Pork Chops with Creamy Scalloped Potatoes

This is a one dish meal you and your family will love. These cheesy and Creamy scalloped potatoes are delicious, and the pork turns out nice and tender. The original recipe called for boneless chops but I decided to use bone in to add to the flavor.

Ingredients
  • 5 tablespoons butter (divided)
  • 4 bone in pork chops (3/4 to 1 inch thick)
  • Salt and pepper to taste
  • 2 teaspoons Dijon mustard
  • 2 teaspoons dried thyme
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half and half
  • 6 medium potatoes (divided) (peeled and thinly sliced)
  • ½ cup onion (finely chopped)
  • 1 cup shredded cheddar cheese (divided)
Instructions
  1. Preheat oven to 375F, and grease a 9x13 baking dish with 1 tablespoon of the butter.
  2. Salt and pepper chops to taste.
  3. Melt 1 tablespoon butter in a large nonstick skillet over medium high heat and cook chops until nicely browned on both sides; set chops aside on a plate.
  4. While chops are browning in a medium size sauce pan over medium high heat melt the remaining 3 tablespoons of butter. Mix in the thyme and mustard and then add the salt and pepper to taste. Whisk in the flour to form a smooth thick paste and then gradually stir in the half and half and broth. Cook stirring constantly until sauce starts to thicken; remove from heat.
  5. Spread half of the potatoes over the bottom of the baking dish and ½ of the diced onion and then top with ½ of the cheese. Arrange pork chops over the cheese, top with the remaining onion and potato slices and pour the sauce over the top.
  6. Cover with aluminum foil and bake until chops are done and potatoes are tender. (about 1 hour)
  7. Remove aluminum foil and sprinkle the rest of the cheese over the top. Switch oven to broil and continue baking until cheese is nicely browned.
  8. Serve hot.

This slow cooker pork chops recipe requires very little prep time and takes long enough to cook so you can get some things done instead of spending a lot of time preparing supper. The original recipe calls for garlic and chili paste but I used chili garlic sauce in place of those ingredients.

Ingredients
  • ½ cup brown sugar
  • ½ cup ketchup
  • ¼ cup soy sauce
  • 1 tablespoon Chili Garlic Sauce – or to taste
  • 1 teaspoon ground black pepper
  • ½ teaspoon kosher salt
  • 2 – 3 pounds boneless pork chops
  • 2 tablespoons cornstarch
  • (Cooked rice or hash browns – optional)
  • 2 tablespoons water
Instructions
  1. In the slow cooker mix together the brown sugar, ketchup, soy sauce, garlic sauce, pepper, and salt until well combined.
  2. Place the chops in the slow cooker and roll them in the mixture to coat.
  3. Cook on low for 8 hours or until fork tender. (4 -5 hours on high)
  4. Mix together the cornstarch and water, remove chops to a serving platter and lightly cover with aluminum foil to keep warm. Stir the cornstarch mixture into the slow cooker and cook on high until thickened.
  5. Serve sauce over chops with rice or hash browns.

It is just a crazy week here with a lot to do. I really needed something simple and again it was the slow cooker to the rescue. This Slow Cooker Pork Chop Recipe is as simple as it gets; if you like pork and are short on time give this recipe a try. It is so simple I was a little nervous about making it, but the family loved it. This is a simple combination of flavors that produces tender delicious pork chops and superb gravy to serve with mashed potatoes, and your favorite vegetable. Enjoy

Ingredients
  • cup all-purpose flour
  • teaspoon ground mustard
  • Salt and pepper to taste ( I used ¼ teaspoon pepper, ½ teaspoon salt )
  • 1 teaspoon garlic powder
  • 4 boneless pork loin chops
  • 2 tablespoons canola oil for browning
  • 1 can 14.5 ounces chicken broth
Instructions
  1. In a large reseal able plastic bag, combine ½ flour, garlic powder, Ground mustard, salt and pepper.
  2. Shake the chops one at a time in the plastic bag, and brow, in a large skillet using the canola oil; placing them in a slow cooker.
  3. Using the remaining flour in a small bowl combine the flour with the chicken broth, and pour over the pork chops.
  4. Cook for 3 to 3 ½ hours till tender. Remove the chops and whisk juices till smooth to form the gravy.
  5. Serve with mashed potatoes and enjoy
