It has been awhile since I put Asian food on the supper menu. I ran across this recipe on my sons blog; Blogchef.net. It looked really good so I decided to give it a try.

This is a simple recipe and fairly quick to put together. The pork chops turn out juicy and tender with a delicious combination of flavors.

Ingredients
  • 4 boneless pork chops
  • 1 tablespoon olive oil
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 4 garlic cloves (minced)
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon Sriracha sauce
Instructions
  1. In a medium size bowl mix together the soy sauce, honey, garlic, sesame oil, ginger, and Sriracha sauce. Work the chops into the mixture, refrigerate, and marinate for 20 minutes.
  2. While chops are marinating preheat oven to 400F.
  3. Remove chops from marinade; reserve the marinade. In a large skillet over medium high heat using the olive oil, cook the chops on one side for 5 minutes. Flip chops and add the marinade to the skillet and continue cooking for an additional 5 minutes. Transfer the skillet to the oven and bake until chops done. (145F.)
  4. Serve hot with sauce over the chops.

 

Bacon Wrapped Pork Chops with Roasted Potatoes for Two

This is a recipe for 2 but it could easily be doubled. This Bacon Wrapped Pork Chops recipe is simple and only requires a few ingredients; it’s delicious.

Bacon Wrapped Pork Chops with Roasted Potatoes for Two

Ingredients
  • 12 ounces of small red potatoes (halved)
  • 2 tablespoons olive oil
  • salt and pepper
  • 6 slices of bacon
  • 2 boneless pork chops (¾ to 1 inch thick)
Instructions
  1. Preheat oven to 375F.
  2. In a large bowl generously season the potatoes with salt and pepper; toss in the olive oil to coat.
  3. Place potatoes cut side down in a rimmed baking sheet covered with aluminum foil – the potatoes should take up about ½ of the pan. Place on center rack of the oven and bake for 20 minutes or until just tender. (baking time could be a little longer depending on the size of the potatoes.)
  4. While potatoes are baking place the bacon on a large plate and weigh the bacon down using another plate – microwave for 3 minutes or until bacon starts to shrivel. (limp but not stiff) place bacon on paper towels to let cool.
  5. Wrap pork chops with 3 strips of bacon with ends down to secure the bacon.
  6. Remove the potatoes from the oven and place the pork chops on the other half of the sheet. Return to oven and bake until pork chops reach an internal temperature of 135F. (about 15 minutes depending on size)
  7. Preheat the broiler and place the pork and potatoes about 6 inches from the broiler element. Broil until bacon is browned and crispy and chops register 145F. Tent with aluminum foil and let rest 5 minute before serving.

One dish recipes are always appealing to me and the combination of chorizo sausage and pork chops just added to the appeal. This One Dish Pork Chops with Dirty Rice is a fairly simple recipe that doesn’t require a lot of prep or cooking time.

Ingredients
  • 2 ½ cups low sodium chicken broth
  • 1 cup long grain white rice
  • 4 bone in pork rib chops (I used an assorted variety pack because thats is all that was available)
  • salt
  • pepper
  • 1 tablespoon vegetable oil
  • 4 ounces chorizo sausage (this is the smoked version – cut in half length wise and the cut into ¼ pieces crosswise)
  • 1 small onion (chopped)
  • 1 bell pepper (shopped)
  • 6 garlic cloves (crushed and minced)
  • ¼ teaspoon dried thyme
  • ¾ teaspoon Cajun spice blend
  • 3 green onions (sliced thin)
Instructions
  1. In a medium size microwavable bowl mix together the rice and 1 ¼ cups chicken broth; cover. Microwave on high for 10 minutes or until liquid is absorbed; fluff with a fork.

  3. While rice is cooking season pork chops generously with salt and pepper. In a 12 inch skillet using the oil brown the chops on one side for 4 – 6 minutes; set chops aside on a plate.

  5. Reserve about 1 tablespoon of fat in the skillet and cook the onion, red pepper, and sausage until vegetables are softened. Mix in the thyme, Cajun seasoning, and garlic and continue cooking for about 30 seconds or until fragrant. Stir in the remaining chicken broth stirring any dripping from the bottom of the pan; and then mix in the precooked rice.

  7. Arrange the pork chops on top of the rice mixture, cover, and cook on low heat for 8 – 10 minutes or until pork chops are 145F and the rice is tender.

  9. Remove pork chops to a serving platter, cover with aluminum foil, and let rest for 5 minutes. (when removing the chops scrap any rice sticking to the chops back into the pan)
  10. Add the green onions into the rice mixture and serve with the chops; Enjoy.

It has been raining so much I haven’t had time to get much outdoor work done. There is a little bit of a break in the rain so I decided on this Slow Cooler Thai Pork with Peppers Recipe so I could get some work done while supper is cooking.

This recipe was prepared as written – I thought it was pretty good but the next time I would add the peppers to the pork mixture later in the cooking process so they don’t get over cooked. The original recipe called for red bell peppers, I used yellow, because that is what I had on hand. The red obviously would give the dish a little bit of color.

