Ingredients
  • ½ cup chicken broth
  • 2 slices bacon
  • 1 tablespoon brown sugar
  • 1 ½ teaspoons chili powder
  • 1 tablespoon paprika
  • salt and pepper
  • 1 pound boneless county style ribs
  • ¾ cup barbecue sauce
Instructions
  1. Lightly spray slow cooker with cooking spray. Pour the broth into the slow cooker and add the bacon.
  2. In a medium size bowl mix together the brown sugar, chili powder, paprika, ½ teaspoon salt, and ½ teaspoon pepper.
  3. Rub the seasoning mixture into the ribs and arrange them into the broth in the slow cooker.
  4. Cook until pork is tender. 5-6 hours on low or 3-4 hours on high.
  5. Remove pork from the slow cooker, let cool slightly, and pull apart into bite size pieces using a fork.
  6. Pour broth into a fat separator and reserve ½ cup of the broth. Mix together the broth and the BBQ sauce. Place the pork back into the slow cooker and gradually mix in the BBQ sauce mixture to desired consistency. (I used all the sauce with a little over a pound of pork)

Ingredients
  • 3 red bell peppers (cut into ¼ inch strips)
  • 1 large sweet onion (cut in half and sliced into ¼ inch thick)
  • 3 tablespoons white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon vegetable oil
  • 1/ teaspoon salt
  • ½ teaspoon pepper
  • 1- 13 x 9 inch disposable pan
  • 2 pound sweet Italian sausage links
  • 12- 6 inch sub roles (I used brat buns)
Instructions
  1. In a large microwavable bowl mix together the peppers, onion, vinegar, sugar, vegetable oil, salt and pepper. Microwave for 7 minutes or until vegetables are just tender.
  2. Preheat and prepare grill on med high heat. Place vegetables in the pan and place on the grill, cover, and grill for 20 minutes maintaining a grill temperature of 375 to 400F. Turn of all burners except 1 and move pan of vegetables to the hot side of the grill and stir the vegetable mixture.
  3. Place the Italian sausage on the cool side of the grill, cover, and grill for 8 minutes. Flip sausage, stir vegetables, and cook for another 8 minutes. Places sausage in pan, move pan to cool side of grill and then place the sausages on the hot side. Grill turning as needed until sausages are done. (160F) return sausages to the pan, remove pan from grill, and cover with aluminum foil; let rest 5 minutes before serving.
  4. Serve with bun, sausage, and cover with the vegetables.

  • 8 beef hot dogs
  • 1 bag shredded Colby-jack cheese
  • 1 can chili
  • A bag of Frito chips (coarsely crushed)
  • Sliced green onions (optional)
Instructions
  1. Preheat oven to 350F.
  2. Heat chili in a sauce pan; set aside and keep warm.
  3. Heat and prepare grill over medium high heat.
  4. Lightly toast buns cut side down on grill; set aside.
  5. Grill hot dogs until slightly charred and heated through.
  6. Place hot dogs on buns and spoon a generous amount of chili over each hot dog. Top with the corn chips and then sprinkle the cheese on top.
  7. Place hot dogs on a baking pan and bake at 350F until cheese is melted. Garnish with the green onions.

