 4 teaspoons prepared Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 2 salmon steaks about 8 ounces ¾ to 1 inch thick

  1. Mix together the brown sugar, mustard and soy sauce.

  4. Brush one side of the salmon fillets with half of the glaze.

  • 2 Tablespoon ground paprika
  • 1 Tablespoon onion powder
  • 1 Tablespoon cayenne pepper

  • ¼ Teaspoon dried thyme
  • ¼ Teaspoon dried basil

  1. Mix all the spices together into a bowl.
  2. Melt the butter.
  3. Coat the salmon fillets on both sides with ¼ cup butter. Then sprinkle them over evenly with the spice mixture. Drizzle one side of each fillet with ½ half the remaining butter.
  4. Using a skillet over high heat, cook the salmon fillets butter side down until blackened. 2 to 5 minutes. Turn the fillets and drizzle with the left over butter. Continue cooking until blackened and the salmon flakes easily with a fork.
  5. Enjoy.
