This Baked Potato Wedges recipe makes a good side dish. I used them for a fish fry, and they went with the fish really well. There is very little prep time involved and they bake fairly quickly. So if you want to get away from the oil for fries give these a try.

  • 3 – 4 medium size potatoes (scrubbed with skin on)
  • 3 large eggs
  • ¼ cup fresh parsley (Chopped)
  • 1 tablespoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes

Instructions
  1. Preheat oven to 375F.
  2. Slice potatoes in half and then slice again to quarter. Whisk eggs in a small bowl. In another bowl mix together the rest of the ingredients. Dip potato wedges in the eggs and then roll them in the spice mixture until well covered.
  3. Place wedges on a baking sheet lightly sprayed with cooking spray and bake for about 30 minutes or until potatoes are done.
  4. Let rest for 5 minutes and serve.

I received an Instant Pot for a Christmas present from my son and decided to give it a try using an Instant Pot baked beans recipe. I have to admit I was a little skeptical that the beans would cook, and come out tender, with only 20 minutes of cooking time under pressure. The end result was a nice surprise, the beans were just right.

If you own an Instant Pot or a similar pressure cooker and need a good side dish give this Instant Pot Baked Beans Recipe a try; there’re really good.

Ingredients
  • 1. 1 pound dried navy beans (cover and soak with water and 1 ½ tablespoons of salt for 8 – 16 hours in a cool place or refrigerator) The night before you make them works out fine.
  • 2. 6 strips thick cut bacon (sliced crosswise into ¼ - ½ inch pieces)
  • 3. 1 small onion (chopped)
  • 4. 2 cloves garlic (crushed and minced)
  • 5. 1 ¾ cups cold water
  • 6. ¼ cup dark molasses
  • 7. ¼ cup maple syrup
  • 8. 1 tablespoon soy sauce
  • 9. ¼ teaspoon salt
  • 10. 2 bay leaves
  • 11. Black pepper to taste
  • 12. 2 teaspoons Dijon mustard
  • 13. 1 teaspoon apple cider vinegar
Instructions
  1. Drain and rinse beans through a strainer.
  2. Place bacon in pressure cooker and turn heat to medium (Instant pot press the sauté button). Cook bacon until crispy. Stirring occasionally. Add the diced onion and black pepper; sauté for 1 minute. Add the garlic and continue cooking until fragrant (about 30 seconds)
  3. While bacon is cooking in a small bowl mix together the molasses, maple syrup, soy sauce and 1 ¾ cup of water until well combined.
  4. When bacon mixture is done pour in ½ cup of the molasses mixture and scrap the bottom of the slow cooker to scrap any drippings off the bottom. Add the beans, ¼ teaspoon salt, bay leaves, and mix in the rest of the molasses mixture making sure all the beans are covered.
  5. Close lid – and cook at High pressure for 20 minutes, and then allow 20 minutes of natural release. After 20 minutes move venting knob to venting position to release the remaining pressure and open lid carefully. Mix in the Dijon mustard and cider vinegar.
  6. Press the sauté button and cook to desired consistency. At this point you can also add salt and pepper to taste, extra vinegar, and molasses if needed.
  7. Note: In the original recipe they added additional molasses – I did the same.

Simple Spoon Donuts Recipe

I was short on time and really wanted to make some donuts to go with my coffee in the morning. I did not have the time to make regular donuts so I decided to try this spoon donuts recipe.

This recipe requires just basic ingredients so there is a good chance you will have it all on hand. I had fresh donuts on the table in about 30 minutes.

I used a sugar cinnamon coating with this recipe but you could use plain sugar, confection sugar, or maybe even some chocolate.

Ingredients
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon nutmeg
  • ¼ cup vegetable oil
  • ¾ cup milk
  • 1 egg beaten
  • For sugar Cinnamon coating
  • ½ cup sugar
  • 1 teaspoon cinnamon
Instructions
  1. Preheat deep fryer to 375F.
  2. Whisk all the dry ingredients together in a large bowl and then mix in the vegetable oil, milk, and egg until mixture is smooth.
  3. In a shallow dish whisk together the sugar and cinnamon.
  4. Place a spoon full of batter at a time into the deep fryer. Cook for about 3 minutes or until golden brown on both sides. Place donuts on paper toweling to cool, and then roll the donuts in the sugar mixture.

This one dish recipe is simple and quick making it a great recipe for after school or work. This string pie is basically baked spaghetti with a little different twist consisting of eggs and cottage cheese. There is plenty of room for extras like adding mushrooms and maybe some red pepper flakes to add a little heat; just use your imagination.