Ingredients
  • Garlic Sauce
  • 6 tablespoons mayonnaise
  • 2 garlic cloves (pressed)
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon extra virgin olive oil
  • Burgers
  • 1 ½ pounds ground beef
  • salt and pepper (to taste)
  • 4 slices Swiss cheese
  • 8 slices bacon
  • 4 onion hamburger buns
  • 4 large frozen onion rings
  • 2 large onions (thinly sliced)
  • ½ cup water
  • 1 tomato sliced
  • 2 tablespoons vegetable oil
Instructions
  1. In a small bowl mix together the mayonnaise, garlic, lemon juice and 1 teaspoon of olive oil. Salt and pepper to taste; refrigerate until needed.
  2. Deep fry onion rigs in a deep fry at 375F until golden brown; set aside. (I placed these in the oven on warm)
  3. In a non stick skillet over medium high heat using the vegetable oil cook onions covered until onions begin to turn golden brown. Remove cove, add the water, and continue cooking until water is evaporated. Remove onions and set aside.
  4. In the now empty skilled cook bacon until browned and crispy; drain on paper toweling and set aside.
  5. Preheat and prepare grill on medium high heat. Form burger into 4 patties and generously season with salt and pepper. Just before burgers are done place the slices of cheese on the burgers, close lid, and continue grilling until cheese is melted. While burgers are grilling place buns cut side down on the grill to toast them. (these brown quick so watch them closely)
  6. To put it all together coat bottom half of buns with the sauce, place the cooked onions on the bun followed by the burger, bacon and then the tomato. Spread more sauce over the tomato and then top with a deep fried onion. Place top half of the bun on the mixture and enjoy.

  • 1 package taco seasoning mix

Instructions
  1. Lightly spray slow cooker with cooking spray. Place the corn, black beans, and enchilada sauce in the slow cooker and then mix in the taco seasoning; and then add the chicken.

  3. Stir in one cup of the shredded cheese stirring until melted.

Ingredients
  • 1 ¼ pound ground chuck
  • ¾ cup Italian bread crumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 hoagie buns (or 6 inch Italian sub rolls)
  • 1⅓ cups marinara sauce (your favorite brand)
  • 4 slices provolone cheese (sliced thin)
Instructions
  1. Preheat oven to 400F.
  2. Lightly spray a rimmed baking sheet with cooking spray.
  3. Lightly beat the eggs in the bottom of a large bowl. Place the burger on top of the eggs and then add the bread crumbs, salt, pepper, and garlic powder; using your hands mix until thoroughly combined.
  4. Divide meat mixture into 12 - 2 inch meatballs and place on baking sheet. Bake for 15 minutes or until an instant read thermometer reads an internal temperature of 160F, and meatballs are browned. Remove meatballs to a plate and discard any accumulated fat. Line now empty baking sheet with parchment paper, slice buns, and place 3 meatballs on each bun. Pour ⅓ cup marinara sauce over the meatballs on each bun and top with a slice of cheese. Return to the oven and cook until heated through and cheese is melted – serve hot.

Mozzarella Cheese Bites Recipe

Getting ready for a fish fry after a successful fishing trip with my son Robert I was looking for a good side dish, so I went to his blog (blogchef.net), and decided to give this Mozzarella Cheese Bites Recipe a try. This is a simple recipe using Italian bread crumbs, egg, and garlic powder.

The cheese deep fries very quickly, so watch them closely so they don’t overcook. I used my deep fryer to cook this recipe, but you can use a heavy saucepan if you don’t have one available.

Serve with marinara sauce – or spice it up a little bit with chili or shrimp sauce.

This would also be a great appetizer for a game day party.

Mozzarella Cheese Bites Recipe

  • 1 pound mozzarella string cheese (cut into 1 inch pieces)
  • 2 eggs (beaten)
  • ¼ cup water
  • 1 ½ cups Italian bread crumbs

  • Oil for deep frying
Instructions
  1. Preheat deep fryer to 365F (If using).
  2. In a small bowl whisk together the eggs and water. Mix together the bread crumbs and garlic powder in a shallow dish, like a pie dish. Place the flour in another shallow dish.
  3. Roll mozzarella pieces in flour, then in the egg mixture, and then roll in the bread crumbs.
  4. Deep fry in batches at 365F for about 30 seconds or until golden brown; drain on paper toweling.
  5. Serve with your choice of dipping sauce.

 

Spicy Whiskey BBQ Sliders

I was in the mood to fire up the grill until I ran across this Spicy Whiskey BBQ Sliders recipe. I had some whiskey I hand that I had purchased for some earlier recipes and I wanted to use it up. (I realize there are many ways to do this but I hardly ever drink any alcohol) anyway these Spicy Whiskey BBQ Sliders looked really good so I gave them a try. No disappointment here – they were well seasoned and delicious.

