Ingredients
  • 1 tablespoon vegetable oil
  • 1 small onion (finely chopped)
  • ½ green or red bell pepper (cut into ½ inch pieces)
  • 1 ½ tablespoons chili powder
  • 3 garlic cloves (crushed and minced)
  • 1 teaspoon ground cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon oregano
  • salt
  • ⅛ teaspoon cayenne pepper
  • 12 ounces lean ground beef
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 can kidney beans (drained and rinsed)
Instructions
  1. in a large sauce pan using the oil over medium heat cook the onion, green pepper, and garlic seasoned with the cumin, coriander, red pepper flakes, cayenne pepper, and ¼ teaspoon salt; cook until vegetables start to soften. (3 – 5 minutes) break the ground beef up inco the mixture and continue cooing until ground beef is no longer pink inside.
  2. Stir in the diced tomatoes, tomato sauce and kidney beans, bring mixture to a simmer. Cover and cook for 45 minutes stirring occasionally. Remove lid and continue cooking until chili starts to thicken. (if chili is already thickened skip the last step – if chili starts to stick add ¼ cup water.
  3. Serve hot and enjoy.

  • 8 ounces spaghetti
  • 1 pound lean ground beef
  • 1 medium onion (finely chopped)
  • salt and pepper
  • ⅛ teaspoon black pepper
  • 1 can spicy vegetable chili (18.8 ounces – you can also use any good brand of vegetarian chili)
  • 1 can Italian stewed tomatoes (14.5 ounces)
  • 1 ½ cups shredded sharp cheddar cheese (divided)
  • ½ cup sour cream
  • 1 ½ teaspoons chili powder
  • ¼ teaspoon garlic powder
Instructions

  2. Preheat oven to 350F.
  3. Cook pasta according to package directions for al dente; drain and rinse. Place cooked spaghetti in a 13 x 9 casserole dish lightly sprayed with cooking spray.
  4. While pasta is cooking cook the burger and onion in a large skilled until burger is no longer pink inside; drain any excess fat. Stir in the chili powder, tomatoes, 1 cup cheese, sour cream, garlic powder, and salt and pepper to taste; cook until heated through.
  5. Mix the chili mixture into the spaghetti and sprinkle the rest of the cheese over the top. Cover with aluminum foil and bake for 30 minutes or until mixture is hot and bubbly and cheese is melted.
  6. Serve hot.

  • ⅔ cup flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder

  • 1 egg
  • 1 can diced green chiles (4.5 ounce)
  • 1 can of creamed corn
  • 1 pound lean ground beef
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 ¼ cup enchilada sauce (red)
  • 2 cups shredded Monterey jack cheese
Instructions
  1. Preheat oven to 400F.
  2. In a large bowl mix together the cornmeal, flour, sugar, baking powder and ¼ teaspoon salt until well combined. Stir in the oil a little at a time until crumbles are formed.

  9. Remove cornbread from the oven when its finished baking, reduce oven temperature to 350F, and using a fork poke holes in the top throughout the cornbread. Spread the enchilada sauce over the top, and top with the ground beef followed by the shredded cheese.

This is a basic recipe for taco pie that requires just a few ingredients. I prepared this recipe as written with the intent of seeing how good it would turn out in it simplest form. With school starting in many parts

of the country in less than a month I thought this would be a great after school supper dish.

I thought the taco pie was really good but there is a lot of room for additional ingredients like, jalapeno peppers, green peppers, chopped green chilies, olives and may even re-fried beans.

Ingredients
  • 1 (8 ounce) package refrigerated crescent rolls
  • 1 pound ground beef
  • 1 medium onion (chopped)
  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) container sour cream
  • 8 ounces shredded Mexican-style cheese blend
  • 1 (12-13 ounce) bag tortilla chips (crushed)
Instructions
  1. Preheat oven according to directions on package for the crescent rolls. 375F
  2. Spray a 8 x 8 baking dish with cooking spray and roll the crescent roll dough out on the bottom to form a bottom crust and bake according to package. Crust should be golden brown.
  3. While the crust is baking in a large skillet over medium high heat chop up and cook the burger and onion, until onion is soft, and burger is no longer pink inside; drain if needed. Mix in the taco seasoning until well combined.
  4. Spread the meat mixture over the bottom of the crescent crust, and then layer the sour cream over the top followed by the Mexican-style cheese blend. Top with the crushed tortilla chips.
  5. Bake at 375F. Until heated through and cheese is melted – Serve hot.