  • 1 pound lean ground beef
  • ½ cup onion (chopped)
  • ¼ cup green pepper (chopped)
  • 2 cups spaghetti sauce
  • 8 ounces spaghetti (cooked and drained according to package directions)
  • ⅓ cup grated Parmesan cheese
  • 2 large eggs (beaten)
  • 2 teaspoons butter
  • 1 cup cottage cheese
  • ½ cup shredded Mozzarella cheese
Instructions
  1. Preheat oven to 350F.
  2. Cook spaghetti.
  3. While spaghetti is cooking in a large skillet over medium high heat cook the burger, pepper, and onion until burger is no longer pink inside; drain excess fat if needed. Mix in the spaghetti sauce.
  4. In a large bowl mix together the spaghetti, eggs, Parmesan cheese, and butter.
  5. Place the spaghetti mixture into the bottom of a 13 x 9 casserole dish lightly sprayed with cooking spray. Spread the cottage cheese over the top and then top with the meat mixture. Sprinkle with the Mozzarella cheese and bake until thoroughly heated and cheese is melted; about 20 minutes.
  6. Serve hot

  • 2 pounds lean ground beef
  • ½ cup seasoned breadcrumbs
  • 2 teaspoons dry mustard
  • 1 teaspoon beef bouillon
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon ketchup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Ingredients for Gravy
  • 2 onions (cut in half and then sliced)
  • 1 tablespoon minced garlic
  • 1 tablespoon ketchup
  • 1 teaspoon beef bouillon
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Worcestershire sauce
  • 2 cups beef broth
Instructions
  1. In a large bowl using your hands mix together the ground beef, bread crumbs, dry mustard, 1 teaspoon beef bouillon, 2 teaspoons Worcestershire sauce, ketchup, salt, and pepper. Divide burger into 8 patties of equal size.
  2. In a large skillet with high sides cook the burger over medium high heat using the oil until nicely browned; set aside on a platter.
  3. In the same skillet cook the onion for several minutes until soft, add the garlic and cook for 1 more minute. Stir in the flour and cook until flour starts to brown (stirring constantly). Mix in the beef broth, 2 teaspoons Worcestershire sauce, 1 teaspoon beef bouillon, and 1 tablespoon of ketchup. Continue cooking until mixture starts to thicken.
  4. Work the patties into the gravy, cover, reduce heat to simmer and continue cooking until burgers are done (165F). Add additional beef broth if mixture gets to thick.

Chicken with Bacon and White Wine Sauce

I have a tendency to shy away from canned soup recipes, but when I saw this Chicken with Bacon and White Wine Sauce recipe, it looked really good, so I decided to give it a try. There was no disappointment here, it was very good.

This is a simple recipe that requires only a few ingredients and cooks quickly. I served the chicken and sauce over spaghetti, but I’m sure it would pair well with hash browns or rice.

Ingredients
  • 8 ounces bacon (cut into 1-inch pieces)
  • 1¼ pounds skinless, boneless chicken breast halves
  • 1 cup dry white wine
  • 1 Condensed Cream of Mushroom Soup
Instructions
  1. Cook bacon in a large skillet until crispy; set aside on paper towels to drain.
  2. Remove the fat from the skillet leaving about one tablespoon in the skillet. Season chicken with salt and pepper and cook over medium heat until nicely browned on both sides; remove chicken and set aside on a plate.
  3. Pour the wine into the skillet, big to boil, and scrap any dripping off the bottom of the pan and then stir in the cream of mushroom soup. Mix in the bacon and arrange the chicken into the sauce in the pan with any accumulated juices. Cover and cook on simmer until chicken is done – 10 – 15 minutes.
  4. Serve with sauce over chicken.

  • ¼ cup granulated sugar
  • ½ teaspoons cornstarch
  • Salt
  • 2 cups blueberries
  • ½ cup all-purpose flour
  • ⅓ cup old fashion rolled oats
  • ¼ cup light brown sugar (packed)
  • ¼ teaspoon cinnamon
  • 4 tablespoons unsalted butter (cut into 4 pieces and chilled)
Instructions
  1. Preheat oven to 375F.
  2. In a medium bowl gently mix together the blueberries with the granulated sugar, cornstarch, and a pinch of salt. Divide blueberries between 2 - 12 ounce ramekins.
  3. In another medium size bowl mix together the oats, flour, brown sugar, cinnamon, and a pinch of salt. Using your hands work the butter into the mixture until dime size clumps form; sprinkle the mixture over the top of the blueberries.
  4. Place ramekins on a cookie sheet and bake until bubbly around the edges and topping is a deep golden brown.
  5. Let cool 15 minutes before serving.

