This is great! May marks National Burger Month. In a search to try something a little different, and seeing as May marks National Burger Month, I decided on this Grilled Fajita Burgers Recipe. This is a simple recipe to put together with an excellent blend of flavors. There is a lot of room to move on the condiments but what I put together is really good. Feel free to make it your own by adding whatever you like. The weather was so nice here I decided to use the grill. If you don’t have that option, use your broiler oven.

Ingredients
  • 1 tablespoon olive oil
  • 1 medium sweet onion (thinly sliced)
  • ½ medium yellow or green bell pepper (cut into thin strips)
  • ½ red bell pepper (cut into thin strips)
  • 1½ pounds lean ground beef
  • 1 Fajitas Seasoning Mix
  • 6 slices of bacon (crispy)
  • ¼ cup cold water
  • 6 slices American cheese
  • 6 hamburger buns

Instructions
  1. Slice the pepper and onion. In a small skillet using the olive oil cook the peppers and onion until tender.
  2. Cut the bacon in half and cook until crispy-drain on paper towels.

  4. Preheat the grill to medium high heat and lightly oil the grill grates.

  6. In a large bowl mix together the water, ground beef, and Fajitas Seasoning Mix. Divide and form into 6 patties.
  7. Grill the burgers long enough to get grill marks on one side, than flip the burgers. Cook to desired doneness.
  8. While burgers are cooking toast the buns on the grill cut side down. Just before the burgers are done top with the American cheese slices; close the grill until slices are melted.
  9. To serve start with a burger on the bun followed by a slice of tomato, bacon, then top with the pepper and onion.

Baked Steak Burritos Recipe

It had been awhile since we have had Mexican food so I decided to put this Baked Steak Burritos Recipe on the menu. This is a simple recipe to but together and doesn’t require a lot of ingredients. The original recipe called for 12- 6 inch soft Tacos or fajitas, but I had some 8 inch on hand, so I decided to use them. This is a basic recipe that does have a little heat; but if you want to turn up the heat a little more just change the mild enchilada sauce to hot, or add some cayenne pepper to taste. When you are spreading the re-fried beans kind of eye them up a little bit so you don’t run out before the burritos are completed.

This recipe has a good blend of flavors and there is room to add some additional ingredients if you wish to do so. I prepared the recipe as written and it was really good.

Ingredients
  • 1½ pound sirloin tip steak. (Thin sliced into strips)
  • 1 package taco seasoning mix
  • 1 can re-fried beans (16 ounce)
  • 6 soft taco or fajitas (8 inch)
  • ½ cup butter or margarine
  • 2 cups shredded cheddar cheese
  • 3 medium green onions (sliced)
  • 1 can mild enchilada sauce (10 ounce)
  • 1 cup Mexican cheese blend

Instructions
  1. Pre-Heat oven to 400F.
  2. Slice the sirloin steak into bite size thin strips. Melt the butter in a large skillet and cook the steak to your desired doneness. Just be for the steak is done stir in the taco seasoning mix. Drain if needed.

  4. Using a microwavable dish or sauce pan- using the microwave or stove top heat the refried beans until warmed. (I also slightly warmed the soft tacos in the microwave to make them easier to work with.)
  5. To make the burritos, using a spoon, spread the refried beans to about 1/ 4 inch from the edge of the wraps. Top with the beef strips, green onion and cheddar cheese. Roll up and fold in the sides.

  7. Place the burritos in a 13×9 baking dish, top with the enchilada sauce and sprinkle on the Mexican blend cheese; bake for about 10 minutes, or until burritos are heated through, and cheese is melted.

Chile con Carne Recipe

Chile con Carne Recipe

There are many different recipes for chili in the recipe books. I guess this Chile con Carne Recipe is a little different because it incorporates some ingredients I don’t usually use. This chili recipe is a little time consuming because it does call for an hour of cooking time on low temperature. The seasoning and combination of peppers blend very well together creating chili that is a little bit on the hot side. If you like you chili seasoned hot; just change the salsa to hot instead of mild, and increase the amount of Jalapenos used in the recipe. For me the recipe was seasoned perfect as written.

