Spanish Rice Recipe
It’s so easy. This Spanish Rice recipe tastes great and requires very little prep time. I don’t think a packaged mix could be any faster. The bacon just adds great flavor. This is a great side dish. Serve it with your next Spanish or Mexican style meal. Enjoy

Ingredients
  • 4 strips bacon
  • 1 cup long grain white rice
  • 2 (10 ounce) cans Rotel Tomatoes with Green Chilies
  • 1 onion, chopped fine
  • 1 small green pepper, chopped fine
  • 2 cloves garlic, crushed
  • 1 cup chicken broth
  • 1 tablespoon butter
Instructions
  1. Fry bacon in skillet until browned.

  3. Remove from skillet, crumble, and set aside.
  4. Do not remove bacon grease from skillet!
  5. Melt butter in skillet and add onion, pepper and garlic.

  7. Sauté until onions are translucent.
  8. Add the Rotel Tomatoes with Green Chiles and chicken broth and simmer approximately 5-10 minutes.

  10. Add the rice, cover and simmer approximately 20 minutes.
  11. Crumble bacon on top and serve.

Simple Potato Salad Recipe

With the summer coming to an end I had to make potato salad at least one more time. This is a simple recipe with not a lot of prep time. However the longer you let it cool in the fridge the better the flavors will blend. Served with BBQ chicken or pork ribs fresh off the grill -what a great summertime meal.

Ingredients
  • 6 medium potatoes peeled- about 2 pounds .
  • 1 ½ cup mayonnaise or salad dressing
  • 1 Tablespoon Cider Vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 medium onion, chopped
  • 2 stalks of celery, chopped. 1 cup
  • 6 Hard boiled eggs- 4 chopped
Instructions

  2. Boil potatoes covered with water in a 3 quart sauce pan. Till tender. Then let cool.
  3. Mix mayonnaise, vinegar, mustard, salt and pepper in a large bowl. Add the potatoes celery and onion
  4. then mix in the eggs.
  5. Slice the remaining 2 eggs-placing the slices on top of the potato salad. Garnish with paprika if desired.
  6. Enjoy
