This Chocolate Sheet Cake Recipe is quick and simple to put together and is super-rich in chocolate.

With several birthdays taking place within a month I needed a cake recipe that wouldn’t take up a lot of my time. My thinking was “well were all adults so a basic sheet cake should at least do the trick.” This sheet cake turned out to be a pleasant surprise, served with a couple scoops of ice cream, it was delicious.

  • ¾ cup cocoa
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 8 ounces semisweet chocolate (shaved-I used mini chocolate chips for this)
  • 12 tablespoons unsalted butter
  • 4 large eggs
  • 1 ½ cups sugar
  • I teaspoon vanilla extract
  • Frosting of your choice (optional)
Instructions
  1. Preheat oven to 325F.
  2. Shift the cocoa, flour, baking soda, and salt into a large bowl; whisk to combine.

  4. Place the chocolate and butter into a microwave safe bowl, cover with plastic wrap, and microwave for 2 minutes at 50% power. Stir the chocolate butter mixture with a spoon until chocolate is melted and mixture is smooth.

  6. In a large size bowl whisk together the eggs and sugar. Add the butter milk and mix until smooth.

  8. Mix in the chocolate mixture until well combined and then add the dry ingredients; mix until batter is smooth and glossy.

  12. Cool on wire rack for at least 1 hour before frosting.

Oven baked meatballs, marinara sauce, and provolone cheese, create these delicious Italian Meatball subs.

This is a great game day recipe, or a simple recipe for lunch or supper. The original recipe calls for Italian sub rolls, but if you don’t have them available hoagie buns work out just fine. This recipe makes 4, if you need more double the recipe.

Ingredients
  • 1 ¼ pound ground chuck
  • ¾ cup Italian bread crumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 hoagie buns (or 6 inch Italian sub rolls)
  • 1⅓ cups marinara sauce (your favorite brand)
  • 4 slices provolone cheese (sliced thin)
Instructions
  1. Preheat oven to 400F.
  2. Lightly spray a rimmed baking sheet with cooking spray.
  3. Lightly beat the eggs in the bottom of a large bowl. Place the burger on top of the eggs and then add the bread crumbs, salt, pepper, and garlic powder; using your hands mix until thoroughly combined.
  4. Divide meat mixture into 12 - 2 inch meatballs and place on baking sheet. Bake for 15 minutes or until an instant read thermometer reads an internal temperature of 160F, and meatballs are browned. Remove meatballs to a plate and discard any accumulated fat. Line now empty baking sheet with parchment paper, slice buns, and place 3 meatballs on each bun. Pour ⅓ cup marinara sauce over the meatballs on each bun and top with a slice of cheese. Return to the oven and cook until heated through and cheese is melted – serve hot.

Ingredients

Instructions
  1. Cook bacon and onion in a large skillet over medium high heat until bacon starts to brown. Add the burger to the skillet, breaking it up, and cook until burger is no longer pink inside; drain any excess fat. Mix in the cheese and continue cooking, stirring constantly until cheese is melted. Set aside to cool for 10 minutes.
  2. Preheat oven to 400 F.
  3. Lightly spray a baking dish with cooking spray (I used a 16x12x1 jelly roll pan for this, but any large flat baking pan will work). Roll the pizza dough into a 15x8 inch rectangle and spread the burger mixture over the top to about 1 inch from the sides. Roll the pizza dough up starting from a long side, arranging and finishing so the seem side is down.
  4. Bake for 20 to 25 minutes or until nicely browned.
  5. Slice crosswise into pieces and serve hot.

  9. Remove cornbread from the oven when its finished baking, reduce oven temperature to 350F, and using a fork poke holes in the top throughout the cornbread. Spread the enchilada sauce over the top, and top with the ground beef followed by the shredded cheese.

Mozzarella Cheese Bites Recipe

Getting ready for a fish fry after a successful fishing trip with my son Robert I was looking for a good side dish, so I went to his blog (blogchef.net), and decided to give this Mozzarella Cheese Bites Recipe a try. This is a simple recipe using Italian bread crumbs, egg, and garlic powder.

