  • 1 pound onions (peeled and sliced into ¼ inch thick slices)
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 10 brats
  • 3 cups beer
  • ¼ cup Dijon mustard (plus extra for serving)
  • ½ teaspoon Caraway seeds
  • 1 cup sauerkraut
  • 10 Brat buns or hoagie buns
Instructions
  1. In a medium microwave safe bowl mix together the onion and soy sauce. Microwave for 5 minutes or until onion is softened. (Stir half way through the cooking cycle)
  2. Spread the onion mixture over the bottom of the slow cooker and arrange the brats in a single layer on top. In the same bowl whisk together ¼ cup Dijon mustard, beer, and caraway seeds; pour the mixture over the brats. Cook for 6 – 8 hours on low or 4 hours on high.
  3. Remove the brats to a serving platter and cover with aluminum foil to keep warm, add the sauerkraut to the onion mixture in the slow cook, and cook until warm. Pour the mixture though a colander and discard the juices.
  4. Serve brats on the buns covered with the onions, and sauerkraut, and additional mustard.

Wisconsin Butter Burgers

There are a number of versions of this recipe. After looking at a number of them I decided on this recipe from Cook’s Country. I definitely would not put this recipe in a list for health alternatives, but the butter in this recipe turns this dish into a delicious burger recipe.
I have ordered butter burgers in a number of restaurants, and this recipe tastes pretty close to what I have ordered, if you like butter burgers give this one a try; there really good and simple to prepare at home.

Ingredients
  • 9 tablespoons of butter
  • 1 medium onion (finely chopped)
  • 1 tablespoon water
  • 1 pound lean ground beef (I used ground chuck)
  • 4 burger buns
  • ½ teaspoon vegetable oil
  • 4 slices American cheese
  • Salt and pepper
Instructions
  1. Place buns on a cookie sheet cut side up. Toast them under the oven broiler; remove and set aside. (Watch closely because they brown fast)
  2. Divide burger into 4 equal portions; form into 4 patties about ½ inches thick. Generously season patties with salt and pepper, place on a platter, and refrigerate for up to 30 minutes.
  3. Place 1 tablespoon of butter, water, and onions in a small skillet over medium heat, season with ¼ teaspoon of salt and cook covered until onions are translucent. Remove lid and continue cooking until onion is tender and starts to brown; cover and reduce heat to warm.
  4. Spread 2 tablespoons of butter over the top cut side of each bun.
  5. Place cooking oil into a large skillet over high heat. When skillet starts to smoke, place burgers in skillet, cook burgers without turning for 3 minutes, turn burgers and continue cooking for 1 more minute, top with cheese and continue cooking until cheese is melted.
  6. Divide onion into 4 equal portions – place burger on bun, onion, and top with the buttered top half of the bun.
  7. Serve Hot

These Texas BBQ Chicken and Cheddar Sandwiches are a little on the spicy side; but really good. The combination of the BBQ sauce, bacon, and chipotle chili in adobo sauce along with the toasted onion buns create a delicious combination of flavors.

The other thing I like about this recipe is that it is simple and quick. You can have these Texas BBQ Chicken and Cheddar Sandwiches on the table in less than an hour.

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 4 slices of bacon (cut in half crosswise)
  • 1 cup BBQ sauce (I used Open Pit)
  • 1 chipotle chili in adobo sauce (minced)
  • 1¼ cup water
  • Salt and pepper
  • 1 ½ cups shredded cheddar cheese
  • 4 deli-style onion rolls or buns
Instructions
  1. Preheat oven to 400F with rack in middle upper position.
  2. In a large skillet over medium high heat cook bacon until crispy; place bacon on paper towels to drain, and set aside.
  3. Drain bacon fat from the skillet leaving 1 tablespoon behind to cook the chicken. Pat chicken dry and salt and pepper each breast on both sides. Cook chicken until browned on one side, turn chicken, and then add the water, BBQ sauce, and minced chipotle chili in adobo sauce. Bring mixture to a boil, reduce heat to high simmer, cover and cook until chicken reaches an internal temperature of 165F. (While chicken is cooking toast top half of buns in the oven – set aside.
  4. Remove chicken from the skillet and set aside. Continue cooking the sauce uncovered until lightly thickened.
  5. Once chicken is cooled enough to handle cut chicken crosswise into ½ inch slices. Place the bottom half of the buns on a baking sheet and divide the sliced chicken on top of them. Spoon the sauce over the top of the chicken, followed by the cheese, and then 2 pieces of bacon.
  6. Bake until cheese is melted and buns are browned, top with toasted tops and serve hot.

