Here’s another simple and good one dish recipe. I thought this recipe was pretty good for being a one dish recipe; but my wife thought it was great. Because I was cooking for just the 2 of us we had left overs, which reheated very well making for a nice lunch the following day.

If you’re looking for a simple and good one dish casserole recipe, give this one a try – it doesn’t take that long to prepare, and it’s really good.

Ingredients
  • 1 tablespoon oil
  • 4 boneless skinless chicken thighs
  • ½ teaspoon garlic salt
  • ¼ teaspoon pepper
  • 6 ounces uncooked thin spaghetti
  • 1 can condensed cream of chicken soup (10¾ ounces)
  • 1¼ cups half-and-half
  • ½ teaspoon smoked paprika
  • 2 cups frozen or fresh broccoli florets (cut into smaller pieces)
  • 3 slices cooked bacon (crispy) if you want to save some time purchase the precooked.
Instructions
  1. Preheat oven to 350F.
  2. Season chicken with pepper and garlic salt. In a large skillet over medium high using the oil cook chicken on both sides until nicely browned and juices run clear; set aside on a plate.
  3. While chicken is cooking, cook pasta according to package directions; drain.
  4. In a large bowl mix together the soup, half-and-half, smoked paprika until thoroughly combined; reserve ¾ cup of the sauce and then fold in the spaghetti and broccoli.
  5. Lightly spray a 2 ½ quart casserole dish with cooking spray and layer the spaghetti mixture over the bottom. Arrange the chicken thighs on top and spoon the reserved sauce over the chicken; sprinkle the bacon over the top.
  6. Bake covered for 20 minutes, uncover and continue cooking until mixture is bubbly about 10 – 15 minutes longer.
  7. Serve Hot

Indian Style Curry Chicken

 

I am always open for a one dish meal; they usually have less prep time and dirty a lot less dishes. This Indian Style Curry Chicken Recipe caught my eye mainly because I don’t use Curry very often. This is a simple recipe with not much prep time; however  be sure to allow enough time for the frozen vegetables to thaw. The green chilies do add some heat, but I don’t think it’s overly hot. Indian Style Curry Chicken Casserole Recipe

Ingredients
  • 4 cups frozen potatoes O’Brien with onions and peppers (thawed)
  • 1 bag (12 oz) frozen sweet peas (thawed)
  • 1 can (14.5 oz) diced tomatoes with green chilies (undrained)
  • 4 teaspoons curry powder
  • ½ teaspoon salt
  • 3 tablespoons all purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 12 chicken drumsticks
  • Vegetable oil for browning
Instructions
  1. Heat oven to 350°F.
  2. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, stir together potatoes, peas, tomatoes, 2 teaspoons of the curry powder and the salt. Spread evenly in baking dish.
  3. In large reseal able food-storage plastic bag, mix remaining 2 teaspoons curry powder, the flour, paprika and garlic salt; shake to mix. Add drumsticks; seal bag, and shake to coat.
  4. In 12-inch skillet, heat oil over medium-high heat. Cook drumsticks in oil 8 to 10 minutes, turning frequently, until skin is brown.
  5. Place drumsticks in 2 rows lengthwise over potato mixture, alternating direction of drumsticks to cover potato mixture. Cover tightly with foil.

Tater Tot Casserole

 

I think it has been, since the kids were young, that I have prepared a Tater Tot Casserole. This use to be one of our favorites, and for some reason we have kind of gotten away from it. So even though the kids are away at school I decided it was Tater Tot Casserole for dinner tonight.  Like many of my recipes, this is a simple recipe and does not take a long time to prepare. This recipe calls for Worcestershire sauce mixed with cream of mushroom, and celery soup, which I thought was a little questionable, but it was a very delicious combination. I’m sure there are some other ingredients you could add in here; like sliced mushrooms, or even mixed vegetables, but this Tater Tot Casserole Recipe is very good as is.

Ingredients
  • 2 lbs ground beef
  • ½ cup diced celery
  • 1 large sweet onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 (10¾ ounce) can cream of mushroom soup
  • 1 (10¾ ounce) can cream of celery soup
  • 1 (32 ounce) bag frozen tater tots
  • 2 tablespoons Worcestershire sauce
Instructions
  1. Preheat oven to 350F
  2. In a large skillet brown the ground beef mixed with the onions until the beef is well browned and the onions are translucent.
  3. In a bowl mix the 2 cans of soup together and add the Worcestershire sauce.
  4. Put browned ground beef and onions in a 9x13 casserole dish and cover with the soup mixture. Then distribute the chopped celery over the top and add the cheese.
  5. Finish off by distributing the tater tots over the top.
  6. Bake at 350F for 1 hour-Enjoy
