Fresh from the blackberry patch and into the oven – these Blackberry Muffins are moist, and delicious.

This is a simple recipe that requires very little prep, and cooking time. Serve them warm topped with butter and they turn into a special breakfast treat!

Ingredients
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup sugar
  • 4 tablespoons unsalted butter (½ stick melted and cooled)
  • 1 large egg
  • ¾ cup plus 2 teaspoons milk
  • 1 ½ cups fresh blackberries
Instructions
  1. Preheat oven to 400F.
  2. In a large bowl whisk together the flour, baking powder, salt, and sugar.
  3. In another bowl beat the egg, and then mix in the milk, and butter.
  4. Slowly mix the milk mixture into the dry ingredients until just moist, and then gently fold in the blackberries.
  5. Spray a 12 cup muffin tin with cooking spray and divide the muffin batter between 10 of the cups – fill the other 2 cups half way with water.
  6. Bake for 20 – 25 minutes until muffins are nicely browned and a tooth pick inserted comes out clean.
  7. Remove muffins from tin; let cool slightly and serve warm.

Simple Corn Meal Muffins

 

My wife has wanted me to make corn meal muffins for some time now. I had some extra time so I decided to make up a batch. This is a simple recipe with very little prep time or cooking time; in 20 minutes you can have hot corn meal muffins on the table. I’m sure you could fancy it up a little bit with raisins or nuts, but I decided to prepare this recipe as is and it was very good. Enjoy

Ingredients
  • 1¼ cups all purpose flour
  • ¾ cup corn meal
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 egg (beaten)
Instructions
  1. Preheat oven to 400F.
  2. Mix all dry ingredients together in a large bowl.
  3. Add the egg, milk, vegetable oil and mix thoroughly.
  4. in a medium size 12 cup muffin pan; coat with cooking spray or line with paper liners.
  5. Divide the muffin batter between the 12 cups and bake for 15 to 20 minutes.
  6. To test for doneness use a wooden tooth pick; when the tooth pick comes out clean, they are done.

Oatmeal Raisin Muffin Recipe 

I have kind of taken a break on baking lately; I guess I felt we had too many sweets over the holidays. I knew it was time to bake something when my wife started looking at the muffins when we were grocery shopping the other day. I said to her, “don’t even think it, I’ll bake it, what kind do you want”? Well this Oatmeal Raisin Muffin Recipe is what she decided on. I followed the recipe as written, but you could make some changes, like substituting the sugar with Splenda and using fat free milk. The addition of the applesauce in this Oatmeal Raisin Muffin Recipe gives these muffins a nice, moist texture. Be sure to allow yourself enough time for the oatmeal to soak in the milk.  Enjoy

Ingredients
  • 1 cup old fashion rolled oats (not instant)
  • 1 cup milk
  • 1 cup whole wheat flour
  • ½ cup brown sugar
  • ½ cup unsweetened applesauce
  • 2 egg whites
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. sugar
  • ½ cup Raisins
Instructions
  1. Soak the oats in milk for about one hour.
  2. Preheat the oven to 400 degrees.
  3. Spray muffin pan with cooking spray or use liners.
  4. Combine the oat mixture with the applesauce and egg whites, and mix until combined.
  5. In a separate bowl measure and whisk the dry ingredients together including the sugar and cinnamon.
  6. Mix all ingredients together until combined.
  7. Spoon muffin mixture into muffin pan.
  8. Bake for 20-25 minutes or until done.
  9. You can add the cinnamon and sugar to the muffin batter mixture or use it to top each muffin. (I added it to the batter mixture and topped the muffins with some additional raisins)
  10. These Oatmeal Raisin Muffins are really good, served hot with butter!
