Ingredients
  • 6 boneless skinless chicken thighs (I used boneless for this recipe but I think bone in would also work fine)
  • 4 teaspoons taco seasoning
  • 1 cup salsa (mild or hot depending on your taste)
  • 1 cup shredded cheddar cheese
Instructions
  1. Preheat oven to 350F.
  2. Pat chicken pieces dry with paper toweling and season chicken with the taco seasoning. (use tour fingers to lightly rub the seasoning into the meat)
  3. Place the chicken thighs into a casserole dish lightly sprayed with cooking spray. Pour the salsa over the chicken.
  4. Bake for 30 to 40 minutes or until chicken is done. (185F.) remove chicken from the oven, sprinkle the cheese over the top, and then bake for an additional 5 minutes or until cheese is melted.
  5. Serve Hot
  6. Note: I served this is dish with hash browns but flavored rice would be a perfect match.

This Teriyaki Chicken for Two recipe was adapted from Cooks Country Cooking for two cookbook. I found their procedure for crisping the chicken pretty unique. They weighted the chicken down by placing a large pot on top of the chicken weighted with 2 (14-15- ounce cans of whatever you may have on hand). The chicken browns evenly, and is nice and crisp.

This recipe is quick and simple to prepare and doesn’t require that many ingredients; my wife absolutely loved the sauce.

Ingredients
  • 4 bone-in chicken thighs
  • 1 teaspoon vegetable oil
  • ¼ cup sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • ¼ teaspoon ginger
  • 1 garlic clove (crushed and minced)
  • ¼ teaspoon cornstarch
  • Pinch of red pepper flakes
Instructions
  1. Cover the bottom of a large sauce pan with aluminum foil using enough foil to bring the edges to the top to secure it. Place 2 cans 14 – 15 ounces each inside the pan for weight. (I lightly sprayed the bottom of the aluminum foil with cooking spray).
  2. Trim any excess skin and fat off the chicken and salt and pepper to taste. In a nonstick skillet using the oil over medium high heat place chicken in the skillet skin side down, and then place the weighted pan on top of the chicken. Cook for 10 minutes or until skin is nicely browned and crispy. Flip chicken and continue cooking until chicken reaches an internal temperature of 175F; remove from skillet and set aside on a plate and then remove any fat left in the skillet.
  3. While the chicken is cooking in a bowl whisk together the sugar, soy sauce, mirin, garlic, red pepper flakes, and cornstarch until thoroughly combined. Pour the mixture into the skillet and bring to a simmer and then place the chicken in the skillet skin side up. Cook until sauce thickens and turns glossy, and then turn the chicken in the sauce to evenly coat.
  4. Serve hot.

  • 6 Slices of White Sandwich Bread
  • 4 Slices of Deli Turkey
  • 4 Slices of Gouda
  • 1 Tbsp of Mayo
  • 1 tsp of Prepared Yellow Mustard

  • Milk - a little less than ¼ cup
  • Seasoned Salt to taste
  • 1 Tablespoon of Vegetable Oil
  • 2 Tablespoons of Butter

  1. in a small bowl mix together the mayo and mustard; aside.

  3. In a shallow wide bowl whisk together the eggs and milk – big enough to dip one side of the sandwich in.

  5. Lay out three pieces of bread, spread a thin layer of the mayo on one piece and top with a slice of cheese and then a slice of turkey (I used several slices because I used thinly sliced). For the second piece of bread spread on a little more of the mayo mixture and top with another slice of turkey and place another slice of cheese on top and place the 3rd piece of bread on top of that to form the sandwich.(do not skip the last slice of cheese it is needed to hold the sandwich together when the cheese melts).

  8. In a nonstick skillet over medium high heat melt the butter along with the oil. Dip each side of the sandwich in the egg mixture like you are making french toast. Place in the skillet and cook until golden brown, flip, and continue cooking until nicely browned and cheese is melted.

  • 8 oz spaghetti
  • 3 eggs
  • ¼ cup milk
  • ½ cup grated Parmesan cheese
  • ½ teaspoon oregano
  • 2 cloves garlic (crushed and minced)
  • 2½ cups spaghetti sauce
  • 3 cups shredded mozzarella cheese
  • 1 package pepperoni (3.5 ounces sliced)
Instructions
  1. Cook spaghetti according to package directions; drain.
  2. Preheat oven to 375F.
  3. In the bottom of a large bowl whisk the eggs and milk together and then mix in the Parmesan cheese, garlic, and oregano and then mix in the cooked spaghetti.
  4. Spray a 13 x 9 casserole dish with cooking spray and pour the spaghetti mix into the casserole dish.
  5. Pour the spaghetti sauce over the top, and top with ½ of the pepperoni slices. Spread the mozzarella cheese evenly over the top and then top with the remaining pepperoni.
  6. Bake for 25 minutes or until cheese is melted and starts to brown.
  7. Let rest for 5 minutes and serve hot.

