Ingredients
  • ½ pound navy beans
  • 1 tablespoon vegetable oil
  • 1 large onion (chopped)
  • 3 garlic cloves (crushed and minced)
  • 1 generous tablespoon of tomato paste
  • ½ teaspoon dried thyme
  • ½ cup dry white wine
  • 1 can diced tomatoes (14.5 ounces)
  • 8 ounces kielbasa sausage (sliced into ½ inch pieces)
  • 1 ½ cups low sodium chicken broth
  • 1 bay leaf
  • 1 ½ pounds country style bone-in ribs
  • salt and pepper
  • 2 tablespoons fresh parsley (chopped)
Instructions
  1. Soak beans over night in cold water.
  2. Rinse beans and place in the bottom of the slow cooker.
  3. In a large skillet over medium high heat using the oil cook the onion, garlic, thyme, and tomato paste until onion is soft and starts to brown. Mix in the wine and scrap any droppings from the bottom of the pan; add the onion mixture to the slow cooker.
  4. Mix in the diced tomatoes, chicken broth, Kielbasa, and add the bay leaf. Salt and pepper the pork ribs and work them into the sauce in the slow cooker.
  5. Cook on low for 9 to 11 hours or on high for 6 to 7 hours.
  6. Off heat and let liquid settle for about 5 minutes. Gently turn the slow cooker to its side to bring liquid to the surface and spoon off any excess fat.
  7. At this time I removed the ribs and took out the bones. While the ribs are getting cool enough to handle mix in the parsley. Return the now boneless ribs to the slow cooker and serve hot.

  • 1 pound new red potatoes (quartered)
  • 1 small onion (cut in half and sliced)

  3. Cook on low for 6 -7 hours, or until chicken is done, and vegetables are tender. Add the frozen peas and continue cooking until peas are heated through.

I guess I’m on a roll with the slow cooker this week. The weather has been real nice here in Upper Michigan, giving me a chance to get a lot of winter preparation done outside. I love using the slow cooker because it frees up a lot of my time.

  • 1 boneless pork loin (about 3 pounds cut into 2 pieces)
  • 1 medium onion (chopped)
  • 3 cans pork and beans (15 ounces each)
  • 1 ½ cups barbeque sauce

Instructions
  1. Place all the ingredients in the slow cooker, except for the pork roast, and mix until thoroughly combined.
  2. Press the pork roast pieces into the mixture and cook on low until pork is fork tender. (6-7 hours)
  3. Remove the pork from the slow cooker. Let the pork cool enough to handle, and separate the pork using 2 forks. Add the pork back into the slow cooker and continue cooking until pork is heated through.

I had one rabbit left in the freezer from this past season and I’ve been saving it for this recipe. Because the rabbit is cooked in the slow cooker it is so tender it melts in your mouth. The homemade Ragu sauce if a perfect blend of flavors to go with the mild taste of the rabbit. Serve it over the top of spaghetti or your favorite pasta.

Ingredients
  • 1 rabbit (cut into pieces)
  • 1 medium onion (chopped)

This is a really basic recipe for Hasenpfeffer so there is a lot of room to add some additional ingredients if you wish to do so. If you have rabbit meat on hand there is a good chance you will have the rest of the ingredients on hand also. There is a lot of wine in this recipe so the type of wine you use will strongly influence the outcome. I wanted to see how this basic recipe would turn out so I didn’t add any additional ingredients. The next time I prepare this recipe I will turn it more into a stew like creation by adding some vegetables. As with most slow cooker recipes the rabbit was fall off the bone tender. I prepared this recipe using domestic rabbit meat, but I think this recipe would work out exceptionally well with wild rabbit, not only because of the use of the slow cooker, but also because of the tenderizing effects of the alcohol in the wine.

  • 2½ – 3 pounds domestic or wild rabbit cut into pieces
  • 2 cups dry red wine
  • 2 tablespoons wine vinegar

The weather has been so hot here just like in most parts of the country so I decided it was a great time to use the slow cooker. This Slow Cooker Sausage and Peppers recipe makes a great tasting sandwich. I have also wanted to post another homemade sausage recipe so I took this opportunity to do just that. This Mild-Hot Italian Sausage is really good especially if it is used to compliment another recipe. This sausage recipe compliments Slow Cooker Sausage and Peppers very well. It is also very good combined with spaghetti sauce. When I make the sausage I will link 1/2 of the batch, and freeze the other 1/2 unlinked to use in spaghetti or other dishes. This recipe has a little bit of a nip to it, but if you like it really hot, just add more red pepper flakes.

  • 2 large sweet red peppers (seeded and sliced length wise)
  • 1 large green bell pepper (seeded and sliced length wise)

  • 6 mild hot Italian sausage links (1-1 1/ 2 pounds)
  • ¼ cup red wine vinegar
  • ½ teaspoon thyme
  • ½ teaspoon black pepper
  • 1½ tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon stone ground mustard

  1. Place sausage links in the bottom of the slow cooker.
  2. Prepare the vegetables and onion according to the ingredients list and add to the slow cooker.

  • 5 pounds boneless pork butts
  • 2½ tablespoons salt
  • ½ tablespoon cracked fennel seed
  • 1 teaspoon coarse ground fresh black pepper
  • 1 teaspoon garlic powder
  • ½ tablespoon sugar
  • 1½ teaspoons red pepper flakes
  • ½ teaspoon caraway seeds
  • ½ tablespoon coriander
Instructions
  1. Prepare the casings if you are stuffing the sausage-you will need 32-35mm hog casings. This are usually preserved in salt or a salt brine-flush the casing with cold water to remove the salt and soften them up.

 I had a busy day coming up so a needed a, set it and forget it type of recipe, so I decided on this Slow Cooker Round Steak Recipe. This recipe is very simple to put together and outside of having to cook the noodles to finish it off, it is pretty much carefree. This recipe caught my attention because of the use of the molasses which I don’t usually see as one of the ingredients in this type of recipe. The molasses did seem to blend really well with the rest of the ingredients. This recipe is mildly season leaving plenty of room to add some additional herbs and spices if you wish to do so. I prepared the recipe as written and we thought it was very good the way it is.

Slow Cooker Italian Beef Roast

Wow! This is a great combination of flavors. This Slow Cooker Italian Beef Roast is so simple to put together and it’s incredible. A couple of packets of seasoning, a chuck roast, broth, and some sliced onion, and it’s into the slow cooker. I am not usually big on using seasoning packed mixes, but I decided to make an exception for this one, and I was pleasantly surprised. The beef was nice and tender like it usually is from a slow cooker and because it was slow cooked the seasoning blended nicely into the beef. The dry au jus mix and Zesty Italian dressing turned the juices into delicious gravy to serve over mashed potatoes. This is a great dinner recipe if you have a lot to do because of the long cooking time-you can put it together, and set it, and forget it for 9 -10 hours while you go about your day.