I needed some time to get some spring clean-up done, so to save some time, I decided on this Slow Cooker Chili with Chocolate Recipe. This is a simple recipe that doesn’t require a lot of prep time, and the slow cooking blends the flavors really well. I think this is the second chili dish I have had that has used chocolate as one of the ingredients, which doesn’t sound good in chili to me, but it’s very good. Give it a try; and enjoy.

  • 1 pound lean ground beef (I used ground chuck)
  • 1 medium onion (chopped)
  • 3 cloves garlic (divided)
  • 1 tablespoon semisweet chocolate (shaved)
  • 1 can diced tomatoes undrained (28 ounces)
  • 1 can chili beans (15 ounces)
  • 1 ½ tablespoons chili powder
  • 1 ½ teaspoons cumin
  • ½ teaspoon hot pepper sauce or to taste

Instructions
  1. In a large skillet over medium heat cook onion, 1 clove of garlic, and burger until burger is no longer pink inside.
  2. While burger is cooking place the tomatoes, the rest of the garlic, chocolate, hot sauce, and chili beans into the slow cooker and add in the seasonings; salt and pepper to taste.
  3. Drain the burger if needed and add the meat mixture into the slow cooker. Cook on low for 5-6 hours.

I usually shy away from preparing stuffed shells because they can be a lot of work. This Simple Enchilada Stuffed Shells Recipe takes very little prep and uses just a few ingredients. This is one of those recipes that I didn’t think looked quite that good, but I decide to give it a try anyway; I was glad I did. I followed the recipe as written, the shells could of used a little more Enchilada sauce over the top because they were a little on the dry side – but overall I thought they were pretty good, and my wife really liked them.

Simple Turkey Enchilada Stuffed Shells Recipe

Ingredients
  • 15 jumbo pasta shells
  • Olive oil
  • 1 pound lean ground turkey
  • 1 can Enchilada sauce (10 ounces mild or hot according to your taste)
  • ½ teaspoon dried minced onion
  • ¼ teaspoon dried basil
  • ¼ teaspoon oregano
  • ¼ teaspoon ground cumin
  • ½ cup refried beans
  • 1 cup shredded cheddar (you can use low fat if desired)
Instructions
  1. Cook pasta according to package directions; drain and lightly drizzle with olive oil; cover and set aside.
  2. While pasta is cooking, cook turkey in a large nonstick skillet until turkey is no longer pink inside, breaking turkey up as it cooks. Drain if needed. Mix in the enchilada sauce and seasoning; set aside. (I reserved some of the Enchilada sauce to pour over the top of the shells just before baking.)
  3. Preheat oven to 350F.
  4. Lightly spray an 11 x 7 casserole dish with cooking spray. In a small sauce pan heat the refried beans until just warmed to make them a little easier to work with. Place one heaping teaspoon of refried beans into each shell and then fill the shell with the turkey mixture; place shells in casserole dish.
  5. Bake uncovered for 25 minutes, sprinkle the cheese over the top and continue baking until cheese is melted.
  6. Serve hot

  • 4 scallions (sliced white and green parts separated)
  • 2 large cloves garlic (crushed and minced)

  • 2 cups no salt chicken broth
  • 1 14 -ounce can pinto beans (drained and rinsed)
  • 3 tablespoons ketchup
  • Hot sauce
  • 8 ounces spaghetti
  • Shredded cheddar cheese and sour cream, for topping (optional)
Instructions
  1. Cook spaghetti according to package directions in salted water; drain
  2. While spaghetti is cooking, using the oil over medium high heat, in a large skillet cook the white part of the onions, and garlic until softened. Mix the tomato paste and chili powder into the onion mixture, stirring constantly while cooking until the mixture turns a deep red. Add the turkey to the mixture breaking it apart as it cooks; cook until turkey is no longer pink inside. Mix in the chicken broth, beans, and ketchup, bring mixture to a boil, reduce heat to simmer and continue cooking until mixture starts to thicken, but is still a little soupy. Mix in the green part of the scallions, and add hot sauce to taste.
  3. Serve over spaghetti topped with Shredded cheddar cheese and sour cream.

