These Ricotta Meatballs are moist and delicious. This recipe doesn’t require many ingredients and is very simple to put together. The Ricotta cheese make the meatballs nice and moist so you can get away with using very lean ground beef; I used ground round for this recipe.

Ingredients
  • ½ medium onion (finely chopped)
  • 4 tablespoons olive oil (divided)
  • 3 cloves garlic (crushed and minced)
  • 1 pound of lean ground beef
  • 1 cup whole milk Ricotta cheese
  • ¼ cup chopped Italian parsley
  • 1 egg (beaten)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • Pinch cayenne pepper or to taste
  • ⅓ cup dry breadcrumbs
  • 1 jar marinara sauce (24 ounces)
  • 1 cup water
Instructions
  1. In a large nonstick skillet using 2 tablespoons of the oil cook onion until translucent. Add the garlic and continue cooking until fragrant; place onion mixture in a large bowl. Mix in the ground beef, Ricotta cheese, parsley, egg, salt, pepper, and cayenne pepper until just combined. Add the bread crumbs and mix until thoroughly combined. (Hands work great for this.)
  2. Measure out about 2 tablespoons of the meat mixture for each meatball; form and set aside.
  3. In the same skillet using the remaining olive oil brown meatballs over medium heat on all sides; and then drain any excess fat if needed. Add the sauce and water to the meatballs, bring mixture to a boil, and then reduce the heat to a high simmer. Cook until meatballs are no longer pink inside – stirring occasionally while cooking. (about 30 minutes)
  4. Serve over spaghetti.

It has been years – actually so long I almost forgot Porcupine Meatballs existed. I think the last time that I may have eaten them was around 50 years ago in a school hot lunch program. I don’t remember what they tasted like back then, but in an attempt to try something a little different I put this Porcupine Meatballs Recipe on the menu for supper. This is a simple recipe, but it does take a little time to prepare. It is kind of spicy, with the pepper, red pepper, and ginger giving the recipe a little bit of heat. Ingredients
  • 12 ounces lean ground beef
  • 12 ounces ground pork
  • 2 slices white bread (formed into fresh bread crumbs using a blender)
  • 4 cups water
  • ¾ cups long grain white rice
  • 1 medium onion (finely chopped)
  • 4 cloves of garlic (minced)
  • 2 cups chicken broth
  • 1 can tomato sauce (15 ounces)
  • ½ cup milk
  • 2 tablespoons of olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh thyme (chopped)
  • 1 teaspoon paprika
  • ¼ teaspoon red pepper flakes
  • 1 bay leaf
  • Salt and Pepper to taste
  • ½ teaspoon white pepper
  • ½ teaspoon nutmeg
  • ⅛ teaspoon ginger
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 350F.
  2. in a medium size sauce pan using the 4 cups of water and 1 teaspoon of salt bring the water to a boil over medium high heat; add the rice, return to a boil, and cook for 8 minutes. Strain and rinse the rice and set it aside.

  4. Using the same sauce pan and the 2 tablespoons of olive oil cook the onion until it starts to brown. Add the garlic, red pepper, thyme, and paprika. Continue cooking until fragrant and then add the chicken broth, tomato sauce, sugar, cider vinegar and the bay leaf. Salt and pepper to taste and simmer for about 10 minutes to combine the flavors.

  6. In a large bowl using your hands mix together the ground beef, ground pork, fresh bread crumbs, milk, ginger, white pepper, ½ teaspoon salt, and precooked rice.

  8. Form the mixture into 13-16 meatballs and place them in a 13 x 9 casserole dish. Pour the tomato sauce mixture over the meatballs, cover tightly with aluminum foil, and bake for about 1 hour or until rice is tender.

Meatball Stroganoff Recipe

Meatballs have always been a favorite dish in this house so I decided to put this Meatball Stroganoff Recipe on the menu for supper. I changed the recipe up a little bit by using a mixture of pork and venison instead of hamburger. Mainly because I had some venison in the freezer I wanted to use up.