  • 1 pound lean ground beef (I used ground chuck)
  • 9 whole wheat slider buns or dollar rolls (divided)
  • ¼ cup finely chopped onion
  • 1 egg white
  • 2 cloves garlic (minced)
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
Instructions
  1. Tear 1 burger bun into pieces and process it in a food processor, or blender, to create fresh bread crumbs - Should have about ½ cup.
  2. Place the burger in a large bowl and add the bread crumbs, garlic, egg white, onion, salt, and pepper; mix thoroughly using your hands. Roll the mixture into 8 equal size balls. (Like making meatballs) and flatten each ball to ½ inch to form patties.
  3. Preheat and prepare grill over high heat, reduce heat to medium, oil grill grates, cover and grill burgers for 8 – 10 minutes on one side. Flip burgers and continue cooking to 160F.
  4. Place buns on grill cut side down and grill until lightly toasted.
  5. Serve with your choice of condiments.

If the shocking price of ground beef is getting you down give this Grilled Southwest Pork Burgers Recipe a try. These burgers have a delicious combination of flavors, and are nice and juicy.
My wife says she likes them better than the grilled ground beef burgers. Although I wouldn’t go that far; these burgers are really good. This is a simple recipe that’s quick to put together, and doesn’t require that many ingredients. For the hot peppers in this recipe, I used Hot Banana pepper rings, but you can substitute the type of peppers you prefer, or have on hand.

  • 1 slice hearty white sandwich bread, torn into pieces (you can also process in a blender)
  • 1 shallot (finely chopped)
  • 2 tablespoons low far milk (I used 2%)

  • 4 teaspoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1½ teaspoons chili powder

  • ⅛ teaspoon dried rosemary (crushed)
  • 1½ pounds lean ground pork
  • 4 onion buns (toasted on grill)
Instructions
  1. Using a fork in a large bowl mix together the bread, shallot, milk, hot peppers, soy sauce, Worcestershire, chili powder, thyme, pepper, salt, and rosemary. Mash the bread with the fork while mixing to kind of form a paste. Add the pork to the mixture, and mix using you hands until well combined. Divide meat into 4 equal parts and form 4 patties about ½ inch thick.
  2. Preheat and prepare grill on high heat, reduce heat to medium, and grill patties until nicely browned and slightly charred on one side; flip and continue cooking until done. (150F.) while patties are cooking lightly toast buns cut side down.

Sometimes a lot can be said for keeping it simple. If you’re in a hurry this recipe is for you.
I didn’t have a lot of time to spare, and I had most of the ingredients on hand to put together this Chili Corn Chip Hot Dogs Recipe. I used the grill for the hot dogs, but if you don’t have the time to prepare the grill, the oven broiler should work out fine. This is basically a chili dog recipe with a few added ingredients. I decided to use whole-wheat hot dog buns for this recipe, but that was a matter of preference, replace them with white if you don’t care for the whole-wheat.

If you are looking for a really good grilled chicken recipe for the 4th of July; this is it. It does take a little extra time to put this recipe together, but it is well worth the effort. The chicken turns out tender, sticky, and delicious. The chicken thighs marinate in spice rub for about an hour and then are slow cooked on the grill, with a wood chip packet adding a nice smoked flavor.

Ingredients
  • 2 tablespoons packed brown sugar
  • 1½ teaspoons salt
  • 1 tablespoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon white pepper
  • 3 teaspoons garlic powder
  • 4 -8 bone-in chicken thighs, trimmed
  • 1 disposable aluminum roasting pan (13 by 9-inch)
  • ½ cup plus 2 tablespoons bottled barbecue sauce
  • ½ cup chicken broth
  • 7 garlic cloves (6 sliced thin, 1 minced)
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons Louisiana hot sauce
  • 2 tablespoons apple jelly
  • 1½ cups wood chips
Instructions
  1. In a small bowl mix together the 1 tablespoon sugar, salt, paprika, pepper, white pepper, and garlic powder. Separate 4 teaspoons of the spice mixture and set aside.
  2. Trim the chicken thighs and remove any excess fat. Rub the spice mixture left in the bowl into both sides of the chicken. Place the chicken skin side down into the roasting pan, cover, and let set at room temperature for 1 hour.