I didn’t prepare the recipe as written because I didn’t really need 12 of them, it was just my wife and I for supper so I cut the recipe in half.

Spicy Whiskey BBQ Sliders

Ingredients
  • 2 pounds lean ground beef ( I used ground Chuck)
  • Salt and pepper
  • 4 Tablespoons butter
  • 1 large onion (finely diced)
  • ½ cup whiskey
  • 1 cup barbecue sauce (your favorite variety – I used open pit)
  • ¼ cup jarred jalapeno slices or more to taste
  • 12 slider buns or dinner rolls (split and lightly toasted on cut sides)
Instructions
  1. Divide the meat into 12 equal portions and flatten into patties. (I rolled the pieces like I was making meatballs and then flattened them out) season the patties generously with salt and pepper. In a large skillet over medium high heat cook the patties in the oil until almost done – 3 to 4 minutes on each side. Cook in 2 batches if necessary and set patties aside on a platter.
  2. Drain all the oil from the skillet except for 2 tablespoons, add the onion to the skillet, and cook until onion is soft and translucent. Carefully add the whiskey to the skillet (if using an open flame shut the gas off before adding the whiskey to keep it from flaming up) cook 3 to 4 minutes until whiskey is reduced to about in half. Stir in the BBQ sauce and jalapeno slices scrapping any dripping from the bottom of the pan while mixing; pour in any juice that collected on the bottom of the platter.
  3. Reduce heat to low and work the burgers into the BBQ mixture turning to coat. Allow patties to simmer until burgers are heated through and the sauce is hot and bubbly.
  4. Serve sliders by placing each burger on a bun and spooning the BBQ mixture over the top of the burger.

Almino has turned into a disaster for many parts of the country, but here in Upper Michigan it has created a spectacular winter. This has allowed me to fire up the grill more than I normally would.

This Smokehouse Burgers with Salsa and Horseradish Sauce recipe is simple to put together, has a unique smoke flavor, and cooks quickly so you can have them on the table in less than an hour. I used Applewood chips in this recipe but you can use what you prefer, or whatever is available.

  • 1 pounds 85 percent lean ground beef (I used ground chuck)
  • 3 tablespoons thick chunky salsa (I used Pace Medium - if you want to turn up the heat use hot)
  • 1 teaspoons onion powder
  • 1 teaspoons garlic powder
  • Salt and pepper
  • 4 hamburger buns
  • 2 cups wood chips (soak in water for 15 minutes)
  • Ingredients for sauce
  • ¼ cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoons prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (crushed and finely minced)
  • Salt and pepper
  • Hot sauce to taste
Instructions
  1. Directions for Sauce
  2. in a small bowl mix together the mayo, sour cream, horseradish, garlic, and mustard. Add the hot sauce, salt, and pepper to taste; set aside.
  3. Directions for burgers
  4. Place wood chips on top of a piece of aluminum foil large enough to form a packet, seal, and cut slits in the top of the foil to release the smoke. Place the packet between the grate and primary burner.
  5. Preheat the grill on high heat with cover closed until wood chips are smoking; prepare the grill for cooking.
  6. While grill is heating, in a large bowl using your hands, mix together the burger, salsa, onion powder, and garlic powder until well combined. Divide mixture into 4 equal size burgers and sprinkle with salt and pepper.
  7. Place burgers on grill, close cover, (do not place any burger directly over foil packed) and grill on high heat until burgers are nicely browned and slightly charred on both sides. Turn of all heat except for the burner under the foil packet. Continue cooking the burgers with indirect heat with cover closed until done (150F.)Remove burgers from grill, tent with aluminum foil, and let rest for about 5 minutes. While burgers are resting toast cut side of buns on the grill.
  8. Serve with you choice of condiments with sauce poured over the top.
