Ingredients
  • 1½ cups all-purpose flour
  • ½ cup cornmeal
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup buttermilk (chilled-i placed this in the freeze for a few minutes to get it good and cold)
  • 8 tablespoons unsalted butter (melted and cooled)
Instructions
  1. Preheat oven to 450F.
  2. In a large bowl whisk together the flour, cornmeal, sugar (I used Splenda in place of the sugar), baking powder, baking soda, and salt.
  3. In another bowl mix together the buttermilk and butter until clumps form. Mix the buttermilk mixture into the dry ingredients until just moist.
  4. Line a baking sheet with parchment paper and scoop dough ¼ cup at a time onto the paper about 1 ½ inches apart. Place on center rack of oven and bake for 12 to 15 minutes or until biscuits are golden brown.
  5. Place biscuits on a cooling rack for several minutes and serve warm.

Getting ready for a fish fry after a successful fishing trip with my son Robert I was looking for a good side dish, so I went to his blog (blogchef.net), and decided to give this Mozzarella Cheese Bites Recipe a try. This is a simple recipe using Italian bread crumbs, egg, and garlic powder.

The cheese deep fries very quickly, so watch them closely so they don’t overcook. I used my deep fryer to cook this recipe, but you can use a heavy saucepan if you don’t have one available.

Serve with marinara sauce – or spice it up a little bit with chili or shrimp sauce.

This would also be a great appetizer for a game day party.

Mozzarella Cheese Bites Recipe

Ingredients
  • 1 pound mozzarella string cheese (cut into 1 inch pieces)
  • 2 eggs (beaten)
  • ¼ cup water
  • 1 ½ cups Italian bread crumbs
  • ½ teaspoon garlic powder
  • 1 cup all-purpose flour
  • Oil for deep frying
Instructions
  1. Preheat deep fryer to 365F (If using).
  2. In a small bowl whisk together the eggs and water. Mix together the bread crumbs and garlic powder in a shallow dish, like a pie dish. Place the flour in another shallow dish.
  3. Roll mozzarella pieces in flour, then in the egg mixture, and then roll in the bread crumbs.
  4. Deep fry in batches at 365F for about 30 seconds or until golden brown; drain on paper toweling.
  5. Serve with your choice of dipping sauce.

This is a simple recipe that doesn’t require many ingredients, and because of the size they cook quickly. You can use your choice of condiments on the burgers to make them as fancy as you would like.

Ingredients
  • 1 pound lean ground beef (I used ground chuck)
  • 9 whole wheat slider buns or dollar rolls (divided)
  • ¼ cup finely chopped onion
  • 1 egg white
  • 2 cloves garlic (minced)
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
Instructions
  1. Tear 1 burger bun into pieces and process it in a food processor, or blender, to create fresh bread crumbs - Should have about ½ cup.
  2. Place the burger in a large bowl and add the bread crumbs, garlic, egg white, onion, salt, and pepper; mix thoroughly using your hands. Roll the mixture into 8 equal size balls. (Like making meatballs) and flatten each ball to ½ inch to form patties.
  3. Preheat and prepare grill over high heat, reduce heat to medium, oil grill grates, cover and grill burgers for 8 – 10 minutes on one side. Flip burgers and continue cooking to 160F.
  4. Place buns on grill cut side down and grill until lightly toasted.
  5. Serve with your choice of condiments.

If you really like donuts but don’t want to deal with deep frying oil, or take the time for the dough to raise, give these Buttermilk and Cinnamon Baked Doughnuts a try. This is another simple recipe that doesn’t require a lot of ingredients and can but put together quickly. The buttermilk cinnamon doughnuts part of the recipe is a basic recipe, as far as the topping you can use any type of glaze you want in place of the cinnamon and sugar.

