Winter is really hanging on here in upper Michigan. We still have 2 feet of snow on the ground and its past the middle of April with a forecast of rain mixed with snow for today! However us “Yooper’s” are unstoppable; time to fire up the grill again.

Ingredients
  • 1 pound ground sirloin
  • Montreal Steak Seasoning
  • 8 slices apple wood smoked bacon (cooked until crispy)
  • 8 frozen onion rings
  • 4 slices of Swiss cheese
  • 4 hamburger buns
  • 1- 8 ounce package of fresh mushrooms (sliced)
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons butter
  • salt and pepper to taste
  • Garlic Aioli-
  • ½ cup mayonnaise
  • 1 tablespoon fresh garlic (finely chopped)
  • 1 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • salt and pepper (to taste)

Instructions
  1. Cook the bacon on the stove top, or in the oven until crispy. Drain on paper towels.
  2. While the bacon is cooking prepare the Garlic Aioli by mixing all the Aioli ingredients together in a small bowl. Cover and set aside in the refrigerator.
  3. In a small skillet melt the butter in the olive oil, and add the sliced mushrooms. Cook on medium heat for about 4 minutes, and then add the Worcestershire sauce, then season with salt and pepper. Sautee on low heat for about 20 minutes; until mushrooms are well flavored, and tender.
  4. While mushrooms are sauteing heat the deep fryer to 375F. Deep fry the onion rings until golden brown. Set aside.
  5. Lightly grease the grill grates and preheat the grill to medium high heat. Divide the ground sirloin into 4 equal portions to form patties. Season the patties on both sides with Montreal steak seasoning. Grill turning once to your desired doneness. (while hamburgers are grilling toast the buns on the grill cut side down) when the burgers are almost done top each one with a slice of Swiss cheese, close the grill and continue cooking until cheese has melted.
  6. Putting the burgers together.
  7. Place each hamburger patty onto the top of the bottom half of each bun. Top with bacon, mushrooms, and about a tablespoon of Garlic Aioli, then the onion rings. Place the top half of the bun onto the burger.

I prepared this recipe as written but you can easily add or subtract any of the ingredients you like. Ingredients

8 hot dogs

8 hot dog buns

1 can of chili with beans (14.5 ounces)

1/ 2 cup onion (chopped)

2 cups shredded cheddar cheese

Mayonnaise

Mustard

Sweet relish

Directions

Preheat oven to 350F.

1. Coat the inside of each hot dog bun with mayonnaise, mustard and sweet relish. Then add the hot dogs to each bun.

2. Top the hot bogs with the chili, cheese and then the onion.

Mexican Meatball Subs Recipe

I have wanted to make this Mexican Meatball Subs Recipe for quite some time now and for some reason kept putting it off. So last night I decided to get it done. This is a very simple recipe. Most of the time involved is baking the meatballs so there is very little prep time. I prepared the recipe as written, and as far as seasoning goes, it was perfect for my taste; which I like kind of mild. It would be real easy to heat these meatballs up a little bit. I used mild green chilies, but if you use the hot verity I ‘m sure it would do the trick, if you like it hot.

Total cooking time on this recipe was about 30 minutes and it makes 4 hoagie size subs. This would be a great game day or party recipe, just double or triple as needed. Enjoy

Ingredients

1 pound ground beef

1/2 cup rolled oats

1 egg

1 teaspoon chili powder

1/2 teaspoon salt

1 can tomato sauce (8 ounces-divided)

1 can chopped green chilies (4 ounce)

4 teaspoons dried onion flakes (divided)

1/8 teaspoon garlic powder

1/2 cup shredded cheddar

4 Hoagie or Brat buns

Directions

Preheat oven to 350F.

1. Combine ground beef, rolled oats, egg, chili powder and salt. (hands work great for this)then mix in 1/4 cup tomato sauce, 2 tablespoons of green chilies and 3 teaspoons of dried onion.

2. Divide and shape into 12 meatballs. Place meatballs on a foil lined baking pan, and bake for 20-30 minutes or until meatballs are no longer pink inside.

3. While the meatballs are cooking prepare the sauce. Using the remaining tomato sauce in a small sauce pan, add the garlic powder, remaining green chilies, and the rest of the dried onion flakes. Cook on low heat to blend the flavors, cooking until hot.

5. To serve place 3 meatballs on a bun, top with the sauce, and shredded cheddar.

Like most people I have a tendency to use the grill a little more in the summer than any other time of year. The end of October here in upper Michigan was so nice I couldn’t resist firing up the grill. This Grilled Chicken Teriyaki Recipe put together with sweet and sour sauce is delicious. This is a great game day recipe or would probably work out really well if you are hosting a Halloween party; just double or triple as needed.

This is a low carb recipe. You have the option of leaving the skin on or removing it-I like the skin and decided to leave it on, but If you have some health concerns you may want to remove it. I think either way this is an excellent recipe. This Grilled Chicken Teriyaki Recipe is a very simple recipe to prepare, just be sure to allow enough prep time for the chicken to marinate. I started it in the morning and grilled that evening which worked out well. If you have a busy day coming up you could get it into the marinade the night before.

Ingredients

8 large chicken drumsticks (2 pounds)

1/3 cup teriyaki sauce

2 tablespoons apple juice (you can also use brandy-I had apple juice on hand so that’s what I used)

1 green onion (minced)

1/2 teaspoon sugar

1/4 teaspoon garlic powder

Prepared sweet and sour sauce (optional)

Directions

1. Remove the skin from the drumsticks if desired, and discard. Place the chicken in a resealable plastic storage bag. (They pull off very easily)

2.in a medium size bowl mix all the ingredients together; then pour the mixture over the chicken.

