This is great! May marks National Burger Month. In a search to try something a little different, and seeing as May marks National Burger Month, I decided on this Grilled Fajita Burgers Recipe. This is a simple recipe to put together with an excellent blend of flavors. There is a lot of room to move on the condiments but what I put together is really good. Feel free to make it your own by adding whatever you like. The weather was so nice here I decided to use the grill. If you don’t have that option, use your broiler oven.

Ingredients
  • 1 tablespoon olive oil
  • 1 medium sweet onion (thinly sliced)
  • ½ medium yellow or green bell pepper (cut into thin strips)
  • ½ red bell pepper (cut into thin strips)
  • 1½ pounds lean ground beef
  • 1 Fajitas Seasoning Mix
  • 6 slices of bacon (crispy)
  • ¼ cup cold water
  • 6 slices American cheese
  • 6 hamburger buns

Instructions
  1. Slice the pepper and onion. In a small skillet using the olive oil cook the peppers and onion until tender.
  2. Cut the bacon in half and cook until crispy-drain on paper towels.

  4. Preheat the grill to medium high heat and lightly oil the grill grates.

  6. In a large bowl mix together the water, ground beef, and Fajitas Seasoning Mix. Divide and form into 6 patties.
  7. Grill the burgers long enough to get grill marks on one side, than flip the burgers. Cook to desired doneness.
  8. While burgers are cooking toast the buns on the grill cut side down. Just before the burgers are done top with the American cheese slices; close the grill until slices are melted.
  9. To serve start with a burger on the bun followed by a slice of tomato, bacon, then top with the pepper and onion.

Baked Steak Burritos Recipe

It had been awhile since we have had Mexican food so I decided to put this Baked Steak Burritos Recipe on the menu. This is a simple recipe to but together and doesn’t require a lot of ingredients. The original recipe called for 12- 6 inch soft Tacos or fajitas, but I had some 8 inch on hand, so I decided to use them. This is a basic recipe that does have a little heat; but if you want to turn up the heat a little more just change the mild enchilada sauce to hot, or add some cayenne pepper to taste. When you are spreading the re-fried beans kind of eye them up a little bit so you don’t run out before the burritos are completed.

This recipe has a good blend of flavors and there is room to add some additional ingredients if you wish to do so. I prepared the recipe as written and it was really good.

Ingredients
  • 1½ pound sirloin tip steak. (Thin sliced into strips)
  • 1 package taco seasoning mix
  • 1 can re-fried beans (16 ounce)
  • 6 soft taco or fajitas (8 inch)
  • ½ cup butter or margarine
  • 2 cups shredded cheddar cheese
  • 3 medium green onions (sliced)
  • 1 can mild enchilada sauce (10 ounce)
  • 1 cup Mexican cheese blend

Instructions
  1. Pre-Heat oven to 400F.
  2. Slice the sirloin steak into bite size thin strips. Melt the butter in a large skillet and cook the steak to your desired doneness. Just be for the steak is done stir in the taco seasoning mix. Drain if needed.

  4. Using a microwavable dish or sauce pan- using the microwave or stove top heat the refried beans until warmed. (I also slightly warmed the soft tacos in the microwave to make them easier to work with.)
  5. To make the burritos, using a spoon, spread the refried beans to about 1/ 4 inch from the edge of the wraps. Top with the beef strips, green onion and cheddar cheese. Roll up and fold in the sides.

Baked Tacos Recipe

The family seemed to be in the mood for Mexican food again so I decided to put this Baked Tacos Recipe on the menu for dinner. This is not you typical taco recipe because the tacos are topped with cheese and placed in the oven. This does add to the time involved making the tacos a little bit, but it is something a little different and they are really good.

I cut this recipe in half-originally it was twice the size of the recipe in this recipe post. Just increase the amount of ingredients for the number you are serving. The next time you plan on having tacos for dinner give this on a try. Enjoy

Ingredients
  • 1 pound ground beef
  • 2 teaspoons dried minced onion
  • 1½ teaspoons chili powder
  • ½ teaspoon cornstarch
  • ½ teaspoon garlic powder

  • ⅛ teaspoon dried oregano
  • Pinch of cayenne pepper or to taste
  • ½ cup tomato sauce
  • 1 cup refried beans
  • 1 cup shredded Colby-jack cheese
  • 8-10 hard taco shells
  • Optional Condiments
  • Lettuce (shredded)
  • Tomato (diced)
  • Salsa
  • Guacamole
  • Onion

Instructions
  1. Preheat the oven to 400 degrees. In a small bowl combine dried minced onion, chili powder, cornstarch, garlic powder, cumin, oregano, and cayenne pepper. Mix well and set aside.
  2. In a large skillet brown ground beef over medium-high heat. Drain if needed. Add refried beans, tomato sauce, and prepared taco seasoning. Mix well.
  3. Spoon the taco meat mixture into the taco shells and place into a 9 x 13 inch baking dish, standing up. Sprinkle cheese over the top of the taco meat in each shell. Place into the oven and bake at 400 degrees for 10-12 minutes or until the cheese has melted and the tacos are heated through. Remove from the oven and top with any optional condiments for serving.

