The plan was to purchase breakfast sausage from the store but it was all frozen and I didn’t have the time to let thaw out so I decided to put my own together. I purchased the ground pork for this recipe but you could easily grind your own if you have a grinder available. Whenever I do this I try and make a little extra so I can freeze some of the sausage. This recipe is mildly seasoned so you might want to add the cayenne pepper to taste if you want to turn up the heat a little bit. Fresh homemade breakfast sausage is a nice treat and it’s not as hard to make as you think; give it a try.

Ingredients
  • 2 pound of ground pork
  • 1 tablespoon maple syrup
  • 1 teaspoon garlic powder
  • 2 teaspoons dry sage
  • 1½ teaspoons course ground black pepper
  • 1 teaspoon salt
  • 11/2 teaspoon dried thyme
  • ⅛ teaspoon cayenne pepper (or to taste)
  • 2 tablespoons butter
Instructions
  1. In a large bow starting with the ground pork mix all the ingredients together except for the butter. (Using your hands work best for this)
  2. Form the bulk sausage into patties and cook in butter until browned and done. (Internal temperature of 145F.)
  3. Makes 16 depending on size

Reduced Fat Biscuits and Sausage Gravy Recipe

I love biscuits with sausage gravy on top of them but don’t like to make them very often because of the amount of fat in the sausage gravy. When I saw this Reduced Fat Biscuits and Sausage Gravy Recipe I was a little reluctant to try it because I just couldn’t visualize the taste even being close to the same. To my surprise this Reduced Fat Biscuits and Sausage Gravy Recipe was delicious; it was so good I could hardly tell the difference, and my wife said it was as good as the original and, maybe even better. Instead of making my own biscuits for this recipe I used Pillsbury Grands. If you would rather make your own biscuits just use your favorite biscuit recipe. Don’t cut corners by using store bought sausage, the home sausage recipe in this recipe is as good as it gets.

Ingredients
  • 8 large biscuits
  • Sausage
  • 1 ¼ pounds lean ground turkey
  • 2 teaspoons ground sage
  • 1 ½ teaspoons black pepper
  • 1 teaspoon salt
  • 1 clove garlic (minced)
  • ½ teaspoon thyme
  • ¼ teaspoon baking soda
  • ⅛ teaspoon cayenne pepper (or to taste)
  • Gravy
  • 1 teaspoon vegetable oil
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 ½ cups evaporated skim milk (1 can)
  • 2 tablespoons low fat cream cheese
  • ½ cup water
Instructions
  1. To make sausage place turkey in a large bowl, add all the sausage ingredients and mix until thoroughly combined. (Hands seem to work the best for this)

  4. To make the gravy cook the sausage using the oil in a large skillet over medium heat, breaking the sausage up as it cooks. Cook until no longer pink inside. Sprinkle and mix in the flour; cook for 1 minute. Mix in the chicken broth, milk and stir in the water. Brink to a boil and then reduce to a simmer and cook until gravy thickens. Remove from the heat and mix in the 2 tablespoons of low fat cream cheese.
  5. Serve over hot biscuits and enjoy

Sweet and Sour Sausage Stir Fry Recipe

I like preparing stir fry recipes, so when I came across this Sweet and Sour Sausage Stir Fry Recipe, I thought I would give it a try. It is obvious this is not your standard stir fry but the blend of the pineapple with the smoked sausage was a good combination of flavors. This is a lightly seasoned recipe that calls for low sodium soy sauce so if you are used to kind of a salty taste in you stir fry you may want to add some salt to taste. This is a simple recipe with not much cooking or prep time; so if you’re in a hurry you can have dinner on the table pretty fast. I prepared the recipe as written I was happy with the results. Ingredients
  • 1 16 ounce package smoked sausage (I used smoked Polish Sausage) cut into 1/ 2 inch pieces.
  • 1 medium onion (sliced lengthwise)
  • 1 cup shredded carrots
  • 1 can unsweetened pineapple chunks (undrained)
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • 6 tablespoons water
  • 2 tablespoons reduced sodium soy sauce
  • Cooked white rice
Instructions
  1. Brown sausage in a nonstick wok, or large frying pan.
  2. Add the onion, carrots, and stir fry until crisp tender. Then drain the pineapple reserving the juice; add the pineapple to the sausage mixture.
  3. In a bowl combine the water, ginger, pineapple juice, soy sauce and mix until smooth. Add the mixture to the skillet or wok, bring to a boil, and cook until thickened.
  4. Serve over hot rice

Sausage Ravioli Lasagna Recipe

I have really wanted to make raviolis from scratch and it seems like because of the time involved I never get around to it. Although my attentions were good yesterday it still didn’t happen. So when I saw this Sausage Ravioli Lasagna Recipe that called for frozen Ravioli, I decided to give it a try. There are a lot of variables in this recipe. The flavor of the Italian sausage you use and the brand of spaghetti sauce will have a major influence on the end results. I think you could probably replace the Italian sausage with lean ground beef if you wanted to. I used mildly seasoned Italian sausage on this one so the result was a mildly flavored Sausage Ravioli Lasagna. I do like to season my recipes on the mild side so this worked out well for me. The green pepper, mushrooms and onion are also optional; just add the ingredients you like. This Sausage Ravioli Lasagna Recipe is pretty good and I think if I make it again I will change the ravioli, from the cheese ravioli, just to try a different version of the recipe. Ingredients

1 package frozen cheese ravioli (25 ounces)

1 1/2 pounds bulk Italian Sausage or lean ground beef

1 container ricotta cheese (15 ounces)

1 egg (lightly beaten)

1 medium green bell pepper (chopped)

1 medium onion (finely diced)

8 ounces fresh mushrooms (sliced)

4 cloves of garlic (thinly sliced)

1 teaspoon dried basil

1/2 teaspoon Italian seasoning

2 jars spaghetti sauce (one 26 ounces, one 14 ounces)

2 cups (8 ounces) shredded Italian cheese blend

Directions

1. Cook ravioli to package instructions and set aside.

Preheat oven to 350F

2. In a large frying pan brown the sausage, garlic, onion, mushrooms and green pepper until sausage is no longer pink inside. Drain if necessary.

3. In a bowl combine the ricotta cheese, basil, egg and the Italian seasoning. Set aside, and drain the raviolis.

4. Using a 13 x 9 inch casserole or baking dish sprayed with cooking spray pour 1 1/3 cups spaghetti sauce over the bottom of the dish.

5. Layer with 1/2 of the raviolis, and then 1/2 of the sausage; then spread the ricotta cheese mixture over the sausage and top with another 1 1/3 cups spaghetti sauce.

6. Make another layer using the remaining ravioli and sausage, and then spread the rest of the spaghetti sauce over the top. Top with the shredded Italian cheese blend.

7. Bake covered for 30 minutes at 350F. Remove the cover and bake for an additional 10 minutes, or until cheese is melted.

Let stand for 15 minutes before serving