Winter doesn’t want to give up in most parts of the country so a hot bowl of Chile tastes real good on a cold winter night-give this Chile con Carne Recipe a try, it’s really good. Enjoy

Ingredients
  • 2 pounds of lean ground beef
  • 2 tablespoons vegetable oil
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 2 cans kidney beans (15 ounces each)
  • 1 can crushed tomatoes (28 ounces)
  • 1 jar mild chunky Salsa (16 ounces)
  • ½ cup dry white wine
  • 1-2 tablespoons Jalapenos (diced- canned or fresh)
  • 1 can diced green chilies (4 ounces)
  • 3 tablespoons chili powder
  • 1 tablespoon Cumin
  • 1 tablespoon Oregano
  • 2 teaspoons salt

Instructions
  1. In a large skillet using the oil brown the ground beef along with the garlic and the onion. Drain if needed.
  2. In a Dutch oven or large sauce pan combine the rest of the ingredients. Stir in the burger, onion, and garlic mixture. Bring to a boil, and then reduce the heat to produce a low simmer. Cover, and cook for 1 hour.
  3. Serve Hot

Simple Taco Pie Recipe

Simple Taco Pie Recipe

I have seen these Taco Pie recipes around the internet quite often lately. I don’t use baking mix very often but this Simple Taco Pie Recipe looked like it would be quick to put together so I decided to give it a try. This is a very simple recipe that doesn’t require much prep time. I was very surprised with the finished product because this turned out to be another simple and good recipe. When I mixed the baking mix together it was real thin and I had some concern about that; but that is the way it should be. I guess I was thinking that the batter would go on top to form a crust, but the way it turns out it is distributed throughout the dish. There is not a lot of hot seasoning in the pie itself but it is easy to control that by using hot salsa if you like a lot of heat in your Tacos.

If you like Tacos and want to try something a little different, give this Simple Taco Pie Recipe a try. It’s really good.

Ingredients

1 pound lean ground beef

1 medium onion (chopped)

1 package taco seasoning mix

1 can chopped green chilies, drained (4.5 ounces)

1 cup milk

2 eggs

2 tomatoes (seeded and diced)

1 can black sliced olives (2.25 ounces)

1/2 cup Bisquick Original mix

3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces) (I mixed the 2)

Salsa (hot or mild to taste)

Sour cream

Directions

Preheat oven to 400F.

1. In a large skillet brown the burger and onion until burger is no longer pink inside. Drain if needed and mix in the taco seasoning.

2. Spray a 9 inch pie plate with cooking spray and spread the burger mixture over the bottom. Distribute the green chilies on top.

3. Mix together the baking mix, eggs, and milk to form the batter. (Electric mixer worked best for this), pour the batter into the pie plate.

4. Bake for 25 minutes or until a knife inserted comes out clean. Remove from the oven and top with the olives and cheese. Bake for an additional 5 to 10 minutes, or until cheese is melted.

Let the pie cool slightly then garnish with the diced tomatoes. Serve with sour cream and salsa.

Chili Beef Bake Casserole Recipe

I’m not a big lover of cornbread, but once in awhile for a change I do enjoy it. When I saw this Chili Beef Bake casserole Recipe I thought it looked pretty good, and I would give it a try. Everything is mixed together and the cornbread mixture borders the casserole. Hot sauce provides a little heat for the recipe, which was about right for me. If you want to turn the heat up a little bit, just add more hot sauce, or cayenne pepper to taste. I’ll have to admit this is not the best looking dish I have photographed however the recipe itself was good enough that I thought I should post it.

Ingredients

1 pound lean ground beef

4 tablespoons margarine (divided)

1 small onion (chopped-about 1/2 cup)

1/2 cup sweet red pepper (chopped)

1 clove garlic (minced)

1/2 cup flour (divided)

4 teaspoons chili powder

1 can corn (4 ounces-about 1 cup drained)

1 can peas (4 ounces-about 1 cup drained)

1/2 cup tomato juice

1 egg (beaten)

1/2 cup cornmeal

1 teaspoon paprika

1 teaspoon baking powder

1/2 cup milk

Directions

Preheat oven to 375F.