It has been quite a while since I have put Mexican food on the dinner menu. When I saw this Slow Cooker Fajitas Recipe it looked like it would be pretty good. Everything is cooked in the slow cooker so I knew whatever steak cut I used would turn out very tender. I don’t care for dishes that are two heavily spiced. This recipe was about right for me; a little nippy, but not too hot. If you liked your Mexican dishes on the hot side just increase the amount of cayenne pepper or use hot salsa as one of the condiments.

Ingredients
  • 1 each medium green, sweet red and yellow peppers (cut into ½-inch strips)
  • 1 sweet onion (cut into ½-inch strips)
  • 2 pounds beef steak (cut into thin strips)
  • ¾ cup water
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • ½ teaspoon cayenne pepper
  • 8 flour tortillas warmed (8 inches)
  • ½ cup salsa
  • ½ cup shredded reduced-fat cheddar cheese
  • 8 teaspoons minced fresh cilantro (reserved)

Instructions
  1. Prep the sweet peppers, sweet onion, and sirloin steak and place inside the slow cooker.
  2. In a medium bowl mix together the water, vinegar, lime juice and seasonings then pour the mixture over the meat and vegetables.
  3. Cook on low for 7-8 hours or until vegetables and meat are tender.
  4. Serve by spooning ¾ cup of the meat mixture down the center of each tortilla. Then top with salsa, shredded cheese and 1 teaspoon of Cilantro.

Mexican Meatball Subs Recipe

I have wanted to make this Mexican Meatball Subs Recipe for quite some time now and for some reason kept putting it off. So last night I decided to get it done. This is a very simple recipe. Most of the time involved is baking the meatballs so there is very little prep time. I prepared the recipe as written, and as far as seasoning goes, it was perfect for my taste; which I like kind of mild. It would be real easy to heat these meatballs up a little bit. I used mild green chilies, but if you use the hot verity I ‘m sure it would do the trick, if you like it hot.

Total cooking time on this recipe was about 30 minutes and it makes 4 hoagie size subs. This would be a great game day or party recipe, just double or triple as needed. Enjoy

Ingredients

1 pound ground beef

1/2 cup rolled oats

1 egg

1 teaspoon chili powder

1/2 teaspoon salt

1 can tomato sauce (8 ounces-divided)

1 can chopped green chilies (4 ounce)

4 teaspoons dried onion flakes (divided)

1/8 teaspoon garlic powder

1/2 cup shredded cheddar

4 Hoagie or Brat buns

Directions

Preheat oven to 350F.

1. Combine ground beef, rolled oats, egg, chili powder and salt. (hands work great for this)then mix in 1/4 cup tomato sauce, 2 tablespoons of green chilies and 3 teaspoons of dried onion.

2. Divide and shape into 12 meatballs. Place meatballs on a foil lined baking pan, and bake for 20-30 minutes or until meatballs are no longer pink inside.

3. While the meatballs are cooking prepare the sauce. Using the remaining tomato sauce in a small sauce pan, add the garlic powder, remaining green chilies, and the rest of the dried onion flakes. Cook on low heat to blend the flavors, cooking until hot.

5. To serve place 3 meatballs on a bun, top with the sauce, and shredded cheddar.

I have incorporated tater tots into a number of recipes and it seems like they are always pretty good. We had decided on Tacos for supper and then I ran across this Taco Tater Tots Casserole Recipe and decided to give it a try. I followed the recipe as written and the results were really good. This is a mildly seasoned recipe so I would recommend you season it to taste. This is a good size recipe and should feed 6-8 people unless you have some heavy eaters. This is not only a good supper recipe, but would also be great for parties or pot luck suppers. Ingredients

 

1 pound ground beef

1 small onion (diced)

1 clove garlic (minced)

1 small can black olives (sliced)

1 packet taco seasoning mix (1 ounce)

1 (16 ounce) bag frozen corn

1 (4 ounce) can green chilies (diced and drained)

1 (12 ounce) can black beans, rinsed and drained

1 (16 ounce) bag shredded Mexican cheese blend

1 (16 ounce) package frozen tater tots

1 (10.5 fluid ounce) can enchilada sauce

 

Directions

 

Preheat an oven to 375 degrees F (190 degrees C).

Spray a 9×13-inch baking dish with cooking spray.

1. Cook the ground beef, garlic and onion in a skillet over medium heat until completely browned.

2. Add the taco seasoning mix, green chilies, frozen corn, and black beans to the ground beef; cook until heated though.

3. In a large bowl Mix together the ground beef mixture with about 3/4 of the Mexican cheese blend and all the tater tots; stir to combine.

4.  Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tots.

5. Bake in the preheated oven for 40 minutes. Sprinkle the remaining Mexican cheese over the casserole and return to oven until the cheese is melted and bubbly.

Top with the black olives for garnish and serve hot.