It’s amazing how good these butter cookies are because they require so few ingredients – chances are you will have every thing you need on hand.
When I first looked at this recipe I thought it should have had baking powder in the ingredients, but it did not. The cookies were prepared as written without baking powder. They were a little flat but they had good texture and are delicious – actually I could not stop eating them.

This is a really simple recipe, give it a try, and enjoy.

  • 1 cup butter (softened)
  • ⅔ cup sugar
  • 2 large eggs (beaten)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 375F.
  2. In a large bowl cream the butter while gradually adding the sugar.
  3. Mix in the eggs, vanilla and then add the flour mixing until just moistened.
  4. Place the cookie dough 1 teaspoon at a time on a baking sheet lined with parchment paper, or lightly sprayed with cooking spray. Bake for 8 minutes, let rest for 1 minute, and then remove to a wire rack to cool.

  • ⅓ cup granulated sugar
  • ⅓ cup plus 8 teaspoons all-purpose flour
  • 8 teaspoons brown sugar (packed)
  • 1 teaspoon cinnamon
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • ⅛ teaspoon salt
  • 4 tablespoons unsalted butter (sliced into 4 pieces and chilled)
  • 1 large egg (at room temperature)
  • 2 tablespoons plus 2 teaspoons sour cream
  • confectioners sugar for garnish
Instructions
  1. Preheat oven to 350F. and spray 4 muffin tins with baking spray with flour. (I used cooking spray and lightly sprinkled the tins with flour)
  2. Place granulated sugar, 8 teaspoons of flour, and 4 teaspoons of brown sugar into the bowl of a food processor; process until well combined. Transfer 2 tablespoons of the mixture into a small bowl. To create the streusel whisk in the cinnamon, and 4 teaspoons of brown sugar into the small bowl mixture; set aside.

  4. Add ⅓ cup flour, baking powder, baking soda, and salt to the mixture in the food processor and mix until well combined. Place the butter pieces in the food processor and pulse until small pebbly pieces form. Add the egg and sour cream and mix until well combined.

  2. Cook bacon in a large skillet until crispy; remove bacon and set aside on a plate covered with paper toweling to drain.
  3. In the same skillet cook red pepper pieces in the bacon dripping to crisp-tender; using a slotted spoon place remove the pepper, and place in medium size bowl. Add the Alfredo pasta sauce, Sun Dried Tomato pesto, and mix until combined.
  4. In the same skillet, season the chicken with pepper and cooked until nicely browned on both sides. Place chicken in the bottom of an 11 x 7 casserole dish and pour the sauce over the top. Cover with aluminum foil and bake for 35 minutes or until the internal temperature of the chicken is 165F.
  5. Serve chicken and sauce over rice or pasta.

  • 1 can Italian stewed tomatoes (14.5 ounces)
  • 1 ½ cups shredded sharp cheddar cheese (divided)
  • ½ cup sour cream
  • 1 ½ teaspoons chili powder
  • ¼ teaspoon garlic powder

  2. Preheat oven to 350F.
  3. Cook pasta according to package directions for al dente; drain and rinse. Place cooked spaghetti in a 13 x 9 casserole dish lightly sprayed with cooking spray.
  4. While pasta is cooking cook the burger and onion in a large skilled until burger is no longer pink inside; drain any excess fat. Stir in the chili powder, tomatoes, 1 cup cheese, sour cream, garlic powder, and salt and pepper to taste; cook until heated through.
  5. Mix the chili mixture into the spaghetti and sprinkle the rest of the cheese over the top. Cover with aluminum foil and bake for 30 minutes or until mixture is hot and bubbly and cheese is melted.

It was just my wife and I for supper, and between the 2 of us there wasn’t a crumb left over.

  • 1 stick cold unsalted butter (cut into ¼ inch pieces – I threw them in the freezer for a few minutes to get them good and cold.)
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ¾ cups whole mild ( I used some cream I had left over from the holidays and mixed it with 2% milk.)
Instructions
  1. Preheat oven to 400F.
  2. In a large bowl whisk together all the dry ingredients. Fold the butter pieces in and using your fingers or a pastry blender work the butter into the dry ingredients to form a pea like texture.(a food processors makes quick work for this)
  3. Add the milk and stir until just moist.
  4. Line a baking sheet with parchment paper, or lightly spray with cooking spray. Using ¼ cup measuring cup place dough on baking sheet about 2 inches apart. Bake until biscuits are golden brown, about 20 minutes, let cool a little bit and serve warm.