The venison worked out very well in the recipe, but if you don’t have venison on hand I am sure a good quality of lean ground beef would be just as good. In less than an hour you can have this Meatball Stroganoff dish on the table for dinner. Give this one a try, it’s really good.

  • 1½ pounds lean ground beef (I used a 50% venison pork mix)
  • 2 teaspoons salt (divided)
  • ¼ teaspoon pepper
  • ½ cup seasoned dry bread crumbs
  • 1 egg
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 1 package of mushrooms (8 ounces sliced)
  • 1 cup beef broth
  • 1½ tablespoons flour
  • ½ teaspoon caraway seeds
  • ⅛ teaspoon nutmeg
  • 2 cups sour cream
  • 12 ounces egg noodles
  • Parsley for garnish
Instructions
  1. Chop onions and set aside. In a large bowl combine the ground meat, egg and bread crumbs. Mix thoroughly. Form mixture into a bout 20 meatballs.

  3. In a large skillet using the butter and oil, saute the onion and mushrooms for 5 minutes. Add the meatballs and brown on all sides. Stir in the beef broth, cover, and simmer for 30 minutes, or until meatballs are done.

  5. While the meatballs are cooking; in a medium size bowl combine the sour cream, flour, nutmeg and caraway seed.

  7. Serve over egg noodles, or your choice of pasta, and garnish with fresh parsley.

Swedish Dilled Meatballs Recipe

I have wanting to prepare this recipe for some time-it is snowing, blowing, and cold making it a good day to stay in the kitchen. I wasn’t sure how the flavor of the dill would blend with the rest of the ingredients, but it turned out to be really good. My wife stated she likes them better than the Italian meatballs we usually prepare. The dill is definitely the dominating spice in this recipe, so if you like the flavor of dill, give this recipe a try. This is a simple recipe but it does take some time to prepare because you have to allow a couple of hours for the flavors to blend. This recipe creates a delicious sauce that can be served over mashed potatoes, or egg noodles.

Ingredients
  • 1 pound ground beef
  • ½ pound ground pork
  • ¾ cup whole wheat fresh breadcrumbs
  • 1 egg
  • 1 medium onion (finely chopped)

  • 2 teaspoons dried dill weed
  • 2½ teaspoons salt (divided)
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon pepper (divided)
  • ¼ cup all-purpose flour
  • 1 teaspoon paprika
  • 2 cups water
  • ¾ cups sour cream
Instructions
  1. In a large bowl combine the ground beef, pork, breadcrumbs, egg, onion, milk, dill, 2 teaspoons of salt, ⅛ teaspoon of pepper, and the Worcestershire sauce. (Hands work best for this) Cover and refrigerate for 2 hours.
  2. Pre-heat the oven to 350F.
  3. Using about a heaping tablespoon of meat at a time for the meatballs, roll and place them on a baking dish sprayed with cooking spray. (Meatballs can be formed to any size you prefer.)
  4. Bake for 20-30 minutes or until no longer pink inside.
  5. In a large skillet using 1 tablespoon of fat from the meatballs, whisk in the flour, then add the paprika, ½ teaspoon salt, and ⅛ teaspoon pepper. Stir in the water and bring the mixture to a boil. Boil and stir constantly for 1 minute.
  6. Add the meatballs to the sauce and cook until meatballs are heated through, then add the sour cream stirring until smooth.
  7. Serve hot over mashed potatoes or noodles.

Mexican Meatball Subs Recipe

I have wanted to make this Mexican Meatball Subs Recipe for quite some time now and for some reason kept putting it off. So last night I decided to get it done. This is a very simple recipe. Most of the time involved is baking the meatballs so there is very little prep time. I prepared the recipe as written, and as far as seasoning goes, it was perfect for my taste; which I like kind of mild. It would be real easy to heat these meatballs up a little bit. I used mild green chilies, but if you use the hot verity I ‘m sure it would do the trick, if you like it hot.

