This is a recipe for 2 but it could easily be doubled. This Bacon Wrapped Pork Chops recipe is simple and only requires a few ingredients; it’s delicious.

Ingredients
  • 12 ounces of small red potatoes (halved)
  • 2 tablespoons olive oil
  • salt and pepper
  • 6 slices of bacon
  • 2 boneless pork chops (¾ to 1 inch thick)
Instructions
  1. Preheat oven to 375F.
  2. In a large bowl generously season the potatoes with salt and pepper; toss in the olive oil to coat.
  3. Place potatoes cut side down in a rimmed baking sheet covered with aluminum foil – the potatoes should take up about ½ of the pan. Place on center rack of the oven and bake for 20 minutes or until just tender. (baking time could be a little longer depending on the size of the potatoes.)
  4. While potatoes are baking place the bacon on a large plate and weigh the bacon down using another plate – microwave for 3 minutes or until bacon starts to shrivel. (limp but not stiff) place bacon on paper towels to let cool.
  5. Wrap pork chops with 3 strips of bacon with ends down to secure the bacon.
  6. Remove the potatoes from the oven and place the pork chops on the other half of the sheet. Return to oven and bake until pork chops reach an internal temperature of 135F. (about 15 minutes depending on size)
  7. Preheat the broiler and place the pork and potatoes about 6 inches from the broiler element. Broil until bacon is browned and crispy and chops register 145F. Tent with aluminum foil and let rest 5 minute before serving.

It has been raining so much I haven’t had time to get much outdoor work done. There is a little bit of a break in the rain so I decided on this Slow Cooler Thai Pork with Peppers Recipe so I could get some work done while supper is cooking.

This recipe was prepared as written – I thought it was pretty good but the next time I would add the peppers to the pork mixture later in the cooking process so they don’t get over cooked. The original recipe called for red bell peppers, I used yellow, because that is what I had on hand. The red obviously would give the dish a little bit of color.

Ingredients
  • 1 cup chicken broth
  • ⅓ cup soy sauce
  • ⅓ cup creamy peanut butter (if you want to add a more nutty texture to the dish use chunky)
  • 3 tablespoons honey
  • 6 cloves garlic (crushed and minced)
  • 2 tablespoons fresh ginger (minced)
  • 1 teaspoon red pepper flakes
  • 2 red bell peppers (sliced into lengths) or what colors you have available.
Instructions
  1. In the slow cooker mix together the chicken broth, soy sauce, peanut butter, honey, garlic, ginger, red pepper flakes until thoroughly combined; add the peppers (I warmed the slow cooker to help combine the honey and peanut butter)
  2. Work the pork chops into the slow cooker mixture.
  3. Cook for 5 -6 hours or until pork is tender. Remove pork from the slow cooker and when cool enough to handle shred with a fork. Add the pork back into the slow cooker and continue cooking until heated through.
  4. Serve over cooked rice

I asked my wife what she wanted for dinner, and she said, “you know we haven’t had pork chops in awhile”, well it sounded like a good idea to me so I found this Baked Pork Chops with Gravy Recipe. I like the idea that the recipe called for white wine because it’s a good tenderizer. Sure enough the pork chops were so tender they would melt in your mouth, and the gravy that went along with them was an excellent combination with mashed potatoes. Ingredients
  • 6 boneless pork chops
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoning salt
  • 2 eggs (beaten)
  • ¼ cup all-purpose flour
  • 2 cups Italian style breadcrumbs
  • 4 tablespoons olive oil
  • 1 (10¾ ounce) cans condensed cream of mushroom soup
  • ½ cup milk
  • ⅓ cup white wine
Instructions
  1. Preheat oven to 350.
  2. Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste.
  3. Place the beaten eggs in a small bowl.
  4. Dredge the pork chops lightly in flour, dip in the egg, and coat liberally with bread crumbs.
  5. Heat the oil in a medium skillet over medium-high heat.
  6. Fry the pork chops 5 minutes per side, or until the breading appears well browned.
  7. Transfer the chops to a 9 x 13 baking dish, and cover with foil.
  8. Bake in the preheated oven for 1 hour.
  9. While baking, combine the cream of mushroom soup, milk and white wine in a medium bowl.
  10. After the pork chops have baked for an hour, cover them with the soup mixture.
  11. Replace foil, and bake for another 30 minutes.

It is just a crazy week here with a lot to do. I really needed something simple and again it was the slow cooker to the rescue. This Slow Cooker Pork Chop Recipe is as simple as it gets; if you like pork and are short on time give this recipe a try. It is so simple I was a little nervous about making it, but the family loved it. Ingredients
  • cup all-purpose flour
  • teaspoon ground mustard
  • Salt and pepper to taste ( I used ¼ teaspoon pepper, ½ teaspoon salt )
  • 1 teaspoon garlic powder
  • 4 boneless pork loin chops
  • 2 tablespoons canola oil for browning
  • 1 can 14.5 ounces chicken broth
Instructions
  1. In a large reseal able plastic bag, combine ½ flour, garlic powder, Ground mustard, salt and pepper.
  2. Shake the chops one at a time in the plastic bag, and brow, in a large skillet using the canola oil; placing them in a slow cooker.
  3. Using the remaining flour in a small bowl combine the flour with the chicken broth, and pour over the pork chops.
  4. Cook for 3 to 3 ½ hours till tender. Remove the chops and whisk juices till smooth to form the gravy.
  5. Serve with mashed potatoes and enjoy

This is the first post of many here at Cully’s Kitchen. Apple glazed pork is a delicious way to prepare pork chops. The glaze is a combination of apple cider and brown sugar. A little thyme and rosemary are added to only enhance the flavors of the glaze even more. The pork chops are first pan fried, and then the ingredients for the glaze are added to the pan. The dish is then topped with sautéed apples and onions. This dish will quickly become a family favorite. This dish is extremely easy and can be on the table in less than an hour. Ingredients
  • 4 bone-in pork chops (or boneless pork chops)
  • 2 tablespoons vegetable oil
  • 1 cup apple cider (or apple juice)
  • 2 tablespoons brown sugar (divided)
  • 1 teaspoon salt
  • ¼ teaspoon dried rosemary (crushed)
  • ¼ teaspoon dried thyme
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 2 large apples (sliced)
  • ½ cup onion (sliced)
  • 2 tablespoons butter (or margarine)
Instructions
  1. Add vegetable oil to a large skillet and brown the pork chops on both sides. Add the apple cider or juice, 1 tablespoon of brown sugar, salt, rosemary, and thyme. Cover and cook for 8 minutes or until the juices from the pork run clear. Combine cornstarch and water in a cup until smooth. Add to the skillet while stirring. Bring to a boil and cook for 2 minutes.
  2. In another skillet add butter and cook the apples, onions and remaining tablespoon of brown sugar. Cook 3-4 minutes or until apples and onions after softened.
  3. Serve with apple mixture over pork chops.
