It has been quite a while since I have put Mexican food on the dinner menu. When I saw this Slow Cooker Fajitas Recipe it looked like it would be pretty good. Everything is cooked in the slow cooker so I knew whatever steak cut I used would turn out very tender. I don’t care for dishes that are two heavily spiced. This recipe was about right for me; a little nippy, but not too hot. Ingredients
  • 1 each medium green, sweet red and yellow peppers (cut into ½-inch strips)
  • 1 sweet onion (cut into ½-inch strips)
  • 2 pounds beef steak (cut into thin strips)
  • ¾ cup water
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • ½ teaspoon cayenne pepper
  • 8 flour tortillas warmed (8 inches)
  • ½ cup salsa
  • ½ cup shredded reduced-fat cheddar cheese
  • 8 teaspoons minced fresh cilantro (reserved)

Instructions
  1. Prep the sweet peppers, sweet onion, and sirloin steak and place inside the slow cooker.
  2. In a medium bowl mix together the water, vinegar, lime juice and seasonings then pour the mixture over the meat and vegetables.
  3. Cook on low for 7-8 hours or until vegetables and meat are tender.
  4. Serve by spooning ¾ cup of the meat mixture down the center of each tortilla. Then top with salsa, shredded cheese and 1 teaspoon of Cilantro.

Hamburger Chop Suey Recipe

Many years went by before I had the chance to taste or try Chinese Chop Suey dish. I think it was mainly because of the area we lived in. There were no Chinese restaurants;-heck, there wasn’t even a Burger King around until I started growing up a little bit. Anyway, this Hamburger Chop Suey Recipe was the only form of Chop Suey I knew of at the time. It has been a staple for our family for many years. This is a simple recipe incorporating many of the ingredients from the store such as the Chop Suey vegetables. It is fairly quick to put together and requires very little prep time. I used roasted almond slivers for a garnish on this dish, but if you don’t care for that idea Chinese noodles also work out very well.

Ingredients
  • 1 pound lean ground beef
  • 1 medium onion (sliced)
  • 1 can Chop Suey vegetables (28 ounces, drained)
  • 1 tablespoon instant beef bouillon
  • 2 cups hot water
  • ¼ cup cold water
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • ½ cup slivered almonds (roasted)
  • 1 jar pimientos (sliced and drained)
  • 4 cups white rice (cooked)

Instructions
  1. Cook the rice while preparing the recipe, and roast the slivered almonds. (to roast the almonds spread them out on a baking sheet and roast them at 350F for 10 to 15 minutes shaking the pan occasionally to rotate them.)
  2. Using a large skillet brown the burger and onion until burger is no longer pink inside. Drain if needed.
  3. Dissolve the beef bouillon in the hot water and pour into the meat mixture. Bring to a boil, then lower the heat to a simmer and cook until the onion is tender. Then add the Chop Suey vegetables.
  4. In a small bowl mix together the cold water, soy sauce, and cornstarch-add the mixture to the beef and vegetables. Cook until heated through and thickened.
  5. Serve over hot rice garnished with the roasted almonds and pimientos.

Simple Taco Burgers Recipe

This Taco Burgers Recipe is as simple as it gets. Taco seasoning and corn chips get mixed into the burger and it is topped with cream cheese. If you like Tacos you are sure to like this recipe. I was really tempted to prepare this on the grill which I am sure would have made it much better; but it was snowing and cold. I don’t use the broiler much but it seemed to work out real well for this recipe.

Ingredients
  • 1 package corn chips (2/3 cups for the burgers and the rest served on the side)
  • 1-1/2 pound ground beef
  • 1 package Taco seasoning
  • 1 package of cream cheese (cut crosswise divided into 12 strips)
  • 6 Hamburger buns
  • 2 sliced tomatoes for topping (optional)
  • Paprika

Instructions
  1. Crush the corn chips to measure 1/ 3 cup crushed.
  2. In a large bowl mix together the burger, crushed corn chips, and Taco seasoning. (Hands work best for this)
  3. Form the mixture into 6 patties. Set the oven to broil, and broil patties about 4-5 inches below the heat for 5 minutes. Flip the patties, and broil for an additional 3 minutes, then top each patty with 2 slices of cream cheese and sprinkle lightly with paprika. Broil until the cream cheese is puffy and brown.
  4. Serve on buns with remaining corn chips.

I had some venison steak in the freezer I wanted to use up and this venison one dish dinner sounded really good.

This Slow Cooker Venison One Dish Dinner Recipe is really good on a cold night. All the work is done in the morning, so you can set it, and forget it, for the rest of the day.   • ½ pound bacon (sliced into 1 inch pieces)
  • 2-1/2 pounds red potatoes
  • 2 medium onions (sliced)
  • 1-1/2 pounds venison steak (cubed into bite size pieces)

  • 1 teaspoon garlic powder
  • ⅛ teaspoon pepper
  • 3 tablespoons Worcestershire sauce

Instructions
  1. In a large skillet cook the bacon over medium heat until crisp; drain on paper toweling.
  2. Place the potatoes and the onion in the bottom of the slow cooker, and then add the venison and bacon on top.
  3. In a large bowl mix together the creamed corn, Worcestershire sauce, seasoned salt, pepper, sugar and garlic powder. Pour over the top of the venison.
  4. Slow cook on low for 6-7 hours or until venison is tender.
  5. This is a large recipe will serve 6; but could easily be cut in half.