1. In a medium size skillet brown the ground beef, and drain if needed. Remove and set aside.

2. Using the same skillet melt 2 tablespoons of the margarine; add and cook the onion, garlic and red pepper until tender.

3. Add 1 tablespoon of flour, chili powder, and hot sauce and mix until well blended.

4. Add the ground beef, corn, peas and tomato juice and heat thoroughly.

5. Pour into a 2 quart casserole dish.

Directions for topping

1. Blend 2 tablespoons melted margarine with the egg. Add the remaining flour, cornmeal, paprika, baking powder and mix in the milk till thoroughly combined.

2. Spoon the mixture around the edges on top of the casserole.

3. Bake for 30 minutes uncovered or until cornmeal border is done and nicely browned.

This is a small recipe you may want to double it depending on the number you are serving.

Chili Seasoning Mix Recipe

If you like chili and need a quick way to put it together after work, or when the kids get out of school, give this Chili Seasoning Mix Recipe a try. It kind of drew my attention, because of the dried onions and garlic it called for. This is an excellent seasoning mix that results in a thick and well seasoned pot of chili. If you don’t like a lot of heat, watch the red pepper flakes. Use this Chili Seasoning Mix in your favorite chili recipe for the seasoning.

This mix will keep up to 6 months in an airtight container.

Ingredients

1 Tablespoon Flour

2 tablespoons dried minced onion

1 1/2 teaspoons chili powder

1 teaspoon seasoned salt

1/2 teaspoon dried red pepper

1/2 dried minced garlic

1 teaspoon sugar

1/2 teaspoon ground cumin

Directions

Combine all ingredients until thoroughly mixed.

Here is a quick Chili recipe if you need one.

1 pound lean ground beef

Southwestern Spaghetti Recipe

A touch of Italian integrated with some south of the border spices turns this Southwestern Spaghetti Recipe into a great tasting spaghetti dish. I have prepared a number of recipes like this one before, and I have to say, this one is about the best. I was in the mood for Italian spaghetti but at the same time I wanted something a little different; this did the trick. This is a simple recipe and I prepared the recipe as written, but there is room to make some changes, if you want to spice it up a little more. I panned on adding some sliced black olives, but my age is catching up to me; I overlooked them even though they were on my store list. Maybe next time-this one is going on my favorites list. Ingredients

8 ounces spaghetti noodles

1/2 cup milk

1 egg

1lb ground beef

1 medium onion (chopped)

1 medium green bell pepper (chopped)

1 package mushrooms (8 ounces sliced)

2 garlic cloves (minced) or to taste

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon pepper

2 (8 ounce) cans tomato sauce

1/2 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

Directions

Preheat oven to 425F.

1. Cook spaghetti according to package directions. Rinse and Drain.

2. In a small bowl whisk together the milk and egg. Using the same pan or a large bowl mix the milk mixture, with the spaghetti, and place in the bottom of a 9 x 13 casserole dish.

3. In a large skillet brown the ground beef, onion, green bell pepper, garlic and mushrooms until burger is no longer pink and vegetables are tender. Drain if needed. Add chili powder, cumin, oregano, salt and pepper. Stir and cook for 2 minutes. Stir in the tomato sauce and cook for 2 more minutes.

4. Spread the meat sauce over the spaghetti noodles. Top with the cheese combination.

5. Bake at 425 for 10 minutes or until the cheese is melted and bubbly.

Taco Tater Tots Casserole Recipe

I have incorporated tater tots into a number of recipes and it seems like they are always pretty good. We had decided on Tacos for supper and then I ran across this Taco Tater Tots Casserole Recipe and decided to give it a try. I followed the recipe as written and the results were really good. This is a mildly seasoned recipe so I would recommend you season it to taste. This is a good size recipe and should feed 6-8 people unless you have some heavy eaters. This is not only a good supper recipe, but would also be great for parties or pot luck suppers. Ingredients

 

1 pound ground beef

1 small onion (diced)

1 clove garlic (minced)

1 small can black olives (sliced)

1 packet taco seasoning mix (1 ounce)

1 (16 ounce) bag frozen corn

1 (4 ounce) can green chilies (diced and drained)

1 (12 ounce) can black beans, rinsed and drained

1 (16 ounce) bag shredded Mexican cheese blend

1 (16 ounce) package frozen tater tots

1 (10.5 fluid ounce) can enchilada sauce

 

Directions

 

Preheat an oven to 375 degrees F (190 degrees C).