Total cooking time on this recipe was about 30 minutes and it makes 4 hoagie size subs. This would be a great game day or party recipe, just double or triple as needed. Enjoy

Ingredients

1 pound ground beef

1/2 cup rolled oats

1 egg

1 teaspoon chili powder

1/2 teaspoon salt

1 can tomato sauce (8 ounces-divided)

1 can chopped green chilies (4 ounce)

4 teaspoons dried onion flakes (divided)

1/8 teaspoon garlic powder

1/2 cup shredded cheddar

4 Hoagie or Brat buns

Directions

Preheat oven to 350F.

1. Combine ground beef, rolled oats, egg, chili powder and salt. (hands work great for this)then mix in 1/4 cup tomato sauce, 2 tablespoons of green chilies and 3 teaspoons of dried onion.

2. Divide and shape into 12 meatballs. Place meatballs on a foil lined baking pan, and bake for 20-30 minutes or until meatballs are no longer pink inside.

3. While the meatballs are cooking prepare the sauce. Using the remaining tomato sauce in a small sauce pan, add the garlic powder, remaining green chilies, and the rest of the dried onion flakes. Cook on low heat to blend the flavors, cooking until hot.

5. To serve place 3 meatballs on a bun, top with the sauce, and shredded cheddar.

Baked Italian Style Meatballs Recipe

Italian Spaghetti still carries a lot of weight in this house as a favorite supper dish.  Call it comfort food or whatever you like; the fact is we seldom go a week without it. This week I went in search of a meatball recipe that was a little different; just wanting to change things up a little bit. When I saw this Baked Italian Style Meatballs Recipe I couldn’t believe how simple it was, but it made me a little nervous because the ingredients in the recipe called for chicken flavored stuffing mix. Well I had a box on hand and thought, why not give it a try; the end result was a moist and delicious meatball with an excellent blend of flavors that were a good match for the spaghetti sauce. The family really enjoyed this recipe and I will add it to my favorites list.

I prepared the recipe as is, but have not included any prep pictures because I did not think they were necessary-this Baked Italian Style Meatballs Recipe is a very simple recipe-just mix it altogether, form the meatballs, and bake. Enjoy

 

Ingredients

1. Package (6 oz.) Chicken flavored stuffing mix (stove top or store brand)

2 pounds ground beef

1-1/4 cups water

2 eggs (beaten)

2 cloves garlic (minced)

1/3 cup grated Parmesan Cheese

Directions

1. Preheat oven to 400°F.

2. Combine all ingredients and mix till well blended.

3. Shape into 24 (number really depends on how big you like them) meatballs, using about 1/4 cup for each. Place in single layer in foil-lined 15x10x1-inch pans.

4. Bake 20 min. or until done (160ºF).

5. Add to your favorite spaghetti sauce.

(I let this simmer in the sauce for about 15 minutes to blend some of the flavors)

  • Meatballs
  • 1 lb ground beef
  • ½ cup Italian seasoned breadcrumbs
  • 2 eggs, lightly beaten
  • ⅓ cup onions, finely chopped
  • ½ cup parmesan cheese, grated
  • 2 garlic cloves, minced
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • Sauce
  • 12 ounces light-colored beer, such as lager
  • 1½ cups tomato sauce
  • 1 cup ketchup
  • 2 tablespoons tomato paste
  • ½ cup brown sugar, packed
Instructions
  1. Preheat oven to 400*.
  2. Line broiler pan with foil and spray rack with nonstick cooking spray.
  3. Combine all meatball ingredients together in a large bowl and shape into 1 inch meatballs.
  4. Place meatballs on broiling rack and bake for 10 minutes or until browned.
  5. Combine all sauce ingredients together in a large Dutch oven and bring to a boil.
  6. Add meatballs and reduce heat.
  7. Cover and simmer 20-30 minutes, stirring occasionally.
  8. Serve over hot Spaghetti