Whenever I have to start rolling and folding things it takes me out of my comfort zone. Getting these old fingers to work is sometimes a challenge. Due to some inside pressure from the family I decided to make this Chicken Wet Burritos Recipe. This is a simple recipe, but there is quite a bit of prep time involved, especially if you don’t have left over chicken on hand. I think something like canned chicken would fit very well into the recipe instead of fresh cooked if you want to save some time.

Folding the burritos is pretty easy (I cheated-my son folded them for me) just be sure to warm them first, otherwise they have a tendency to crack.

For Filling

1 cup onions (chopped)

1 tablespoon oil

1 garlic clove (minced)

2 cups cooked chicken (shredded or diced)

1 (8 ounce) can tomato sauce

1 (4 ounce) can chopped green chilies (drained)

1 cup chicken broth

Additional Ingredients-

1 (16 ounce) can refried beans

4 large flour tortillas

1 (10 ounce) can enchilada sauce

1 (18 ounce) jar home-style beef gravy

2 cups shredded Colby-jack cheese

Preheat oven to 375F

2. In a large skillet with the oil cook the onion and garlic till tender. Then add the chicken, tomato sauce, green chilies, and chicken broth. Cook until heated through.

3. In a medium sauce pan warm the refried bean.

4. In another medium sauce pan, combine enchilada sauce and home-style beef gravy- heat until almost boiling.

5. Assemble the burritos- on each tortilla layer 1/4 cup of refried beans and 1/4 of the chicken mixture. Fold the sides of the burrito in, then roll the other side’s until you have a package formed.  Place seam side down in a 13×9 inch baking dish.

6. Pour 3/4 of the sauce mixture over the burritos in the baking dish and top with shredded Colby-jack cheese. Place in the oven and bake at 375 degrees for 15 minutes or until the cheese has melted and the burritos are heated through.

7. Pour left over sauce over the burritos and top with sour cream, lettuce, sliced olives, and diced tomatoes.

Mexican Lasagna Recipe

This is not your typical type of lasagna, but this Mexican Lasagna Recipe is very good. This recipe caught my attention because it calls for oven ready lasagna noodles which I have never used before. I thought this was a good chance to give them a try. They are a little more expensive but if you are tight for time, they can be a real time saver, eliminating the time it takes to precook the noodles. I followed the recipe as is, but there are a number of ways you could fancy it up, such as adding mushrooms or jalapeno peppers to the sauce, or topping it with sliced olives, and diced tomatoes for garish. Ingredients
  • 1 package oven ready lasagna noodles
  • 1 pound lean ground beef
  • 1 package taco seasoning
  • 1 24-26 ounce jar of Marinara or pasta sauce
  • 2 eggs (beaten)
  • 1 ricotta cheese (15 ounces)
  • 4 cups Mexican blend shredded cheese

Instructions
  1. Preheat oven to 375F.
  2. Cook ground beef and taco seasoning in a large skillet according to package directions. Mix in the pasta sauce and set aside.
  3. In a medium bowl combine eggs, ricotta cheese, and 2 cups of the Mexican blend shredded cheese.
  4. In a 13 x 9 baking dish sprayed with cooking spray, cover the bottom with 1 cup of the meat and pasta sauce mixture.
  5. Arrange 4 of the lasagna noodles over the sauce, overlapping them to fit if necessary. Then top the noodles with ½ of the ricotta mixture, and a cup of meat sauce- then repeat for the next layer.
  6. Top with the remaining 4 lasagna noodles, remaining meat sauce and Mexican blend style cheese.
  7. Cover with foil and bake 45-55 minutes or until bubbly. Uncover and cook a little longer until cheese is melted. (I held a little of the cheese back and added it at the end of the backing time)
  8. Let stand 15 minutes before serving.

There is not a lot of prep time with this recipe, and it’s done in the slow cooke,r freeing up some time for you during the day. I followed the recipe right to the letter, but there is plenty of sauce, so you could increase the amount of the hot dogs without adding anything extra. It has been awhile since I have posted a Mexican recipe, so when my wife saw this Burrito Pie Recipe and thought it looked really good; I decided to give it a try. It is pretty much like a burrito casserole just with kind of a different name. This is another simple recipe with not a lot of prep time. It is mildly seasoned, so if you like it hot, you might want to add some red pepper flakes or cayenne pepper. I prepared the recipe as is; it was very good. Ingredients
  • 2 pounds ground beef
  • 1 onion, chopped
  • 4 garlic cloves (minced)
  • 1 (2 ounce) can black olives (sliced)
  • 1 (4 ounce) can diced green chili peppers
  • 1 (10 ounce) can diced tomatoes with green chili’s
  • 1 (16 ounce) jar taco sauce
  • 2 (16 ounce) cans re-fried beans
  • 12 (8 inch) flour tortillas
  • 9 ounces shredded Colby cheese

Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes.
  3. Drain any excess fat.
  4. Mix in the olives, green chili peppers, tomatoes with green chili peppers, taco sauce and re-fried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  5. Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
  6. Bake for 20 to 30 minutes in the preheated oven or until cheese is slightly brown and bubbly.
