Fresh from the lake into the frying pan -This is a moist and delicious trout recipe.

The fishing was good here on Keweenaw Bay this week, producing a nice Lake Trout catch, so I decided to post this Pan Fried Lake Trout recipe. This fish coating browns nicely, has a nice crunch, and complements the fish flavor very well.

This recipe works well for either Lake Trout or Salmon.

  • 4 -6 Lake trout fillets (depending on size)
  • ½ cup grated Parmesan cheese
  • ½ cup saltine crackers (crushed – about ½ package)
  • ½ cup cornmeal
  • ½ teaspoon garlic salt
  • ⅛ teaspoon pepper
  • 2 eggs (lightly beaten)
  • ½ cup milk
  • Vegetable oil for frying
  • Lemon wedges (optional)
Instructions
  1. In a shallow bowl (I like to use a pie dish)whisk together the Parmesan cheese, crackers, garlic salt, cornmeal, and black pepper. In a medium size bowl mix together the eggs and milk until well combined.
  2. Pat fish dry with paper toweling, dip fish in the milk mixture, and then roll them in the dry mixture pressing lightly to coat.
  3. Cook fish in a large skillet using the oil over medium high heat until fish is nicely browned on both sides and separates easily with a fork (about 5-7 minutes per side).
  4. Serve hot with lemon wedges.

I’ve prepared shrimp scampi in the past and really enjoyed the dish, so when I saw this Fish Scampi Recipe I decided to give it a try. It seems like as it gets closer to Easter I always end up trying harder to create a good assortment of seafood recipes to prepare on Friday. Easter is getting close so it won’t be long before I get a break and can concentrate Friday’s dinner in a different direction.

This Fish Scampi Recipe is simple to put together and doesn’t require much prep or cooking time. I served this recipe with baked potatoes, but you could easily serve the fish and sauce over pasta; which I think would be a really good combination. Ingredients
  • 1 pound Salmon or Trout fillets
  • 1/ 4 cup virgin olive oil
  • 3 cloves garlic (minced)
  • ¼ cup shite wine
  • ½ teaspoon sweet basil
  • ¼ teaspoon oregano
  • ⅛ teaspoon dried pepper flakes (or to taste)
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon salt
  • Fresh ground pepper
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
Instructions
  1. Pre- heat oven to 450F.
  2. Using a small skillet or sauce pan brown the garlic in the olive oil.
  3. Add the wine and the rest of the ingredients and simmer for 10 minutes.
  4. Place the fish fillets in a 9 x 13 baking dish sprayed with cooking spray. Evenly coat the top of the fish with the wine sauce. Bake for 10 minutes or until done.
  5. Serve fish with the wine sauce, or over pasta-then topped with fresh parmesan cheese.

Baked Horseradish Salmon Recipe

I had some salmon in the freezer and decided to look for a recipe that was a little different; when I came across this Baked Horseradish Salmon Recipe at first, I thought, there was no way this combination of flavors could come together; but I was wrong. This Baked Horseradish Salmon Recipe was pretty good and did a good job of masking any of the fishy taste the salmon may have had. This is a simple recipe, with almost no prep time, and bakes very quickly so you can have supper on the table in a short period of time. I served this salmon recipe with flavored rice, and a salad. It was an excellent combination.

Ingredients

1 pound salmon fillet (cut into 4 pieces)

1 tablespoon butter (melted)

1 tablespoon prepared horseradish

2 teaspoons lemon juice

1/ 4 teaspoon garlic powder

1/ 8 teaspoon black pepper

Directions

Pre-heat oven to 375F.

1. Place the salmon fillets on a 9 x 13 casseroles, or baking dish sprayed with cooking spray.

Sometimes I like to go out of the box sort of speak and prepare a recipe that is a little different. This Baked Blackberry Glazed Salmon Recipe is exactly that. I love cooking with berries because of the beautiful colors and wide assortment of delicious flavors. With Lent being here and the need for fish in this house on Fridays I was looking for something a little different. This Blackberry Glazed Salmon Recipe is a little time consuming because of the time it takes to boil down the blackberry puree mixture. I rushed this a little bit and had wished I had let it boil down a little thicker.

Baked Blackberry Glazed Salmon Recipe

Ingredients
  • 1 cup water
  • 12 ounces fresh blackberries (1 pint)
  • 1 (1-inch) piece ginger, peeled and sliced into coins
  • ½ lemon juice from fresh lemon
  • ¼ cup sugar
  • 1 tablespoon olive oil
  • 4 (8-ounce) skinless salmon fillets
  • Salt and freshly ground black pepper
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a small saucepot over medium-high heat, combine water, blackberries, ginger and lemon juice. Bring to a boil, reduce to a simmer and cook until berries break down.
  3. Remove berries from heat and strain into a bowl; use the back of a spoon to push the blackberry pulp through.
  4. Return blackberry mixture to the sauce pan, add sugar, and bring to a boil. Lower the heat and simmer until reduced by half, stirring occasionally to avoid burning.
  5. Remove from heat and let cool.
  6. Brush a baking sheet with olive oil and set fillets on top. Brush fillets with oil and season with salt and pepper.
  7. Once blackberry mixture is cool, brush over salmon fillets and bake for 4 minutes.
  8. Brush again with blackberry mixture. Turn oven to broil and broil another 3 minutes or till fish flakes with a fork.
  9. Serve with slices of lemon.

I know deep frying is not the healthiest way to cook fish, but it is so good. This Deep Fried Salmon Fish Sticks Recipe has an excellent combination of flavor and is very easy to prepare. I pretty much followed the recipe as is, but I am sure you could spice it up as much as you want. I was tempted to add some Cajon seasoning, but decided to keep it on the light side.   • 2 cups flour
  • 1 pound boneless skinless salmon filets
  • 1 tablespoon sweet basil

  • 1 teaspoon salt

Ingredients
  • 3 tablespoons dark brown sugar
  • 4 teaspoons prepared Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 2 salmon steaks about 8 ounces ¾ to 1 inch thick
Instructions
  1. Mix together the brown sugar, mustard and soy sauce.

  4. Brush one side of the salmon fillets with half of the glaze.

Ingredients
  • 2 Tablespoon ground paprika
  • 1 Tablespoon onion powder
  • 1 Tablespoon cayenne pepper
  • 2 Teaspoon salt
  • ½ Teaspoon ground white pepper
  • ½ Teaspoon ground black pepper
  • ¼ Teaspoon dried thyme
  • ¼ Teaspoon dried basil
  • ¼ Teaspoon dried oregano
  • ½ cup butter-melted
  • 2 lbs of Salmon fillets
Instructions
  1. Mix all the spices together into a bowl.
  2. Melt the butter.
  3. Coat the salmon fillets on both sides with ¼ cup butter. Then sprinkle them over evenly with the spice mixture. Drizzle one side of each fillet with ½ half the remaining butter.
  4. Using a skillet over high heat, cook the salmon fillets butter side down until blackened. 2 to 5 minutes. Turn the fillets and drizzle with the left over butter. Continue cooking until blackened and the salmon flakes easily with a fork.
