Slow Cooker Chili for Two recipe picture

This simple slow cooker chili recipe for two doesn’t require a lot of prep time, but takes enough time to cook in the slow cooker so you can get some things done while it’s cooking.  The chili is a little on the spicy side, but for me was just right. If you want to add a little more heat increase the amount of chipotle chili in adobo sauce or add some cayenne pepper to taste.

Ingredients
  • 1 pound lean ground beef
  • 2 tablespoons chili powder
  • 2 tablespoons tomato paste
  • 3 garlic cloves (crushed and minced)
  • 1½ teaspoons ground cumin
  • 1 can kidney beans (15 ounces drained and rinsed)
  • 1 can tomato sauce (15 ounces)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 ½ tablespoons soy sauce
  • 1 ½ teaspoons brown sugar
  • 1 teaspoon chipotle chili in adobo sauce (minced)
  • Salt and pepper
  • Cheddar cheese for garnish (optional)
Instructions
  1. Cook the ground beef, chili powder, tomato paste, garlic, and cumin in a large skillet over medium high heat stirring and breaking the burger into chunks as it cooks; cook until burger is no longer pink inside.
  2. Place the burger mix into a slow cooker lightly sprayed with cooking spray and mix in the beans, tomato sauce, chipotle chili, and tomatoes. Season with ½ teaspoon salt, and ½ teaspoon pepper.
  3. Cook covered for 3 to 4 hours on high or 5 to 6 hours on low.
  4. Serve hot garnished with the cheese.

Quick Chili Recipe

Here in Upper Michigan the temperatures our just terrible this week. We have single digits for daytime highs that are barely above zero and wind chills going in to the 30-40 below zero range. This put the family in the mood for chili real fast.

There is no doubt that the best way to make chili is by allowing it to simmer for a long period of time; but sometimes, time does not allow for that. This Quick Chili Recipe is pretty basic and seasoned almost perfectly for my taste. I don’t like a lot of heat in my chili and this recipe does not have cayenne pepper as one of the ingredients so it’s pretty mild. If you like your chili on the hot side add some cayenne pepper to taste.

The next time you are in the mood for chili and don’t have the time to spend hours cooking it give this Quick Chili Recipe a try. It’s really good.

Ingredients
  • 1 pound lean ground beef
  • 2 tablespoons Chili Powder
  • 2 teaspoons ground Cumin

  • ½ teaspoon dried Oregano Leaves
  • 1 can dark red kidney beans (15 ounces drained)
  • 1 can diced tomatoes (14½ ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 medium onion (chopped)
  • 1 green pepper (chopped-optional)
  • Shredded cheddar for garnish
Instructions
  1. In a large skillet brown the burger, and onion, until burger is no longer pink inside. Drain if needed.
  2. In a large kettle or Dutch oven mix together the burger, green pepper, tomatoes, tomato sauce and all the seasoning.
  3. Bring the chili to a boil, reduce the heat to low, and simmer for 20 minutes or until the green pepper is tender.
  4. Garnish with Shredded cheddar

What a crazy winter; here in Upper Michigan we hardly have any snow which is highly unusual for us, however the cold is really hanging in there. It has been quite awhile since I made chili and with this cold weather I wanted a chili recipe with a little bit of a bite to it. This Chili recipe is one of the best, you’ll love it. This is a large recipe and it will serve about 12 people. You can cut it in half if it’s too much or freeze the rest. It is great reheated. Enjoy!

Ingredients
  • 2 pounds ground beef
  • 1 pound Italian sausage
  • 3 (15) ounce cans chili beans (drained)
  • 1 (15 ounce) can chili beans in spicy sauce
  • 2 (28 ounce) cans diced tomatoes (with juice)
  • 1 (6 ounce) can tomato paste
  • 1 large onion (chopped)
  • 3 stalks celery (chopped)
  • 2 green bell peppers (seeded and chopped)
  • 2 green chili peppers (seeded and chopped)
  • 1 tablespoon bacon bits
  • 4 beef bouillon cubes
  • ½ cup beer
  • ¼ cup chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 teaspoons hot pepper sauce (or any hot sauce)
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon white sugar

Instructions
  1. Step 1: In a large stock pot over medium-high heat add ground beef and Italian sausage. Break into small pieces with a spatula and cook until browned. Drain off any excess fat.
  2. Step 2: Add spicy chili beans (with the sauce), chili beans, diced tomatoes and tomato paste. Next, add in onion, celery, green peppers, green chili peppers, bacon bits, beef bouillon cubes and beer. Season the chili with chili powder, garlic, oregano, Worcestershire sauce, cumin, hot pepper sauce, basil, salt, pepper, cayenne pepper, paprika, and sugar. Mix well. Cover and simmer for 2 hours stirring occasionally.