California Barbecued Beans Recipe

Out of habit we generally have fish on Friday, and along with the fish I like to serve a baked beans side dish. I decided to change this a little bit and prepare this California Barbecued Beans Recipe.

This recipe does take a considerable amount of time to prepare, but if you have the time, it is well worth the effort. The dominant spice in this recipe is cilantro, if you don’t care for this; just omit it. The BBQ beans are really good even without it.

Ingredients

1 pound pinked kidney beans (soaked in 6 cups water overnight)

4 slices bacon (cut crosswise into 1/2 inch pieces)

½ pound deli ham (finely chopped)

1 medium onion (finely chopped)

4 garlic cloves (minced)

6 cups water

8 ounces tomato puree

½ cup taco sauce

5 tablespoons brown sugar (packed)

1 tablespoon dry mustard

¼ cup fresh cilantro (chopped)

2 tablespoons cider vinegar

Directions

  1. In a large kettle or Dutch oven over medium heat cook bacon and ham until fat is rendered from the bacon and mixture is slightly browned. Add the onion and cook until tender. Add the garlic to the meat mixture and continue cooking until fragrant. Mix in the water and beans, bring to a boil, cover and reduce heat to a medium simmer and cook for 1 hour or until beans are just soft.
  2. Stir in the tomato puree, taco sauce, sugar, dry mustard, and 2 teaspoons of salt. Continue cooking uncovered until mixture thickens and beans are tender; about 1 hour. (If mixture thickens before beans are done add extra water.)
  3. Mix in the cilantro and vinegar – serve hot.

Serves 4-6 or more as a side dish.

These Garlic Beef Enchiladas are a little on the spicy side; but really good. It takes a little time to put them together, but it is worth the effort. I prepared this dish as written and thought it was a little on the salty side – you may want to salt the sauce to taste. Even though there are a lot of spices in this recipe it is not hot. So if you like a little bit of heat you may want to add a little cayenne pepper to the sauce ingredients.

  • 1 pound lean ground beef
  • 1 medium onion (finely chopped)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon rubbed sage
  • 1 can stewed tomatoes (14.5 ounces)
  • Ingredients for sauce
  • 4 – 6 garlic cloves (crushed and minced)
  • ⅓ cup unsalted butter
  • ½ cup all-purpose flour
  • 1 can beef broth (14.5 ounces)
  • 1 can tomato sauce (15 ounces)
  • 1 teaspoon ground cumin
  • 1 teaspoon sage
  • ½ teaspoon salt
  • 10 flour tortillas (7 inch)
  • 2 cups shredded Colby Monterey Jack Cheese
Instructions
  1. Preheat oven to 350F.
  2. In a large skillet over medium high heat cook burger until no longer pink inside and onion is tender; drain excess fat if needed. Add the flour and seasoning and mix until well combined. Add the tomatoes, bring mixture to a boil, reduce heat to simmer, and cook covered for 15 minutes. Set aside.
  3. Directions for Sauce
  4. in a small bowl whisk together the flour and spices.
  5. In a medium size sauce pan over medium heat cook the garlic in the butter until tender. Stir in the spice mixture until well combined. Gradually add the beef broth stirring constantly to combine. Bring the mixture to a boil and continue cooking until thickened. Add the tomato sauce and continue cooking until heated through.
  6. Putting it all together
  7. Pour 1½ cups sauce into a 13 x 9 baking dish. Spread ¼ cup meat mixture down the center of each tortilla topped with 2 tablespoons of cheese. Roll tortillas up tightly and place seam side down into baking dish.
  8. Pour the rest of the sauce over the tortillas, cover with aluminum foil and bake for 30 minutes or until hot and bubbly. Uncover, top with remaining cheese, and continue baking until cheese is melted.