The cheese deep fries very quickly, so watch them closely so they don’t overcook. I used my deep fryer to cook this recipe, but you can use a heavy saucepan if you don’t have one available.

Serve with marinara sauce – or spice it up a little bit with chili or shrimp sauce.

This would also be a great appetizer for a game day party.

Mozzarella Cheese Bites Recipe

  • 2 eggs (beaten)
  • ¼ cup water
  • 1 ½ cups Italian bread crumbs

  1. Preheat deep fryer to 365F (If using).
  2. In a small bowl whisk together the eggs and water. Mix together the bread crumbs and garlic powder in a shallow dish, like a pie dish. Place the flour in another shallow dish.
  3. Roll mozzarella pieces in flour, then in the egg mixture, and then roll in the bread crumbs.
  4. Deep fry in batches at 365F for about 30 seconds or until golden brown; drain on paper toweling.
  5. Serve with your choice of dipping sauce.

Ingredients
  • 4 boneless skinless chicken breasts (about 1¼ pounds)
  • ½ teaspoon seasoned salt (divided)
  • ¼ teaspoon coarse black pepper
  • 1 medium sweet onion (sliced)
  • 4 ounces fresh mushrooms (quartered)
  • 1 tablespoon olive oil
  • 3 tablespoons creamy mustard mayonnaise (divided)
  • 4 - 8 slices sourdough bread (I used 2 slices per sandwich, but you can make this open face and just use one thicker slice per sandwich)
  • 4 slices sharp cheddar cheese
Instructions
  1. In a large skillet using the olive oil over medium heat cook onion and mushrooms seasoned with ¼ teaspoon seasoned salt until onion is translucent; set aside and keep warm.
  2. Pound chicken down to ¼ inch and sprinkle remaining seasoned salt on both sides.
  3. Prepare grill for medium heat and lightly oil cooking grates. Place chicken on grill, using 2 tablespoons of mustard mayonnaise; brush sauce on chicken, turning a couple of times to coat. Grill covered for 10 – 15 minutes (watch closely chicken will cook quickly at ¼ inch thickness.)
  4. Divide and spoon the onion mushroom mixture over the top of the chicken, top with cheese, close grill, and cook until cheese is melted; lightly toast bread on the grill.
  5. Spread remaining mustard sauce over 1 side of 4 pieces of bread and top bread with the chicken to form the sandwich; top with the other piece of bread if using.

Greek Baked Ziti Recipe

Greek Baked Ziti

I was looking for a casserole recipe that was a little different and I came across this Greek Baked Ziti Recipe. There is a little bit of prep time involved but it is well worth the effort. The recipe is layered with a creamy cheese sauce mixed into the Ziti at the bottom of the dish which gives this casserole a unique texture. The addition of the cinnamon make me a little nervous because I thought that seasoning may dominate the dish – but there is just enough so you just get a light hint of the cinnamon.

If you’re looking for a one dish meal that’s a little different give this one a try, it’s really good; my wife loved it! This is a large recipe and would be great for a pot luck, or graduation party dish.

  • 12 ounces ziti pasta
  • 1 small yellow onion (chopped)
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 1½ pounds lean ground beef
  • 2 cans tomato sauce (15 ounces each)
  • 1 tablespoon fresh lemon juice
  • 1½ teaspoons dried oregano
  • 1 teaspoon sugar
  • ½ teaspoon ground cinnamon
  • 1½ teaspoons kosher salt (divided)
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1 cup grated Parmesan cheese
  • ½ teaspoon freshly ground black pepper
  • Vegetable cooking spray
  • 1 package shredded mozzarella cheese (8 ounces – 2 cups)
  • ⅓ cup dry breadcrumbs
Instructions
  1. Preheat oven to 350F.
  2. Cook pasta according to package directions for firm; drain. (I like to sprinkle and mix in a little olive oil to keep the pasta from taking on a dry look while it’s sitting)
  3. In a large skillet over medium high heat cook onion until tender. Add the minced garlic and cook for an additional 30 seconds or until fragrant. Add the burger to the onion mixture and cook burger until no longer pink inside – stirring and breaking up the burger as you cook; drain any excess fat. Stir in the tomato sauce and lemon juice and then season with oregano, sugar, cinnamon, and one teaspoon of salt; cook until heated through. (About 2 minutes)
  4. In a large saucepan over low heat melt the butter, whisk in the flour and cook while stirring for 2 minutes. Gradually whisk in the milk – bring the mixture to a high simmer and cook until mixture has thickened and is bubbly. Stir in the Parmesan cheese and season with ½ teaspoon salt and pepper.
  5. Lightly spray a 9 x 13 casserole dish with cooking spray. Mix the cheese sauce into the Ziti and place the mixture over bottom of the casserole dish. Layer the meat mixture over the top of the Ziti and top with the mozzarella cheese, sprinkle the bread crumbs over the top, and bake for 20 to 25 minutes or until cheese is melted and casserole is hot and bubbly.
  6. Let casserole rest for 10 minutes before serving.

