I have never prepared Blondies before so when I saw this recipe I had to give them a try. These bars are very rich consisting of butter, brown sugar, with white and regular semi-sweet chocolate chips. They are very good and have a rich buttery flavor.

Ingredients
  • 1 ½ cups all-purpose flour (unbleached)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 12 tablespoons unsalted butter (melted)
  • 1 ½ cups light brown sugar (packed)
  • 2 large eggs (lightly beaten)
  • 1 ½ teaspoons vanilla extract
  • ½ cup semisweet chocolate chips
  • ½ cup white chocolate chips
  • 1 cup pecans (roasted and coarsely chopped)
Instructions
  1. Preheat oven to 350F.
  2. Line a 13 x 9 baking pan with aluminum foil, and lightly coat it with cooking spray.
  3. In a medium size bowl whisk together the flour, salt, and baking powder.

  5. In a large bowl mix together the brown sugar and melted butter until thoroughly combined,

  7. Fold in the nuts and chocolate chips. Pour the mixture into the baking pan and spread it out using a rubber spatula.

  9. Bake for 20 to 25 minutes or until surface is shiny, cracked, and is slightly firm to the touch.
  10. Set the bars on a cooling rack to cool. Remove the bars by lifting out the aluminum foil and slice to desired size.

Chocolate Chip Oatmeal Cookie Recipe

The cold weather lingers on here in Upper Michigan so I thought it was a good time to warm the kitchen up a little bit with some baking. The sweets that were left over from the Holidays, that were in the freezer, are gone; so I took this opportunity to replenish the supply.

These Chocolate Chip Oatmeal Cookies are delicious, and the local market had dark chocolate chips on sale which tempted me a little more. This is a very simple recipe; so simple, I would give it a cannot fail status. You could easily turn this into a Raisin Oatmeal cookie by substituting the raisins for the chocolate chips; a lot healthier I’m sure, or you could use a combination of both. There is very little prep or cooking time involved so you can have cookies on the table in less than a half an hour.

Ingredients
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup (1½ sticks) butter or margarine, softened
  • ¾ cup packed brown sugar
  • ⅓ cup granulated sugar
  • 1½ teaspoons vanilla extract
  • 1 large egg
  • 2 tablespoons milk
  • 1¾ cups chocolate chips
  • 1 cup quick or old-fashioned oats (I used Quick oats for this recipe)
Instructions
  1. Preheat oven to 375F.
  2. In a medium size bowl combine the flour, baking powder, baking soda, cinnamon and salt.
  3. In a large bowl, using a mixer, beat together the butter, brown sugar, granulated sugar and vanilla extract until creamy. Mix in the egg.
  4. Using a mixer gradually mix in the flour mixture and milk. Fold in the oatmeal and chocolate chips.
  5. Spoon onto sprayed cookie sheets a rounded tablespoon at a time. (The size is optional just be sure to allow room for the cookies to spread)
  6. Bake for 12 minutes or until edges are golden brown; but cookies are still soft in the center.
  7. Allow cookies to cool for a couple of minutes on the cookie sheet-then finish cooling on a wire rack.

I have wanted to do a Stuffed Crust Pizza Recipe for some time. The original plan was for a Chicago style pizza, but I ran into some issues obtaining the ingredients that I needed to complete the recipe. So mainly what happened is; I wound up with a combination of the two. I don’t like changing plans in the middle of a recipe because the outcome can be disastrous. However, this turned out to be a pleasant surprise. If you like a lot of topping on your pizza you will love this recipe; it is loaded with Italian sausage, cheese and a few other ingredients. The only thing I felt was missing was a green pepper. This is a simple recipe that is mildly seasoned; if you like your pizza spicy, I would season to taste. For a single pizza the top is really loaded, if you wanted to stretch it out a little bit I am sure it would make two but the full recipe does fit nicely inside the crust edges created by the mozzarella cheese stick stuffing. Ingredients
  • 1 Premade refrigerated Pizza Crust
  • 1 pound bulk Italian sausage
  • 2 cups shredded mozzarella cheese
  • 7 Mozzarella cheese sticks
  • 8 ounces sliced fresh mushrooms
  • 1 small sweet onion (chopped)
  • 2 teaspoons olive oil
  • 1 (28 ounce) can diced tomatoes (drained)
  • ¾ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon fennel seed (optional)
  • ¼ teaspoon garlic powder
  • ½ cup freshly grated Parmesan cheese
Instructions
  1. Preheat the oven to 450 degrees F.
  2. Stretch dough over the pizza pan extending it out about an inch over the pan borders to allow room for folding over the string cheese.
  3. Circle the string cheese around the border and fold the dough over the cheese.
  4. Crumble the sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Remove the sausage with a slotted spoon, and sprinkle over the dough crust. Sprinkle mozzarella cheese evenly over the sausage.
  5. Add the mushrooms and onion to the skillet; cook and stir until the onion is tender. Stir in the tomatoes, oregano, salt, fennel seed and garlic powder.
  6. Spoon the tomato mixture over the mozzarella cheese and Sprinkle on the Parmesan cheese over the top.
  7. Bake for 15 to 20 minutes in or until crust is golden brown.