I needed a quick and simple recipe for supper so I decided to give this Bacon Cheeseburger Casserole recipe a try. Looking at the recipe I felt there was some room for improvement, but I decided to keep it simple and prepared the dish as written.

This would be a great one dish supper to put together for the kids after school – it’s the type of recipe I’m sure they would love.

Ingredients
  • 1 pound lean ground beef
  • 1 medium onion (finely chopped)
  • ⅓ cup ketchup
  • 2 tablespoons yellow mustard
  • 1 cup shredded sharp cheddar cheese
  • 8 slices of bacon (cooked crispy and crumbled)
  • 4 cups tater tots
Instructions
  1. In a large skillet cook bacon until crispy; drain and cool on paper towels; crumble and set aside reserving about 1 tablespoon of bacon fat in the skillet.
  2. Preheat oven to 400F.
  3. Add the onion to the skillet and cook over medium high heat until onion starts to brown. While cooking scrap any dripping off the bottom of the pan. Add the burger and continue cooking breaking up burger, and cooking until no longer pink inside; drain any excess fat. Add the ketchup and mustard and mix until combined. Spoon the meat mixture into a 9x9 casserole dish lightly sprayed with cooking spray.
  4. Sprinkle the bacon on top of the burger and ½ of the cheese. Arrange the tater tots over the top and bake for 30 – 35 minutes or until tater tots are nicely browned.
  5. Remove the casserole from the oven and sprinkle the rest of the cheese over the top. Bake for an additional 5 minutes or until cheese is melted – serve hot.

This Chicken Florentine for Two recipe has a delicious combination of flavors, and the health benefits of fresh spinach. This recipe is the perfect amount for serving two people.

The recipe calls for Parmesan cheese mixed in the sauce and then used again as a garnish – I just used it in the sauce because I did not want to overpower the recipe with the Parmesan cheese. However I did include that step in the recipe.

Ingredients
  • 2 boneless skinless chicken breasts
  • Salt and pepper
  • 2 tablespoons vegetable oil (divided)
  • 6 ounces fresh baby spinach
  • 1 small shallot (minced)
  • 1 garlic clove (minced)
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated parmesan cheese (divided)
  • ¼ teaspoon lemon zest (grated)
  • 1 teaspoon lemon juice
Instructions
  1. Pound chicken down to ½ inch thickness; pat dry with paper toweling and salt and pepper on both sides; set aside.
  2. Heat 1 tablespoon of the oil in a large nonstick skillet over medium high heat. Place the spinach in the skillet with ⅛ teaspoon salt. Cook stirring occasionally until spinach has wilted; set spinach aside in a colander to drain any excess liquid.
  3. Wipe skillet clean with paper towels and place 1 tablespoon of oil in the now empty skillet. Cook chicken over medium high heat until nicely browned and chicken registers 160F on an instant read thermometer. Set chicken aside on a plate and tent with aluminum foil to keep warm.
  4. Place the garlic and shallot into the oil and cook until fragrant, and then mix in the broth and cream. Cook until reduced to about ⅔ cup (about 7 minutes on medium heat). Off heat and mix in two tablespoon of Parmesan cheese, lemon zest, and lemon juice. Salt and pepper to taste and then mix in the spinach. Let set long enough for the spinach to get warmed through.
  5. Serve chicken topped with the spinach and sauce, and the remaining 2 tablespoons of Parmesan cheese.

Ingredients
  • 6 boneless skinless chicken thighs (I used boneless for this recipe but I think bone in would also work fine)
  • 4 teaspoons taco seasoning
  • 1 cup salsa (mild or hot depending on your taste)
  • 1 cup shredded cheddar cheese
Instructions
  1. Preheat oven to 350F.
  2. Pat chicken pieces dry with paper toweling and season chicken with the taco seasoning. (use tour fingers to lightly rub the seasoning into the meat)
  3. Place the chicken thighs into a casserole dish lightly sprayed with cooking spray. Pour the salsa over the chicken.
  4. Bake for 30 to 40 minutes or until chicken is done. (185F.) remove chicken from the oven, sprinkle the cheese over the top, and then bake for an additional 5 minutes or until cheese is melted.
  5. Serve Hot
  6. Note: I served this is dish with hash browns but flavored rice would be a perfect match.