  • Doughnut Dough
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 eggs (lightly beaten)
  • 1¼ cups buttermilk
  • 2 tablespoons butter (melted)
  • 2 teaspoons vanilla
  • Topping
  • 1 stick butter
  • ½ cup sugar
  • ½ teaspoon cinnamon
Instructions
  1. Preheat oven to 350F.
  2. Sift all the dry ingredients together for the doughnuts into a large bowl.
  3. In another bowl whisk together the eggs, vanilla, buttermilk and melted butter. Stir the buttermilk mixture into the flour mixture, just until combined.
  4. Spoon the batter into a doughnut formed baking pan, sprayed with cooking spray, to about ¾’s full for each doughnut. (A cake decorating tool or plastic bag with the corner cut works real good for this.) Bake the doughnuts for 17 minutes or until a tooth pick inserted comes out clean.
  5. While the doughnuts are baking prepare the topping by melting 1 stick of butter in a sauce pan on low heat. In a small bowl mix together the cinnamon and sugar and set aside.
  6. When the doughnuts are done let them cool for several minutes and then turn the pan over to remove the doughnuts. (Careful, they are round, and like to roll)
  7. Dip the doughnuts into the butter, and then the sugar, on one side, or both. Enjoy

This recipe is very quick to put together, and doesn’t require many ingredients, so you can have delicious hot biscuits on the table in less than an hour. The biscuits are brushed with melted butter at the end of the baking cycle, so you could easily add some garlic, or other spices into the melted butter used for the topping to spice the biscuits up a little if you wanted to. Here’s another game day recipe that’s simple and good. This is a basic recipe, and is really good, just the way it is pictured and written. However you could easily take this recipe to the next level by adding a teaspoon of sour cream, some chopped tomatoes, and maybe even some chopped green onions on top. Just supply the condiments on the side, and let you guests top it with their favorite topping. Be sure to make plenty because they won’t last long. Enjoy

  • 1 pound lean ground beef
  • 1 medium onion (finely chopped)
  • 1 large green pepper chopped
  • 1 package Fajitas Seasoning mix
  • ¼ cup water
  • 1 table spoon cooking oil
  • 1 package restaurant style tortilla chips (you’ll probably use about 1/ 2 of a large bag)
  • 2 cup shredded cheddar cheese
  • Preheat oven to 375F.
Instructions
  1. Preheat oven to 375F.
  2. In a large skillet using the oil, cook the onion, green pepper and burger until the burger is no longer pink inside; drain if needed. Mix in the water and seasoning mix and simmer for about 5 minutes stirring occasionally to keep the mixture from sticking.
  3. Cover a large baking sheet with aluminum foil (I used a 16 x 12 jelly roll pan if you don’t have a pan this large you can use 2 smaller baking sheets), lightly spray with cooking spray, and arrange the tortilla chips tightly together over the bottom. Place about 1 teaspoon of the meat mixture onto each chip and then sprinkle on some cheddar cheese.
  4. Bake for about 5 minutes or until cheese is melted – serve with your choice condiments.

  • 3 avocados (halved, peeled and pit removed)
  • 1 lime (juiced)
  • ½ teaspoon salt
  • ½ teaspoon ground cumin

  • 2 Roma tomatoes (seeded and diced)

  2. Juice the lime into a large bowl. Using a fork or potato masher, mash the avocados in the bowl along with the lime juice. Season the mixture with the salt, cumin, and cayenne pepper.

Basically you combine all the ingredients together in a large bowl, roll the dough into balls, like you are making meatballs; roll them in sugar and bake. I used dark chocolate kisses in this recipe, but you could use milk chocolate stars, or regular chocolate kisses if that is all you have available.

  2. In the large bowl mix together the flour, ½ cup sugar, brown sugar, baking soda, salt, shortening, peanut butter, milk, vanilla and egg to form the dough. (I used my electric mixer for this.)

I have seen frozen Fried Mushrooms in the store. Why you would buy them I don’t know. They just take a few minutes to prepare from fresh mushrooms. It doesn’t make much sense unless you are really pressed for time. If you don’t like Italian seasoning just substitute traditional breadcrumbs. This is such a great side dish it goes good with almost anything. I used white button mushrooms in this recipe but I am sure portabellas would be just as good, if not better. Enjoy

  • 10 ounces whole fresh mushrooms
  • 1 cup flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup water
  • 2 cups breadcrumbs (preferably panko)
Instructions
  1. In a large bowl mix flour, baking powder and salt. Add water and mix until a smooth batter has formed. Dip mushrooms into the batter and coat evenly. Allow excess batter to drip off.