Ingredients
  • 3 cups elbow macaroni
  • 1 can condensed cream of shrimp soup (10.5 ounce)
  • ¾ cup milk
  • ½ cup mayonnaise
  • ¼ cup celery (finely diced)

This Chicken Gumbo Soup Recipe has a good blend of flavors and like most slow cooker recipes there is not much prep time involved. One of the things I like about making soup in the slow cooker is that it is almost impossible to overcook it. If you get tied up on something and can’t get back to the slow cooker on time, the soup just gets better. This is a mildly seasoned recipe with a little bit of a bite from the cayenne pepper. Thyme is the dominant spice in this recipe, so if you don’t care for that seasoning, you may want to decrease the amount a little bit. Smoked Andouille Sausage with Peppers and Rigatoni Recipe

I wish I had turned down the heat a little bit in this recipe, but what is hot to me seems to be mild for other people; my wife said it was perfect. Depending on what you like you may want to season this recipe to taste.

Depending how large of an area you live in Andouille sausage may be a little hard to find. I have included a description in case you are not familiar with this sausage.

“Andouille is a coarse-grained smoked meat made using pork, pepper, onions, and seasonings. Andouille is French in origin, but has also been brought to Louisiana by French or German immigrants. Andouille is mostly associated with Cajun cooking”. (Cajun grocer)

With that being said if you can’t find Andouille, substitute smoked polish sausage in its place.

This Smoked Andouille Sausage with Peppers and Rigatoni Recipe is a simple recipe with not a lot of cooking time. Most of the time involved is taken up by preparing the vegetables for the sauce, but you can easily cut the time down, if you cut the vegetables while the rigatoni is cooking. I prepared the recipe as written and thought it was a little on the hot side, so as I suggested earlier I would season the recipe to taste.

Ingredients
  • 1 tablespoon cooking oil
  • 1 package smoked Andouille Sausage or smoked polish (14-16 ounces)
  • 1 green bell pepper (cut into strips)
  • 1 yellow bell pepper (cut into strips)
  • 1 small onion (sliced)
  • ½ cup celery (thinly sliced)
  • 2 teaspoons fresh garlic (minced)
  • 1 can crushed tomatoes (28 ounces)
  • 1 teaspoon Creole seasoning (or to taste)
  • ½ teaspoon ground red pepper (or to taste)
  • ½ teaspoon thyme
  • ¼ teaspoon salt
  • 1 package rigatoni (16 ounces cooked to package directions)

Instructions
  1. Cook rigatoni to package directions; while the rigatoni is cooking cut up the vegetables and sausage.
  2. In a large skillet using the oil brown the sausage. Add the onion, peppers, celery and garlic and cook until tender crisp, or to your desired doneness.
  3. Reduce the temperature to medium and mix in the crushed tomatoes, then season with the Creole, thyme, red pepper and salt. Cook for about 15 minutes or until heat through.
  4. Serve over rigatoni.

Here in Upper Michigan the temperatures our just terrible this week. We have single digits for daytime highs that are barely above zero and wind chills going in to the 30-40 below zero range. This put the family in the mood for chili real fast.

There is no doubt that the best way to make chili is by allowing it to simmer for a long period of time; but sometimes, time does not allow for that. This Quick Chili Recipe is pretty basic and seasoned almost perfectly for my taste. I don’t like a lot of heat in my chili and this recipe does not have cayenne pepper as one of the ingredients so it’s pretty mild. If you like your chili on the hot side add some cayenne pepper to taste.

  3. Bring the chili to a boil, reduce the heat to low, and simmer for 20 minutes or until the green pepper is tender.
  4. Garnish with Shredded cheddar

  • 8 ounces small pasta shells
  • ¼ cup butter
  • ¼ cup flour

I was planning on serving mashed potatoes with dinner but was in search for a recipe that was a little different. This Baked Mashed Potatoes Recipe seemed to fit into the dinner menu very well. This mashed potato recipe is a little more work but it is worth the additional effort. This is a simple recipe but takes a little more time because you have to precook the potatoes and mash them before they go into the oven which requires an additional 20 minutes of cooking time. I followed the recipe as written and the end result was a nice cheesy, creamy mashed potato dish; topped with gray it was delicious.

Ingredients
  • 2 pound potatoes (peeled, diced and cubed)
  • ½ cup whole milk

  4. Spray a 1½ quart casserole dish with cooking spray and spoon in the mashed potatoes.
  5. Mix together the remaining Parmesan cheese with the bread crumbs and sprinkle over the mashed potatoes.
  6. Bake for 20 minutes uncovered, or until breadcrumbs are golden brown.
  7. Serve Hot