3. Marinade in the refrigerator for at least 1 hour or overnight.

4. Remove the chicken from the marinade; preserving the marinade and prepare the grill for cooking.

5. Grill over medium high heat with the grill cover closed-brush with the reserved marinade and turn as needed. Cook till no longer pink inside and juices run clear. (Internal temp 165F.)

Hot Dog Sloppy Joes Recipe

When I saw this Hot Dog Sloppy Joes Recipe, I thought, what a cool idea. This recipe is about as basic as it gets. It is very good, but there is plenty of room for improvement. I prepared the recipe as written mainly out of curiosity. If I were to make it again I would add some garlic powder, black pepper to taste, and maybe some chopped green pepper. You could use your imagination and turn this recipe into a very good dish. My wife really enjoyed it; saying that it was good having something simple, and plain, without a lot of seasoning. She liked it a lot better than the store bought version of the Sloppy Joe Mix. I also used all beef hot dogs in this recipe which I think adds something by itself.

1 pound lean ground beef

2 tablespoons vegetable oil

1 can tomato sauce (8 ounces)

1 onion (finely chopped)

1. Slice hot dogs length wise and set aside.

Bacon Wrapped Beer and Brats Recipe

I am beginning to wonder if there is anything consumable that doesn’t go good with bacon. I was looking for another game day recipe; saw this Bacon Wrapped Beer and Brats Recipe, and thought, how good can it get. Brats, beer, bacon and dipped in brown sugar. There was no disappointment here, this one is going on my favorites list for party recipes. To quote my wife; “it’s like eating Cracker Jacks, once you start eating them you can’t quit”. Even though that statement seems to make our age show up a little bit, she is right, these beer brats are really good.

I followed the recipe as written-just double or triple depending on the number of guest you are feeding. Next game day give this Bacon Wrapped Beer and Brats Recipe a try your guests will love it. Enjoy

Ingredients

1- 12 ounce bottle or can of beer

1 one pound package uncooked Pork Bratwurst

8 slices Bacon (cut in half)

2/3 Brown Sugar

1/2 teaspoon Cayenne Pepper-or to taste

1/2 teaspoon Dry Mustard

Mustard for dipping: yellow, honey, horseradish or whatever your favorites are.

Directions

1. Pour beer into a skillet over high heat. Prick the Brats in several place, then add the Brats, and bring to a boil-reduce heat to simmer, and simmer 20 minutes flipping the brats halfway through the cooking cycle. You want the Brats close to done or done. If they are a little pink in the center they will finish in the oven. Remove the Brats from the beer and let them cool.

2. Preheat oven to 425F.

3. In a mixing bowl, stir together brown sugar, cayenne pepper and dry mustard until well combined.

4. Cut each brat into 3 equal pieces. Wrap each brat with one bacon half coat each bacon wrapped brat in sugar mixture. Lay coated brats in a foil-lined pan with the seam of bacon firmly down so it won’t curl. Bake brats on middle rack for 20-25 minutes, carefully turning at the halfway point, until bacon is crispy. Remove to paper towels to drain briefly, and then arrange brats on a serving platter, surrounded by cups of mustard for dipping.

Serve hot with toothpicks for dipping.

Once it’s in the over you have to check in on it, and baste the wings every 30 to forty minutes; Very easy. The wings come out very tender, juicy and tasty. 5 lb frozen chicken wings

10 oz. soy sauce

1/2 cup brown sugar

1/2 cup white sugar

The family has been putting some pressure on me to try some of the slider recipes. I choose this Italian Meatball Sliders recipe because in the past I had made pizza burgers, and I thought because of the pizza sauce in this recipe it would be very good. This is a simple recipe and not very time consuming. Within a half hour, you can have these on a platter in front of your family or guests. This is a small recipe so you might want to adjust to the size group you are feeding. This Italian Meatball Sliders recipe should feed 8, depending on the size meatballs you are making. Ingredients

1 tbsp Zesty Italian dry seasoning mix

1 lb ground beef

1/2 tsp salt

1/2 cup pizza sauce

1 cup mozzarella cheese, finely grated

8 slider size rolls, sliced horizontally

Directions

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine Italian Seasoning Mix with ground beef and salt.

3. Form the meat into 8 uniform size meatballs.

I was pinched for time again and needed something simple and good for a hungry family. This Skillet Nacho Chili Recipe seemed to fir for a cold night. Whenever I use store bought soup in a recipe I kind of feel like I’m cheating, but I went with it anyway. For chili this recipe was very quick; it was sitting on the kitchen table in little over a half an hour. The recipe calls for spicy kidney beans,( I used the mild) if you want to turn up the heat a little bit you could use hot or add some cayenne pepper. This is a great recipe to have in your recipe box if you want a nice hot bowl of chili on a cold night, and you’re in a hurry. Ingredients
  • 1 lb lean (at least 80%) ground beef
  • 1 medium onion, chopped (1/2 cup)
  • 1 can (19 oz) Progresso Vegetable Classics hearty tomato soup
  • 1 can (15 to 16 oz) spicy chili beans in sauce, undrained
  • 1 can (4.5 oz) chopped green chilies, undrained
  • 1 cup frozen corn
  • 1 cup shredded Cheddar cheese (4 oz)
  • 2 cups corn chips

Instructions
  1. Spray 12-inch skillet with cooking spray; heat over medium-high heat. Cook beef and onion in skillet 5 to 7 minutes, stirring frequently, until beef is brown and onion is tender.
  2. drain
  3. Stir soup, chili beans, green chilies and corn into beef mixture. Heat to boiling; reduce heat to medium. Cook 8 to 10 minutes, stirring occasionally, until sauce is slightly thickened and corn is cooked.
  4. Sprinkle each serving with cheese. Serve with corn chips and serve