Ingredients
  • 1 cup chicken broth
  • ⅓ cup soy sauce
  • ⅓ cup creamy peanut butter (if you want to add a more nutty texture to the dish use chunky)
  • 3 tablespoons honey
  • 6 cloves garlic (crushed and minced)
  • 2 tablespoons fresh ginger (minced)
  • 1 teaspoon red pepper flakes
  • 2 red bell peppers (sliced into lengths) or what colors you have available.
Instructions
  1. In the slow cooker mix together the chicken broth, soy sauce, peanut butter, honey, garlic, ginger, red pepper flakes until thoroughly combined; add the peppers (I warmed the slow cooker to help combine the honey and peanut butter)
  2. Work the pork chops into the slow cooker mixture.
  3. Cook for 5 -6 hours or until pork is tender. Remove pork from the slow cooker and when cool enough to handle shred with a fork. Add the pork back into the slow cooker and continue cooking until heated through.
  4. Serve over cooked rice

I have been serving a lot of beef and chicken lately so I thought it would be a nice change to put this Dip and Bake Pork Chops Recipe on the menu for supper. This recipe originated from a Quaker Oats cookbook printed in 1979. Up until now the thought of using oat flour as a topping never even occurred to me, I thought this idea sounded pretty good so I decided to give it a try.

Making your own oatmeal flour is as easy as processing it in you blender, or food processor, for about 60 seconds or until it forms flour like texture. You can use old fashion or quick oats, whichever one you happen to have on hand. I used about 2 cups which produced about a cup and a half of oatmeal flour. I also used boneless chops in this recipe, but I’m sure bone in would work just as well, so use whatever you prefer. The coating was really good and the chops were moist and tender.

Ingredients
  • 6 boneless pork chops (1/2 to ¾’s thick)
  • 2 cups oats (old fashion or quick oats)
  • ¾ cup grated Parmesan cheese
  • ½ teaspoon marjoram
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ⅓ cup milk
  • ¼ cup unsalted butter (melted)
  • 1 egg (lightly beaten)
Instructions
  1. Preheat oven to 400F.
  2. Process the oats in a food processor or blender to form the flour.
  3. Combine all the dry ingredients in a wide bowl.
  4. Coat a large shallow baking pan with aluminum foil lightly sprayed with cooking spray.
  5. In another bowl whisk together the egg and milk. Roll the chops in the dry mixture, and then dip in the egg and milk, and then in the dry ingredients again.
  6. Arrange the chops in the baking pan and drizzle the butter over the top. Bake for 30 – 40 minutes or until golden brown. (Instant read thermometer should read 145F.)

Apple and Sage Pork Chops Recipe

This Apple and Sage Pork Chops Recipe really appealed to me, because the ingredients fit in so well with the fall season. This is a simple recipe with a good combination of flavors. It is something different; but it was good for a change. So if you’re tired of the same old thing, give this one a try. The chops come out moist and tender and the apples add a little color to the dish.  I prepared the recipe as written-it serves 4

Ingredients

4 boneless pork chops

1 Medium onion (diced)

2 red apples (thinly sliced)

1/2 cup apple juice

1 tablespoon brown sugar

1 tablespoon flour

1 teaspoon salt

2 tablespoons olive oil

1 1/2 teaspoon rubbed sage

1 teaspoon minced garlic

1 teaspoon thyme

1/2 teaspoon ground allspice

1/2 teaspoon paprika

Directions

1. Mix all the spices in small including flour.

2. Place one tablespoon of spice mix in a plastic bag-shaking the pork chops to coat.

3. Using a large skillet with the oil brown the pork chops on both sides-remove them from the skillet.

4. Place the onion in the skillet and cook until tender. Add the apples , cook and stir for about 2 minutes.

5.  Mix in the apple juice, sugar and the rest of the flour mixture. Return the pork chops to the skillet, bring to a boil, cook on low heat till chops are done. (145F.)

This Golden Mushroom Pork Chops Recipe is really good. It is not very time consuming and is a very simple recipe to prepare. If you like golden mushroom soup, you’ll love this. The recipe calls for fresh sliced mushrooms; but I like to leave them whole whenever I can. This recipe creates a nice gravy and can severed with mashed potatoes, rice or noodles your choice I think any of them will work out fine. I followed this recipe exactly as is and the cooking time was exactly as the recipe stated, but I am sure it could vary a little according to the size chops you are using.   • ¼ teaspoon freshly ground black pepper
  • 1 onion, chopped
  • 8 oz fresh sliced or whole mushrooms
  • 2 (10.75 ounce) cans condensed golden mushroom soup
Instructions
  1. Preheat oven to 375 degrees F .
  2. Rinse pork chops, pat dry, and season with seasoned salt and pepper. Place them in a 9x13 inch baking dish.
  3. In a separate small bowl, combine the onion, mushrooms and soup. Mix together well and spoon over the chops.
  4. Cover, and bake for 45 minutes.
  5. Uncover, and bake for 15 more minutes- Pork chops are done when their internal temperature has reached 165 degrees.