  4. While the chicken is marinating in a medium size bowl mix together ½ cup barbecue sauce, broth, sliced garlic, Worcestershire sauce, and 2 tablespoons hot sauce.
  5. To make glaze place the apple jelly into a small bowl. Microwave the jelly for 30 seconds, to heat it; dissolving the jelly into liquid. Stir in the minced garlic, remaining 2 tablespoons barbecue sauce, remaining 1 tablespoon sugar, and remaining 1 tablespoon hot sauce into the jelly and set aside.
  6. Place wood chips in cold water to soak for at least 15 minutes. (I do this as soon as I start the recipe to make sure the wood is soaked good) place soaked chips on a piece of aluminum foil and fold into a packet. Using a knife slit holes in the top of the foil to let out the smoke.
  7. Place wood packet between the grates and primary burner. Preheat the grill on high heat covered for about 15 minutes or until wood packet starts to smoke. Leave the primary burner on high and shut all other burners off.

  9. Pour the barbeque mixture over the chicken and place the roasting pan on the cool side of the grill. Close grill cover and let chicken cook for 30 minutes. Remove the roasting pan from the grill. Using tongs place the chicken on the grill. Using a pastry brush - brush the chicken with the glaze and then sprinkle on some of the set aside spice rub. Grill for 15 minutes, flip chicken, and repeat the glazing process. (I did this twice to get a good glaze on the chicken) continue cooking to an internal temperature of 175.F.

It’s a beautiful day here in the Upper Peninsula of Michigan so I decided to fire up the grill. I have quite a few brat recipes on my blog already, but this one was a little different so I decided to give it a try. it is a little more work than just throwing the brats on the grill and cooking but it is work the extra time and work because they are tender and delicious. The flavor may very a little bit depending on the brand of beer you are using. I happened to have a locally made dark beer on hand called the Widow Maker, so I decided to use that which turned out to be a good choice.

  • 2 large onions (cut into ½ inch slices)
  • 1 ½ tablespoons of vegetable oil
  • Pepper
  • 1 can beer (12 ounces)
  • ⅓ cup Dijon mustard
  • ½ teaspoon sugar
  • ½ teaspoon caraway seeds
  • 5 brats
  • 5 brat buns
Instructions
  1. Preheat and prepare grill for medium high heat
  2. In a disposable roaster pan (I used an 11 ¾ x 9 ¼) whisk together beer, mustard, caraway seeds and ½ teaspoon pepper.
  3. Slice onions and lightly brush them with cooking oil, and then sprinkle them with pepper; place the pan on one side of the grill. Grill onions until slightly charred on both sides and then add them to the beer mixture.

Even though summer is here we were all in the mood for chili; maybe because it hasn’t been all that warm. I had a very busy day coming up, and I also wanted to go fishing, so I decided to get out the slow cooker to save some time. This chili recipe is a little different because it uses stew meat instead of ground beef. The cooking time for this recipe will vary according to the size of the cubed meat used. This is a mildly seasoned recipe so I would recommend tasting it before adding the beef to the slow cooker so you can adjust the seasoning to your taste.
I thought this Beef and Three Bean Chili was really good, and my wife loved it – give this one a try.

Ingredients
  • 1 ½ pounds stew meat (cut into 1 inch cubes)
  • 1 tablespoon chili powder
  • 1 large onion (chopped)
  • 2 tablespoons cooking oil
  • 1 can dark red kidney beans (16 ounces drained and rinsed)
  • 1 can Northern beans (15 ounces drained and rinsed)
  • 1 can black beans (15 ounces drained and rinsed)
  • 2 cans fire roasted tomatoes (14.5 ounces each undrained)
  • 2 jalapeno peppers (seeds removed and chopped)
  • 1 cup beef broth
  • 1 can tomato paste (6 ounces)
  • 1 tablespoon brown sugar
  • 6 cloves garlic (crushed and minced)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon ground cumin
  • Sour cream for garnish (optional)
Instructions
  1. Mix all the ingredients together in the slow cooker except for the meat, onion, and oil.
  2. Place the oil in a large skillet over medium high heat and brown the stew meat on all sides. using a slotted spoon remove the meat to the slow cooker.
  3. Using the same skillet cook the onion until pieces start to brown; scraping any dripping from the bottom of the pan while cooking. Add the onion to the slow cooker mixture.
  4. cook on low for 7 hours or until meat and onion is tender. (You can speed up the process by turning the slow cooker to high anytime during the cooking cycle.)
  5. Serve garnished with sour cream.
  6. Tip – garnish each bowl with shredded cheese
