I had some frozen cranberries on hand so I decided to give this Cranberry Pecan Muffins Recipe a try. In all honesty I didn’t think it was going to be that good, but what a surprise they are delicious!!

if you have fresh or frozen cranberries on hand give this one a try.

Ingredients
  • Streusel Topping
  • 2 ½ tablespoons all-purpose flour
  • 1 ½ teaspoons butter
  • 1 tablespoon brown sugar (packed)
  • 1 tablespoon granulated sugar
  • pinch of salt
  • 3 tablespoon chopped pecans
  • Muffins
  • 6 tablespoons all-purpose flour
  • ¼ teaspoon baking powder
  • ½ cup pecans (toasted and cooled)
  • ¼ cup granulated sugar
  • 1 large egg (room Temperature)
  • 3 tablespoons milk
  • 1 ½ tablespoons butter (melted)
  • ½ cup fresh cranberries
  • 1 teaspoon confections sugar
Instructions

  2. In a small bowl mix together the flour, butter, brown sugar, salt, and granulated sugar until mixture resembles wet sand. (a fork works good for this or use your hands) Mix in the pecans and set aside.
  3. Muffins
  4. In a medium size bowl whisk together the flour, baking powder, and ¼ teaspoon salt; set aside.
  5. Place the pecans and sugar in a food processor and process until mixture resembles coarse sand.; and place mixture in a large bowl.
  6. Mix in the egg, milk, and melted butter until thoroughly combined. Add the flour and mix until just moist; set aside 30 minutes until thickened.
  7. While batter is resting preheat oven to 375F and spray 4 muffin cups with cooking spray. Place cranberries, confections sugar, and a pinch of salt in the food processor and process until coarsely chopped.
  8. Mix the cranberry mixture into the muffin batter and divide the batter equally among the 4 cups. Top evenly with the Streusel topping and bake for 18 – 20 minutes or until golden brown and a tooth pick inserted comes out clean.
  9. Let cool for 10 minutes on a wire rack, remove from tin, and cool for at least another 10 minutes before serving.

Low Fat Oatmeal Muffin Recipe
 
I should eat healthy foods more than what I do. My wife asked if I would make some oatmeal muffins, and what she asks for she usually gets. This Low Fat Oatmeal Muffin Recipe is very simple, with very little prep and cooking time. The unsweetened applesauce in the recipe makes them moist and very tasty. Serve them hot with butter or margarine. Enjoy

Ingredients
  • 1 cup rolled oat (old fashioned oatmeal)
  • 1 cup skim milk
  • 1 cup whole wheat flour
  • ½ cup brown sugar, packed
  • ½ cup unsweetened applesauce
  • 2 egg whites
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Instructions
  1. Soak oats in milk for 1 hour.
  2. Combine all ingredients in a large bowl.
  3. Spoon into a muffin pan that has been lightly greased ( I used muffin cups) or sprayed with nonstick spray.

I love the fall of the year. The cooler weather along with the colorful fall leaves here in Upper Michigan. I thought it was a good time to do a batch of Pumpkin Muffins. It really cooled down here the past week giving me the opportunity to run the oven. This pumpkin muffin recipe is very simple with little prep time. The end product is 12 delicious nice and moist muffins. Give them a try and enjoy!

Ingredients
  • 1 cup pumpkin (canned "or" fresh) I used canned for this recipe.
  • 1 small package chopped walnuts
  • 2 eggs, slightly beaten
  • ½ cup water
  • ½ cup melted shortening
  • 1¾ cups flour
  • ¼ teaspoon salt
  • 1½ cups sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ¼ teaspoon ground cloves
Instructions
  1. Blend pumpkin, eggs, water, and shortening in large bowl.

  3. Sift together remaining ingredients and add to pumpkin mixture, mix thoroughly.
  4. Fill greased muffin tins or cups about ¾ full.

  7. Bake at 350 degrees about 30 minutes or until set when touched.

Simple Oat Bran Muffin Recipe

For some reason our local market’s bakery does not make Oat Bran Muffins. My wife really likes them and right now our only way to get them is to make them. I guess if you have a Cooking Blog this should be the only way. This oat bran muffin recipe is excellent, it’s simple to make, and there is very little cooking or prep time. Within a half an hour you can have hot muffins sitting on the breakfast table. Enjoy

Ingredients
  • 2 cups Oat Bran hot cereal uncooked
  • ¼ cup firmly packed Brown Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoon Salt
  • 1 cup Low Fat Milk ( 2% or skim )
  • 2 Egg Whites, slightly beaten
  • ¼ cup Molasses
  • 2 tablespoons Vegetable Oil
Instructions
  1. Preheat oven to 425 F
  2. Line 12 medium muffin cups with paper baking cups or spray the bottoms with non stick cooking spray.

  4. Combine all the dry ingredients except the brown sugar and mix well.
  5. Separately mix together the milk, brown sugar, egg whites, molasses and oil. Combine with the dry ingredients and mix until moistened.

  7. Fill prepared cups ¾ full.
  8. Bake 15 to 17 minutes until golden brown.
  9. In this batch I added ½ cup of frozen elder berries because I had them on hand. You can do the same using blue berries or raisins if you choose.