Spray a 9×13-inch baking dish with cooking spray.

1. Cook the ground beef, garlic and onion in a skillet over medium heat until completely browned.

2. Add the taco seasoning mix, green chilies, frozen corn, and black beans to the ground beef; cook until heated though.

3. In a large bowl Mix together the ground beef mixture with about 3/4 of the Mexican cheese blend and all the tater tots; stir to combine.

4.  Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tots.

5. Bake in the preheated oven for 40 minutes. Sprinkle the remaining Mexican cheese over the casserole and return to oven until the cheese is melted and bubbly.

Top with the black olives for garnish and serve hot.

Jalapeno Popper Chicken Recipe

When I saw this Jalapeno Popper Stuffed Chicken Recipe I had to give it a try. I have made stuffed chicken a number of times and this has to be one of the best; I thought it was really good, but my wife thought it was delicious. It is a little time consuming and does require some work, but it is well worth the effort. The Panko bread crumbs is a nice added touch and the end result is moist, tender chicken breasts with a rich and creamy cream cheese filling. Ingredients
  • 1 pkg. cream cheese (8 ounces)
  • ½ cup shredded cheddar cheese
  • 2 jalapeno peppers (seeded and minced)
  • 4 bacon strips (cooked crisp and crumbled)
  • 4 boneless skinless chicken breast halves
  • 1 cup Panko bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • 1 egg
  • 1 teaspoon water
  • 3-4 tablespoons vegetable oil

Instructions
  1. In a bowl combine the cream cheese, cheddar cheese, bacon, and jalapeno peppers and mix thoroughly.
  2. Cut a pocket horizontally though the thickest side of the chicken breast-being careful not to cut all the way though. Fill with 1/ 4 of the cream cheese mixture, close the opening with tooth picks.
  3. On a plate (I like to use a pie plate for this.) combine the bread crumbs, garlic powder, onion powder, pepper, and Parmesan cheese.
  4. Beat the egg and water together in a shallow bowl.
  5. Dip the stuffed chicken breasts into the egg mixture, then roll in the Panko bread crumbs coating thoroughly.
  6. Using the oil in a large skillet over medium heat, brown the chicken breasts on both sides, and place on a baking sheet sprayed with non-stick or covered with aluminum foil.
  7. Bake at 350F for 30 minutes or until juices run clear. (Internal temp. 160F)

Chicken Chili

In an attempt to get away from the red meat a little bit I decided to try this Slow Cooker Chicken Chili Recipe. I was kind of pinched for time so I need a recipe I could set and forget;  I decided on this slow cooker recipe. There is not a lot of ingredients, or a lot of prep time. For a chili recipe, this recipe is lightly seasoned, if you like it hot, you may want to increase the seasoning to taste. I followed the recipe as is, and it was good. Be sure to add the sour cream, it’s a nice touch. If you’re in a rush and want to cut back on the red meat, give this Slow Cooker Chicken Chili Recipe a try, and enjoy.

Ingredients
  • 1 pound boneless skinless chicken breast (cubed)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 medium onion (chopped)
  • 1 jalapeno pepper (seeded and chopped)
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • 6 garlic cloves (minced)
  • 2 cans (15 oz great northern beans) rinsed, drained and divided
  • 3 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 small carton of sour cream

Instructions
  1. in a large skillet using the olive oil over medium heat, cook the cubed chicken, onion, jalapeno pepper; add in the oregano and cumin, and cook for 4 minutes, or until chicken is brown, and vegetables are tender crisp.
  2. Add the garlic and cook 1 minute longer. Place in the slow cooker.
  3. I in a small bowl mash 1 cup of beans, and mix them with ½ cup of chicken broth. Add to the slow cooker along with the rest of the chicken broth.
  4. Cook on low for 3-4 hours, or until chicken is tender.
  5. Serve hot garnished with shredded cheddar cheese and sour cream