I needed some time to get some spring clean-up done, so to save some time, I decided on this Slow Cooker Chili with Chocolate Recipe. This is a simple recipe that doesn’t require a lot of prep time, and the slow cooking blends the flavors really well. I think this is the second chili dish I have had that has used chocolate as one of the ingredients, which doesn’t sound good in chili to me, but it’s very good. Give it a try; and enjoy.

  • 1 pound lean ground beef (I used ground chuck)
  • 1 medium onion (chopped)

  • 1 can chili beans (15 ounces)
  • 1 ½ tablespoons chili powder

Instructions
  1. In a large skillet over medium heat cook onion, 1 clove of garlic, and burger until burger is no longer pink inside.
  2. While burger is cooking place the tomatoes, the rest of the garlic, chocolate, hot sauce, and chili beans into the slow cooker and add in the seasonings; salt and pepper to taste.
  3. Drain the burger if needed and add the meat mixture into the slow cooker. Cook on low for 5-6 hours.

I was in the mood to fire up the grill and these Ranchero Onion Burgers looked pretty good. This is a simple recipe that mixes salsa and shredded cheese into the burger before it is formed into patties resulting in a good juicy burger. I didn’t toast the buns for this recipe but I think that would be a nice added touch.

Spicy Whiskey BBQ Sliders

I was in the mood to fire up the grill until I ran across this Spicy Whiskey BBQ Sliders recipe. I had some whiskey I hand that I had purchased for some earlier recipes and I wanted to use it up. (I realize there are many ways to do this but I hardly ever drink any alcohol) anyway these Spicy Whiskey BBQ Sliders looked really good so I gave them a try. No disappointment here – they were well seasoned and delicious.

I didn’t prepare the recipe as written because I didn’t really need 12 of them, it was just my wife and I for supper so I cut the recipe in half.

Spicy Whiskey BBQ Sliders

Ingredients
  • 2 pounds lean ground beef ( I used ground Chuck)
  • Salt and pepper
  • 4 Tablespoons butter
  • 1 large onion (finely diced)
  • ½ cup whiskey
  • 1 cup barbecue sauce (your favorite variety – I used open pit)
  • ¼ cup jarred jalapeno slices or more to taste
  • 12 slider buns or dinner rolls (split and lightly toasted on cut sides)
Instructions
  1. Divide the meat into 12 equal portions and flatten into patties. (I rolled the pieces like I was making meatballs and then flattened them out) season the patties generously with salt and pepper. In a large skillet over medium high heat cook the patties in the oil until almost done – 3 to 4 minutes on each side. Cook in 2 batches if necessary and set patties aside on a platter.
  2. Drain all the oil from the skillet except for 2 tablespoons, add the onion to the skillet, and cook until onion is soft and translucent. Carefully add the whiskey to the skillet (if using an open flame shut the gas off before adding the whiskey to keep it from flaming up) cook 3 to 4 minutes until whiskey is reduced to about in half. Stir in the BBQ sauce and jalapeno slices scrapping any dripping from the bottom of the pan while mixing; pour in any juice that collected on the bottom of the platter.
  3. Reduce heat to low and work the burgers into the BBQ mixture turning to coat. Allow patties to simmer until burgers are heated through and the sauce is hot and bubbly.
  4. Serve sliders by placing each burger on a bun and spooning the BBQ mixture over the top of the burger.
